Cal-a-Vie was pleased to participate in The Kinkaid School annual fundraiser. Approximately 35 ladies from the Houston-based private school gathered at the spa for a 4-day retreat. Activities included a wine tasting from our very first harvest, a candlelit dinner in the chapel, a string trio quartet concert, a tennis tournament and much more!

Kristin Harrison recently joined our La Société de L’Orangerie. Kristin lives in Pasadena, California and has been a guest since 2003. In recognition of her loyal support, a ceremony was recently held in her honor and a permanent personalized plaque was placed on a tree in our Orange Grove. Additionally, Kristin will receive a complimentary spa service of her choice during every future visit. New Beauty Spa+ Magazine featured Cal-a-Vie in their “Ultimate Escapes” January 2014 edition. Celebrity Hair Designer Marie Ferro did an inspiring and dramatic beauty makeover of Katherine Karter, an up-and-coming actress located in Los Angeles. Katherine spent the day enjoying rigorous fitness classes and soothing body treatments, followed by a complete hair and makeup transformation.

Spring Detox By May Tom - MPH, RD

La Bonne Cuisine

For the Salmon:Pre-heat an oven to 350o. Add grape seed oil to a non-stick pan over medium high heat. Add the salmon fillets and sear for 1-2 minutes. Flip the salmon over and place into the oven for 3-5 minutes, depending on the thickness of the salmon fillet.

For the Romesco:Pre-heat an oven to 350o. Remove the core from the tomato and score the opposite (top) side with a paring knife. Place the bell peppers and tomatoes on a sheet tray and roast in the oven for 15-20 minutes or until the skin is blistered. Remove from the oven and allow to cool. Once cool, peel the skin from the bell peppers, discarding the seeds and stem. Peel the skin away from the tomatoes and reserve. For the garlic, place peeled cloves in aluminum foil with a touch of olive oil and wrap to enclose. Roast for 10-12 minutes or until the garlic is softened. For the almonds, place them on a sheet tray and roast for 5-6 minutes or until golden brown. In a medium sauce pot, over high heat, bring 1 quart of water to a boil.

Add the ancho chilies, turn off the stove, and let sit for 15 minutes or until soft. Once softened and cooled, remove the seeds and stem from the chilies. Place all of the ingredients in a food processor and puree until smooth. For the Green Bean Salad:In a large bowl, prepare an ice bath with 60% ice and 40% water. In a large pot, bring water to a rolling boil. Add the green beans and cook for approximately 3 minutes, or until tender. Remove the beans from the water and immediately plunge them into the ice bath to stop the cooking and preserve color. Drain and blot with a towel to remove the moisture. In a medium bowl, combine all the ingredients and mix well.

To plate:Place a 2 oz. pool of romesco sauce in the middle of the plate. Lay the dressed green bean salad across the sauce in a linear fashion. Place the roasted salmon in the middle of the plate, on top of the green bean salad and romesco.

Spring is a great time of year to support the liver in its detoxification processes. In preparing for the change of seasons, why not consider doing your own “detox”? There are some practical shifts you can make in your diet to help your liver process toxins more effectively.

Reduce the amount of foods that are inflammatory, such as refined sugars and processed carbohydrates. Sugar is considered a “nutrient-void” substance that is processed by the liver as a toxin. This applies to alcohol too. Try to give your body a rest from alcoholic beverages at least a few nights a week. If your social life permits, maybe go on an alcohol and sugar “fast” for a few weeks.

Consider taking a break from toxin exposure in the form of pesticides, herbicides and harsh cleaning chemicals. Try making your own cleaning products using vinegar, baking soda and borax.

Buy organic produce to decrease pesticide exposure. Better yet, grow an organic garden! It’s the perfect time of year to purchase some potted plants of your favorite vegetables or herbs from the local nursery or farmer’s market.

Try adding more dark leafy greens into your diet - this includes food like asparagus, kale, arugula, dandelion, and herbs like cilantro, mint, basil and parsley. Beets and lemons are also very liver-friendly. Getting plenty of fiber from eating plant-based foods and drinking plenty of fresh water are two key factors to detoxifying. Aim for drinking a minimum of half your body weight in ounces.

Recruit a few friends to join you for a liver-friendly detox month of eating more greens, drinking pure water, and eliminating toxins, alcohol and processed sugars. You’ll be welcoming spring with a new you!

Roasted King Salmon with Romesco and Green Bean Salad by Executive Chef Curtis Cooke

INGREDIENTS

Salmon:1 tablespoon grape seed oil4 each salmon fillet (4 oz each)

Romesco: (makes about 2 cups)

3 red bell peppers, roasted, peeled, seeded3 tomatoes, roasted, peeled8 cloves garlic, roasted3 ancho chilies, reconstituted, seeded1 cup bread, toasted½ cup almonds, toasted2 tablespoon sherry vinegar1/3 cup extra virgin olive oil1 teaspoon smoked paprika2 teaspoon sea salt

Green bean salad:2 cups green beans, blanched1 cup kalamata olives, quartered½ cup shallot, sliced thin2 tablespoons lemon juice3 tablespoons extra virgin olive oilPinch of salt

1. Apples2. Celery3. Cherry tomatoes4. Cucumber5. Grapes6. Hot peppers7. Nectarines (imported)8. Peaches

9. Potatoes10. Spinach

11. Strawberries

12. Sweet Bell Peppers

13. Collards and kale

14. Summer squash and zucchini

The “dirty dozen” are a list of fruits and vegetables that are shown by the Environmental Working Group to have the highest

level of pesticide contamination. If you can’t go 100% organic, at least consider switching to organic produce on the following items:
