Welcome&ProjectGoalsWelcometotheThumbsUpforHealthyChoicesToolkit!Inthistoolkit,youwillfindtheinformationneededtosuccessfullyimplementthisprojectinyourlocalfoodpantry.Thegoaloftheprojectissimple:tomakehealthierchoicesmorevisibletopeoplereceivingfoodfromemergencyfoodsitessuchasfoodpantries.Weunderstandthatpeopleutilizingtheseserviceswillnotalwaysbeinaplacewherenutritiousfoodisapriorityforthem,andwerespectthat.However,ifpeopledesiretomakehealthierchoiceswewantittobeeasy.TheThumbsUpmaterialswillbeplacedinfrontoffooditemsthatfitspecificnutritionguidelines,whicharedefinedinthistoolkit,forahealthychoice.Thesefoodsincludeitemsthatarehighinfiber,vitamins,andminerals,andlowinaddedsugar,sodium,andsaturatedandtrans-fats.Thehealthychoiceguidelinesarebasedonthe“Foods2Encourage”programdevelopedbyFeedingAmerica,aswellasthecurrentDietaryGuidelinesforAmericans.Aspartofthetoolkityouwillreceiveshelftalkers,shelfeducators,posters,clientinformationcards,andrecipescards.Allthematerialscanbeadaptedtoavarietyoffoodpantrysettings.Weencourageyoutoexplorewhatoptionswillworkbestforyourpantryandclients.Youcanuseallofthetools,orsomeofthetoolsavailable,whateverworksbestforyourneeds.Throughoutthetoolkit,youwillfindtipsonhowtouseeachpieceoftheprojectindifferentsettings.ThumbsUpforHealthyChoiceswasdevelopedbytheUtahFood$ense(SNAP-Ed)program.ImplementationoftheprogramissupportedbytheFood$enseNutritionEducationAssistants(NEAs),andUtahDepartmentofHealth(UDOH)HealthEducators.Contactinformationforalloftheseorganizationsisattheendofthetoolkit.Wehopeyouareasexcitedaboutthisprojectasweare.Researchhasindicatedthatnudges,liketheThumbsUpshelftalkersandeducators,areeffectiveatencouragingpeopletomakehealthierchoicesinretailsettings,aswellasinfoodpantrysettings.WehopethatourworkcanhelpUtahnsmakehealthierchoicesthatimprovequalityoflifeforthemselvesandtheirfamilies.HappyNudging!CaseyCoombs,MS,RD,CDUtahFood$enseAssistantDirectorNDFSExtensionProgramUtahStateUniversityCasey.coombs@usu.edu435-797-3725

PromotingNutritionattheFoodPantry:WhyDoesItMatter?Asyoumaybeaware,therehasbeenashiftintheroleoffoodpantriesformanylow-incomeAmericans.Historically,foodpantrieswereusedasashort-termsourceoffoodduringdiresituations.Clientsutilizedpantriesforshortperiodsduringemergenciessuchasatemporarylossofemployment,oranunforeseenexpense.Pantrieswouldservetheclientsforafewweeks,oracoupleofmonths.Currently,foodpantriesareusedbymanyasalonger-termstrategytofoodsecurity.Manyindividualsandfamiliesrelyonthefoodreceivedfrompantriesformonthsorevenyears.Thislonger-termrelianceonfoodpantriesmakeitessentialthatclientshaveaccesstohealthychoicesthatareappealingandvisible.Theshelftalkers,educators,andrecipesareagreatwaytoletyourclientsknowwhichfoodswillhelpthemandtheirfamiliesimprovetheirhealththroughnutrition.Individualsandfamiliesthatarefoodinsecurearesignificantlymorelikelytostrugglewithobesityandrelatedchronicdiseasesincludingheartdisease,typeIIdiabetes,andcertaintypesofcancer.Childrenwhoareraisedinafoodinsecureenvironmentarealsoatanincreasedriskofbeingobeseasanadult.Whilealackoffoodiscertainlyonecontributingfactortotheseincreasedrisks,lackofnourishingfoodsalsoplaysanimportantrole.Familiesandindividualswhoutilizefoodpantriesshouldhaveaccesstofoodsthatwillbothfilltheirbellies,andnourishtheirbodies.Thereisalsoamisconceptionthathealthyfoodsareonlyavailabletopeopleofthemiddleandupperclasses.Webelievethateveryone,regardlessofgeographicallocationorsocio-economicstatus,deservetohaveaccesstofoodsthatwillhelpthembetheirbestandlivelong,healthylives.BynomeansisThumbsUpintendedtodecreasetheamountoffoodsthatdon’tfitthehealthychoicecriteriaoutlinedinthistoolkit.Itdoesnotintendtoshamepeopleforchoosingthoseoptionsatfoodpantries.Rather,ThumbsUpintendstomakethehealthychoice,theeasychoiceforthosepeoplewhoarelookingfornutritiousfoods.

