GENERAL INFORMATIONThese instructions must be retained by the owner/userfor future reference.
The serial plate is located on the right side of the controlhousing. Voltage, phase, amperage and wattage arestated on the plate.
This equipment is built to comply with applicablestandards for manufacturers. Many local codes exist,and it is the responsibility of the owner and installer tocomply with these codes.
GENERAL INSTALLATIONCheck the electrical rating label to ensure that the unit isthe correct voltage, phase, amperage and wattage arestated on this label.
Observe all clearance requirements to provide airsupply for proper operation, as well as sufficientclearance for servicing. Keep the skillet area free andclear of combustibles. Dimensions and clearancespecifications are shown on the specification sheet.
WARNING: Installation of skillet must be accomplishedby qualified installation personnel, working to allapplicable local and national codes. Improperinstallation of product could cause injury or damage,and void the warranty.
Installation must be in accordance with local codesand/or the National Electric Code ANSI/NFPA No. 70-latest edition (USA) or the Canadian Electrical CodeCSA Standard C22.1 (Canada). The skillet must beelectrically grounded by the installer.
Electrically powered skillets require a separate fuseddisconnect switch which must be supplied and installedin the high voltage electrical supply line. The wiregauge size and electric supply must match the powerrequirements specified on the skillet's rating plate. Theconduit-enclosed permanent copper wiring must beadequate to carry the required current at rated voltage.Refer to the specification sheet for electricalspecifications and location of electrical connections.
INSPECTION / UNPACKING1. Before unpacking visually inspect the unit for
evidence of damage during shipping.
2. If damage is noticed, do not unpack the unit, follow"Shipping Damage Instructions".
3. Carefully remove unit from shipping carton. Removeany packing material from unit. After carefullyunpacking check for "concealed" damage. Ifdamage is noticed, follow "Shipping DamageInstructions" shown below.
4. Check the electrical rating label to ensure that theunit is the correct voltage, phase, amperage andwattage are stated on this label.
5. A protective material has been applied to thestainless steel panels. This material must beremoved immediately after installation, as heat willmelt the material and make it more difficult toremove.
SHIPPING DAMAGEINSTRUCTIONSIf shipping damage to the unit is discovered orsuspected, observe the following guidelines inpreparing a shipping damage claim.
1. Write down a description of the damage or thereason for suspecting damage as soon as it isdiscovered. This will help in filling out the claimforms later.
2. As soon as damage is discovered or suspected,notify the carrier that delivered the shipment.
3. Arrange for the carrier's representative to examinethe damage.
4. Fill out all carrier claims forms and have theexamining carrier sign and date each form.
INSTALLATION CLEARANCESThis unit must be installed in accordance with thefollowing clearances in order to provide properoperation and servicing of the appliance. Also, it isrecommended the unit be installed with sufficientclearances to provide proper cleaning andmaintenance.

INSTALLATION
INSTALLATION1. Carefully remove unit from carton or crate. Remove
any packing material from unit. On stainless steelpanels, the protective material should be removedbefore the unit is installed.
2. Set skillet in position where electrical services arenearby. Comply with clearances stated on thespecification sheet. Ensure there is sufficientclearance between skillet and back wall.
3. Table-top models must be positioned on a firm, levelstand or existing counter top, and bolted in place,using the four 5/16"-18 rods and nuts included withthe skillet. These models are supplied with four5/16"-18 weldnuts welded to underside of the baseas illustrated below.
Make four 3/8" holes in an existing stand or countertop,in order to secure the base of the skillet. Once the holesare made, screw the threaded rods into the ferrules onthe bottom of the skillet base. Then insert the threadedrods through the holes on the stand or countertop.Thread the nuts onto the threaded rod and tighten tosecure base. Once secure and level, apply a seal ofsilicon, to the entire edge of the base at the countertop.This will prevent food particles from entering underneaththe skillet base. Screw the tilt handle into the threadedmounting block welded to the side of the skillet.
