The Brilliance of Fall

Fall foliage, two words that evoke a desire to board a Circle Line boat on the Hudson River for a cruise up to West Point or Bear Mountain. For those who get seasick, a ride along the Palisades or the Garden State Parkway can also quench the yearning to witness the beauty of nature. If you prefer to chug along the Hudson River Valley to satisfy the craving for leaf peeping, it can be accomplished by riding the Metro North from Grand Central to Poughkeepsie. Residents in the tri-state region need not travel to the New England states to appreciate the glories of fall. Not all leaves turn vivid colors in the fall. Only a few of the many species of deciduous trees, notably maple, aspen, oak, and gum produce stellar performances for the autumn spectacular in North America. Several factors contribute to the color, such as temperature, precipitation, soil moisture and most of all light or lack of light. The amount of daylight relates to the timing of the autumn equinox. Wherever you choose to observe it, relish in the splendor that Sea Breeze is situated in a seasonal change climate. I will, because fall has always been my favorite season.

Civic Affairs Group

1. Oyster Creek: The focus of the Civic Affairs Group, under the banner of CCLC, is on the already begun decommissioning of Oyster Creek. The NRC has been totally unresponsive to all the questions submitted to them by us and other groups. We have received support from Senator Connor, Assemblyman Rumph, Assemblywoman Gove and Congressman Kim. Congressman Kim has written to the NRC asking them to provide answers to our questions. Among the unanswered questions we have are ones concerning the Nuclear Decommissioning Trust Fund with regard to usage and audits of the almost one billion fund. The Asbury Park Press and other media outlets have interviewed Ron Martyn and Paul Dressler. They have also been contacted by other groups similar to ours, asking for support and assistance in their decommissioning efforts. The NRC will establish a public meeting sometime in the fall. This appears to be a little late since the decommissioning is already starting.

Welcome New Homeowners to the Sea Breeze Community!

Karen Rozansky and Jerry Boele moved into 3 Marque Street on April 26, 2019. Karen previously lived in Nutley, NJ. She and Jerry are now snow birds splitting their time between Sea Breeze and Del Rey Beach, FL. Karen worked on Wall Street for Prudential and later Morgan Stanley, retiring after 50 years. Jerry worked in the restaurant business for over 40 years. He opened, set up, managed and trained employees for many different establishments. Jerry has 4 children, 9 grandchildren, with 1 more on the way and 2 great grandchildren. Jerry enjoys playing billiards and exercising in our gym. Karen enjoys exercise classes. They both enjoy playing golf and pinochle as well as traveling.

Paul and Linda Mottes moved to 171 Ambermist Way in May of 2019 from Branchburg, NJ where they resided for almost 30 years. Paul has been retired for just a year now after working as an underwriting manager for FM Global for 38 years. Linda formerly worked as a math teacher in North Plainfield for 7th and 8th graders. She retired from the teaching profession in order to raise her children. Paul and Linda have three children, a daughter and two sons. Paul enjoys playing golf and bowling. He is a huge Jets fan and is the holder of Jets season tickets for over 35 years. Mary enjoys crocheting and scrapbooking. She is looking forward to the clubs here that relate to her hobbies.

Hector and Madeline Velazquez moved to 213 Ambermist Way in March 2019, from Tinton Falls, NJ, where they lived for over 20 years. Hector is a retired judge. He enjoys scuba diving, golf and spending time with the grandchildren. Madeline has been working as a compliance manager for the past 27 years. She enjoys golf, and currently plays on a women’s league in Colts Neck. Madeline also enjoys scuba diving, biking, tennis, and photography, both land and underwater. Hector and Madeline have 3 children, 2 daughters and 1 son, all living in NJ. They also have 5 grandchildren, 4 girls, 1 boy, and a grand dog.

Bill and Julia Vanore moved to 186 Ambermist Way on May 29, 2019 after living in Toms River for the past 23 years. Bill has been retired for less than a year from his 21-year career as the Education Guidance Director at Monsignor Donovan High School. Prior to dedicating his skills to the youth of our neighboring town, he labored for 15 years for a variety of insurance companies. Julie is still employed full-time as the Chief Administrative Officer for a non-profit organization, Preferred Behavioral Health Group, in Brick. She has thrived there for 32 years and has no plans of retiring soon. They are the parents of two sons. Bill enjoys golfing, hunting deer and turkey, fishing, cooking and working around the house. He sees Pickleball and biking as his new hobbies. Julie spends her spare time

reading, baking and crafting. They both enjoy attending Bruce Springsteen concerts and traveling. The Outer Banks in North Carolina is a favorite spot and they recently returned from a Baltic Sea cruise.

“Can you name a teacher who was a positive force in your education?”

