Otherfruitsarelowinpectinandrequireadditionalpectintobeadded.EspeciallyStrawberries.Strawberryjamisnotoriousfornotsetting.AustralianNativeLillypillysarealsofairlylowinPectin,alongwithCherries,figs,peachesandrhubarb.
PowderedPectincanbeboughtinthesupermarketsandisknownasJamsettahere.

Howeveritispossibletosetjamusingnaturalmethods,whichusuallyinvolveaddingafruithighinpectin,orutilisingcitrusfruitsinsomeway.
CitrusseedsarehighinPectin,andsoifIammakingsomethingelsethatinvolvescitrus,Isavetheseeds,andputinateaballinfuser,ormuslinbag,thatIhangintothejamwhileitiscooking.
Citrusrindandpithisalsohighinpectin,soifmakingjelly,thesecanbeaddedwhilethefruitisstillwhole,andwillthenbesievedoutwhenthejellyisstrained.

(Carole Duffill) Greatfordipsanddrinks.Thisisacheap,tastyandeasywaytousecrustsattheendofloavesandthosecutoffbreadwhenmakingtartshellsorpuddingswiththebread.Theyareanalternativetocrispsandsavourybiscuitsfordips.
MethodCutcrustsattheendofloavesintocentimetrestrips.Allcrustscanbefrozen,thawedandbakedwhenrequired.Or,crustscanbebakedthenstoredinanairtightcontainer.Tobakecrusts
1. Heatovento160degrees2. Oilabakingdish.3. Spreadthecrustsinasinglelayerontheoileddish.4. Brushorspraythecrustswitholiveoil.Thecrustsshouldthenbelightlycoatedwithoilonbothsides.5. Sprinklethecrustsgenerouslywithdriedoregano,basil,coarselymilledpepper,chilliflakes(optional)
andveryimportantly,seasaltgranules.Donotsparethesalt.Addfreshlychoppedrosemary,basil,thymeandoreganoifavailableandsprinkleoverthecrusts.