ELECTRICAL CONNECTIONFUSED DISCONNECT
A separate fused disconnect (supplied by installer) isrequired for this equipment. Follow chart below toproperly size disconnect.
WIRE CONNECTION
SET-10: Remove the screw at the rear of the console cover,and remove the cover. A wiring diagram is affixed to theunderside of the cover. Feed conduit enclosed permanentcopper wiring through the cut-out in the rear of theconsole, and fasten to the three connection terminal block.Be sure to connect the ground wire to the separate groundterminal connector (ground lug). Replace the consolecover and secure it with the screw.
SET-15: Remove the screw at the rear of the console cover,and remove the cover. A wiring diagram is affixed to theunderside of the cover. Install a watertight fitting in the cut-out in the rear of the console. Feed conduit enclosedpermanent copper wiring through fitting. Connect thepower and Neutral wires as shown to the terminal block.Be sure to connect the ground wire to the separate groundterminal connector (ground lug). Replace the consolecover and secure it with the screw.
INSTALLATION CHECKAlthough the skillet has been thoroughly tested beforeleaving the factory, the installer is responsible forensuring the proper operation of the skillet onceinstalled.
1. Ensure that electric supply to the skillet is turned on.
2. Remove the lift-off cover.
3. Place the skillet's power on/off switch to the "on"position.
4. Dial the thermostat switch to the maximum setting.The indicator light near the thermostat switch shouldbe illuminated until the set temperature is reached,then cycle on and off as the thermostat cycles onand off to maintain the set temperature.
5. Pour 2 gallons (8 liters) of cool tap water intopreheated skillet pan.
6. It should take approximately 3 minutes for the waterto begin to simmer. Shortly, the water should bebubbling uniformly across the entire cookingsurface.
7. Dial the thermostat switch back to the "off" position.
8. Tilt skillet to drain the water out of the skillet pan,into an appropriate pan or other container.
9. Lower the skillet, place the power on/off switch tothe "off' position.

INSTALLATION
INSTALLATION1. Retirez lâunitĂ© soigneusement du carton ou de la
manne. Enlevez tout le matĂ©riel dâemballage delâunitĂ©. Le matĂ©riel de protection sur les panneauxen acier inoxydable devrait ĂȘtre retirĂ© avantdâinstaller lâunitĂ©.
2. Mettez la poĂȘle Ă sa place proche des servicesĂ©lectriques. Respectez les paramĂštres dedĂ©gagement qui se trouvent sur la fichesignalĂ©tique. Il doit y avoir un espace assez dĂ©gagĂ©entre la poĂȘle et le mur arriĂšre.
3. Les modĂšles pour le comptoir doivent ĂȘtre placĂ©ssur un comptoir nivelĂ© et solide ou sur une surfacequi existe dĂ©jĂ et ils doivent ĂȘtre boulonnĂ©s enutilisant les quatre tiges 5/16 pouces-18 et lesĂ©crous inclus avec la poĂȘle. Ces modĂšles incluentles quatre Ă©crous de soudage de 5/16 pouces-18soudĂ©s sous la base illustrĂ©e ci-dessous.
Faites quatre trous de 3/8 pouces dans un comptoirexistant pour sĂ©curiser la base de la poĂȘle Ă frire. AprĂšsavoir forĂ© les trous, vissez les tiges enfilĂ©es dans lesbagues sous la base de la poĂȘle Ă frire. Ensuite, placezles tiges enfilĂ©es dans les trous du comptoir. Enfilez lesĂ©crous sur la tige enfilĂ©e et fixez la base comme il faut.Une fois que lâunitĂ© est sĂ©curisĂ©e et nivelĂ©e, appliquezun scellement en silicone tout le long de la base sur lecomptoir. Ceci empĂȘche les particules dâaliments de sefaufiler sous la base de la poĂȘle Ă frire. Vissez lapoignĂ©e dâinclinaison du bloc dâinstallation enfilĂ© soudĂ©Ă la face latĂ©rale de la poĂȘle Ă frire.
