CONTANGO COFFEE HOUSE NOW OPEN Contango – Espresso – Roasters continues the passion that is shared for terroir at Pepper Tree Wines. Instilled by the owner, Geologist John Davis, we believe that coffee beans are similar to wine grapes, in that the flavour components are influenced by their growing region.

Carrying on the ‘handcraft’ philosophy of the winery, we have chosen different types of beans from varying regions to showcase the Contango difference.

Customers will have the opportunity to select from beans of their choice from different origins, each with their own unique flavours and components which will be expressed through every cup.

MEET THE MANAGER – MARK COSTER

What do you like about baristing? I like the buzz of giving people caffeine! I think it’s the enjoyment of giving someone their first cup of coffee for the day…. the first one is always the most important!

What is your secret to a good coffee? Grind to order, and made with love and care! Having quality beans from single origins, roasted to perfection and only ground fresh to order makes a huge difference to the end product.

What previous training and experience have you had? I studied Hospitality and Tourism at Passmores Colledge, on completion I was offered a Traineeship in Food & Beverage at Roberts Restaurant. Under the guidance of Robert Molines himself, I developed many skills and a strong understanding of the industry. After my traineeship I decided to travel and was able to utilise these skills in a number of establishments throughout the UK. When I came back from overseas I decided to return to where I began at Roberts Restaurant. I worked here for a while before moving to the renowned Muse Restaurant. From here I then gained my position in the Cellar Door at Pepper Tree.

Everyone has their own personal preference in how they like their coffee served. What is your preferred method at the moment? I like my coffee strong – double shot, and hot! Preferably a single origin coffee made on full cream milk!

How are your skills in latte art? I prefer to focus on the taste of the coffee… rather than how it looks!

Do you prefer single origin coffee or a blend? I prefer a single origin coffee as it is a fuller and more robust coffee. A blend is still good however is better in a milk coffee – like a latte. It really depends on my mood I think!

What is your favourite origin and why? At the moment my favourite is Ethiopian however Papua New Guinea is good too! Ethiopian beans are a more robust bean with fuller flavour. There are just so many to choose from though!

We were fortunate enough to enjoy this warm weather at the recent inaugural Pooch Picnic held on the property mid-August. It was great to see so many friendly faces join us to help raise money for the worthy cause ‘Hunter Animal Rescue’ and relax within the surrounds of our beautiful grounds with their beloved furry friend. With plenty on offer, this day also marked the unofficial opening of our new Coffee House - “Contango”. We are excited and pleased to be able to offer this additional service to members and visitors who visit the property and create an additional experience to their time here at Pepper Tree!

Pepper Tree has once again received an outstanding result in the latest 2013 James Halliday Australian Wine Companion, achieving another 5 star winery rating. This marks the fourth year in which we have received this rating and trumped last year’s results by receiving 12 wines with a coveted 94 points and above rating! Please see page 5 for further details along with page 3 for details on a sample pack of wines rated 94+ points!

One of Pepper Tree’s greatest strengths in which we pride ourselves on, is our friendly and passionate staff members. Their skills, passion and commitment to the brand are constantly on show and have recently been acknowledged at the 2012 Hunter and Central Coast Tourism Awards. Two of our Cellar Door staff members, Michael Latham & Leonne McDonald, both achieved finalist status in the Excellence in Customer Service category. This award recognises exceptional customer service of

an employee in the Hunter and Central Coast Tourism Industry. The award acknowledges individuals who have demonstrated dedicated professionalism to their work and a genuine concern for their customer, going ‘above and beyond’ their regular duties to provide exceptional service.

To build on the recent acknowledgments Pepper Tree was also nominated as a finalist in both, 2012 Hunter and Central Coast Tourism Awards for Excellence in Tourism, under the category of Wineries, Distilleries, and Boutique breweries, as well as ‘Small Business of Excellence’ at the 2012 Hunter Business Chamber Awards.

The team is gearing up to host a number of exciting functions for members and guests including the Annual Winemakers Table Luncheon and Budburst Luncheon hosted here at Pepper Tree. Now that things are warming up the first buds have started to swell before they burst and the growing season kicks off for 2013! Some good rainfall now is all we need for good growth and ultimately a great crop (fingers crossed). Another reminder that things are warming up in the valley; this week we had our first snake sighting! Leon came face to face with a Red Bellied Black Snake ascending the winery catwalk as he was about to come down. The snake won the stand-off and Leon took an alternative option to get down from the catwalk…

WineryRight now the winery team is busy blending the 2011 Varietal reds from Wrattonbully and Coonawarra. We are pretty excited about these as the difficult vintage down south forced us to downgrade our best blocks from Reserve to Varietal. The result for you is that the Varietal reds get our very best fruit from 2011.

