French Food Connection

The seventh edition of the French Food Connection will take place in Chicago and Montreal on October 21-24, 2013. This trade-only food show organized by Ubifrance North America brings together innovative French food suppliers with North American buyers looking to expand their gourmet offerings. From artisanal chocolates to delectable ready-to-eat meals, products for diverse pockets and palates will be presented in each city. Local importers, distributors, restaurateurs, specialty-food buyers and trade press are expected to be in attendance.

Speed Dating An occasion to meet one-on-one with French producers in a dynamic speed-dating format! Covering several food categories, the participating French food suppliers are familiar in working with both private label and national brands.

French Food in Canada

Most Canadian can appreciate the role of France in food and gastronomy... From Camembert to chocolate here are some numbers that show just how much France is gaining market share on the continent!

Canadian Market

Canada is the 11th-largest importing and exporting country in the world, France being its 8th largest trading partner. Canadian agrifood imports have increased gradually over the past 10 years and after a slight decline and stagnation during the 2009 economy, imports have increased significantly over the past two years.

French exports to Canada have increased by nearly 10% between 2010 and 2011

Beverages are the most-exported French food and beverages products to Canada (400 million euros) followed by cheese and dairy products (40 million euros).

French Products

The forecasts for French products are encouraging! France’s products, expertise and brands are recognized and appreciated by Americans and Canadians alike. Given the recent economic improvements and the sophistication of tastes, consumers are increasingly inclined to spend more for quality food products – corresponding perfectly with the range of gourmet products that France has to offer. The positioning of French products ranges from mid to high, the majority of which is in small qualitative volumes destined for gourmet food stores, fine supermarkets or foodservice. French Wine in Canada

Most Canadian can appreciate the extraordinary diversity of French wine. From Provence rosés to Burgundy reds, the following figures reveal how much France is gaining market share on the continent!

Canadian Market

Growth in Canadian wine consumption is three times faster than the world rate. Between 2007 and 2011, Canadian wine consumption increased by 14.55% and reached 43.21 million 9-liter cases, the equivalent of 518.52 million bottles.

According to the VINEXPO market study, this growth is predicted to continue at the same pace between 2012 and 2016 and is forecast to reach 14.27%. This boost represents an average annual increase of 3%.

Between 2012 and 2016, Canada will be the 5th fastest-growing wine market worldwide, behind China, the US, Russia and Germany. France is the second-largest provider of imported wine into Canada, behind Italy and ahead of Australia.

The Chef will create dishes and the Sommeliers will propose pairings with French wines & champagnes in Ritz Carlton Hotel, Toronto.

Chef Bruno Lopez

Chef Bruno Lopez joins The Ritz-Carlton, Toronto, from Los Angeles where he served as the Executive Chef for the General French Consul, overseeing official and private events at the Residence de France.

Prior to this, Chef Lopez enjoyed an extensive career with Ritz-Carlton, including senior positions at hotels and resorts worldwide. In 2004, Chef Lopez was recognized by the French government as Chevalier de L’Ordre Du Mérite Agricole.

He is a member of the Confrerie de la Chaine des Rotisseurs, the Club Culinaire of Los Angeles, the James Beard Foundation, Les Toques Blanches International, L’Academie Culinaire de France and the prestigious Association des Maitres Cuisiniers de France (French Master Chef), which has only 350 members worldwide.

Sommelier Taylor Thompson

Taylor Thompson, Wine Director at The Ritz-Carlton of Toronto, is vibrant and über-approachable. The 30-year-old Ottowa native’s enthusiasm and eagerness have quickly established him as an expert in the wine industry. His desire for wine knowledge was born of countless family dinners spent across the table from two avid wine enthusiasts. This home-bred passion evnetually lead Thompson to pursue formal training as a wine expert.

After graduating from Algonquin College’s sommelier programme, Thompson, then 21, became Ottawa’s youngest sommelier, as wine expert at Social Bistro in Ottawa. In 2004, he successfully completing the Wine & Spirit Education Trust (WSET) certificate programme at Ottawa’s Vendange Institute and moved to Toronto where he joined the Jamie Kennedy Wine Bar and Jamie Kennedy Restaurant. He joined reds in 2006 as assistant sommelier and in 2007 was appointed sommelier at reds. In this role, Thompson also oversaw the wine lists at Signature Restaurants Far Niente® and FourTM. Thompson is now the Wine Director and Sommelier for The Ritz-Carlton in Toronto.

Company description

Perles en Gascogne was founded by Mr CLAVIE in 1998 in the south-west of France (Lot et Garonne): the country of prunes from Agen. Mr CLAVIE was a grower of hazelnuts and already produced hazelnuts oil.

He created an innovative product, prune kernel oil, which received the Golden Medal at the 2002 SIAL Paris Food Show.

In 2005, Perles en Gascogne was honored by the Hubert Curien Prize for its technological achievement and its contribution to a greener environment. Company profile We (Philippe and Véronique GLAVIER) took over the family business in 1995, perpetuating the traditional champenoise methods of working. Located to the south of Reims, we produce wine on our own, exclusively from grapes we have grown. We belong to the category of Récoltant-Manipulant, and are members of the Independent Wine Growers of Champagne. We elaborate our own Champagne from A to Z: plantation, vineyard management, harvest, pressing, wine making and ageing. Final elaboration is carried out in our own premises in the village of Cramant. Château d’Astros, Provence

Company profile Château d'Astros is a 200-acre Provence vineyard based in Vidauban, in Var (between Nice and Marseille and north of St-Tropez). The estate has been in the Maurel family for the past 8 generations, with wine being produced on the estate since the 17th century. We produce 700 000 bottles, 70% of which are VDP and 80% rosé. Making rosé wine has become an art for us: we made big investments in 2011 to improve our wines (a new refrigeration system which enables us to cool down grapes as well as the must, two inert wine presses to avoid any oxygen contact, air-conditioning of both the bottling line and the storage facilities, and a very gentle sorting table combined to a distalker, especially adapted to rosé wine). We produce our IGP des Maures with the same care as our AOP. Our distribution network is well established in France (Cave Nicolas, Taittinger) and in several other countries (Great Britain, Bulgaria, Germany, Belgium, Canada, Brazil...). As Provence rosé has been booming on the North American market these past few years, we feel it is the right moment to present our Astros rosé wines and especially our Domaine d’Astros line, our main production.

Company profile A family-owned and -operated property since 1870, the Domaine du Grand Châtelier is located in the Muscadet appellation of Loire Valley, in the middle of the vines, on a hill overlooking the vineyards.
