I can eat food wIthout thInkIng, but that’s not to say I don’t think about the food I eat. organic? Ideal. dry-aged steaks? Pour the pinot. a box of cheez-Its can be

a meal, if there’s salami in the fridge. My kids’ leftovers wrapped in a tortilla—anything wrapped in a tortilla. that’s a meal too. I drift between gastro-debauchery and gourmet, with occasional stabs at healthy eating. the best meals are always an event: collared-shirt night with a bloody chateaubriand and a big red in crystal stemware; better yet, sausages snapping over a campfire, the wind cold and the beer colder. Stand me up at the lunch counter or seat me in a grand hall of gastronomy, just don’t ask me what kind of food I like.

there’s no simple answer to that question. taquerias or fine din-ing? Yes, please.

one thing I do know is that good cooking is not all about the ingredients, blasphemous as that may sound. “fresh, local, seasonal,” with a side of “sustainable,” is the culinary catchphrase du jour. and I like those elements on a menu, don’t get me wrong. But when I go to a restaurant with a real chef, I want more. technique. execution. Presentation. then there’s creativity: the X-factor that can catapult a dish from good to great.

My wife and I were at one of the better area restaurants not long ago and the chef sent out an appetizer of local baby carrots. they were adorable—wee orange spears. they tasted exactly like carrots.

It’s an admirable concept—the poetry of purity—but I can peel my own carrots, thank you. consider a less contrived version of eco-conscious food: roadkill. Locavore forager extraordinaire Jonathan Mcgowan has lived for 31 of his 45 years off dishes like owl curry

and pigeon au vin. “Rabbit is actually quite bland,” he wrote in an article for The Guardian newspaper. “fox is far tastier; there’s never any fat on it, and it’s subtle, with a lovely texture, firm but soft.”

Squirm-worthy, isn’t it? Macabre! Perhaps, but that’s what he thinks about our diets too (most of us, anyway). his vulturine tendencies are a response to what he considers a “grotesque” meat industry. his choice is “rooted in respect for the environment,” and he’s never gotten sick from, say, badger stew or rat stir-fry.

Still, you won’t find me at Jonathan Mcgowan’s table. I’ll take the ecological low road on this one. I mean, really, aren’t sustainably farmed oysters (p. 22) green enough? and I have been meaning to drop by the troyna family’s spread (p. 37) for fresh, organic eggs and a few tips on raising chickens; we’re considering putting in a coop. But roadkill? no, thanks. I’ll pluck a bird or gut a fish. I’m not above organ meats, and I even like tofu. But I draw the line at gopher. Besides, I get enough nourishment from Mcgowan’s food descrip-tions. his pan-fried craneflies with olive oil, celery, and raisins, for example, which he describes as “a bit like a waldorf salad, only with daddy longlegs.

“I don’t eat the legs, though,” he clarifies, tacking on a brilliantly ironic zinger. “That would be weird.”

The firsT Time i TasTed PorT wine was at the Ranch House

Restaurant in Ojai, more than twenty years ago. A gentleman at the next table

offered me a taste of his hundred-dollar glass of Port; I can still recall the initial

robust bite, followed by a smooth berry-like finish. Since then, Port has occasionally

made an appearance on my wine radar screen (Watermark Restaurant in Ventura has

a good selection), but it wasn’t until I began planning a trip to Portugal that I became

interested in where it comes from: Porto, in northern Portugal. Last month, my hus-

band and I leisurely traveled from Lisbon to Porto, with a stop in the Dao wine region,

where we found ample opportunities to taste the strong, sweet wine for which I’ve

developed a genuine affinity.

Technically speaking, Port is a fortified wine. By adding brandy wine or grape spirit

to the grapes during production, the fermentation process is halted, leaving much of the

original sweetness of the grapes intact, which results in a finished product that is often

served after a meal with dessert or cheese, or as an aperitif, before a meal. The fortifica-

tion also results in a higher alcohol content than other wines: eight to twenty percent.