Our ‘Venus Block’ Chardonnay has now been in barrel for about 6 months and will be ready for blending and bottling just before Xmas. The fruit from the ‘Venus Block’ is our best to date, so we have very high hopes for the wine once bottled.

Springtime in the Vineyard

New ReleasesWe have just moved onto the 2009 Vintage of ‘Elderslee Road’ Wrattonbully Cabernet Sauvignon for members in the Wine Club. This is our 4th yet best release of ‘Elderslee Road’ to date! Incidentally, it won the trophy for ‘Best Single Vineyard Wine’ at last year’s Limestone Coast Wine Show and narrowly missed out on best red of show.

Other new releases are the 2012 Varietal Semillon Sauvignon Blanc and the 2008 Grand Reserve ‘Strandlines’ Wrattonbully Cabernet Shiraz. All three are reason enough to visit our newly vamped Cellar Door and Coffee House!

Significant BirthdayThis July saw me celebrating my 40th birthday! I tried to keep it quiet and hoped for a low key lunch or the like to see it pass. However, Daisy (my beautiful bride) insisted on a big bash, which is exactly what we had. Some 120 people gathered at Pepper Tree for a ‘Fabulous Forties’ party extraordinaire. Everyone made a huge effort to dress up from Don Bradman to an SS Gestapo officer. It looked like the set of a wartime film. Plenty of Champagne flowed to the dulcet tones of Tamworth’s ‘Lady of Jazz’ Kate Armstrong.

A wonderful way to celebrate the big 40 or as someone once said ‘the old age of youth’

Alluvius Reserve Hunter Valley Semillon 2011 Bright quartz-green; the bouquet is striking and notably complex, with nuances of grass, herb and citrus zest, the palate at once mouth-filling yet elegant, the flavours running through with drive and energy; has the balance, line and length of a true champion. Random Acts of Winemaking Hunter Valley Grampians Shiraz 2010 The result of a 007 licence to kill, this was the brainchild of close friends Jim Chatto and Dan Buckle at Mount Langi Ghiran; a blend of two estate vineyards, the Hunter providing depth and savoury elements, the Grampians the very obvious spice and floral lift. A high class, long-lived wine. Screwcap. 13.8% alc Rating 97 To 2030 $70

Tallawanta Limited Release Hunter Valley Semillon 2011 Bright quartz; an altogether seamless and perfectly balanced Semillon, with a deceptive youthful delicacy to the classic flavours of lemongrass and lemon citrus, minerality and acidity providing the life line into a very long future. Single Vineyard Reserve Coquun Hunter Valley Shiraz 2010 Bright crimson-purple; a young, exuberant and lively bouquet, with red fruits, spices, fine toasty oak and fresh leather all on display; the medium-bodied palate reveals a silky texture, fresh acidity and fine-grained tannins, all in harmony and cohesion. Single Vineyard Limited Release Hunter Valley Semillon 2011 Pale straw-green; has the lemongrass aroma unique to Semillon, with a hint of spice hiding in the background; the palate has great intensity, drive and length, drawing saliva from the mouth as the acidity clicks in. Tallavera Limited Release Hunter Valley Shiraz 2010 Crimson-purple; the complex bouquet has plum, mulberry and a hint of sweet earth, the soft , supple medium-bodied palate with great line, length and balance, the tannins silky, oak restrained. Screwcap. 14.5% alc. Rating 95 To 2030 $45

Single Vineyard Strandlines Grand Reserve Wrattonbully Cabernet Shiraz 2010 Has a whirl of blackcurrant, blackberry, black cherry and plum interleaved with spicy notes; the tannins are fine, the oak doing its job, but both leaving the focus on the fruit. Screwcap. 14.5% alc Rating 95 To 2025 $55

We are pleased to announce that we have once again been awarded a red 5 star rating in the 2013 edition of the James Halliday Australian Wine Companion. A red 5 star rating is awarded to an “outstanding winery regularly producing wines of exemplary quality and typicity. Will have at least two wines rated at 94 points or above and had a 5 star rating for the previous two years”.

Mike is a valuable member of our Cellar Door team and has been working with the company since December 2009. Earlier this year Mike moved into a full time roll with in the Cellar Door and Corporate Department. Mike’s love of wine, music and a good time makes him a very entertaining member of the team!

