The Countryside Education Trust (in conjunction with the New Forest Vintage Tractor
and Engine Club) is holding its annual Countryside on Show event at the Out of Town
Centre in the picturesque village of Beaulieu. Come and enjoy a fun-fi lled, family day
out with something for everyone! Only £5 for adults, £3 for children with free car
parking opposite the Out of Town Centre.
To ensure we have a day to remember, there will be a range of attractions on
show including:
• Live events in the arena including a Synchronised Tractor Display Team, vintage
tractors and farm machinery.
• Frontiersmen and Native Americans displaying traditional crafts in their teepees.
• Local craftsman and woodworkers giving demonstrations.
• Beekeeping and Falconry exhibits.
• Earth Oven Cookery
To ensure we have a day to remember, there will be a range of attractions on
• Live events in the arena including a Synchronised Tractor Display Team, vintage
• Frontiersmen and Native Americans displaying traditional crafts in their teepees.
There’s plenty for children to do: Meet the farm animals, pony rides, tractor and trailer rides
and a chance to have a go at crafts, trails and seed sowing in the garden. A variety of
refreshments will be available ranging from BBQ food, with local and our own produce, to teas,
coffees, cream teas and home made cakes and biscuits.

Hello again,I know it’s very British to be obsessed with the weather but I think we have good reason to be. It’s 21st June as I write this, the longest day of the year, and I have my heating on, it’s about 13 degrees outside and the incessant rain has curtailed barbeques, fetes, weddings and endless outdoor events around the county. However, I am being optimistic for July so there’s lots of “outdoors” related content in this issue; a visit to Hurst Castle (p6), Countryside Education Trust Open Day (p11), Summer Hair and Treating Sunburn in Health and Beauty starting on page 23. Plus, why not try the kids out with Geo-caching (p36) – a brilliant way to make walking fun for less enthusiastic participants!

Hurst Castle is one of Henry VIII's Device Forts, built at the end of a long shingle barrier beach at the west end of the Solent to guard the approaches to Portsmouth. Hurst Castle was sited at the narrow entrance to the Solent where the ebb and flow of the tides creates strong currents, putting would-be invaders at its mercy. Also known as a Henrician Castle, Hurst was built as part of Henry's chain of coastal defences to protect England during the turbulent times of his reign. In was completed in 1544.
Charles I was imprisoned here in 1648 before being taken to London to his trial and execution.
During the Napoleonic wars the castle was modernised and in 1870 the enormous armoured wings were constructed. During World War II, Hurst was manned with coastal gun batteries and searchlights.
At over a third of a mile long and covering seven acres, Hurst Castle is the largest coastal fort in the world. The end of the spit is only three-quarters of a mile from the Isle of Wight and the views from
the top of the centre keep are spectacular. There are many exhibits and exhibitions as well as old cannons in the
grassy centre which children are free
to climb on. Friendly dogs on leads are
welcome.

the beach outside.

Singles - Adult £3.50; Child £2.00
First ferry 10am from Keyhaven. Last boat 5:30pm from Hurst. It runs approximately every 20 minutes but more frequently at busy times. The ferry can be taken both ways or park at either Keyhaven or Milford-on-Sea and walk along the shingle beach to or from your starting point (around 2.5 miles).

There is possibly no better time of year to bring to your attention the ancient fort of Hurst Castle than during July and August. The short open ferry ride from Keyhaven to the entrance of the castle is a delight for any age, particularly if you are able to do it on a warm summer’s day.

at Beaulieu in the New Forest. Our aim is to bring children and adults closer to nature and to promote courses, activities and facilities for people of all ages to learn about and care for the countryside.
As well as offering fully catered, residential educational visits at the Out of Town Centre on our farm in Beaulieu, self-catered accommodation is also available at weekends and during school holidays. Our accommodation is perfect for Brownie/Guide groups as well as family groups, walking groups or anyone wishing to enjoy a relaxing break in the beautiful New Forest. Our spectacular Treehouse Study Centre lies within 40 acres of ancient broadleaf woodland. Nestling in the treetops, the classrooms, turrets, viewing platforms and rope bridges provide an inspirational learning environment.