HealthyFoodPantryAssessmentTool*NewToolforFY2019Inordertobestservethefoodpantriesinyourarea,itisbesttoidentifybothwhattheyarealreadydoingtohelpclientsmakehealthychoices,aswellaswhatthingstheywouldliketodo.Duringfiscalyear2019,wewillbeusingtheHealthyFoodPantryAssessmentTool(HFPAT).Thistoolisslightlymoreextensivethanthetoolusedduringpreviousyears.WewillbeusingtheHealthyFoodPantryAssessmentTool(HFPAT)inallofthefoodpantrieswherewewillbedoingPSEworkduringFY2019.WhenyouapproachapantrytodoPSEwork,suchasThumbsUpforHealthyChoices,pleasecompletethisassessmentoftheinitiativestheyalreadyhaveinplace.Completeanassessmentwhenyoubegintoworkwithapantryor,forpantriesyouhaveworkedwithinthepast,atthebeginningofthefiscalyear.Then,completeasecond,follow-upassessment,usingthesameformattheendofthefiscalyear,orwhenyoufinishworkingwiththepantry.Yourgoalshouldbetoseeanimprovementinthepantry’stotalranking,orscore,whichreflectsthenumberofwaysthepantryistryingtopromoteclientnutrition.YouwillfindtheHealthyFoodPantryAssessmentTool(HFPAT)onthestaffwebsiteunderthePSEtab.Youwillalsofindstep-by-stepinstructionsabouthowtocompletetheassessment,andentertheinformationintoPEARSinthesamesectionofthestaffwebsite.YoucancompletetheassessmentonlineusingyourFood$enseprovidedtabletoronapapercopy.
DefiningHealthyFoodsDeterminingwhichfoodsare“healthy”canbeanoverwhelmingandfrustratingtaskforconsumers.ThumbsUpforHealthyChoicesisdesignedtomakenutritiousfoodsstandoutamongtherest.BelowyouwillfindtherequirementsfordifferentfoodcategoriestogetaThumbsUpsign.Foodsmustmeetalloftherequirementstobedeemeda“healthychoice.”Meetingallrequirementsensuresthattheprogramisconsistentthroughoutthestate.Itislikelyyouwillencounterdifferentproductsthanthoselistedbelow.Youmayusethecriteriaforanitemthatismostsimilartotheproduct.But,ifyouareunsureaboutanitem,itisbesttonotmarkitwithaThumbsUp.Thecriteriaonthefollowingtwopagesareallbasedonaperservingbasis.Informationonnutritionfactlabelsarealsoonaperservingbasis,soyoushouldbeabletocomparethesevaluestothoseonthefoodlabelswithrelativeease.ThecriteriawereadaptedfromFeedingAmerica’sDetailedFoodstoEncourage.