What do you like most about working at Pepper Tree Wines? It’s a great environment to learn more about wine and everyone is always up for a laugh!What do you believe to be Pepper Tree’s greatest strength? Great wine and great staff (except for Michelle…) What is your favourite Pepper Tree wine currently available? It’s a tossup between the Reserve 2008 ‘Elderslee Road’ Wrattonbully Cabernet Sauvignon and the Reserve 2010 ‘Coquun’ Hunter Valley Shiraz.What has been the funniest or most memorable moment that you have experienced while working at PTW? The Caramello Koala incident of 2010 or Elly’s big screen debut….. don’t ask!What has been the strangest comment/question some has said? Do you like trees….? I still have no idea what they were talking about. What has been your favourite Member Event? The Harvest Luncheons in May are always fun, and the Canberra Members Dinner a couple weeks ago was great as well!Which member event are you looking forward to next? This November will be my first Sydney Harbour Cruise club function - I’m definitely looking forward to that!What is your wine of choice to drink on a special occasion (other than Pepper Tree of course)? I’m a sucker for Vat 1. If you could have dinner with 3 people of your choice who would it be? John Frusciante, Will Ferrel as Ron Burgundy and Natalie Portman What is your favourite restaurant to visit in the Hunter Valley? Muse is fantastic – I’m doing a dego there in September. I’m also a big fan of Amanda’s on the Edge.What do you like to do in your spare time? Most of my free time is spent playing guitar or driving to Sydney to make band practice on time.

Tarzan was born on 20th May, 2011. His owners picked him up at 6 weeks of age and fell in love with his cheeky charm. Tarzan has a label fetish; no label is allowed to stay on anything from tea towels to jackets! Even the ones in his bedding are not safe!

Tarzan graduated from puppy school and obedience class..... bottom of the class. His owners expected nothing less from this Beagle, providing no competition for other dogs, apart from when food was involved, then he was the quickest!

Funny stories about Tarzan…. where do we start, he doesn't like riding in the car, once you finally have him in the car he sits facing the backseat on the edge.... often falling off! He doesn't seem to get it that facing the front is much more comfortable, we tried.

Tarzan believes that his biscuits taste much nicer if they are not eaten out of his own bowl. We put them in a plastic bottle now, which he empties in minutes, he seems to want to work for his food.

He is adorable, very happy and nice natured, well known in the local park and not only because of his name!

Spice Crusted Kingfish with Heirloom TomatoesServes four

4 x 150gm Kingfish fillets

5gm coriander seed

2gm cumin seed

2gm fennel seeds

1gm peppercorns

1 bunch parsley

1 lemon

100gm extra virgin olive oil

3gm salt

Roast spices in oven at 150°C for ten

minutes so they are fragrant and then grind

in spice grinder/coffee mill.

Chop parsley add spices, olive oil, lemon zest,

lemon juice.

Top each fish portion with spice mix and

cook in oven for 8 minutes at 165°C.

500gm of mixed heirloom tomatoes

½ bunch of basil

30gm red wine vinegar

60gm extra virgin olive oil

2gm salt

Roughly cut tomatoes and tear basil.

Mix oil and vinegar together and

use to dress tomatoes and season.

Arrange tomatoes on plate and

place kingfish on top.

Serve with green salad and a bottle of Pepper Tree Semillon Sauvignon Blanc – the perfect spring food and wine combo!

Held at the increasingly popular Dieci e Mezzo and set alongside the National Gallery, this unique venue set the scene with its striking décor along with a distinctive backdrop providing a captivating art show of light of sculptures! Members and guests enjoyed a contemporary menu with Italian influences, perfectly matched to our premium wines showcasing some new and museum releases!

PEPPER TREE POOCH PICNICSunday 19th August, 2012 – Pepper Tree ComplexThe Pepper Tree team had been gearing up for the highly anticipated Pepper Tree Pooch Picnic, held in the beautiful grounds of Pepper Tree!

Visitors from far and wide arrived with the entire family to enjoy a day out in the sun! While relaxing on their picnic blanket, visitors along with their furry friends, were entertained by the Wonder Dogs of Wollombi who gave a number of performances displaying their astonishing talents and amusing tricks along with providing some useful training tips! The Border Collies then gave a brilliant demonstration on the agility course, showing the rest of dogs on the day how it is done before they attempted to take part in the seemingly unchallenging course!

With plenty on offer on the day including pet pampering stalls who provided a great range of indulgences for your pooch, music, food and wine, the day was thoroughly enjoyed by all!

We are proud to have raised some much needed money for “Hunter Animal Rescue” and would like to thank all those who attended and for their kind donation.