Which could explain why I slept so well in Portugal.

Port was “discovered” in the 17th century when British merchants added brandy

to the wine of the Duoro region of Portugal to prevent it from souring while in transit

across the Atlantic. They found that the finished product was stronger, sweeter, and

better flavored than the wine they set out to make. Given the varieties of Port to choose

from—dry, medium-dry or sweet white, aged tawny, ruby, vintage, or late bottled

vintage (LBV)—the selection you make will determine the outcome of your Port wine

experience. And drinking a good glass of Port is an experience.

While we dabbled with Port tasting in Lisbon, and drank homemade earthy-

tasting port-style wine during a stay on a vineyard in Viseu, it was when we first arrived

in Porto, where the Port lodges are located, that we stumbled, quite literally, into a

Port wine bar called Vinologia. Here we tasted three varieties (a crisp dry white, a ten-

year tawny, and an LBV) along with some Portuguese cheese. Each Port was superb,

although the flavors differed dramatically: the dry white (usually served as an aperitif)

was chilled and had a slightly fruity, somewhat nutty taste; the amber-hued tawny,

served with a slight chill, had a spicy, opulent aroma and a mellow-sweet flavor; and

the late bottled vintage had an elegant deep ruby-color, was served at room tempera-

ture, and filled the entire palate with a sublimely complex fullness that

lingered languorously on the taste buds. They all went splendidly with

the cheese. Personally, I think Port goes well with most anything, but

according to the experts, each variety is best paired with a certain type of

dessert, nut, or cheese.

Porto is located along the banks of the Duoro River, where it enters

the Atlantic Ocean, and all Port wine originates in the Upper Duoro

valley, which stretches all the way to Spain. Only grapes grown in this

demarcated region, with a climate of hot, dry summers and severe win-

ters, can become true Port wine. In 1756, the Duoro was defined as a

protected region, making it one of the oldest wine regions in the world.

Timeless vines grow on terraces on the steep sides of the river and are

separated by ancient stone walls; the area is now a World Heritage Site.

Local villagers still pick the grapes by hand in late September, and many

producers continue to use the traditional method of foot treading to

make their wine, although some also use long wooden plungers to assist

the treading process. Until the dams were built, in the ‘50s and ‘60s, the

Port was floated down the river to the cellars in flat-bottomed boats

called barcos rabelos. Today it arrives via tanker trucks and the barcos

rabelos are merely photo opportunities.

While the historical center of Porto is filled with Old World

charm—centuries-old churches and buildings dot the steep hills—the

Port lodges (perhaps the main reason for going to Porto) are located just

across the river in Vila Nova de Gaia. The lodges, or caves as they are

called in Porto, are where the wine is aged, blended, and bottled. A spec-

tacular bridge, the Ponte de Dom Luis I (built in 1886 by an assistant of

Gustave Eiffel) links the two neighborhoods. From our rented studio,

located next to a 14th-century church, we took a funicular to the water-

front then walked across the bridge to Ramos Pinto lodge for a tasting.

Ramos Pinto uses wine brandy from the Cognac region of France

to fortify their wine. The tasting room is spacious with comfortable

seating, which added to the pleasure of tasting five varieties of luscious

Port. My favorite was the fifth glass: a creamy twenty-year-old tawny

that tasted similar to a liquid version of crème brulee. A tawny is made

from a blend of red grapes that age in wooden casks from three to 40

years, which turns the wine to a golden-brown color, hence the name;

it is ready to drink when bottled. After tasting, we toured the cellar, which was

musty smelling and filled with large wooden barrels of aging Port.

The following morning we walked across the river and up a very steep

cobblestone lane to visit Taylor’s Port lodge and cellar. A large circus-like tent

drapes across the ceiling of the tasting room and glass doors open to a small

formal garden complete with roaming peacocks. Since it was not yet noon when

we arrived, we only tasted three varieties before the tour: a sweet white, a vintage,

and an LBV. A vintage Port is made entirely from a single declared vintage year

(mentioned on the label), which occurs in only about three years per decade,

and is non-blended, or from a single harvest/vineyard. A sample is sent to the

Port Wine Institute for approval, and only then can a Port be declared a vintage.

