ingredients FOr apprOxiMately 8 panCakes

• 110g plain flour • 250ml of milk

• A little oil • pinch of salt

Make the batter

1. Sift the flour and salt into a mixing bowl. Then make a well in the middle of the flour and break the eggs into it.

2. Whisk in the eggs.

3. Gradually add the liquid as you whisk until the batter is smooth and there are no lumps of flour left around the bowl.

4. Allow it to rest for a short while.

hOt tip!

Definitely make sure the pan is hot – that’s the secret for successful pancakes!

In answer to that question, Ruby Julez is a new singer-songwriter, emerging right here in Tunbridge Wells. At a young age, she decided that the only thing she wanted to do was to create her own music – and now she’s achieved it!

Fresh from her new concept album comes the single Open Me Up, a surreal, cinematic type of sound that, once heard, just won’t let you go! The album itslef, Princess of the Asylum, is about life, emotions and the crazy things that people do. And it deals with different mindstates and mental health – an issue that is still a taboo subject for many.

Curious? Then check out Ruby Julez on YouTube and on Twitter... and watch out for gigs coming soon!

This year is a leap year, when the

perFeCt panCakes!

Shrove Tuesday, or Pancake Day, takes place this year on 21st February. It’s the last day before Lent, which is a period of fasting that begins on Ash Wednesday. It’s therefore traditionally associated with releasing high spirits and eating up foods which contained eggs, butter and sugar before the fasting began.

So everybody knows how to make pancakes, right? If not, try this!

COOk the panCakes

1. Heat the oil in a small frying pan until smoke rises from the surface.

2. Pour in enough mixture to cover the bottom of the pan. Take care as the pan will be very hot.

3. Cook for one minute, then shake the pan back and forth so that the pancake slides about in the pan.

4. Toss the pancake so that it lands on the other side. Cook for another minute and slide it out of the pan onto a serving plate.

serve as yOu like it!

There are a myriad of different ways to enjoy your pancakes. Stick to plain and delicious with sugar and lemon or use your imagination and go wild with chocolate or strawberries and maple syrup. And then there are the savoury versions... the list is truly endless.

more energy?

W ouldn’t it be good to able to get through the day and not be completely

exhausted at the end of it? Wouldn’t it be great to accomplish even more than normal and still have energy left over? These sentiments seem to echo with most people, so we asked Paul Mills of UK Pranic Healing how this particular type of therapy can help.

paul says...With the constant demands of work, family and life in general, it seems we are constantly on the go with little time to look after ourselves properly let alone other people. It’s no wonder we end up feeling tired, stressed and left with no energy after all the demands placed on us.

That’s exactly how I felt six years ago: no energy; feelings of stress; constantly tired; and suffering from various stomach and back-related

ailments. That was until someone did something called Pranic Healing on me. Within a few days my symptoms cleared, I started feeling better and that is when I got curious. How can someone use a non-touch technique to remove physical symptoms, and so quickly?

hOw praniC healing wOrksIt intrigued me so much that a few months later I attended a Pranic Healing course that taught all about energy. This is the energy we all possess. Pranic Healing teaches that as well as a physical body we have an energy body and energy centres. It is within this energy body that we store our thoughts and emotions along with our stresses. If we accumulate too much stress it overloads the energy body reducing its effectiveness.

Pranic Healing was developed and introduced into the world in 1985 by a gentleman called Master Choa

Kok Sui. Since its inception, it has been taught in over 120 countries to an excess of 1 million people. It is the fastest growing complementary healing technique in the world today and is a simple yet powerful and effective system of non-touch energy healing. It is based on the fundamental principle that the body is a self-repairing living entity that possesses the innate ability to heal itself. Pranic Healing works on the principle that the healing process is accelerated by increasing the life energy on the affected part of the physical body.

praniC healing COurseEveryone has the ability to learn Pranic Healing with the Level 1 course, which is held over a two-day period. There are also many other courses within Pranic Healing that help personal and spiritual development if the practitioner wishes to follow them. As well as the courses, UK Pranic Healing runs meditation evenings and also two-hour introductions to Pranic Healing. The next one is scheduled for the 8th February 2012, in Reigate, Surrey and more courses are scheduled for March. For further details please visit www.ukpranichealing.net or email [email protected]

stAYgO: You carried the Olympic Torch across London in 2008, on its way to Beijing. Who are the torch bearers this time around?

dAMe KellY: There are about 6,000 people carrying the torch and a lot of those were people put forward by their local communities. In 2008, I was lucky enough to hold the torch and that opportunity felt amazing. This time around, it’s wonderful that it will be people from all walks of life, young, old, male, female – everyone can feel part of it.

stAYgO: The Olympic Torch

be a fun occasion!

