SULTANAS:PRODUCT DESCRIPTION

Sultanas belong to the grapevine family (Vitaceae) and are native to the Caspian Sea. Currants, sultanas and raisins, including those still on the bunch, are known collectively as "raisins. The difference between these three dried fruits is explained below:

Sultanas: seedless, large-berried and light yellow. Larger than currants and smaller than raisins.

Currants: seedless, small-berried, purple/black color. Their name derives from the Greek city of Corinth.

Raisins on the bunch: seeded, large-berried, generally with stalk.To produce: the grapes are grown on the sultana grapevine. The

grapes are harvested when overripe. They are then either air-dried or increasingly dried in special drying plants. Most sultanas are bleached(sulfured) after drying and mechanically destalked in order to extend their storage life and prevent subsequent discoloration. Such treatment must be indicated appropriately on the packaging. Treatment with vegetable oils is intended to prevent the sultanas from sticking together.

Intended use: Sultanas are intended to be eaten raw and are used as an ingredient in nut mixes, bakery products, muesli and desserts.

HARVESTING - 1

Turkey is the biggest Sultanas (Dried Seedless Grape) producer and exporter County in the World and ranks among top 5 largest Grape Grower countries thanks to own very suitable climate. Turkey manages 38 % of the world’s Sultanas production (ca. 260.000 Tons) and realizes % 33 World Export annually (ca. 220.000 Tons) Source : INC

HARVESTING - 2

In Turkey, 30% of Grapes crop is offered as fresh, 37 % is used in Sultanas production, 30 % is used as confectionery industry and 3 % is used in wine industry. “Seedless grape” takes the first place in our export of the table grapes. A seedless variety, “sultani” constitutes  95 % of the exported grapes.

DIPPING

Grapes are dipped into a dipping solution before drying, in order to remove the natural wax from the skin of the fruit. This accelerates drying (max. 10 days) as the water is able to remove faster, thus decreasing the rate of enzymatic browning reactions. Consequently, lighter colored “Sultanas” are obtained compared to the non-dipped “Raisins”.

Sun Dried Sultanas are bleached with SO2 (to avoid deterioration and discoloration). Well-dried Sultanas are pre-cleaned by winnowing and removing large pieces of stalks, stones, very light berries and foreign matters by means of Sieves and Aspirators. Pre-sized and Packed Sultanas are transported to the Markets or directly Factories.

8- 3 x Laser Scanning (of stalks, defects, discolored, rotten and

damaged fruits, Foreign materials; stems, stones, glass, metals..) and Optic Sorting - Selection Line for Mould Berries, Berries with seed, Cap-stems Loose, Attached Cap-stems, Damaged, Sugared, Undeveloped, Shriveled and defect Berries, embedded Stalk are picked by skilled workers

9- 2 x Hand Picking Belt and Final Checks (on white laminated table under bright Lights)This Process is carried out until meeting Buyer’s Spec’s.

10- Coating with Vegetable Oil, Metal Detection and Packing (in Bulk cartons or Retail pack’s)