Vintages are bottled after two years in the cask and continue to age in

the bottle, where they can be kept for several decades; maturation in the bottle

improves the quality. The bottles need to be stored in the dark and horizon-

tally, so that the wine has constant contact with the cork. An LBV is matured in

the cask for four to six years and is ready to drink when bottled (which is why it

is called a late-bottled vintage). An added delight at Taylor’s was a terrace view

café that overlooked the river and historical Porto. We admired the view as we

lunched on cod (a traditional Portuguese dish) and then shared an eight-dollar

glass of smooth, sweet Taylor’s vintage Port.

Throughout our stay in Portugal, it became evident that the people are

very proud of their traditions and their wines, particularly their Port. Every

night in Porto, after feasting on seafood fresh from the Atlantic, we knew that

when we asked our waiter for a Port suggestion to complement dessert, his face

would light up and he’d recommend his personal favorite, assuring us, “You

Considering my “Jolly” heritage —my paternal grandmother was Flossie Jolly—it seemed logical that I would be curious

about The Jolly Oyster, a shellfish peddling food truck parked at San Buenaventura State Beach. What exactly is this thing, and is there really a jolly oysterman behind the Jolly Oyster?

Turns out there are two: Mark Reynolds and Mark Venus. Reynolds, the founder of The Baja Oyster Company, can often be heard in the beachside parking lot pontificating about shellfish and sustainability. “The world’s fisheries have reached their maximum sustain-able annual yields of approximately 80 million tons,” he told me recently. “Meanwhile, a growing world popula-tion and changing eating habits may lead to a demand of 230 million tons of fish annually by the year 2030. The gap will be met, in part, by aquaculture. And our company is concentrating on the most environmentally friendly, sustainable sector of shellfish farming.”

But let’s take a step back and start with a quick lesson about seafood, and the definition of aquaculture.

Aquaculture: the farming of aquatic organisms such as fish, crustaceans, mollusks, and aquatic plants. The practice involves cultivating freshwater and saltwater populations under controlled conditions, and can be contrasted with commercial fishing, which is the har-vesting of wild fish.

Now that we know what we are talking about, let’s address seafood politics. There are varying opinions about farmed fish. Initially, conscientious foodies (like me) were instructed to eat only wild fish, because farmed fish often contained antibiotics and dyes, depending on the farming methods. We were also advised to not eat certain wild fish, as the populations were dwindling. What was left? We are now learning that not only is responsible fish farming okay—it is, in certain cases, bringing species back to life.

Case in point: endangered shellfish could go the way of the abalone I used to collect on the rocky shores of Malibu as a child with my father. Little did we realize at the time that our family was harvesting and consum-ing 30-year-old sea creatures that would become nearly extinct. Channel Islands. And just across the channel, within eyesight of the islands, sustainably

farmed oysters and manila clams are being sold to the public from a simple kiosk by the sea in San Buenaventura State Park.

FiFteen years ago, two Brits named mark circled the globe to establish a shellfish company focused on sustainable filter feeding mollusks, including oysters and manila clams. Mark Reynolds,

who’d worked in the corporate banking world in Hong Kong, Chile, and Brazil, traded his suit and tie for clam diggers and sunscreen. A 47–year-old single father of two with a Masters degree in aquaculture, he has become the face of the company. His business partner, Mark Venus, an ecologist based full-time in Baja, California, has had the aquaculture bug his entire life.

“We weren’t happy setting up just any old shellfish farm,” said Reynolds. “We wanted to find the most incredible aquaculture garden in the world.”