Dame Kelly Holmes, sporting hero and local girl, is due to attend Hospice in the Weald’s charity fundraising dinner on February 24th. Kelly is one of the charity’s patrons and we managed to catch up with her to find out a little bit more about her role and what she’s doing in 2012: the year of the London Olympics!

stAYgO: 2012 and the London Olympics are finally here and it’s going to be a very busy year for you! What will be your role during the actual event?

dAMe KellY: I am a Team GB Ambassador, which means I am one of the mentors to the team and can go into the village and talk to the team. I am also a Global Ambassador for British Telecom and I talk about

what technology has been put in

place for the Olympics.

Hever cAstle

This magnificent 13th century moated castle is set in, award-

winning gardens and is the childhood home of Anne Boleyn, ill-fated second wife of Henry VIII. It later passed into the ownership of Henry’s fourth wife, Anne of Cleves. From 1557 onwards the Castle was owned by a number of families until, in 1903, William Waldorf Astor invested time, money and imagination in restoring the castle, building the ’Tudor Village’ and creating the gardens and lake.

T aking place on 24th February at Hever

Castle, the Hospice in the Weald's Torchlight Dinner follows in the successful footsteps of last year’s corporate dinner, which managed to raise £20,000. The dinner is an important event for the hospice and you can still take part. Tables of ten are available for £600 (or individuals at £65). The hospice needs to raise £5 million every year, so take part and help raise much needed funds. For details, contact Rachel Holweger on 01892 820536 or [email protected]

stAYgO: And after the Olympics are all over, do you have any plans to relax?

dAMe KellY: I am really looking forward to the Olympics, it is a great event and great energy, but they don’t really shape my life now that I’m not competing in them, so I don’t have set plans for after the event.

stAYgO: You also do a lot of work for local charities. For instance, on February 24th you’re attending Hospice in the Weald’s Torchlight Dinner at Hever Castle, as a special guest. What are you particularly looking forward to about the event?

dAMe KellY: I have been involved with Hospice in the Weald for many years and it is a charity close to my heart. My Coach Dave Arnold died at the Hospice two years to the day that I won my 1500m gold medal in Athens, so I will always support it. I always believe in helping others and I think what Hospice in the Weald does to help patients and their families get through what could be the worst time of their life is unbelievable. All of their fundraising events are fantastic and this one is about rewarding hard work, entertaining and in a great location. It is a chance to thank supporters of the Hospice.

stAYgO: You’re well-known as an inspirational figure, after overcoming difficulties and injury to gain huge success. What is it about sporting heroes do you think people find inspiring?

dAMe KellY: You know when a sports person has won or lost, you can see the emotion and

... continued from cover

passion on their faces. People can relate to them as in sport you can immediately see when it’s gone right or wrong. Sport as a whole inspires people, as there is a buzz when someone achieves and people connect with that emotion.

stAYgO: If you could give one piece of advice to a youngster who has sporting ambitions, what would it be?

dAMe KellY: If you have the opportunity, try lots of sports and you will find you stick at the one you’re best at and don’t be worried or scared to try. Take the best and worst and don’t give up.

stAYgO: Did you find it an easy transition from being an athlete to a well-known personality who’s always in demand?

dAMe KellY: It was a strange transition and part of the reason I set up my charity was that it gives lots of retired sports people help with what they will do. When I won my gold medals I was known in Kent and then everyone in Britain knew my name and I had people tooting at me or waving out of windows. It was weird but

equally it’s about taking one day at a time, adapting and getting people around you who make life easier.

stAYgO: When you’re not in the limelight, how do you get away from it all?

dAMe KellY: I just do normal things – cycling, climbing, watching films, holidays and I have six alpacas.

stAYgO: You grew up in Hildenborough and are

celebrated as one of our local heroes. Do you still live in Kent and what do you particularly like about this area?

dAMe KellY: I do still live in Kent, it is an amazing county. It is a tourist’s heaven with old towns, coast, great National Trust sites and beautiful countryside.

stAYgO: And finally, your ‘Double-Gold’ victory in the 2004 Athens Olympics is an iconic moment in British sporting history. Apart from your own performances, what’s your top iconic Olympic moment?

dAMe KellY: There are loads; there are moments from when I was young that inspired me. I remember all the media attention Zola Budd and Mary Decker got at the 1984 Olympics and they were women – I was very interested in it. The hype, controversy, tears and celebrations are all inspirational moments.

stAYgO: Dame Kelly, thanks for talking to us – and enjoy the Torchlight Dinner!

Shapes and The Good Ship Band take centre stage with The Paul Dunton Orchestra warming up proceedings at 8pm.

Paul says, “Burning Shapes and The Good Ship Band are two bands that are both absolutely at the top of their game. Both are superb live acts and are writing songs of real quality. Burning Shapes can be described as sounding like Fleet Foxes got into a jam session with Kasabian and Paul Weller, however to cut a long story short... ‘absolutely brilliant’ is how I would describe them! Whereas The Good Ship Band draw influence from classic songwriting greats, such as Bruce Springstein, Simon & Garfunkel and the Dave Matthews

Band. They are without doubt, one of the best bands on the scene. Lead singer Jez Harley is a captivating vocalist and frontman."

