Method

Firstly heat a frying pan and brown potatofondants in a little butter

Add 1oz of chicken stock powder, cover with water,bring to the boil and simmer until just soft

On a chopping board butterfly the chicken breastsand take sausage out of skin and place in middle of chicken, firmly roll chicken over sausage

Cut the rind off the pancetta and lay neatly onspread cling film (4 per portion)

Wrap chicken tightly in the pancetta

Put in an oven proof dish, add the remaining stockpowder to boiling water and a little of the wineand the apple juice, pour over the chicken coverwith foil and cook in the oven at 170 degrees untilover 70 degrees

Peel the baby carrots and cook in boiling water for 4minutes or until just soft, refresh in cold water

Take 16 chives put in boiling water for 5 secondsthen refresh in cold water

Season the water then add the spinach for 30seconds and plunge into cold water, then squeezeout excess water

Dry the carrots and chives then get 3 baby carrotsand tie carefully with the blanched chives

When the chicken is cooked pass the liquidthrough a sieve in to a pan, reduce by half thenadd the double cream, taste and add the rest ofthe chives chopped

Squeeze the spinach into a shaped ring, brush thecarrots and spinach with butter, put on bottomshelf of grill to warm through

Carefully put the cooked potatoes on a dry cloth

To plate up

Slice chicken at an angle into 5 slices and fan ontowarm plate

Put fondant potato on plate and tied baby carrotson top, in the gap put the spinach

Spoon sauce over chicken and garnish withvegetable crisps
