The ratio of 70% neck and 30% ribs will guarantee you the real taste of beef from our cows, which graze freely in our meadows behind Taberna from the production of Agro Hniezdne. We know what we eat because we know what they eat: in addition to our own green pastures, we serve them brewing malt from our Nestville Beer as a „dessert“ for its valuable source of protein. That is, the fact that it is truly healthy, without chemistry and tasty, there is no need to add more perhaps just so much that we will cover it for you with Nestville Whisky sauce and an honest soft bun, which is made only on butter (yes, there is no oil). If you choose a game burger with fruit-currant mayonnaise, or a chicken version with mango chutney, pulled pork, steak or vegetarian, whichever is your first choice, sooner or later you will want to taste them all. Because we are experts in burgers and your tastes.

ABOUT OUR STEAKS

The Charolais cattle, which we breed on our farm, originated at the turn of the 18th and 19th centuries in central France, in the area of Charolles and Nevers. This breed of cattle usually grows to a height of 145 cm with a weight of 700 to 900 kg. Our Charolais pieces have a particularly good fattening capacity and a low-fat content. At the age of 2, this is the period when the quality and fragility of their meat is ideal for the production of our Nestville Taberna maturing steaks (we have immortalized two Charolais steaks for you and they decorate our interior).

In addition, our bulls are spoiled with our own brewing malt from Nestville Beer and cereal specialties from the production of Nestville Whisky, which are the richest source of protein. And so, it is true that where steaks with a high protein content are common, they promote human growth and healthy development with immune and protective function. This is doubly true for our steaks.

Your joy from our steaks from their lifestyle and health, which we take care of from an early age, continues with the softening and controlled process of the so-called dry aging.

Dry aging is much more difficult and takes longer than wet aging. The meat intended for dry aging is first stored in a refrigerator in a pre-aging phase at a strictly controlled temperature and humidity, and in the second phase is transferred to the so-called Dry Ager aging chamber. You can watch the process of maturing on Himalayan salts in this special fridge located next to the bar. During this time, the enzymes in the meat break down, making the muscles and tissues of the meat more fragile, the meat losing moisture on the surface, creating an inedible but protective skin that must be cut and removed. Then only a special band saw obedient to our chef will cut the best pieces just for you.

This process takes a minimum of 6 weeks. During this period, the meat acquires a unique taste, tenderness, and typical sensory quality.

NESTVILLE BEER

Nestville Beer from our brewery is an honest craft beer, made from the highest quality ingredients - crystal clear sub-Tatra water, cereal malts and hops. The uniqueness is the use of smoked barley malt over hardwood, which we also use in the production of Nestville Whisky. Carefully selected hop varieties give our beer its characteristic bitterish taste. During fermentation, we use our own strains of yeast, which have been bred to achieve the unique taste of our beer. After the main fermentation, the beer is bottled and left to stand in barrels of Nestville Whisky. Maturation in American white oak wooden barrels, in which Nestville Whisky had previously matured, highlights the unique taste of the beer. It gives it a subtle bitterness of oak tannins and sweet vanilla tones with a subtle undertone of Nestville Whisky in the background.

Nestville Taberna as the heart of Nestville Park is an exclusive place of contact with our great product line of spirits and alcoholic beverages, which we prepare for you in the distillery directly located next to Nestville Taberna.

The main and most famous product is the well-known first Slovak whisky, produced by a special 7-column continuous distillation, which guarantees its world uniqueness.

Nestville Whisky is very fine, almost soft, sweet after corn, with a golden-brown colour, which is handed over by the caramel from the burnt surface of the barrel in which it matured. It will leave you with a sensual taste of vanilla with an undertone of malt and grain.

We will be happy to take you through their tasting from the youngest to special editions of 9 and 10 year old whisky or B&W, Single Barrel. The selection of liqueurs and spirits perfectly complements the wide portfolio of Nestville Distillery.

Manuel AROMA BAR is our choice of quality coffee. The ratio of coffee Arabica and Robusta - 80:20 - is a traditional ratio that is specific to Italian espresso, because it needs a lot of tenderness, but also the right portion of passion. This particular coffee is finer due to its higher Arabica content, but its body is robust, full and sweet. At the same time, the coffee remains slightly fruity and spicy. In the organic profile, the mixture is a combination of rare natural arabica from Brazil and Guatemala, as well as Robusta beans from India. When roasting, great emphasis is placed on the composition and selectivity of individual varieties. Light to medium roasting of Arabica and high roasting of Robusta make this mixture a strong, elegant and expressive espresso. The aroma is intense and pleasant with a hint of cocoa and flowers, which combine in the classic aroma of freshly baked toast. The tastes are balanced and equanimous.*
