Method• Slicetheonionsthinlyintolongstrips.Ifindtheslicingtoolonmyfoodprocessorworksverywell.• Ifusingothervegetablesacoarsegraterisbest,ideallythroughafoodprocessorsoitcreateslongstrips.If

usingzucchiniputthegratedzucchiniinacleanteatowel,andthensqueezetheexcesswateroutfromthem.

• Puttheveginalargemixingbowl,addallthedryingredients,andstirthroughtocreateakindofverystiffbatter.

1. Zestthelemons,andsqueezethejuiceuntilyouhavethecorrectamount.2. Rubthezestintothesugarinaglassmixingbowlusingyourfingers.3. Whiskintheeggs,afewatatimeusingaballoonwhisk.4. Addthelemonjuicegradually,whiskingallthetime.5. Placemixingbowlinapanfullofboilingwater(seepicture).Thepanofwatermeansthatthemixtureis

neverheatedtoohot,andstopstheeggscookingontheirownandmakingitgolumpy.6. Keepstirringwiththewhiskuntilthemixturebecomesthickandstiff(probablyabout25-20min).7. Removefromthewaterbathandallowtocoolforafewmin.8. Spoonorpourthemixtureintoablender(youmayneedtodothisinbatches.Thisrecipemakesabout2

3. Ifyouareusingcitrusfruitrindorpipsforsettingaddwhilethefruitisboiling.4. Boilforaboutanhouruntilthefruitissoft.5. Weighasecondsaucepan.6. Spoonsomeofthefruitintoasieveoverthesecondsaucepanandstirandpushthefleshthroughthe

AllJamrequirePectininordertobeabletoset.

Somefruitsarenaturallyhighinpectin,suchasCitrusfruits,apples,pears,blueberriesandgooseberries.Jamsmadewiththesefruitswillsetwithoutaddedsettingagents.

Otherfruitsarelowinpectinandrequireadditionalpectintobeadded.EspeciallyStrawberries.Strawberryjamisnotoriousfornotsetting.AustralianNativeLillypillysarealsofairlylowinPectin,alongwithCherries,figs,peachesandrhubarb.

PowderedPectincanbeboughtinthesupermarketsandisknownasJamsettahere.

(Carole Duffill) Greatfordipsanddrinks.Thisisacheap,tastyandeasywaytousecrustsattheendofloavesandthosecutoffbreadwhenmakingtartshellsorpuddingswiththebread.Theyareanalternativetocrispsandsavourybiscuitsfordips.

MethodCutcrustsattheendofloavesintocentimetrestrips.Allcrustscanbefrozen,thawedandbakedwhenrequired.Or,crustscanbebakedthenstoredinanairtightcontainer.Tobakecrusts

1. Heatovento160degrees2. Oilabakingdish.3. Spreadthecrustsinasinglelayerontheoileddish.4. Brushorspraythecrustswitholiveoil.Thecrustsshouldthenbelightlycoatedwithoilonbothsides.5. Sprinklethecrustsgenerouslywithdriedoregano,basil,coarselymilledpepper,chilliflakes(optional)

andveryimportantly,seasaltgranules.Donotsparethesalt.Addfreshlychoppedrosemary,basil,thymeandoreganoifavailableandsprinkleoverthecrusts.

6. Cookforabout5–10minutesuntiltheuppersideofthecrustsaregolden.7. Removecrustsfromovenandturnthemover(useaspatula)andspreadoutagaininthepan.8. Cookforaboutafurther5–10minutesuntilthissideisagoldencolourandthecrustsarenicelydried.9. Cookingtimecanvarydependingontheamountofmoistureinthebread,thicknessofthecrustsand
