  • Turkey San Choy Bow

    Ingredients

    100g vermicelli noodles 2 tablespoons vegetable oil 2 spring onions, sliced 500g turkey mince 1/4 cup ABC Sweet Soy sauce, plus extra to serve 225g can water chestnuts, chopped 1 medium carrot, grated 8 iceberg lettuce leaves 1/4 cup coriander leaves 1/2 red long chilli, chopped 1/4 cup crushed peanuts

    Method 1. Soak noodles in boiling water for 5 mins, until soft, then drain. Cut into 5cm lengths. 2. Heat oil in a frying pan over high heat. Add spring onions and mince and cook for 5-10 mins, until browned, breaking up any lumps with the back of a wooden spoon. Add sweet soy sauce, water chestnuts, carrot and noodles and stir to combine. 3. Spoon mince mixture into lettuce cups and top with coriander, chilli and nuts, then drizzle with a little extra sweet soy sauce.