Room to make a difference…..Being a supported lodgings ‘Host’ means you can turn young lives around. You have the satisfaction of watching a young person gain in confidence and skills whilst you gain extra income from your support.
Penny Diver, Service Manager for Stonham, answers some commonly asked questions about being a Host below.
What IS supported Lodgings about?Supported Lodgings is a Housing Option for young people (16+) unable to live with their own families, either due to recent problems or because they are ‘leaving Care’. It provides a bridge between being dependent and becoming independent. Supported Lodgings placements can last from a few days to two years.
What is a host?Stonham works with individuals, couples and families who have a spare room and can offer time to support a young person in their home. These people are ‘Hosts’. We try hard to ‘match’ Hosts with young people who will fit into their home.
Do we have to be prepared to take in anyone?No.. We understand that you may have preferences around gender and may feel unable to support young people with particular ‘issues’. We aim for placements to work and to be a positive experience for everyone involved. We are very mindful that we are placing young people within your home so do our very best to build a complete picture of them, focusing both on their strengths and aspirations but also any concerning issues.
Do we get support?Your Placement Manager
supports you and your ‘Lodger’ throughout a placement and you have backup if they are not around. They come on regular, agreed visits but
also at short notice should any problems occur.
What impact will it have on my life?It is quite possible to combine the role with working full time.
You do not have to put your life on hold! If you have a holiday or are going away overnight we will arrange for them to go to another host or a friend.
What are the main problems?The most common problems in placements are with young people not telling you in advance they will not be in for a meal, or deciding to stay with a friend overnight and not telling you. Many of the young people we place have had few boundaries
in their lives so need to get used to them. These problems are usually worked through. We have placed many hundreds of young people over time and the vast majority of them are very respectful towards the host and their family.
What do young people think about being in supported lodgings?Here are some of the things they have said:
‘Thank you for Christmas Day, for all the cups of tea and for letting me win that game of scrabble. My life will be more successful if I follow your teachings. I hope to learn from your actions and become a better person’
‘I feel safe, confident in myself and wanted for the first time’.

You may have a vision in your mind’s eye of your hair blowing in the summer wind looking fresh and gently highlighted. However the reality is that strong sun, high temperatures, humidity and pool or sea water will damage your hair leaving it dry, brittle and anything but healthy.
You can help yourself by generally taking a gentler approach to your hair styling in the summer months. Use a mild shampoo, wash less frequently to allow the natural oils to be absorbed and when you do wash your hair, finish with a cool or cold rinse to seal the cuticle.
Try to limit hair treatments such as bleaching and cut back on your usage of heated hair styling tools such as curlers and hair straighteners.
If your hair is long enough, put it into a loose bun and tuck the ends out of sight as this is the most vulnerable part. Pulling your hair back in this way can also mean you don’t have a parting which will prevent sunburn on your scalp, although don’t forget to apply sunscreen all around the hairline.
If you don’t have long hair, do have a parting and don’t want to wear a hat, it’s essential that you apply sun lotion to your scalp. Your hair might look a little greasy during the day, but that’s better than a peeling scalp making you look like you have bad dandruff.
Wet your hair with plain water before going into a pool or the sea as this will reduce the amount of chlorine or salt absorbed into your hair. Once you’ve had a swim, rinse your hair with plain water again before sitting back in the sun, and use a mild shampoo at the end of the day to ensure those chemicals and salt aren’t continuing to do their worst.

