Wagyu house at Nampo should be a hive of activity and we look forward to being inundated with visitors. We have a special partnership with the Vierfontein NG Church to sell Wagyu burgers, together with our Gold sponsors. We have our Silver sponsors exhibiting cattle and we have had a very good response to the “telescopics” with about 60 members exhibiting and advertising their Seedstock business. Royal show will follow two weeks later starting on the Friday the 23 rd May until the 29 th May. We are allowed to sell burgers, droë wors, biltong and patties. All sponsors will be allowed to exhibit. The KZN Natal club, with Ivan Voights as chairman is responsible for the program and arrangements. A reminder of the Certified Wagyu Beef (CWB) inaugural AGM that will happen at Royal at 10h00, the 28 th May 2019. The AGM will be followed by a special Wagyu lunch, for producers, chefs, restaurateurs, abattoir owners and retail. The subsidised cost is R250 per head. At the dinner we will officially launch the two Society endorsed trading platforms and the MIJ camera. We will have a strong media presence at the event. Thereafter we have a carcass on auction, that will be provided by the KZN Wagyu Club. Further details of the new MIJ camera and CWB trading Platforms is provided in teh Newsletter below. The Genomic module has been implemented at the Society and we are now able to store the SNP data. Because of the way the genomics module works, ABRI has requested that we first register the animals on the system as “pending”, before doing the parentage. We will thus be reverting back to the old way of registering calves. The six month window before later penalties are incurred still applies. We have advertised for a financial and administration officer to assist with the finances, performance data and CWB animal transfers. As mentioned in a previous newsletter we will be running our own registry and recording service from the 1 st of July 2019. Vriendelike groete Michael Dr Michael Bradfield (HUB) CWB endorses two trading platforms After a comprehensive process where a Request for Proposals (RFP) was released for a trading platform for CWB, and the RFP widely marketed in the industry (adverts placed in the Agricultural media, Website and Social media), the CWB and WSA board decided to endorse two trading platforms by name of Swagyu and WagyuX for use by CWB members. Swagyu New mobile-first certified wagyu beef trading platform Swagyu offers a best-in-class mobile first auction trading platform for sellers and buyers of wagyu beef and other products. All Wagyu offered on Swagyu auctions are Certified Wagyu Beef, meaning buyers are assured that the origin and quality of the Wagyu beef products offered meet with the strictest standards as controlled by Certified Wagyu Beef, a subsidiary of the Wagyu Society of South Africa. The carefully curated Swagyu auctions will allow buyers to bid on high quality wagyu carcasses, animals and genetics provided by some of South Africa's top producers of wagyu beef and breeding material. According to Swagyu CEO Georgina Jeurissen the platform will be available on the Apple App Store and Google Play Store for Android phones. "Buyers and sellers of wagyu products will be able to download our native mobile apps from 22 May 2019 to register for our inaugural timed auction that starts at 08:00 on 24 May 2019. This auction's lots will start closing in batches from 12:00 on 31 May 2019," she explains. After the initial Swagyu auction the platform will continue to host quality wagyu auctions on a regular basis. "We are super excited about the future of wagyu beef trading via Swagyu," Jeurissen continues. "Our trading apps are so intuitive to use we almost have to warn buyers to be aware of bid fever. The responsiveness of the Swagyu auction apps is immediate, which means buyers who are serious about owning a specific lot will always be able to bid for the lots they really want." In addition to fast and easy-to-use mobile apps, the Swagyu platform is also accessible from a web browser at swagyu.co.za. Swagyu • Wagyu trading made easy WagyuX (The Wagyu Exchange) WagyuX (The Wagyu Exchange) is an online platform to all South African wagyu farmers and associated parties in the value chain. It allows users to buy and sell wagyu products, including but not limited to, live animals, genetics and carcasses/meat. WagyuX provides a marketplace which maximises satisfaction for both buyers and sellers. We do this in a number of ways: For the buyers, WagyuX provides accurate and trustworthy information about the products buyers are buying. The information about any registered animals in any auction lot is sourced from public sources such as BREEDPLAN, rather than from the seller. WagyuX will also encourage sellers to offer guarantees, where possible, to give buyers an added level of comfort and peace of mind when buying. For the sellers, WagyuX aim’s to provide the best, and most efficient way to sell produce and where sellers can achieve the highest prices possible. WagyuX is also bringing some creative solutions to the market to reward