CONNEXION ĂLECTRIQUEINTERRUPTEUR DE SECTIONNEMENT FUSIONNĂ
Il vous faut un interrupteur de sectionnement fusionnĂ©sĂ©parĂ© (fourni par lâinstallateur) pour cet Ă©quipement.Suivez le tableau ci-dessous pour bien trouverlâinterrupteur de sectionnement de la bonne taille.
CONNEXION DES CĂBLES
SET-10: Retirez la vis de l'arriÚre du couvercle de laconsole, puis retirez le couvercle. Un schéma decùblage est apposé sur le dessous de ce couvercle.Faites passer la filerie fixe en cuivre intégrée au conduità travers la découpe à l'arriÚre de la console et fixez-laau bornier à triple jonction. Assurez-vous de raccorderle fil de terre au connecteur de borne de terre distinct(cosse de terre). Remettez le couvercle de la consoleen place et vissez-le fermement.
SET-15: Retirez la vis derriĂšre le couvercle de la console etretirez le couvercle. Un diagramme du cĂąblage est inclusau verso du couvercle. Installez un raccord Ă©tanche dansla la partie dĂ©coupĂ©e qui se trouve derriĂšre la console.Acheminez le cĂąblage en cuivre permanent dans leconduit Ă travers le raccord. Branchez lâalimentationĂ©lectrique et les cĂąbles neutres au bloc de branchement,tel quâindiquĂ©. Il faut sâassurer de brancher le cĂąble demise Ă la terre Ă la borne de masse sĂ©parĂ©e (tenon demasse). Replacez le couvercle de la console et fixez-leavec la vis.
VĂRIFIER LâINSTALLATIONMĂȘme si la poĂȘle Ă frire a Ă©tĂ© testĂ©e complĂštementavant de quitter lâusine, lâinstallateur est responsablepour sâassurer que la poĂȘle fonctionne correctementune fois quâelle est installĂ©e.
1. Lâalimentation Ă©lectrique de la poĂȘle Ă frire doit ĂȘtreallumĂ©e.
2. Retirez le couvercle basculant.
3. Placez lâinterrupteur dâalimentation Ă©lectrique de lapoĂȘle Ă frire Ă la position « on ».
4. Tournez lâinterrupteur du thermostat au rĂ©glagemaximal. Lâindicateur lumineux proche delâinterrupteur du thermostat devrait sâallumer jusquâĂ ce que la tempĂ©rature de consigne soit atteinte.Ensuite, le cycle sâallumera et sâĂ©teindra au fur et Ă mesure que les cycles du thermostat sâallument etsâĂ©teignent pour garder la tempĂ©rature de consigne.
5. Versez 2 gallons (8 litres) dâeau froide du robinetdans une poĂȘle Ă frire prĂ©chauffĂ©e.
6. Lâeau devrait commencer Ă frĂ©mir dans lâespacedâenviron 3 minutes. Sous peu, lâeau devraitcommencer Ă bouillonner uniformĂ©ment sur toute lasurface de cuisson.

OPERATING INSTRUCTIONS1. Ensure that the electrical supply to the skillet is turned
on.
2. Before cooking, be sure that the skillet's cookingsurface is clean, and that the skillet is in the fullylowered position.
3. Place the skillet's power on/off switch to the "on"position.
4. Pre-heat skillet for approximately 10 minutes byturning the temperature control knob to the desiredtemperature setting (see TEMPERATUREAPPLICATION CHART). The indicator light will remainlit, indicating the heater elements are activated, untilthe temperature setting has been reached. When theindicator light goes off, heaters are off, and preheatingis complete.
NOTE: When cooking egg and milk products, theskillet should not be preheated, as products of thisnature adhere to hot cooking surfaces. These types offoods should be placed in the skillet before heating isbegun.