Growing an oyster takes time, patience, knowledge, fortitude, and a certain degree of luck. First, the oyster is spawned and larvae produced. That changes into seed, which fixes onto something (usually a rock) that is then planted in undersea boxes. There is tending and grading, among other care-giving, to do. Then it’s time to hurry up and wait. Eighteen to 24 months later, the oyster is ready to be harvested and transported back to Central California

where it will be shucked and slurped. “Mother Nature has taught me a great deal,” Mark notes in a video on

the Jolly Oyster website, admitting that he “didn’t understand Mother Nature” and underestimated her force, thus gaining respect and gratitude over the years. “We are doing something that is sustainable in a completely natural environment.”

One disadvantage of mollusk farming is that they tend to live and feed off micro algae in isolated areas where there’s no electricity, water, or people—just Mother Nature. Changes in environmental conditions can kill oysters, and management is key to the success of any aquaculture farm. The partners dis-covered two ideal locations down in Baja, protected bays where the water is cool and there’s plenty of food (algae).

In 2011, they took their business model to the next level and went from production and wholesale distribution to selling to the public. A year ago, the California State Parks system, having reviewed their proposal, allowed a pilot program of selling their Baja shellfish in the park. If all goes well, the program could be expanded into other state parks.

And on a purely gastronomic level, it is going well. The proof is in the oyster. I have experienced pure bliss at the seafood stand in Ventura, mostly from the uniquely briny taste of the oysters themselves, but also by learning a new skill. Shucking, or cracking open, an oyster is really quite easy. All you

A couple of friends and I gathered recently at the State Beach for sunset Champagne and oysters. I confessed to being a klutz, but before long I was opening those petite Kumamotos like a pro. A squeeze of lemon or lime, maybe a dash of hot sauce, and… slurp. Who could ask for anything more? v

WHAT TO BRINGTOOLS. This is not a restaurant; you’ll shuck and prepare your own shellfish. We recommend you bring an oyster knife ($5 at the kiosk), a clean cloth, and gloves.

TIPS. A cooler with ice is a good idea, as is a nice loaf of bread or crackers and some lemons and/or limes. If you plan to cook, bring charcoal, garlic, and butter.

AND TO DRINK? Pinot Gris. Sauvignon Blanc. Champagne. Wine and beer are allowed in the State Park. Make good use of this legal exception with something cold, crisp, and refreshing.

Back to the landIt’s a short trip from farm to table at the

Troyna home, where organic agriculture

is a family affair.

the sign posted at the gate to Rusti and Kristi Troyna’s Oak View urban farm reads, “Old dog, young dog, several stupid dogs. Please

drive slowly.” Sure enough, I’m greeted by a friendly gray-ing mutt that wants a scratch.

“They’re herding dogs, and they keep the chick-ens alive from the raccoons and coyotes,” says Rusti, who worked in construction until a year ago when ill-ness forced him to leave his job. Now, he and his wife, Kristi, manage a sustainable farm of fruits, vegetables, horses, goats, chickens, ducks, turkeys, cats, and, yes, dogs. And they do it all on only an acre-and-a-half of land, which probably wouldn’t have happened if it wasn’t for Rusti’s illness.

“I was diagnosed with mercury lead poisoning from all my years in construction,” says Rusti. “Part of the rea-son we started doing this was for my health condition.” He says Kristi and his doctors urged him to eat more healthy and organic.

They started raising organic produce and organic fowl for meat and eggs, and the results were dramatic. Rusti describes his health improvement as, “Night and day. I’m better now.”

“Good things come out of bad things, I guess,” says Kristi, a former government employee who left her day job to raise the couple’s two children: Hunter, 7, and Ella, 3.

Eating homegrown and organic was half the equa-tion. The couple also saw it as an opportunity to make ends meet by consulting and educating others, selling organic eggs and meat, and ramping up Kristi’s already successful work with her horses.

“We’re trying to make a go of this, or I’ll go back to doing what I was doing,” says Rusti.

