VALLEY NOTESJune 2020
It has been a quiet couple of months as you can imagine but while thecountry has been placed on pause there has been no stopping spring at thevineyard On our daily walks with Maud it has been a privilege to witness thesteady but unstoppable emergence of leaves and then full buds on our 44000vines The pause has also prompted us to launch our online wine shop wherewe are currently offering discounts to rival our cellar door prices
Meanwhile back at the winery last yearrsquos vintage has been fermenting in vatsand thanks to some careful management and social distancing arrangementsBella and I were able to carry out the all-important task of blending the2019rsquos ready for second fermentation in bottle At Bride Valley we use the traditional method to produce our sparkling winesThe method involves four ldquomanipulationsrdquo This is the technical side thedecision of what to blend from the various tanks to make up the wineseventually offered for sale requires the human senses of smell and taste We make four different sparkling wines at Bride Valley Dorset Creacutemant(which has under four bars of fizz compared to a maximum of six for standardsparkling wine) Blanc de Blancs (which is always 100 Chardonnay grape)Brut Reserve and Roseacute Bella
Three grape varieties are planted at the vineyard ndash Chardonnay Pinot Noirand Pinot Meunier In 2019 we produced almost 40000 litres of juice Weseparated 15 for our still Chardonnay and our first still Rose (for release inJuly) leaving approx 34000 litres for our sparkling wines split as follows All the Pinot Meunier was reserved for the Dorset Creacutemant now our largestlabel This is wonderful blend of all three grape varieties Our absolute best Pinot Noir is used in our Roseacute Bella crushed very slowly toextract summer red fruit flavours and give a colour which needs to beblended with Chardonnay to lighten a little But not too much as in my view(not held by many of my peers) the more you lighten the colour the more youlose the fruit The Brut Reserve combines Pinot Noir and Chardonnay and after samplingnumerous blends for we settled on a 6535 ratio the same as the 2018 blend Finally our signature Blanc de Blancs is of course 100 Chardonnay a labelwe are very proud of
The whole tasting perhaps the most important part in the creation ofsparkling wines took a little less than an hour but many many hours ofrefection had gone beforehand and had been communicated with ourwinemaker Ian Edwards
Bottles had been filled from the various tanks and my suggested blendsprepared with the possibility of changing the balance of grapes in eachblend As the vines age - the vineyard now averages nine years old - theflavours and character of each grape becomes more precise making the finaldecisions easier to arrive at Letrsquos just hope that the wine turns out the waywe plan in 30 monthsrsquo time

With the exception of that early May frost the weather in Dorset has beenfabulous everything is growing at a rate of knots and my days have beenfilled with weed control using an under-vine mechanical weeder and keepingthe grass short which is also a good way of reducing the frost risk The vines