5. Place the food product into the skillet, distributing itevenly across the cooking surface. The indicator lightwill cycle on and off indicating the elements arecycling on and off. The cover should be off for mosttypes of cooking or simmering. If cover is on, the ventcap can be used to reduce water content in productor allow steam to escape before lifting cover.
6. Pour the contents of the skillet into an appropriatecontainer by tilting the skillet forward. Care should betaken to pour slowly enough to avoid splashing of theproduct.
7. Move the ON/OFF switch to the OFF position to poweroff unit.
NOTE: With the ON/OFF switch in the ON positionand the thermostat set to minimum, the unit is in astandby mode, minimal heating is maintained.
NOTE: As with cleaning food soil from any cookware,and important part of skillet cleaning is to prevent foodsfrom drying on. For this reason, cleaning should becompleted immediately after cooked foods are removed.Refer to the "Cleaning Instructions" Instructions fordetailed skillet washing procedures.

OPERATING INSTRUCTIONS
MODE DâEMPLOI1. Lâalimentation Ă©lectrique de la poĂȘle Ă frire doit ĂȘtre
allumée.
2. Avant la cuisson, la surface de cuisson de la poĂȘle Ă frire doit ĂȘtre propre et Ă la position complĂštementbaissĂ©e.
3. Placez lâinterrupteur dâalimentation Ă©lectrique de lapoĂȘle Ă frire Ă la position « on ».
4. PrĂ©chauffez la poĂȘle Ă frire pendant environ 10minutes en tournant le pommeau de rĂ©glage detempĂ©rature Ă la tempĂ©rature de consigne dĂ©sirĂ©e(consultez le TABLEAU DE TEMPĂRATURE SELONLâEMPLOI). Lâindicateur lumineux restera allumĂ© poursignaler que les Ă©lĂ©ments de chauffage sont activĂ©s,jusquâĂ ce que la tempĂ©rature de consigne soitatteinte. Si lâindicateur lumineux sâĂ©teint, les Ă©lĂ©mentsde chauffage sâĂ©teindront et le prĂ©chauffage seraterminĂ©.
NOTE: Si vous cuisinez des Ćufs et des produitslaitiers, la poĂȘle Ă frire ne devrait pas ĂȘtreprĂ©chauffĂ©e, car ces types de produits se collent auxsurfaces chaudes. Ces types dâaliments devraient ĂȘtreplacĂ©s dans la poĂȘle Ă frire avant de chauffer lapoĂȘle.
5. Placez le produit alimentaire dans la poĂȘle Ă frire en ledistribuant uniformĂ©ment sur la surface de cuisson.Lâindicateur lumineux sâallumera et sâĂ©teindra pourmontrer le fonctionnement du cycle des Ă©lĂ©ments.Vous devez retirer le couvercle pour la plupart destypes de cuisson ou de frĂ©missement. Si le couvercleest allumĂ©, vous pouvez utiliser le bouchon dâaĂ©rationpour rĂ©duire la quantitĂ© dâeau dans le produit ou pourĂ©liminer la vapeur avant de soulever le couvercle.
6. Versez les contenus de la poĂȘle Ă frire dans uncontenant adĂ©quat en penchant la poĂȘle Ă frire verslâavant. Versez les contenus doucement pour ne pasĂ©clabousser le produit.
7. Placez lâinterrupteur ON/OFF Ă la position OFF pourĂ©teindre le courant Ă©lectrique de lâunitĂ©.
NOTE: Avec lâinterrpteur ON/OFF Ă la position ON etle thermostat au minimum, lâunitĂ© est dans un modeen attente et il nây a quâun chauffage minimal.
NOTE: Tout comme le nettoyage de dĂ©chets alimentairessur les batteries de cuisine, enlever les aliments avantquâils restent collĂ©s est la partie la plus importante dans lenettoyage de la poĂȘle Ă frire. Câest pour ceci que lenettoyage devrait se faire tout de suite aprĂšs avoir enlevĂ©la nourriture cuisinĂ©e. 1. Turn unit off.2. Prepare a warm water and mild detergent solution in the unit. 3. Remove food soil using a nylon brush. 4. Loosen food which is stuck by allowing it to soak at a
low temperature setting. 5. Drain unit.6. Rinse interior thoroughly.7. Using mild soapy water and a damp sponge, wash the
exterior, rinse, and dry.