If your sunburn is accompanied by other symptoms such a fever, dizziness or vomiting you could have sunstroke. As with any burn the skin will be overheated, so the first thing to do is to find a way of cooling the area. Apply a flannel soaked in cold water or take a lukewarm shower or bath. Car buyers are used to driving their new purchase off the forecourt and it instantly plummeting in value. It’s a fact of motoring life. Or is it? What if we told you there are some cars out there that are actually rising in value? And we’re not just talking about automotive exotica either.
We spoke to experts from trade price bible CAP as well as leading auction house BCA to uncover the cars that are turning residual values on their heads.
‘There are some classic and sports cars that will keep going up in value,’ one expert told us. ‘Others will simply hold firm. But it’s all dependent on how much you use them and their condition.’
So here are our depreciation-busting top picks.
Jeep Wrangler This one surprised us too. CAP has found that the Hard Top 4.0 Sahara two-door model with an automatic gearbox has risen £475 in the last 12 months to a trade price of £5,450. CAP says even at this price it’s considered to be a cheap, heavy-duty vehicle – but only for those that can afford to run it.
MINIBCA says despite the volumes currently being sold, the Mini is a future classic in waiting. The auction house told us that One models are
selling well for around £3,500 to £4,000 even with as many as 100,000 miles on the clock. But prices for well looked after Countryman, Convertible and Clubman models are the firmest.
Ford GTLondon-based dealer Clive Sutton specialises in selling the most exclusive supercars. He often sees cars rise in value, but if he was spending his money it would be the Ford GT he’d shell out on. ‘The Ferrari Enzo was the one to go for a while ago, but prices have cooled,’ he told us. ‘Now the Ford GT is the car to invest in.’
Audi R8 It’s the V8-engined sports car from Audi that’s popular with buyers, reports CAP. Our experts said it had a slow start in the used market, but
in the last 12 months a 2007 model with 20,000 miles has risen £1,900 in the trade to £53,100. ‘It’s increasing in popularity,’ said CAP’s man in the know.
Aston Martin DB7
This is a good sign that the recession is easing. Prices for the Volante Convertible version of the stunning Aston Martin DB7 have risen £1,300 in the trade during the last year, according to CAP. An 04-reg, 50,000 miler currently costs £31,400. ‘Today’s buyers appear less concerned about running costs than they were 12 months ago,’ said CAP.

What makes a good-looking, functional kitchen? Careful planning is the answer - plus a little bit of lateral thinking…
These days, kitchens aren’t just for cooking in, or even for eating; they’re for socialising, doing homework, painting, reading, chatting, catching up with the accounts, watching TV or simply hanging out. So how do you go about designing a space that really works for you?
First, assess exactly what you need from the kitchen. The panel on the right will give you a good start. Next, do plenty of research – read everything about kitchens you can get your hands on, and visit every showroom within reach. It really is the best way to establish what styles you like, and what you can afford. Then, before you get bogged down with the detail, think about the space as a whole. If your kitchen is on the small size and you’re planning on investing in it, it might be worth, at this stage, considering either amalgamating it with an adjacent room or extending. If that’s not possible, can you enlarge a doorway or knock through a ‘hatch’ to give a feeling of extra space, and better sight lines to what’s going on elsewhere in the house? Perhaps you can create more room by moving the washing

Designing your kitchen? Ask yourself these questions first…
Who will use the room, how often, and • how many at a time?
How will it be used - for semi-• professional cooking, regular family meals or the occasional microwave dinner? And what about other activities - homework, watching TV, doing the washing or ironing?
Do you like using high-tech appliances? • What wiring and plug sockets will be required? Will you keep small appliances out on worktops, or hidden in cupboards?
How much storage do you need, and of • what type? For cupboards, do you prefer solid or glass doors, or maybe lots of open shelves? Will you have some unfitted elements, such as a dresser or sideboard? And would you prefer built-in or free-standing appliances?
What about worktops - wood, stainless • steel, composite, stone or laminate? And flooring - ceramic or stone, brick, rubber, wood, cork, vinyl or lino? Collect as many samples as you can, and lay them out together to give an idea of the overall effect.

