In Italy, count camillo negroni
invented the negroni by asking
the bartender, fosco scarselli, to
strengthen his favourite cocktail,
the americano, by adding gin rather
than soda water. also added was
an orange garnish rather than the
lemon of the americano to signify
that it was a different drink.
Apéritifs
A tribute to the french quarter in new orleans and a take on the sazerac, the recipe varies between textbooks and folklore. we use hennessy fine de cognac and wild turkey 81.

Originating in new orleans, this cocktail is what prompted people to ask for an old fashioned; it’s a variant with either cognac or whiskey and with the addition of an absinthe rinse. we prefer the cognac version, and use hennessy fine de cognac.

Lovingly “stolen” from the alchemist in manchester, this is a modern take on the “original cocktail” the old fashioned. woodford reserve, diluted with still mineral water, maple syrup and jerry thomas bitters, smoked with bourbon soaked oak and served over a ball of ice.

born in the drake hotel in san francisco; a twist on the classic brandy crusta, we use a chocolate liqueur and a cinnamon sugar rim.
a daisie traditionally contains an alcohol
and a triple sec or curaçao, along with
a sour and a sweet.

Margarita is thought to be the popular american drink, the daisy, remade with tequila instead of brandy. there is an account from iowa newspaper editor james graham finding such a cocktail in tijuana. margarita is spanish for daisy. obviously use patron tequila.

originally named during the first world war after an eccentric american army captain who, allegedly, used to be chauffeur-driven to the bar in a motorcycle sidecar. pasteurised egg white for a full body, gabriel boudier triple sec.
from the savoy hotel in london, the mecca of mixed drinks. we use hayman’s old tom to give it the sweet finish.
a true 90’s guilty pleasure, a twist on the infamous
‘pisco sour’ with a dash of disco fever.

Arrivederci finlandia grapefruit vodka, basil sugar, sicilian lemonade, mint, raspberry puree
yet another one from new orleans, in the imperial cabinet saloon in 1888. Before prohibition, it was so popular the bar was known to have over 20 ‘shaker boys’ just to keep up with demand!
a marketing success story from the 1950s; one man had too much vodka, one had too much ginger and another had too much copper! all they had to do was add some fresh lime juice and they had a refreshing drink on their hands!
a truly refreshing treat, our own creation and a staff favourite.

our irish version of a timeless classic, ‘the last word’, which was developed during the prohibition era at the detroit athletic club. welcome back poitin!
the name comes from the congo word for “snake-god”used in voodoo. a fruity mix of many different rums; sailor jerry, matusalem solera 7yr, bacardi 8yr, havana 7yr, with gabriel boudier triple sec and maraschino liqueurs and a flaming absinthe boat - a real dirty stinker!

named after the gentleman’s club in philadelphia where it was first made, this one even precedes prohibition. to be enjoyed by both ladies and gents, but only those with sophistication.
“If you’re a gin lover, you’ll already be aware of the wonderment of pairing hendricks’s gin with a slice of cucumber. the exchequer have taken that delicious sophistication to the next level with the Prohibition-inspired “hendricks’s high tea for two.” the teapots are filled to the brim with a concoction of hendricks’s gin, cucumber sugar and tonic to be drunk in dainty matching teacups and shared between two.” ~ totally dublin by aoife mcelwain