following can be used: alcohol, baking soda, vinegar, ora solution of ammonia in water.

SERVICING GUIDEThis section contains servicing information intended for use by Authorized Service Personnel.
A/ PROBLEM: Skillet fails to heat with pilot light on.
Probable Cause Test and Remedy
1. Faulty contactor(s) Check coil(s) and contacts of contactor(s). Replace if necessary.
2. Faulty wiring Check wiring to contactor(s). Replace if necessary.
B/ PROBLEM: Skillet fails to heat with pilot light off.(power switch must be on and thermostat set).
Probable Cause Test and Remedy
1. Main power to skillet is off Check incoming power at terminal block.
2. Defective power switch With power source off, remove wiring from switch and test for continuity.Or with wiring connected and unit on, check for voltage across terminalsof switch. Voltage indicates an open circuit. Replace switch if necessary.
3. Defective thermostat Shut the unit off and disconnect wiring from thermostat. Check continuityof thermostat. An open circuit while in the "ON" position indicates a faultythermostat. Or with thermostat connected and unit on, check for voltageacross thermostat. Voltage indicates an open circuit, Indicating a faultythermostat.
4. Defective high limit thermostat Repeat above procedure used for defective thermostat.
C/ PROBLEM: Skillet fails to reach maximum 425°F at #10 setting.
Probable Cause Test and Remedy
1. Defective or improperly adjusted As unit shuts off early, check for voltage across thermostat thermostatterminals. If there is voltage across terminals, re-calibrate or replacethermostat.
2. Defective safety thermostat Repeat above procedure used for defective thermostat.
D/ PROBLEM: Skillet has uneven heat over pan surface.
Probable Cause Test and Remedy
1. Defective contactor Check contactor for burned out contacts and replace if required.
2. Defective heating element block Check for continuity between element terminals and from terminals toground. Either an open circuit between terminals or a short to groundindicates a faulty element. Replace if necessary.
3. Faulty wiring Inspect condition of wires and connections to elements and contactors.Repair if necessary.
4. Uneven torquing of aluminum Follow element block torquing procedure.heating blocks
MAINTENANCE
HEATING ELEMENTREMOVAL1. Tilt the skillet forward to access bottom cover plate.
2. Make sure power switch and external circuit breaker(at fuse box or breaker panel) are off.
3. Remove screws from bottom cover plate. Removeplate.
4. Remove all 7/16 inch nuts and washers fromstainless retaining plate located at rear of skilletpan.
5. Remove screws and tooth lock washer fromretaining bars and slide thru open end whereretaining plate was previously removed.
6. Disconnect electrical lead wires from elements.
7. Remove 5/16 inch nuts and spherical washers fromheating element blocks. Care should be taken whenremoving nuts and washers to prevent breakingstuds.
8. Remove heating elements blocks. Replace asneeded.
NOTE: With new element block in place re-tighten nutson spherical washers with a torque wrench to 11ft-lbs torque.
9. Replace retaining bars, retaining back plate andbottom cover.
10. Switch external power back on and return skillet tooperating position. WARNING: Heating elementblocks are very heavy. Use care when handling.
HEATING ELEMENT BLOCKTORQUINGUneven torquing of heating element blockretaining plate nuts may cause uneven heating ofthe cooking surface. To retorque, proceed asfollows:
1. Tilt the skillet forward.
2. Ensure that the power switch and the external circuitbreaker (at fuse box or breaker panel) are off. 3.Remove the bottom cover plate.
3. Loosen the 5/16 Inch nuts on the spherical washers.
4. Using a torque wrench, retighten the nuts to 11 ft-Ibs torque.
5. Replace the bottom cover plate.