machine into the garage or under the stairs, or by fitting a fold-down dining table? Anything you can do in which to create a larger floor area will help.
Next: layout. Plan it with the utmost care to ensure that the room is easy to use and comfortable to be in. You don’t want to have to walk right across the kitchen to put the crockery away, tripping over the dog and the child practising headstands on the way. Nor do you want to have to manoeuvre around a dining table every time you need to get from the cooker to the sink. In technical terms, experts recommend a ‘work triangle’ between the cooker, sink and fridge (in practice, this doesn’t always work, but aim to leave uninterrupted space between the areas you use more frequently).
An island unit is great for maximising space, but needs to be well designed – within one step of the other worktops, not so deep that you can’t reach across it and, ideally, positioned so that the cook can see what else is going on in the room. In addition, room to cook in the way you want and enough cupboards and shelves to store everything tidily but accessibly are vital, while even seemingly small things matter a lot, like providing an area on which to dump shopping
bags before unpacking, or ensuring that the bin is close to the chopping board.
Ultimately, of course, what defines a really great kitchen is much more than a set of guidelines. Holidays : a time to relax, turn off the phone and catch up on all thosebooks you've been meaning to read. Thanks to ebook readers there'sno need to stuff your suitcase full of books when you travel, butwhich one is the best for holiday reading?
e-books on the beachThere are three big players in
the UK ebook market: Apple,with its iPads; Amazon, with
its Kindle; and Sony, with its
Reader devices. There are
others - for example
Waterstone's offers a
range of ebook
readers from firms
including Elonex
and iRiver, while
recent Android-
powered tablet
computers
boast Google
Books software -
but for now it's a
three-horse race.
There are some big differences
between the devices. If you
want a do-it-all device that
doubles as an ebook reader,
then Apple's iPad 2 is the way
to go: it's a proper computer
that can edit video, make
music, browse the Internet
and play games. Android-
powered tablets are very
similar.
There are downsides to all that
power, though. The first is
price - iPad 2s start at around
£440, rising to nearly £700 for
the top-end model - and the
second is the screen. Tablet
computers use laptop-style
screens, which are hopeless in
direct sunlight. They're also
power hungry. The iPad's ten-
hour battery life is impressive
in computer terms, but it's
poor compared to a device
such as Amazon's Kindle.
The Kindle (pictured here) has
an e-ink display, which is the
closest to real ink on paper
you can get from
an electronic
device. That
means it's fine in
direct sunlight, very
easy on the eyes -
you don't get the
tired-eyes feeling
that comes from
staring at a screen
for hours - and it's
very small and light.
E-ink only uses power
when you change the
page, so battery life is
extraordinary: devices
last for weeks
between charges.
There are two
Kindles: the Wi-Fi
only one at £111, and
the 3G one at £152.
The former is the better
bet: unless you intend to read
newspapers on it (you can
subscribe and have them
delivered wirelessly) there's no
real need for a 3G mobile
connection: simply transfer
books via Wi-Fi when you're at
home. Kindles store up to
3,500 books, so you're unlikely
to run out of things to read
when you're travelling.
The problem with the Kindle
is that it's an Amazon-only
effort: if you want to read
copy-protected books (most
mainstream ebook releases are
copy-protected), you'll need to
buy them from Amazon. It's a
similar story with the iPad 2 -
its iBooks software expects
you to buy from the iBooks
shop. If that sounds too
restrictive, then Sony would
like to show you something.
Sony's Readers (pictured
below) are based on the same
idea as the Kindle and cost
much the same (at the time of
writing the PRS350 is £149),
but it has two interesting
features: its
e-ink screen
is a touch
screen, which
makes using
the device
much easier,
and its
formats of
choice are
EPUB and PDF.
Such books are sold in all
kinds of places - all
Waterstone's titles are in EPUB
or PDF format - so you're not
limited to a single ebook shop.
So what's best? If you want a
do-everything device, get a
tablet - but if you're a
bookworm, get something
with an e-ink display.