sellers for high marbling carcasses based on the objective measures of the Japanese MIJ camera. In addition to the auctions which WagyuX hosts, they also invite Wagyu sellers, their agents, auction houses and co-operatives to use the platform to set-up, run and promote their own auctions. This process is similar to the auctions platform which dominates the Australian market, namely AuctionsPlus. Beyond their online Auctions WagyuX also has a “Buy Today” section. This allows registered users to browse through listings of Certified Wagyu Beef (CWB) products for sale and purchase directly from sellers. In the future this section will also have a dedicated area for Wagyu carcasses. All of this is aimed at making WagyuX the ‘one- stop-shop’ for Wagyu farmers in South Africa to help them get the most value from their animals. Objective carcass measurements A game changer in the South African beef Industry South Africa does not have a meat grading system and to date SAMIC has not graded any carcasses based on marbling score. In many countries, marbling score is highly correlated with the price paid for a carcass. The latest research confirms that the only reliable measure of marbling is the use of a carcass camera. The Certified Wagyu Beef board investigated the various options for the objective measurement of marbling score in South Africa. Systems included a “European camera” used by two processors in the USA and one in Australia, the “the Hyper spectral camera found in smartphone’s, the ALMtech camera (Denmark) and the Japanese MIJ camera. To our knowledge the European system has fallen out of favour amongst one of the processors, and to date the data from the other systems are too unreliable for the data to be included into a genetic evaluation program, and to provide objective measurements. It is unlikely that the marbling scores taken by producers can be used in a genetic evaluation program. In the USA and Australia for example, USDA and Aus-meat graders require a significant amount of training to grade carcasses and as the results done by the Australian Wagyu Association (AWA) in Australia show (Fig 1) , that even with experienced graders the results are not as accurate as those provided by the camera. Whilst the correlation is about 75% , individual results (the dots compared to the straight line) show that graders will grade the same carcass a score of four, whilst another grader will grade it an eight. Whilst the results are “close”, they also separate at the top and bottom of the marble scores i.e. graders tend to overestimate the lower scores and higher scores. The MIJ-30 camera has been procured from the Australian Wagyu Association at significant cost to the South African Wagyu Society. The cost has been moved to the CWB account as a loan to the Society and will need to be repaid by CWB. Some facts regarding the camera. Ten new MIJ-30 camera’s have been manufactured in Japan More than twenty years of technology has been invested into the production of the camera by MIJ in Japan. The old MIJ camera cannot easily be transported between abattoirs and manufacturing of this camera has ceased. The new camera is lightweight (size of a laptop) and has all the software inside to allow the picture to be translated into a usable image for analysis. An accurate calibration of marbling score across abattoirs and meat graders is provided through the server. South Africa has managed to procure camera no 10. The camera allows an objective measure of marbling of the rib eye area and marbling fineness. It is commonly known that the finer the marbling distribution, the better the eating quality (rather than having large particles of seam fat) It is impossible for the human eye to objectively score high levels of marbling accurately. The new camera is also part of the traceability of the carcass, from producer to the carcass and is an objective measure of marbling. Within the next two months fat and meat colour will be included into the software system. As a matter of interest, the camera uses the “Ubuntu Linux operating system”, developed by Mark Shuttleworth, the first South African to go to space with a Russian spaceship. South African producers will also now be able to get fair value for their product based on an objective marbling score. In the USA and Australia for example, the price increases by approximately $1 (R10) for each marble score. The USA grades carcass according to the United States Department of Agriculture (USDA) grading system of which marbling is one of the most important components that speaks to consumer eating quality satisfaction. The USDA grades all carcass for consumer satisfaction into three grades i.e. select (slight marbling), choice (moderate marbling) and Prime (moderate to abundant marbling). Marbling, according to Jason Strong, recently appointed CEO of Meat and Livestock Australia (MLA) and as told to participants at the Aldam Stockman’s school in 2017, is the most important criteria for a good eating experience and is one of the major factors included into the Australian meat grading system. CWB has entrusted SAMIC