About a third of the property is devoted to horses—three of their own and four that they board. “I didn’t start out to create a business. I was a stay-at-home mom,” but word of mouth, says Kristi, brought her plenty of busi-ness giving riding lessons, training for a private ranch, and showing and boarding horses. “We ended up having really great people here that feel like family.”

one of Kristi’s boarders arrived with a goat that never left. “You know the term, ‘Get your goat’? Goats were companions for racing horses. Well, the horse went to a new home, and we ended up keeping the goat. We put the goat on the hill, and as you can see, it’s bald,” says Rusti, pointing to a cleared-off hill-side where poison oak and invasive plants previously grew into a massive thicket.

After experimenting with raising different breeds, including Nubians and Nigerians, they’re now focusing on breeding and selling mini Nubians.

“They’re very docile and great milkers,” says Kristi, adding that their size and easy handling makes sense for amateur backyard farmers looking to jump on the urban farming bandwagon.

“The milk tastes just like organic raw cow’s milk. It’s amazingly flavorful. We just love it,” says Rusti, adding that because of the legalities and controversies surrounding the distribution of raw milk, for now they keep it all for themselves and the goats’ nursing “kids.”

The farm inhabitants that seem to vie for the most attention are the fowl. Raising “organic and happy” chickens for eggs and meat hasn’t been easy, but they have a sense of humor about it. Their Facebook page shows a picture of recently butchered and processed poultry with the caption, “It’s going to be a lot quieter around here without all those roosters!” Organic poultry and eggs from their 40 lay-ing hens have made them pretty popular with friends and neighbors.

“We sell our eggs for three dollars a dozen, which is really cheap for organic-fed, free-range. The chickens support themselves,” says Rusti.

The farm is a family affair, and the couple’s two children love to get in on the act. Ella gets a kick out of gathering the eggs, which come in a variety of pale pastel colors. Hunter feeds the fowl every morning, but his parents are mindful of how closely he bonds with the birds in his care.

“He has gotten attached to certain animals. We have trouble butchering some of them,” says Rusti, gesturing to a large white turkey, clucking and following close on Hunter’s heels. “We ended up pick-ing up this white broad-breasted female from someone that was raising her in Ventura as a pet. She is extremely friendly.” The turkey was named Tammy and spared permanently from the butcher block.

The other turkeys, however, will land on Thanksgiving tables this fall. “The turkeys were a hit last year. We did the broad breasted com-mercial bronze; they grow bigger breasts, they’re juicier, and they have more fat on them,” says Rusti, who plans to offer turkeys for sale again this November.

This summer, their attention turns to offering farm camps for kids six and older. “We’re trying to educate the next generation about better choices. If we hit the kids now, maybe the next generation will be more proactive,” says Kristi.

Farm camp includes hands-on lessons in planting and harvesting produce, milking and grooming goats, an optional butchering day, and frank discussions about healthy, humane, and sustainable food choices. Cooking classes include making cheese, ice cream, jam, and quiche. The best part, Kristi says, is the day the kids compare non-organic grocery store produce to organic homegrown produce. “They’re just shocked by how tasteless and gross food from the grocery store is.”

The goal with the farm camps and the consulting, Kristi says, is to help people make better choices for themselves, their families, and the planet. “With not a whole lot—a goat, chickens, and a garden—food is really good, and it tastes better.” v

Near the corNer of Quail oaks Drive aND foothill roaD, a couple miles from downtown Ojai’s promenade and amidst the suburban buzz of gardeners blowing leaves, kids playing on swings, and teenagers blasting their car stereos, there are sixteen rows of wine grapes clinging to

the vine, a vibrant patch of green in what was once just a dusty lot. “There was nothing but weeds out there,” said owner Boyd Ford, who planted the 400 grapevines on the third of an acre behind his home in 2000, “and I pretended that they belonged to my neighbor.”

Come September, when the clusters are perfectly plump, Ford’s family and friends will gather ‘round a pot of coffee, eat some donuts, and then spend a few hours picking his syrah. It will be the ninth harvest ever for the Topa Topa Vineyard—which produces an herbally rich and smoky red wine—but that same exact scene will be replayed this fall in backyards all over Ventura County, where an optimal grape-growing climate is allowing many a homeowner to rip out their lawns and put in vineyards.