Nicole De George: “Professor Wynne, my Project Development teacher. She pushed me to step out of my comfort zone. I eventually did a photo documentary about the Jersey Shore and I owe it to her.”

Bud DeFiglio: “My senior year of high school at Seton Hall Prep with Father Higgins was memorable. After 12 years of Catholic education, he was able to take all the indoctrination and convert it into real world applications. He framed it in such a way that

I did not need to abandon what I had been taught, but was able to move forward with it.”

Barbara Banach: “The nuns of my early education taught me grammar, vocabulary and writing. It wasn’t until my junior year of high school that my English teacher Mr. Smith, was able to encourage me to use those early skills and put them to good use. I wrote

short stories and developed a love for writing.”

Tim Pinelli: “It would be Dr. Thomas Medwick, my college pharmacy teacher. He inspired me to pursue my career in pharmaceutical studies. He was a dead ringer for Felix Unger and had that same dedication and motivation as the Odd

Couple character. He was a strong advocate for the profession that I chose.”

Debbie Pfeffer: “My 5th grade teacher Mrs. Humberman had a niece who was married to Neil Sedaka. The entire class received autographed photos of Neil. This paved a path for me regarding music. I still have a love of music today thanks to that

photo.”

Sean Hanlon: “My high school math teacher at St. Peter’s Prep in Jersey City was John Duffy. He made the subject so clear that I was a 95% student in his classes. His classroom was organized and the atmosphere was conducive to learning. He demanded a

disciplined environment and he had it because the students respected his dedication and character.”

The college teams will all have reported to pre-season camps at the end of July through early August to begin the preparation for the season which starts on August 24. I would like you to try a little exercise for me. Pick out your four teams for the college playoffs, write them down, and see how you did come December.

The pros have all started pre-season camp at the end of July and will have finished the exhibition season by the time you read this article. I hope all the teams have made it to the starting gate healthy; it is the surest way to a good season. On the professional level, pre-season camps have changed significantly over the years. From 1988 to 1993, the New York Giants had their pre-season football camp at Fairleigh Dickinson University-Florham (called Madison at the time) while I was the Athletic Director and Head Football Coach. They had close to 100 players in camp and most days they had two sessions with contact in at least one session. The practices ran approximately two hours and were open to the public at no charge. It was also fairly easy to interact with players and coaches after each session. It was a great experience for me and many of my players who worked the field for the Giants during their practices.

Today, pre-season camps are highly regulated. There are strict limits as to how many players are allowed in camp, the number of practice sessions daily and weekly and how much contact is permitted during each session. It is very different now than it was 10 to 20 years ago. Also, most teams now charge to get into practice sessions and restrict interaction with players. It is still however, a great opportunity to see your team up close for a reasonable price. Like my college exercise, see if you can pick the finalists in the NFC and AFC and see how good a prognosticator you are. The kick-off is here. Travel Tips: Travel Insurance and the Need for It

You’re planning the trip of a lifetime and now the big question, “Do I need travel insurance?” It is important to understand that disruptions are a regular part of modern travel. What happens if your flight is delayed or canceled, or your connecting flight has come and gone? There is a good chance your cruise or tour may have left without you, and then what happens? Many of us think we are healthy and that nothing would happen to us, but what happens if you or a traveling companion become sick or injured while traveling? Do you have coverage for a hospital stay for medical emergencies or emergency medical transportation?

Here are 10 reasons why experienced travelers choose comprehensive travel insurance:

1. Life is unpredictable and some trips need to be canceled. 2. Airlines mishandled more than 21 million bags in 2013. Travel insurance can provide coverage to replace needed

items if your bags are delayed, damaged or stolen.3. Credit card coverage may not provide sufficient coverage for travel. Though it helps, it will never be as extensive

as a separate travel insurance plan.4. Sick happens. Nothing can ruin a vacation like getting sick or injured. Travel insurance can provide you with peace

of mind – especially when traveling outside the U.S. where many hospitals request cash payments in the thousands before treatment can even begin.

5. Health insurance may not go the distance. Many U.S. health insurance policies, including Medicare and Medicaid, don’t cover international travel. And, those that do will most likely not cover the cost of a medical evacuation back to the U.S., which can cost more than $50,000.

8. In the event of an emergency, airlines are not required to refund a ticket. It’s ultimately the airline’s decision whether to give you a full refund of the ticket cost. Most times, they will give you a credit, less a penalty fee, towards future travel.

9. Flight delays can add up. It’s not the airline’s responsibility to cover the expenses you accrue when your flight is delayed, or you miss a connection. Travel insurance can reimburse you for costs associated with these, including rebooking fees, meals and accommodations.

10. We all experience tough economic times. The loss of a job or other income might mean a trip planned in advance may have to wait. Travel insurance can put cash back into your pocket when you need it most.