T he 14th February is, of course, Valentine’s Day, but romance does not have to last for just one

day. Let February be, from this day forward, forever remembered in Tunbridge Wells as Romance Month. To celebrate, I have compiled a list of films, books and what’s on around our area with the theme of ‘love’.

rOMAnce in tHeAtre And filMFirst of all let’s start with Trinity Theatre. On 7th February Wuthering Heights blows in to the cinema. This is the latest adaptation of the classic book and has a modern rawness that echoes the harsh Yorkshire Moors. This movie received a very favourable critical response when released last year and is well worth a look. Where better to take your other half than to a film to that has as much power and passion as Emily Brontë’s stunning story.

You can also catch Romantics Anonymous on Valentine’s Day itself; watch sparks fly between the boss of a chocolate factory and the gifted confectioner he hires, but will they be able to overcome the shyness that is threatening to obstruct the path of true amour? What better way

to celebrate (or console yourself!) on Valentine’s Day, than with this frothy, funny and utterly charming French romantic comedy.

Then the Oast Theatre in Hildenborough is producing Alan Ayckbourn’s smart marital comedy How The Other Half Loves from 25th February. This has a great cast and promises to be another success for the Oast.

vAlentine’s MOvie gifts... For all of those males out there who may be struggling with gifts for her this Valentine’s, then let me offer to you a little support. Nothing says ‘I love you’ more than a movie or a book (OK, flowers, chocolates, underwear or dinner does too, but this is an arts column!). If you’re looking for a movie to cosy-up to on the sofa, then do consider those opposite...

A nother very romantic gift idea is a special book for

your loved one. You would do no wrong buying a book of romantic poetry, but if want something a little heavier, more Rioja than rosé, then think about the following: Wuthering Heights, by Emily Brontë; Dracula by Bram Stoker; Ariel by Sylvia Plath or The Power Book by Jeannette Winterson.

Set in a magical land where pirates are at an uneasy peace with fairies, pirate captain Capden Den is thrust into a swashbuckling adventure when he rescues two fairies from their drifting boat. On his way to helping them, he dodges evil pirate Dave, steals a boat and comes face to face with a fearsome T-Rex. This is a fun, romantic adventure for boys and girls and is available as an e-book for Kindle. I hope you enjoy it, I wrote it for my children, Alicia and Lucas.

in Tunbridge Wells!library and museum, and discover their teeth and claws that are also waiting to be found?

JOin tHelAntern pArAdeThe celebration then culminates with the popular lantern parade, which starts outside the library at 5.30pm.

In fact, throughout January many residents and children of Tunbridge Wells attended workshops where they created their own Chinese lanterns made from willow and decorated with tissue paper. They will see now their designs brighten up a dull February afternoon as people join in the parade and celebrate a tradition that has spread across the globe.

Music is an important aspect of any festival and the town’s celebrations will certainly not disappoint. The Bloco Fogo Samba band will lead the way with its addictive beat, and you too can contribute to the lively atmosphere, as Trinity Theatre is providing workshops during the afternoon to make shaker instruments.

All this celebrating needs to be rewarded with a refreshment or two, so why not indulge in the barbecue when the parade comes to an end at St Barnabas School in Quarry Road.

This festival marks the end of winter and the beginning of spring. So let’s cure the winter blues and join in Chinese New Year to wish peace and happiness for the whole community.

tHe cHinese ZOdiAcThe Chinese zodiac has a 12-year cycle. An animal marks each year and their characteristics represent what the year will bring. 2012 is the year of the dragon, a creature that is considered to be powerful, wise and superior. People born in the year of the dragon are said to be passionate, self assured and short tempered, among many other things.

The five elements that overlap the animals are metal, water, wood, fire and earth. This year is water, which cools the dragon and allows it to take a step back and let others in. Therefore 2012 is said to bring success and happiness. This mythological creature will certainly make an appearance during the parade in Tunbridge Wells – and right across the world!

C hristmas is a distant twinkling memory, resolutions came and went and we are still

wrapped up in layers upon layers of knitwear. So what’s to celebrate?

Millions of people are busy preparing themselves for China’s most prominent and longest festival – Chinese New Year. This is a time for families and loved ones to come together and celebrate happiness, wellbeing and longevity.

Chinese New Year doesn’t have a set date because months in China are determined by lunar activity. The first dark moon of this year appears on 23rd January, which is when the festivities will begin.