Shelftalkersareamarketingtoolusedtodirectaconsumer’sattentiontoaspecificproduct.Theyaregenerallysmallsigns,liketheonesabove,thatareplacedonshelvesinfrontofcertainitems.Shelftalkershaveproventobeeffectiveatincreasingthelikelihoodthataconsumerwillpurchasetheitemtheyarepromoting.Manyfoodretailsettingsusethesetoolstoincreasethesalesofcertainitems.WearehopefulourThumbsUpshelftalkerswillhavethesameimpactontheselectionofhealthyitemsatemergencyfoodsites.Therearethreedifferentsizedshelftalkersavailable.Currently,thereare4”signs,2”signs,and1x3”stripsigns.Youmayorderthesize(s)thatworksbestforyourpantry.Wehaveclipsavailabletoattachthesignstoavarietyofshelvingtypes.However,ifyouprefernottousetheclipsthatisOK.Belowyouwillfindsomeadditionalideasonhowtoattachthem.AsaFood$enseNEAyoucanuseyourPSEhourstohelpwiththeinitialimplementationoftheThumbsUpprogram.Ifyoufindthatthepantryneedsexceedyouravailability,theremayalsobealocalhealthdepartmenteducatoravailableinyourareatoassist.Pleaseseepage10-11toidentifyothersthatcanhelp.Youarealsoencouragedtotrainpantrystaffandvolunteersonprogramimplementation.Eventually,investedpantriesshouldtakeontheimplementationontheirownwithlimitedsupportfromFood$ense.Thiswillallowustointroducetheprogramintootherpantriesandsettings.Somepantriesfinditeasiertodesignatecertainshelvesorareasofthepantryforhealthychoices.You,aswellaspantrystaffandvolunteers,usethenutritionguidelinesavailabletofilltheseshelveswithappropriatefoods.ThisgreatlyreducestheamountoftimespentmovingtheThumbsUpsignsaroundthepantry.Tryoneoftheideasbelow,orgetcreativetoattachyourshelftalkersneatlyandvisiblytoashelf:

PostersThepostersreceivedaspartofthetoolkitareintendedtogivepeoplemoreinformationaboutthefoodsthathavebeendeemeda“healthychoice.”Itdoesn’tgiveallofthedetailsofhowhealthyfoodsaredeterminedsincetoomuchnutritioninformationcanoftenbeoverwhelming.Youcanorderadditionalpostersasneeded.ThepostersareavailableinEnglishandSpanish.
ShelfEducatorsShelfeducatorshighlightsomeofthemostcommonhealthychoicesavailableatfoodpantries.Youcanprintandhangtheseshelfeducatorsinfrontoftheproducttheyarehighlighting.SincethesehavetheThumbsUpsymbols,feelfreetousetheseinplaceoftheThumbsUpshelftalkersifyouthinkthepantryclientswouldappreciatetheinformation.Ifyouneedashelfeducatorforaproductnotalreadyincludedonthewebsite,pleasecontactthestateoffice.Wewouldliketheeducatorstobeconsistentaroundthestate,sopreferNEAstonotcreatethematthecountylevel.
RecipeCards&SamplingOneofthebiggestbarrierstochoosingsomeofthehealthychoicesatfoodpantriesisnotknowingwhattodowiththem.Sharingsimple,tasty,andhealthyrecipeswithclientswillgreatlyincreasethelikelihoodthattheywillchooseandusetheThumbsUpitem.BesuretomarkthehealthyingredientsneededfortherecipewiththeThumbsUpsignwithinthepantrysoclientsknowwhichitemstoselect.Recipecardtemplatesareavailableonthestaffwebsite.Wearecurrentlyworkingoncreatingabankoffoodpantryappropriaterecipesforyoutouse.Itwillalsobeavailableonthestaffwebsiteonceit’scompleted.Food$enseNEAsarealsoapprovedtodorecipesamplingsthatuseThumbsUpitems.NEAsareencouragedtosetupasampletableinavisible,hightrafficareainthepantry.Ifthepantryallows,havingprepackagedbagswiththeingredientsneededtomaketherecipemaybehelpfulforclientsaswell.ThisisalsoagreatplacetoletpeopleknowaboutyourupcomingFood$enseclasses.

PrepackagedRecipeBagsAnotheroptionthatsomeNEAshaveusedtohelpincreasetheselectionofhealthyfoodsistopre-packagebagswithingredientsneededtomakeahealthyFood$enserecipe.Youcanorderstrong,clearbagsfromthestafforderformforthisstrategy.Oftenthepantrywillnothavealloftheingredientsneededtomakethetotalrecipe.Inthiscase,besuretoindicateontherecipecardwhichingredientsareincluded,andwhichingredientsstillneedtoobtained.ThisisagreatstrategytouseifthepantryhasalotofanitemthatfitstheThumbsUpguidelinesthattheyarehopingtomoveoutofthepantry.
ClientInformationCardsAlsoavailableareinformationcardsabouttheThumbsUpcriteriaandadditionalsourcesoftasty,healthyrecipes.ThesecardsareavailableinbothEnglishandSpanishandcanbeorderedfromtheFood$ensestafforderform.