When planning a trip, think about incorporating the cost of travel insurance into the price and give yourself peace of mind that if something unexpectedly happens, you are covered. It’s important to have coverage that will reimburse your non-refundable expenses. It will cover you for unexpected travel expenses, a medical or dental emergency, etc. If you do have credit card coverage for travel, I suggest supplementing it with a travel insurance policy to reap the benefits beyond what the credit card covers.

I always say, “It’s better to have it and not need it, then to need it and not have it!”

Back to SchoolI was a student from the age of 5 to 20 and that was

followed by 42 years of teaching. My year began on September 1st and ended on August 31st, not January 1st- December 31st. Even though I have been retired for 6 years my New Year is about to begin again. Every September I find myself reminiscing about my school days as a pupil along with memories of my former students. Can you recall your favorite year of school, favorite subject, favorite teacher or experience? Strain your brain, think back and share that memory with a family member or a friend. The young will soon embark on another journey of acquiring knowledge. That is one excursion that should never end. Don’t just take your grandchildren to a ballgame or out shopping but take them for a walk down memory lane and share your school experiences with them. We all went to school, so it’s easy to share that common bond. Some of us have family members going off to college for the first time or maybe their final year. Others have relatives in high school or have someone beginning Kindergarten or Pre-School. Summer is rapidly disappearing so a couple of summery touches are in order. So let’s celebrate before it completely disappears.

Cucumber and Peach Salad

Vinaigrette1 shallot, finely chopped 1 lemonKosher salt 2 tbsp white wine vinegar

Salad and Assembly2 lb cucumbers, sliced ¼"-thick wedges/rounds 1 lemon, halved1 English cucumber, halved & sliced crosswise Freshly ground black pepperKosher salt Handful of basil leaves, torn if large2 lb yellow peaches, sliced into ¾"-thick wedges Handful of mint leaves, torn if large4 oz mild feta, crumbled

PREPARATION: Vinaigrette: Place shallot in a small bowl and season with a big pinch of salt. Finely grate zest from lemon into bowl; cut lemon in half and squeeze in juice. Add vinegar and toss to combine. Let sit 10 minutes.

Salad Ingredients Place cucumbers in a medium bowl and season with salt. Spoon half of vinaigrette over and toss gently to coat. Place peaches in a serving bowl or on a platter and season with salt. Spoon remaining vinaigrette over and toss gently with your hands to coat. Add cucumbers to peaches; toss gently again just to combine. Add feta; season with salt and pepper. Top salad with basil and mint and squeeze lemon over.

It is important that the mint is gently muddled - never crushed - to release its flavors but not release harsh or bitter tannins into the beverage. A stainless muddler is recommended.6-9 large mint leaves ½ cups seltzer water (Club Soda)4 teaspoons sugar 2 oz white rum½ fresh lime, cut in 4 wedges 6 to 8 ice cubes

Muddle mint leaves and 1 lime wedge in a tall strong glass until crushed. Add sugar and 2 more wedges muddle further to release lime juice. Add ice, rum and club soda. Stir well, garnish and serve.

New Stores Coming ToOcean County Mall

After the Sears store closed in 2018, a major renovation began at the Ocean County Mall. Simon Malls demolished the Sears store and is building a lifestyle center in its place. The Sears store is being replaced with new retail spaces and a new entrance on the north side of the mall. There are also plans to add new restaurants.

To date, LA Fitness, Ulta Beauty, and Homesense have signed up as tenants. LA Fitness will be housed in a 34,000 square foot building separate from the main mall. Two other additions to the mall will be constructed, and one will have five tenants and the other three in spaces ranging from 2,850 square feet to 28,000 square feet. Construction is expected to be complete by the middle of 2020.

A LITTLE BIT OF GOLF TALK

What is it about golf that not only attracts us, but literally pulls us to the golf course to pick up that club? To pick up that club? Most of the time we golfers are not particular about where we play, just that we play. Naturally no one wants to play a round in what we consider to be a “cow pasture”. It’s awfully expensive to play the top courses, yet golfers find a way to do just that.

Whether you are a golf fanatic or just an occasional player you will always find a course to suit your game, as well as your wallet.

1996 was a long time ago, but my husband, Paul and I had the opportunity to take an organized golf trip with Jerry Quinlan’s Celtic Golf. It was a great experience, not having to lift a finger to make any of the arrangements. What a time we had playing on some of Ireland and Scotland’s great links courses.

Even though I knew we had to walk the courses I put off having the knee replacement, for which, I was in desperate need . I figure with the way I was playing, I would certainly be walking up some of those impossible looking hills (to my eye anyway.)

I found myself walking up several very steep hills and climbing out of those unbelievable deep bunkers. On the Ballybunion course I broke 100 for the first time! What a thrill it was.

