• 110g plain flour • 250ml of milk

• A little oil • pinch of salt

Make the batter

1. Sift the flour and salt into a mixing bowl. Then make a well in the middle of the flour and break the eggs into it.

2. Whisk in the eggs.

3. Gradually add the liquid as you whisk until the batter is smooth and there are no lumps of flour left around the bowl.

4. Allow it to rest for a short while.

month of February has 29 days. This

happens every four years in order to

balance the calendar with the fact

that the Earth rotates around the Sun

Shrove Tuesday, or Pancake Day, takes place this year on 21st February. It’s the last day before Lent, which is a period of fasting that begins on Ash Wednesday. It’s therefore traditionally associated with releasing high spirits and eating up foods which contained eggs, butter and sugar before the fasting began.

So everybody knows how to make pancakes, right? If not, try this!

COOk the panCakes

1. Heat the oil in a small frying pan until smoke rises from the surface.

2. Pour in enough mixture to cover the bottom of the pan. Take care as the pan will be very hot.

3. Cook for one minute, then shake the pan back and forth so that the pancake slides about in the pan.

4. Toss the pancake so that it lands on the other side. Cook for another minute and slide it out of the pan onto a serving plate.

There are a myriad of different ways to enjoy your pancakes. Stick to plain and delicious with sugar and lemon or use your imagination and go wild with chocolate or strawberries and maple syrup. And then there are the savoury versions... the list is truly endless.

W ouldn’t it be good to able to get through the day and not be completely

exhausted at the end of it? Wouldn’t it be great to accomplish even more than normal and still have energy left over? These sentiments seem to echo with most people, so we asked Paul Mills of UK Pranic Healing how this particular type of therapy can help.

paul says...With the constant demands of work, family and life in general, it seems we are constantly on the go with little time to look after ourselves properly let alone other people. It’s no wonder we end up feeling tired, stressed and left with no energy after all the demands placed on us.

That’s exactly how I felt six years ago: no energy; feelings of stress; constantly tired; and suffering from various stomach and back-related

ailments. That was until someone did something called Pranic Healing on me. Within a few days my symptoms cleared, I started feeling better and that is when I got curious. How can someone use a non-touch technique to remove physical symptoms, and so quickly?

hOw praniC healing wOrksIt intrigued me so much that a few months later I attended a Pranic Healing course that taught all about energy. This is the energy we all possess. Pranic Healing teaches that as well as a physical body we have an energy body and energy centres. It is within this energy body that we store our thoughts and emotions along with our stresses. If we accumulate too much stress it overloads the energy body reducing its effectiveness.

Pranic Healing was developed and introduced into the world in 1985 by a gentleman called Master Choa

Kok Sui. Since its inception, it has been taught in over 120 countries to an excess of 1 million people. It is the fastest growing complementary healing technique in the world today and is a simple yet powerful and effective system of non-touch energy healing. It is based on the fundamental principle that the body is a self-repairing living entity that possesses the innate ability to heal itself. Pranic Healing works on the principle that the healing process is accelerated by increasing the life energy on the affected part of the physical body.

praniC healing COurseEveryone has the ability to learn Pranic Healing with the Level 1 course, which is held over a two-day period. There are also many other courses within Pranic Healing that help personal and spiritual development if the practitioner wishes to follow them. stAYgO: You carried the Olympic Torch across London in 2008, on its way to Beijing. Who are the torch bearers this time around?

dAMe KellY: There are about 6,000 people carrying the torch and a lot of those were people put forward by their local communities. In 2008, I was lucky enough to hold the torch and that opportunity felt amazing. This time around, it’s wonderful that it will be people from all walks of life, young, old, male, female – everyone can feel part of it.

Dame Kelly Holmes, sporting hero and local girl, is due to attend Hospice in the Weald’s charity fundraising dinner on February 24th. Kelly is one of the charity’s patrons and we managed to catch up with her to find out a little bit more about her role and what she’s doing in 2012: the year of the London Olympics!

stAYgO: 2012 and the London Olympics are finally here and it’s going to be a very busy year for you! What will be your role during the actual event?

dAMe KellY: I am a Team GB Ambassador, which means I am one of the mentors to the team and can go into the village and talk to the team. I am also a Global Ambassador for British Telecom and I talk about

This magnificent 13th century moated castle is set in, award-

winning gardens and is the childhood home of Anne Boleyn, ill-fated second wife of Henry VIII. It later passed into the ownership of Henry’s fourth wife, Anne of Cleves. From 1557 onwards the Castle was owned by a number of families until, in 1903, William Waldorf Astor invested time, money and imagination in restoring the castle, building the ’Tudor Village’ and creating the gardens and lake.