During the celebrations, each day has its own unique meaning, tradition and special events. New Year then ends on the 15th day of celebrations when the first full moon appears. Lantern festivals are often held on this day to celebrate the end of this long holiday. Painted lanterns are lit to represent love and promote positive relationships.

luxurY HOlidAYs in tHeindiAn OceAnWhich is the best kind of tropical island holiday? One where you lie on the same spot of the beach every day, read a couple of paperbacks, barely leave your lounger and pay exorbitant prices for imported water? Or one where you come back feeling re-energised, re-inspired and re-ignited?

For those who tick the second box, LUX* Island Resorts could have the perfect destination for you. LUX* was launched in December 2011 by CEO Paul Jones, a passionate hotelier and travel industry expert, and his management team. They recognised that luxury itself had undergone a sea change: no longer synonymous with excess and bling, true luxury has become simpler, fresher and more individual. They saw an opportunity to create something truly unique and so after 12 months of painstaking preparation and rehearsal, LUX* was born.

islAnd ligHtIt was agreed that rather than offering the standard sun, sea and sand 5-star vacation, LUX* Island Resorts would be defined by a radically reconceptualised experience. The manifestation of this change is Island Light, the signature concept that runs at all LUX* Island Resorts. Adopting a name that is Latin for ‘light’,

LUX Island Resorts

the new brand is dedicated to staging a lighter, brighter and less complicated holiday experience. Jones compares the concept to a musical production, where each resort is a theatre and its staff is the cast, producing a show-stopping performance every day.

At its core is the commitment to doing the ordinary extraordinarily. Freshly-roasted organic coffee, retro-styled ice-cream parlours, on-the-beach film screenings, pop-up restaurants, integrated wellness & spa programmes, honesty bars and libraries of cool magazines are individually tempting, but it is the cumulative impact of these and a whole raft of other carefully choreographed Island Light experiences – underpinned by truly incredible service – that adds up to an exhilarating change of direction.

siMple, relAxed luxurYPaul Jones is confident that this new brand of simpler, more

relaxed and more individual luxury will have wide appeal: “I have spent 35 years designing, building, operating and managing resorts in exotic destinations around the world,” says Jones, “and this project has presented me with an opportunity to contribute all that knowledge and insight. Island Light is the summation of many different ingredients which, when experienced as a whole, are a very powerful alternative to the usual island resort holiday. LUX* has determined its purpose as ‘Helping People Celebrate Life’ and that is what every member of our team is committed to.”

tHe five lux* resOrtsLUX* Island Resorts is a collection of premium hotels in the Indian Ocean, where guests can celebrate island life and enjoy light living. The five resorts are:

• LUX* Belle Mare, Mauritius

• LUX* Le Morne, Mauritius

• LUX* Grand Gaube, Mauritius

• LUX* Maldives

celebrAting tHe bicentenArY Of...

Charles DickensA new tAle Of Mr MicAwberMr Micawber Down Under, is a new book by local actor and author David Barry, published in time to celebrate the bicentenary. David has been a Tunbridge Wells resident for 28 years and this David Copperfield spin-off has been a labour of love for him that has now come to fruition.

The plot tells of how the ever-optimistic Mr Micawber bids a fond farewell to David Copperfield and takes his family to Australia, confident their lives will change for the better. However, more than florid language and optimism is needed to survive in this brash new world that is Melbourne in 1855, as Micawber's life becomes ever more complicated and a mystery ensues...

Mr Micawber Down Under can be purchased at £18.99 from Robert Hale Books or from Amazon.www.halebooks.comwww.amazon.co.uk

bleAK HOuse At brOAdstAirsAt the height of his fame, Dickens had a seaside residence at Broadstairs in Kent, where he holidayed with his family during the summer. It was here, at Bleak House, that he wrote some of his works, including David Copperfield.

Bleak House is now an exclusive hotel. However, Dickens' private study is still maintained as it was during his lifetime, with his writing desk overlooking the delightful bay.

To celebrate its connection with the great author, Broadstairs is home to the Dickens House Museum and it holds a festival every summer. No doubt this year's event will be extra special... www.broadstairsdickensfestival.co.uk

O ne of our most celebrated British authors, Charles Dickens has a long

association with Kent, and February 7th 2012 is the 200th anniversary of his birth. So what's happening to celebrate his bicentenary?

siMOn cAllOw At trinitY tHeAtreOn Saturday 18th February, Simon Callow will be reading excerpts from his new book Charles Dickens and the Great Theatre of the World. This is a a rare and exciting chance to see one of our great actors in the intimate surroundings of a small theatre.

Simon will bring to life a wealth of Dickens' characters, as well as discussing how his new book explores the sheer breadth of Dickens' writing. He says "When you find a writer that you love, it's like finding a best friend. Dickens never ceases to delight me. There's something in him which chimes with me: the energy; the scope; the generosity; the endless inventiveness of it." For any Dickens fan, this experience is not to be missed. £15 | 01892 678678 | www.trinitytheatre.net