But there is a way to convince the whole family out of the house with an electronic device whilst enjoying a good walk or bike ride in the countryside: Geocaching. This involves tracking down hidden items, or caches, with a GPS device and recording your find. You log-on to the Internet to find the coordinates of the cache, and then use your eyes to locate its exact whereabouts – like a good old-fashioned treasure hunt. Look online and you’ll find videos of cleverly hidden caches – inside sawn-up logs in forests, stuck-up pipes by rivers and even stuffed in plastic bricks as part of the wall of a disused building. They’re usually made up of a logbook sealed in a plastic box or ammo-case, along with small trinkets to keep or swap for something of similar value, and are always found outdoors. And if you’re really lucky, you might come across a “trackable” – a numbered coin or dogtag that’s moved from cache to cache. Each time it is moved, its serial number is logged on-line so it can be tracked. Bought online for a couple of pounds, some have been known to travel

“Why don’t you switch off your TV set and go and do something less boring instead?” was the irritatingly catchy theme-tune from popular children’s television show “Why Don’t You?” Nowadays, “TV” would have to be replaced with Games-console/Laptop/Mobile phone or the latest must-have electronic gadget we can’t live without.

Geocaching started in the US after early GPS-enthusiast Dave Ulmer planted a bucket filled with videos, books, software and a slingshot, together with a logbook and pencil, in woods near his house. After posting the coordinates online on May 3rd 2000, his package was found twice within two days after word spread rapidly among the online community. The official Geocaching
website launched in September 2000 with the coordinates for 75 caches across the world listed on it. The craze soon took-off and today there are over 1.3m caches hidden in over 100 countries across the globe, with 5 million registered users.
And it’s really simple to start Geocaching – just create a free membership on www.geocaching.com, type in your postcode to find caches near you, invest in a GPS device or mobile phone
with GPS capability and that’s it, you’re ready. Most GPS devices take you within 6-20 feet of the object so be prepared to spend a while looking for the cache when you arrive there - this is the bit that the kids always love the best. And remember to always respect the countryside where the cache is found – don’t leave litter or damage the environment.
So for a fantastic family day out that doesn’t cost a fortune, often set in stunning countryside, why don’t you give Geocaching a go? It’s certainly less boring than watching TV. Be careful of Muggles near a cache though – Muggles are non-geocachers who are sometimes near caches, such as people innocently walking their dog. Cachers try not to reveal what they’re doing to Muggles!