Castle, the Hospice in the Weald's Torchlight Dinner follows in the successful footsteps of last year’s corporate dinner, which managed to raise £20,000. The dinner is an important event for the hospice and you can still take part. Tables of ten are available for £600 (or individuals at £65). stAYgO: And after the Olympics are all over, do you have any plans to relax?

dAMe KellY: I am really looking forward to the Olympics, it is a great event and great energy, but they don’t really shape my life now that I’m not competing in them, so I don’t have set plans for after the event.

stAYgO: You also do a lot of work for local charities. For instance, on February 24th you’re attending Hospice in the Weald’s Torchlight Dinner at Hever Castle, as a special guest. What are you particularly looking forward to about the event?

dAMe KellY: I have been involved with Hospice in the Weald for many years and it is a charity close to my heart. My Coach Dave Arnold died at the Hospice two years to the day that I won my 1500m gold medal in Athens, so I will always support it. I always believe in helping others and I think what Hospice in the Weald does to help patients and their families get through what could be the worst time of their life is unbelievable. All of their fundraising events are fantastic and this one is about rewarding hard work, entertaining and in a great location. It is a chance to thank supporters of the Hospice.

stAYgO: You’re well-known as an inspirational figure, after overcoming difficulties and injury to gain huge success. What is it about sporting heroes do you think people find inspiring?

dAMe KellY: You know when a sports person has won or lost, you can see the emotion and

passion on their faces. People can relate to them as in sport you can immediately see when it’s gone right or wrong. Sport as a whole inspires people, as there is a buzz when someone achieves and people connect with that emotion.

stAYgO: If you could give one piece of advice to a youngster who has sporting ambitions, what would it be?

dAMe KellY: If you have the opportunity, try lots of sports and you will find you stick at the one you’re best at and don’t be worried or scared to try. Take the best and worst and don’t give up.

stAYgO: Did you find it an easy transition from being an athlete to a well-known personality who’s always in demand?

dAMe KellY: It was a strange transition and part of the reason I set up my charity was that it gives lots of retired sports people help with what they will do. When I won my gold medals I was known in Kent and then everyone in Britain knew my name and I had people tooting at me or waving out of windows. It was weird but

equally it’s about taking one day at a time, adapting and getting people around you who make life easier.

stAYgO: When you’re not in the limelight, how do you get away from it all?

dAMe KellY: I just do normal things – cycling, climbing, watching films, holidays and I have six alpacas.

stAYgO: You grew up in Hildenborough and are

celebrated as one of our local heroes. Do you still live in Kent and what do you particularly like about this area?

dAMe KellY: I do still live in Kent, it is an amazing county. It is a tourist’s heaven with old towns, coast, great National Trust sites and beautiful countryside.

stAYgO: And finally, your ‘Double-Gold’ victory in the 2004 Athens Olympics is an iconic moment in British sporting history. Apart from your own performances, what’s your top iconic Olympic moment?

dAMe KellY: There are loads; there are moments from when I was young that inspired me. I remember all the media attention Zola Budd and Mary Decker got at the 1984 Olympics and they were women – I was very interested in it. The hype, controversy, tears and celebrations are all inspirational moments.

rOMAnce in tHeAtre And filMFirst of all let’s start with Trinity Theatre. On 7th February Wuthering Heights blows in to the cinema. This is the latest adaptation of the classic book and has a modern rawness that echoes the harsh Yorkshire Moors. This movie received a very favourable critical response when released last year and is well worth a look. Where better to take your other half than to a film to that has as much power and passion as Emily Brontë’s stunning story.

You can also catch Romantics Anonymous on Valentine’s Day itself; watch sparks fly between the boss of a chocolate factory and the gifted confectioner he hires, but will they be able to overcome the shyness that is threatening to obstruct the path of true amour? What better way

JOin tHelAntern pArAdeThe celebration then culminates with the popular lantern parade, which starts outside the library at 5.30pm.

In fact, throughout January many residents and children of Tunbridge Wells attended workshops where they created their own Chinese lanterns made from willow and decorated with tissue paper. They will see now their designs brighten up a dull February afternoon as people join in the parade and celebrate a tradition that has spread across the globe.

Music is an important aspect of any festival and the town’s celebrations will certainly not disappoint. The Bloco Fogo Samba band will lead the way with its addictive beat, and you too can contribute to the lively atmosphere, as Trinity Theatre is providing workshops during the afternoon to make shaker instruments.

All this celebrating needs to be rewarded with a refreshment or two, so why not indulge in the barbecue when the parade comes to an end at St Barnabas School in Quarry Road.

This festival marks the end of winter and the beginning of spring. So let’s cure the winter blues and join in Chinese New Year to wish peace and happiness for the whole community.

An animal marks each year and their characteristics represent what the year will bring. 2012 is the year of the dragon, a creature that is considered to be powerful, wise and superior. People born in the year of the dragon are said to be passionate, self assured and short tempered, among many other things.

The five elements that overlap the animals are metal, water, wood, fire and earth. This year is water, which cools the dragon and allows it to take a step back and let others in. C hristmas is a distant twinkling memory, resolutions came and went and we are still

wrapped up in layers upon layers of knitwear. So what’s to celebrate?

Millions of people are busy preparing themselves for China’s most prominent and longest festival – Chinese New Year. This is a time for families and loved ones to come together and celebrate happiness, wellbeing and longevity.

Chinese New Year doesn’t have a set date because months in China are determined by lunar activity. The first dark moon of this year appears on 23rd January, which is when the festivities will begin.

During the celebrations, each day has its own unique meaning, tradition and special events. New Year then ends on the 15th day of celebrations when the first full moon appears. Lantern festivals are often held on this day to celebrate the end of this long holiday. Painted lanterns are lit to represent love and promote positive relationships.

bleAK HOuse At brOAdstAirsAt the height of his fame, Dickens had a seaside residence at Broadstairs in Kent, where he holidayed with his family during the summer. It was here, at Bleak House, that he wrote some of his works, including David Copperfield.

Bleak House is now an exclusive hotel. However, Dickens' private study is still maintained as it was during his lifetime, with his writing desk overlooking the delightful bay.