as an independent authority to grade all CWB carcasses. The Society, through CWB is simply there to assist with training. SAMIC has trained and accredited its senior staff in the use of the camera. Four AFSQ staff have also been trained by the Australian Wagyu Association’s (AWA) carcass technician. AWA hold the licence for MIJ in Australia, South Africa and New Zealand and is assisting MIJ with the commercial role out and technology development. The relationship between the Ausmeat system, United States department of Agriculture grading system, and the Japanese marbling grades (BMS) and intramuscular fat percentage is shown in Fig 2. Each grading system has its own purpose and range. With the objective grading using the MIJ-30, the level of intramuscular fat (IMF) can be given as a percentage along with the score from the required grading system. For the South African Wagyu industry, using accurate marbling score data across the full range of IMF that Wagyu can achieve, is invaluable for accelerating Wagyu genetic gain in marbling. An EBV is dependent on the quality and accuracy of the performance data that the trait is measured with. The Australian Wagyu Association has an exclusive partnership arrangement with Meat Image Japan (MIJ) to develop, distribute and support MIJ camera technology within Australia, New Zealand and South Africa. CWB would like to thank Aaron Van Den Heuvel from AWA for training the SAMIC and AFSQ staff in South Africa. We would also like to thank Dr Matt McDonagh, CEO of AWA for all his support sorting out some of the technical issues with the camera. Some of the material obtained above is from the AWA MIJ fact sheet and January 2019 version of the AWA Wagyu update. The support of Rudd products by name of Lisa Williams was invaluable to import the camera into South Africa. Standard bank assisted CWB to secure a loan for the camera. Without the assistance of the CWB sponsors (Wagyu X, FNB and Stella Wagyu), obtaining the camera would not have been possible. Johan du Plessis and the Beyond Beef staff assisted with the training and accreditation. Finally, thanks to SAMIC and AFSQ for their assistance and for making their personnel available for training so that we can collectively serve the industry. 'n Totaal van 100 000 beeste word jaarliks met Wagyu bulle in Australië gepaar. Suiwer beeste word na vier generasies se teling volgens die aangehegte illustrasie geteel. 2) Hoe om 'n Volbloed-kudde te teel? 'n Volbloed-kudde word deur die volgende stappe te gebruik geteel: a. Daar is drie KI / Embryo stasies in Suid-Afrika wat ‘n beduidende hoeveelheid werk vir die lede van die genootskap doen, en ook borge van die Genootskap is. Hulle is: Embryo Plus http://www.embryoplus.com/ In Vitro Africa http://invitroafrica.com/ Ramsem: http://www.ramsem.com/ 3) Teel van n suiwer (stoet) kudde Die Wet op Diereverbetering (Wet Nr. 62 van 1998) bepaal dat stoet diere slegs deur die amptelike liggaam wat daartoe deur die Wet aangewys is, diere as Stoet mag registreer. Met Wagyu beeste is dié liggaam die Wagyu Genootskap van Suid-Afrika. Die Genootskap se taak is om na die belange van die ras, die telers en die gesamentlike bevordering van die ras te kyk. Die Suid-Afrikaanse Wagyu-genootskap het in 2014 amptelike erkenning ontvang. Die eerste opsie om 'n Suiwer-kudde te begin, is om Suiwer-koeie van ander telers te koop. Hierdie koeie of verse is dikwels in kalf vanaf 'n Suiwer of Volbloed-bul. Die voordeel van hierdie opsie is dat jy van die eerste kalf met suiwer Wagyu's begin. 'n op-Graderings program is ook 'n algemene manier om 'n suiwer kudde te begin. Hierdie proses sal ten minste vier generasies neem indien dit van die begin af met kommersiële beeste begin word. Slegs geregistreerde Volbloed of Suiwer bulle kan vir teling gebruik word, óf deur natuurlike paring of deur die gebruik van semen van goedgekeurde bulle. Volgens die illustrasie en per definisie kan 'n Suiwer Wagyu nooit 'n 100% Volbloed wees nie, maar sal teen die 4de generasie ten minste 93 % suiwer Wagyu teling bevat. 4) Die Teel van 'n kommersiële Wagyu-kudde 'n Beduidende deel van die produsente wil net kommersiële diere teel en die voordele van Wagyu's kry sonder die bykomende administrasie en kostes aangaan om die diere in die kuddeboek-afdeling van die Genootskap te registreer. Om 'n kommersiële kudde te teel, vereis 'n Volbloed of Suiwer bul (of semen van sulke bulle) om die F1-nageslag te bekom. Kommersiële produsente kan dan self besluit of hulle F2- en F3-diere vir die voerkraalmark wil produseer. Let daarop dat alle kommersiële produsente verkieslik deel van die Gesertifiseerde Wagyu Bees (CWB) Program moet wees. Die definisie van 'n GWB-dier word deur die protokol beskryf en is enige dier wat deur 'n geregistreerde vader (Volbloed of Suiwer) geteel word, dus 'n dier met 'n inhoud van minstens 50% Wagyu- genetika (maksimum variasie van 5%), 'n minimum marmering telling van 3, hormoon vry, alle F1, F2 F3 bulle voor 5 maande oud moet gekastreer wees, en eties volgens die genootskap se protokol geproduseer word. Volle Naspeurbaarheid word ook vereis.

