Idiot’s Kitchen Recipe – Tropical Green Smoothie Recipe from www.idiotskitchen.com Ingredients: 1 ripe banana 1 can (6 oz.) pineapple juice (or about ¾ cup) 1 cup kale leaves, stems removed 1 cup baby spinach 1 cup fresh pineapple chunks 23 “coins” fresh ginger 1 lemon, juiced 1 cup ice (if you want a cold smoothie) Break up a ripe banana into the bottom of a blender jar. Add 6 oz. of pineapple juice. Remove the dark green leafy part from the stem of a large leaf of kale and discard the stem. Tear the leaf into smaller pieces and add it to the blender. Add 1 cup (a big handful) of baby spinach and 1 cup of fresh pineapple chunks. Remove the brown peel from a small knob of ginger and cut 23 discs or “coins.” Add the ginger to the blender. Squeeze in the juice of 1 lemon. Put a lid on the blender and blend on the highest or most powerful speed. You might need to stop and start the blender and/or use a spoon (while the blender is off) to push the greens down toward the blade. If the smoothie is still not cooperating, add ¼ cup of water or orange juice and try again. Blend until extremely smooth. If you want a cold smoothie, add 1 cup of crushed ice and blend until smooth. Makes 1 very large smoothie. If you are planning to make this ahead, omit the ice so it does not dilute the smoothie.