“What Ventura County should look like is what the south of France looks like: oceans of vineyards,” said Bruce Freeman, an art teacher from Ventura’s Westside who first made wine in 1994 and has since helped count-less amateur grape growers do the same. “But we have oceans of houses, because grapes and people enjoy the same climate.” With the rapid rise of backyard vintners, though, it seems that suburban sprawl may not be incom-patible with serious syrah.

“It has been getting really popular,” confirmed Freeman’s grape-grow-ing partner, Martin Ramirez, whose company, Vineyards of Ojai (vineyard-sofojai.com), has planted in backyards from Santa Paula to Agoura Hills and estimates that there are probably more than 120 noncommercial vineyards in the county today. He charges a flat 33 dollars per plant, and then offers year-round maintenance, which runs another 5,000 dollars or so depending on the vineyard, as well as winemaking services. “Because of this combination, it’s very attractive to people,” said Ramirez, who’s been working vineyards for eighteen years now. “People seem to like it.”

But before you fill in your pool and embark on a new hobby, be fore-warned. “It can’t just be a pretty thing,” said Freeman. “They require care and a proper understanding of the grapes. You have to have good fruit to make good wine. That’s the law. If the grapes aren’t grown right, they’re worthless.”

After working one of ford’s hArvests a few years ago, Terry Gustafson turned his family’s longtime horse pasture off of Rice Road into a vineyard of syrah and sauvignon blanc, putting

about 1,000 plants on nearly an acre of land in the spring of 2008. “Some people have a garden they like to work in,” said Gustafson, who runs a suc-cessful door and window business with his son, Micah. “This is my garden.”

It’s also a family affair, from the morning of harvest—“turns out French toast and syrah go pretty well together,” laughed Gustafson—to the wine-making process. “I just started reading everything I could get my hands on, about how to make wine and not screw it up,” said Micah, the de facto wine-maker. His sister Tara, who boasts a “weirdo palate,” has worked in the Santa Ynez Valley wine business for years, and got married amidst the vineyard last year, explained, “We just figured if it doesn’t taste like vinegar, then maybe we’re on the right track.”

Indeed, that first year’s harvest of a measly five gallons of syrah turned out rather tasty, and Majestic Oak Vineyard is on track to one day produce anywhere from 2,000 to 4,000 bottles a year. “It’s rewarding and enjoyable,” said Gustafson, whose syrah is reminiscent of pepper and dark chocolate, the sauvignon blanc full of guava, papaya, and fresh flowers. “What else were we going to do with this piece of property?”

“We Want to put Saticoy HillS on tHe map,” said family physician Ed Banman, whose hilltop vineyard of syrah and pinot noir between Santa Paula and Ventura

offers views from Fillmore to C Street. Though he adds with a smile that “it will be a small map,” Banman isn’t blowing too much smoke: with rocky soils, steady sea breezes, and steep, south-facing slopes, his property is much like famed Sta. Rita Hills in Santa Barbara County, and his distinctive wines—a spicy pinot, an earthy syrah—deserve attention. That’s why he’s working to get his winemaking process bonded, allowing him to move into the com-mercial realm and sell a few cases to restaurants interested in showing off what backyard vintners can do.

Even if that does happen next year, Banman, like Ford and Gustafson, isn’t in it for the money. “It’s really a labor of love,” said the doctor, who’s been practicing in Ventura since 1975. “I don’t ever plan on breaking even.”

Instead, Banman’s benefits comes from walking around his vines every day and enjoying the camaraderie at harvest time. “When I tell people were picking grapes in the vineyard, there’s a romance to it, and everyone wants to come pick,” said Banman, who pays his autumn aides with a pasta punch. “No one’s gonna pick oranges and avocados for you, but everyone loves being part of making wine.” v