There is something lovely about this time of year: even on the less appealing days it rarely gets too chilly, the soil is warm and feels all the more full of potential. But there is no doubt that your vegetable growing may seem to be close to peaking and perhaps in some areas on the decline. Rather than forgetting the fun of growing your own until next year, why not add to what you already have and start some crops from fresh? If you’ve missed the boat totally and never actually planted anything this year, there’s still time to grow some tasty home grown vegetable and herbs....it’s not too late to start, but you’ll have to get your skates on.
Knowing what responds best to late sowing is the key, and knowing what might be worth the risk has the potential to be the icing on the cake. That lovely warm soil is a real advantage to those somewhat tenuous sowings made right at the start of the season, but you may also have to spend more time watering your vegetables, especially when the plants are small.
Sow yourself some ruby chard. These fantastically brightly coloured plants mean you can create something seriously good-looking as well as tasty. ‘Bright Lights’ is the wackiest with bright yellow, orange, red, pink and purple stems. It can be sown successfully into August and can be used as ‘baby leaves’ for salads or as an alternative to spinach.
Several of the oriental vegetables respond especially well to later sowing. Mizuna is one of my favourites. With its pretty divided leaves and ability to grow very fast, it can be sown right through from now and into September. Good in stir fries or as a salad ingredient, Mizuna does best in a sunny site. A covering of fleece helps to keep the flea-beetle away and so prevent the leaves becoming riddled with tiny holes.
Spring onions make really tasty additions to salads, ploughman’s lunches and stir-fries. They grow rapidly and although it is getting late, a prompt sowing now should still give you a crop of tiny spring onions in October. Sow enough to leave some in the soil where you can then harvest full-sized versions in March.
Carrots can be sown for many weeks of the year and some varieties of ‘maincrop’ carrot including ‘Ideal’ can still be sown until early August. Sow within the week and you’ll be cropping from autumn to Christmas time. Choose a light soil, free from stones, or grow in a deep container. If in doubt about sowing times, just check the packet.
I love eating them, but hate buying those ridiculously expensive baby spinach leaves, but grow your own and you can have as many as you like for little outlay. They are perfect in salads and sandwiches....and much, much tastier and more tender (and a lot cheaper) than those you buy in cellophane bags. Make successional sowings from now and in to September and in five to six weeks you can harvest the baby leaves. If you like full-sized spinach leaves, then just leave the crop in the ground and allow it to grow a little more.
Chinese cabbage is another late-season stalwart. It is one of the fastest growers I know and perfect for anyone who wants a delicate steamed vegetable or a wonderfully tasty and crunchy addition to a Chinese style meal. Also known as Chinese leaves, if you sow promptly you should be harvesting in late October.
If you enjoy miniature beetroot or baby beet as they’re often known, then buy a packet of beetroot seed and sow some of them promptly for a delicious, crop of small-sized beetroot from the autumn until Christmas.
French beans are so much better when grown at home. It is hard to make them tough or tasteless. A speedy sowing now should produce plenty of beans that you can harvest in mid-autumn. Choose a variety such as ‘Tendergreen’ and it should perform well.
Kohl rabi is, admittedly, a peculiar looking vegetable as it has really tasty and crisp swollen stems, but it is perfect for adding to salads and great in stir fries too. It performs well in most areas if sown up until about the middle of this month, and just nine to ten weeks after sowing you should be able to harvest your first crop.

There are numerous different colours and shapes of salad leaf available and they can be sown now, either singly or in combination. Simply use scissors to snip off what you need and as long as you don’t cut too low, they’ll act as a cut-and-come-again crop. Look out for mixed seed packs including all sorts of tasty varieties such as rocket, baby beet, lettuce and basil. As conditions become cooler, cover the row with fleece.
Rocket with its spicy dark green leaves makes a great ingredient for salads and because the plants grow so fast, a sowing made now will soon be producing a brilliant crop. Make successional sowings every couple of weeks.

700g (1lb 9oz) monkfish fillet
2tbsp olive oil
1tsp lemon juice
1 tbsp Cajun seasoning
8 medium-sized waxy potatoes, such as Desiree
Salt and freshly ground black pepper
225g (8oz) cherry tomatoes
1 lemon, sliced
Sunflower oil for shallow frying
Serves 4Takes One hour
Cut the monkfish into large chunks and place in a shallow roasting tin. Mix together the oil and lemon juice and pour over the fish. Sprinkle over the Cajun seasoning. Cover and set aside for 15 minutes. Preheat the oven to 200C/400F/Gas 6.
Place the unpeeled potatoes in a large pan of salted water. Bring to the boil and boil for 5 mins. Drain and leave to cool for 10 mins.
Peel the skins off the potatoes and coarsely grate the potato flesh into a bowl. Season well with salt and freshly ground black pepper. Using your hands, divide and shape the grated potato into about 8 flat cakes.
Place the lemon slices in the roasting tin with the monkfish and cook in the oven for 15 minutes. Add the cherry tomatoes and cook for a further 5-8 minutes until the fish is just cooked through and the tomatoes are tender.
Heat 30-45ml (2-3tbsp) oil in a large non-stick frying pan. Fry the potato rosti, in batches, for 3-4 minutes on each side until golden brown, adding more oil as necessary. Remove with a slotted spoon and drain on kitchen paper.
Arrange the potato rosti on serving plates and top with the roast monkfish, lemon slices and tomatoes. Pour over any juices left in the roasting tin and serve immediately.

however cod loin or a thick
piece of salmon fillet will
