There’s a recommended daily requirement for the elderly for each of these nutrients.

Recipe of the Month

Chef’s Corner Irish Stew

Ingredients

1 1/4 pounds well-marbled chuck beef stew meat, cut into 1 1/2-inch chunks 3 teaspoons of salt (more to taste) 1/4 cup extra virgin olive oil 6 large garlic cloves, minced 4 cups beef stock or broth 2 cups water 1 cup of Guinness extra stout 1 cup of hearty red wine 2 tablespoons tomato paste 1 tablespoon sugar 1 tablespoon dried thyme 1 tablespoon Worcestershire sauce 2 bay leaves 2 tablespoons butter 3 pounds russet potatoes, peeled, cut into 1/2-inch pieces (about 7 cups) 1 large onion, chopped (1 1/2 to 2 cups)

1. Brown the beef:

Sprinkle about a teaspoon of salt over the beef pieces. Heat the olive oil in a large (6 to 8 quart), thick-bottomed pot over medium-high heat.

Pat dry the beef with paper towels and working in batches, add the beef (do not crowd the pan, or the meat will steam and not brown) and cook, without stirring, until well browned on one side, then use tongs to turn the pieces over and brown on another side.

2. Add garlic and sauté, then add stock, water, Guinness, wine, tomato paste, sugar, thyme Worcestershire, bay leaves, simmer:

Add garlic to the pot with the beef and sauté 30 seconds or until fragrant. Add the beef stock, water, Guinness, red wine, tomato paste, sugar, thyme, Worcestershire sauce, and bay leaves. Stir to combine.

Bring mixture to a simmer. Reduce heat to the lowest setting, then cover and cook at a bare simmer for 1 hour, stirring occasionally.

3. Sauté onions, carrots in separate pan:

While the pot of meat and stock is simmering, melt the butter in another pot over medium heat. Add the onions and carrots. Sauté the onions and carrots until the onions are golden, about 15 minutes. Set aside until the beef stew in step 2 has simmered for one hour.

4. Add onions, carrots, potatoes to beef stew, simmer:

Add the onions, carrots, and the potatoes to the beef stew. Add black pepper and two teaspoons of salt. Simmer uncovered until vegetables and beef are very tender, about 40 minutes. Discard the bay leaves. Tilt pan and spoon off any excess fat.

Transfer stew to serving bowls. Add more salt and pepper to taste. Sprinkle with parsley and serve.

Welcome, Spring (and lots more!)March has a bunch of important events:

1. Daylight Saving Time begins at 2:00 am on March 14 (don’t forget to set your clocks FORWARD one hour).

2. March 17 is St. Patrick’s Day

3. March 20 marks the first day of Spring (Yay!)

4. The Christian season of Lent, which began on February 17, carries through the month of March, ending on Thursday, April 1. Lent marks the season of preparation for Christians to celebrate Easter, which is April 4 this year.

6. Palm Sunday, March 28, commemorates Jesus’ triumphant entry into Jerusalem.

7. Holy Week begins on Palm Sunday.

In the Western church Lent provides for a 40-day period of fasting (Sundays are excluded), in imitation of Jesus Christ’s fasting in the wilderness before he began his public ministry. The word “Lent” is derived from Middle English lente, which means “springtime,” which comes from Old English lencten; akin to Old High German lenzin, meaning “spring.” (Thank you Merriam-Webster)

Although it is thought that Lent was observed in the earliest churches, the practice was not formalized until the First Council of Nicaea in 325 CE. It was a time of preparation of candidates for baptism and a time of penance for grievous sinners who were excluded from Communion and were preparing for their restoration. As a sign of their penitence, they wore sackcloth and were sprinkled with ashes. This form of public penance began to die out in the 9th century, and it became customary for all the faithful to be reminded of the need for penitence.

In some Protestant churches, Lent is observed with various services and practices; but Lent is not formally observed in many Evangelical or nondenominational churches.

In Christian calendars, March is a busy month. I hope that the season helps us to focus on and move toward the celebration of the Resurrection of Jesus Christ, our living Creator, Redeemer, and Sustainer!

February is Black History Month. In honor of Black History, we had a Soul Food Luncheon. It was absolutely delicious! Our Food Service Staff picked out their favorite Soul Food items and cooked them to perfection! Thank you all for doing such a fantastic job!