WagyuX (The Wagyu Exchange) is an online

platform to all South African wagyu farmers and

associated parties in the value chain. It allows

userstobuyandsellwagyuproducts, including

but not limited to, live animals, genetics and

carcasses/meat.

WagyuX provides a marketplace which

maximises satisfaction for both buyers and

sellers.Wedothisinanumberofways:

For the buyers, WagyuX provides accurate and

trustworthyinformationabouttheproductsbuyers

arebuying.Theinformationaboutanyregistered

animalsinanyauctionlotissourcedfrompublic

sources such as BREEDPLAN, rather than from

theseller.WagyuXwillalsoencouragesellersto

offerguarantees,wherepossible,togivebuyers

an added level of comfort and peace of mind

whenbuying.

Forthesellers,WagyuXaim’stoprovidethebest,

andmostefficientwaytosellproduceandwhere

WagyuXisalsobringingsomecreativesolutions

tothemarkettorewardsellersforhighmarbling

carcasses based on the objective measures of

theJapaneseMIJcamera.

InadditiontotheauctionswhichWagyuXhosts,

they also invite Wagyu sellers, their agents,

auction houses and co-operatives to use the

platform to set-up, run and promote their own

auctions. This process is similar to the auctions

platformwhichdominatestheAustralianmarket,

BeyondtheironlineAuctionsWagyuXalsohasa

“BuyToday”section.Thisallowsregisteredusers

to browse through listings of Certified Wagyu

Beef (CWB) products for sale and purchase

directlyfromsellers.Inthefuturethissectionwill

alsohaveadedicatedareaforWagyucarcasses.

Allof this isaimedatmakingWagyuXthe ‘one-

stop-shop’ for Wagyu farmers in South Africa to

helpthemgetthemostvaluefromtheiranimals.

ObjectivecarcassmeasurementsAgamechangerintheSouthAfricanbeefIndustrySouthAfricadoesnothaveameatgradingsystemandtodateSAMIChasnotgradedanycarcasses

basedonmarblingscore.Inmanycountries,marblingscoreishighlycorrelatedwiththepricepaid

foracarcass.

Thelatestresearchconfirmsthattheonlyreliablemeasureofmarblingistheuseofacarcass

camera.TheCertifiedWagyuBeefboardinvestigatedthevariousoptionsfortheobjective

measurementofmarblingscoreinSouthAfrica.Systemsincludeda“Europeancamera”usedbytwo

processorsintheUSAandoneinAustralia,the“theHyperspectralcamerafoundinsmartphone’s,

theALMtechcamera(Denmark)andtheJapaneseMIJcamera.ToourknowledgetheEuropean

systemhasfallenoutoffavouramongstoneoftheprocessors,andtodatethedatafromtheother

systemsaretoounreliableforthedatatobeincludedintoageneticevaluationprogram,andto

provideobjectivemeasurements.

Itisunlikelythatthemarblingscorestakenbyproducerscanbeusedinageneticevaluation

program.IntheUSAandAustraliaforexample,USDAandAus-meatgradersrequireasignificant

amountoftrainingtogradecarcassesandastheresultsdonebytheAustralianWagyuAssociation

(AWA)inAustraliashow(Fig1),thatevenwithexperiencedgraderstheresultsarenotasaccurate

asthoseprovidedbythecamera.Whilstthecorrelationisabout75%,individualresults(thedots

comparedtothestraightline)showthatgraderswillgradethesamecarcassascoreoffour,whilst

anothergraderwillgradeitaneight.Whilsttheresultsare“close”,theyalsoseparateatthetopand

bottomofthemarblescoresi.e.graderstendtooverestimatethelowerscoresandhigherscores.