Then we flew over to England to watch the British Open at Royal Birkdale where we watched a very young amateur, by the name of Justin Rose, on the practice green. Then while taking our first walk around, to get a glimpse of the players, I slipped in the mud and it was so mucky, that when I stood up my slacks fell down to my knees. Talk about embarrassing! It was a good thing they had golf apparel sales tents everywhere. Paul had to miss a good part of the tournament looking to buy me a change of clothes. Needless to say, the bus driver was not going to let me on the bus with all that muck and mire, as they say. I almost went back to the hotel with plastic bags wrapped around my bottom!

I would like to invite anyone with a special golf story to send it along to me. I will gladly pass it on to the community. After all, everybody loves a good story.

Making the Perfect Cup of Coffee – Part 2

The most important (and difficult) part in making a great cup of coffee is trying to determine how much ground coffee to use. If you experiment with the amount of ground coffee, you will be rewarded. Then, all you have to do is write down the ground coffee-to-water ratio and you’re all set. The recommended amount is between one to two tablespoon scoops of ground coffee per six ounces of water. If you’re making a mug of coffee, you will need significantly more coffee. Some of my mugs hold more than 20 oz. of water.Other Tips:1. If using an electric drip coffee maker, put the coffee

in a thermal carafe as soon as it’s made. Lightly stir the mixture, since the stronger coffee will be on the bottom. Heat from the warming plate will ruin your coffee quickly!

2. The ideal extraction temperature is between 195 – 205F. Do not use boiling water if you are using the pour-over method. Hint – if your electric drip does not make the coffee hot enough, do a “water-only” trial. Then, pour the hot water out and make another pot. Also, clean your coffee maker every few months.

3. If your machine still makes the coffee a tad too cool and you use milk in your coffee, pre-heat your milk in the microwave.

4. Coffee beans go stale quickly and ground coffee even quicker. Ideally, you should grind your own beans, but that’s time consuming (and messy). Use an airtight container which removes the air to keep ground coffee fresh. You can also use Nitrogen in a spray can (purchased from a wine store) to remove oxygen from your airtight container.

5. If you prefer the pour-over method, pour 1/3 of your water and then wait 30 seconds for the coffee to bloom. Then, pour the remainder.

What’s Your Stupid Question?Can you recall a lapse in concentration and drifting

off as you were brushing your teeth or weeding the garden or just taking a stroll along one of Sea Breeze’s paths? Suddenly a question enters the depths of your mind; maybe you were wondering about something that didn’t seem to have a logical origin or why the word “abbreviation” is so long. Abruptly you shake your head and say, “That was a stupid question.” Most of us have been there and done that.During the 1980’s a group of teachers realized that their students weren’t asking questions for fear of sounding stupid. They created a day dedicated to letting students ask the questions they were ashamed of. By making a place that was safe for all questions, they were encouraging them to open up and share their curiosity with the class, without fear of being ridiculed. Ever since then Ask a Stupid Question Day has been an annual event celebrated by American Schools. This year it will be celebrated on September 28th, but many teachers reprise it on the last day of classes. As a former teacher I can tell you that my colleagues and I always encouraged questions especially when the student began with, “I know this is a stupid question, but…” I often praised them for their courage and explained that there were others in the class wondering the same thing.

Here’s a stupid question, “Why was I chosen to write this story?” Answer: because I am the Inquiring Photographer and I have often been told that some of my questions are stupid. I once told a student that there is no such thing as a stupid question, only stupid people who ask questions. I’m glad my class understood my humor and sarcasm. Hope that all of you do too.

Restaurant Review

BJ’s Restaurant & Brewhouse1275 Hooper Ave.Toms River, NJ

This new casual dining restaurant has been open since the beginning of July. The main attraction is the craft beer. They offer their own signature brews in addition to seasonal and local brews. Since it has not been open long, it is still very busy. They do not take reservations, but have a “call ahead list” that worked out very well. We arrived at a busy dinner hour with many people waiting, but were seated within 15 minutes. It is cavernous inside so the noise level is very high, and the service is slow because they are still getting organized.

The menu offers something for everyone from pizza, sandwiches, tacos, salads and burgers to ribs, steaks and slow roasted turkey. They also offer lunch specials and an Enlightened Menu that consists of sandwiches and entrees that have been lightened up to reduce fat and calories. All menu items list calorie content—a good thing in these casual dining establishments since many of the items can be very high in calories. We had the handcrafted burgers and a steak salad entrée. The server told us that instead of fries with the burger, you may substitute a vegetable, side salad, mashed potato or baked potato. The burgers were cooked as requested, and the meat was good quality and flavorful. The steak was seasoned well and very tender. We also had craft beer that was very good. While we would go back again for a casual meal, it did seem pricey when compared to restaurants in a similar category.
