12 fresh oysters on the half shell3 tablespoons peanut or vegetable oil3 cloves garlic, minced1 teaspoon sesame oil½ bunch garlic chives, sliced into rings

Steamed oysters with sizzling garlic

and sesame

Arrange oysters, carefully so as not to spill the oyster liquor, onto a steamer tray. Heat the steamer bottom until boiling then place the tray in and over. Steam for 5 minutes or until the oysters are just cooked through.

Heat the peanut/vegetable oil in a small frypan on a high heat. When hot add the garlic and sesame seeds and cook until just golden, about 2 minutes. Stir in sesame oil and remove from the heat. The mixture must be sizzling hot. Place the oysters onto a serving plate, spoon over garlic and sesame sauce and sprinkle on the chives. Serve immediately.

Grilled oysters with crisp prosciutto,

lemon and parsley

Finely chop the parsley and mix with the lemon zest, onion, olive oil, pepper and prosciutto. Place a spoonful onto each oyster and place under a hot grill for 2-3 minutes until hot and the prosciutto is crisp. Drizzle over a little lemon juice and serve immediately.