TheMIJ-30camerahasbeenprocuredfromtheAustralianWagyuAssociationatsignificantcostto

theSouthAfricanWagyuSociety.ThecosthasbeenmovedtotheCWBaccountasaloantothe

SocietyandwillneedtoberepaidbyCWB.Somefactsregardingthecamera.

TennewMIJ-30camera’shavebeenmanufacturedinJapan

Morethantwentyyearsoftechnologyhasbeeninvestedintotheproductionofthecameraby

MIJinJapan.

TheoldMIJcameracannoteasilybetransportedbetweenabattoirsandmanufacturingofthis

camerahasceased.Thenewcameraislightweight(sizeofalaptop)andhasallthesoftware

insidetoallowthepicturetobetranslatedintoausableimageforanalysis.Anaccurate

calibrationofmarblingscoreacrossabattoirsandmeatgradersisprovidedthroughthe

server.

Thecameraallowsanobjectivemeasureofmarblingoftheribeyeareaandmarbling

fineness.

Itiscommonlyknownthatthefinerthemarblingdistribution,thebettertheeatingquality

(ratherthanhavinglargeparticlesofseamfat)

Itisimpossibleforthehumaneyetoobjectivelyscorehighlevelsofmarblingaccurately.

Thenewcameraisalsopartofthetraceabilityofthecarcass,fromproducertothecarcass

andisanobjectivemeasureofmarbling.

Withinthenexttwomonthsfatandmeatcolourwillbeincludedintothesoftwaresystem.

Asamatterofinterest,thecamerausesthe“UbuntuLinuxoperatingsystem”,developedby

MarkShuttleworth,thefirstSouthAfricantogotospacewithaRussianspaceship.

SouthAfricanproducerswillalsonowbeabletogetfairvaluefortheirproductbasedonan

objectivemarblingscore.IntheUSAandAustraliaforexample,thepriceincreasesby

approximately$1(R10)foreachmarblescore.

TheUSAgradescarcassaccordingtotheUnitedStatesDepartmentofAgriculture(USDA)

gradingsystemofwhichmarblingisoneofthemostimportantcomponentsthatspeaksto

consumereatingqualitysatisfaction.TheUSDAgradesallcarcassforconsumersatisfaction

intothreegradesi.e.select(slightmarbling),choice(moderatemarbling)andPrime

(moderatetoabundantmarbling).

Marbling,accordingtoJasonStrong,recentlyappointedCEOofMeatandLivestockAustralia

(MLA)andastoldtoparticipantsattheAldamStockman’sschoolin2017,isthemost

importantcriteriaforagoodeatingexperienceandisoneofthemajorfactorsincludedinto

theAustralianmeatgradingsystem.

CWBhasentrustedSAMICasanindependentauthoritytogradeallCWBcarcasses.The

Society,throughCWBissimplytheretoassistwithtraining.SAMIChastrainedandaccredited

itsseniorstaffintheuseofthecamera.FourAFSQstaffhavealsobeentrainedbythe

AustralianWagyuAssociation’s(AWA)carcasstechnician.AWAholdthelicenceforMIJin

Australia,SouthAfricaandNewZealandandisassistingMIJwiththecommercialroleoutand

technologydevelopment.

TherelationshipbetweentheAusmeatsystem,UnitedStatesdepartmentofAgriculture

gradingsystem,andtheJapanesemarblinggrades(BMS)andintramuscularfatpercentage

isshowninFig2.Eachgradingsystemhasitsownpurposeandrange.

WiththeobjectivegradingusingtheMIJ-30,thelevelofintramuscularfat(IMF)canbegiven

asapercentagealongwiththescorefromtherequiredgradingsystem.FortheSouthAfrican

Wagyuindustry,usingaccuratemarblingscoredataacrossthefullrangeofIMFthatWagyu

canachieve,isinvaluableforacceleratingWagyugeneticgaininmarbling.AnEBVis

dependentonthequalityandaccuracyoftheperformancedatathatthetraitismeasuredwith.

TheAustralianWagyuAssociationhasanexclusivepartnershiparrangementwithMeat

ImageJapan(MIJ)todevelop,distributeandsupportMIJcameratechnologywithinAustralia,

NewZealandandSouthAfrica.
