What We’re Eating This MonthIt’s finally warm out and we are rarin’ to get outside and soak up the sunshine. We’re here to help you plan for those perfect outside parties, hanging with the inspirational women in your life on Mother’s Day, and reveling in the spring freedom on Memorial Day. Here’s what we’re eating to celebrate!

We’d drape ourselves in Speck if it were socially acceptable.Meet Speck, a smoked and cured prosciutto, rubbed with black pepper and juniper berries, from the Alps in South Tyrol, Italy.

Wrap it around scallops and pan sear in rosemary oil, cube it and sauté with onions and peas for pasta, substitute it in place of Pancetta when making Carbonara, or simply ask for it sliced and snack on it with your favorite table cheese.

The Lowdown:Taking Spanish goat cheese to a new level, and possibly meeting if not surpassing its French counterparts, Leonora will rock you gently into the wonderful world of barely-aged goats. Never peppery and always decadent, this offers the ultimate balance of tang, acidity, and lush texture.

How to eat it:Drink a farmhouse saison, wheat beer, crisp white wines, or sparkling anything with this one. An absolute must in your next omelette, on top of fresh guacamole, or even blended into strawberry ice cream. Wanna go nuts? Get some nuts. Also, honey.

the story:Made by a man named Oscar, goat cheese in Spain is the most readily available type. The goat, referred to at times as the poor man’s cow, is able to easily navigate the mountainous terrain of northwestern Spain. The rind is covered in natural bloomy, white molds and creates a pillowy fortress to protect the creamy center.
