Maldives, May 2017 Keeping up with Coco Collection’s constant efforts to collaborate with like-minded individuals, this June sees the arrival of Herbert Nitsch to Coco Palm Dhuni Kolhu and Coco Bodu Hithi. An Austrian individual, Herbert is the current freediving world record holder and “The Deepest Man on Earth”, a

prestigious title that was given to him when set the world record for freediving at an incredible depth of 702 feet in 2007 and 830.8 feet in 2012. Self-taught, Herbert is a pioneer in terms of developing his own techniques over the years and has set a total of 33 freediving world records so far. During Herbert’s time at the resorts, he will take guests through interactive talks and practical sessions. The program starts with “The Deepest Man on Earth”, a talk with Herbert sharing his story about free diving as a discipline and hobby. He is able to relate how free diving can be enjoyed by

anyone of any age and he touches on his passion to conserve the seven seas. Day 2 will see Herbert take guests through a multimedia talk to efficiently prepare the body to free dive at shallow depths, followed by a hands-on in-water session. A screening of “Back from the Abyss” follows on the same evening, the award-winning documentary about his world record dive, and the aftermath of decompression sickness and the unbelievable way back to free diving again. The final day of the program takes guests through “Free diving with Marine Life”, a multimedia talk

in over a dozen countries about Herbert, his free

diving competitions and the adaptation of the

body to severe depths. During one of the days

at Coco Palm Dhuni Kolhu, Herbert will be joined

Continues to grow base of partners in the region

6 France to form new powerful tourism office

The Cotentin Peninsula – also known as the Cherbourg Peninsula - in the Normandy region of France, will soon see its many tourism boards undergo a major restructuring in the next few months.

By June this year, 11 local tourism boards will

have merged into one big entity and renamed

Cotentin Tourist office making it, arguably, one of

the most powerful tourism board in the country

with an annual budget of EUR4 million. Out of

this budget, up to EUR1 million will be kept aside

to promote Cotentin worldwide; of which India,

Middle East and China will be important focus

New entity expected to have EUR4 million annual budget

markets.

Speaking to Guillaume Hamel, the current

director of Cherbourg Tourisme and top man in

the running to head up the new entity, one gets

the feeling that this change will breathe some new

life into the French tourism industry.

Currently, France does not have a Ministry of

Tourism despite it being the biggest tourist

destination in the world.

“It is how it is and we’re still the top tourist

destination in the world,” says Hamel. “But, having

said that, there is a lot more we can do and once

the new structure is in place, we hope to bring

in more tourists to the Cotentin Peninsula and

showcase the wild and untouched landscapes

and beaches we have here.”

So far Normandy has mainly been promoted as a

historical war destination focusing on the D-Day

Landing beaches, war-cemeteries and World-War

Museums. But Hamel wants to widen his pool

of tourist attractions and include the preserved

natural beauty of the peninsula with its protected

heritage sites, middle-aged castles and unique

Method for the ZucchiniIn medium heat pan add the lamb fat and

20 ml of the olive oil till hot then add the lamb fat till melting, then sauté the onion till soft then add the garlic and cook for 10 minutes, then add the minced lamb and cook for 20 minutes and then add the spices and pine nuts and remove a side

Once cool down a bit fill the minced lamb mixture into the zucchinis

On separate sauce pan add the remaining olive oil and pan fry the zucchinis till golden brawn and set them a side

Method for Yogurt saucePure the yogurt and egg yolk on a pot and

place on the medium heat pot for 10 minutes, then once the yogurt is at 60c add the chicken stock and bring to boil, reduce the heat to low and add the corn starch, salt black pepper and keep stirring till the mixture got thick and remove from the stove, in separate sauce pan pure the olive oil till hot and add the chopped garlic till golden then quickly add the chopped mint leafs and remove from the stove and pure them on top of the yogurt

Method: • Preheat oven to 180ºC• Boil the chicken for 45 minutes until cooked then drain the chicken and discard the water. Set the cooked chicken aside to cool, once cooled remove all traces of any skin and bones that may remain and flake the chicken in to strips and keep aside.• Warm some olive oil in a pot; add the onions and fry for 5 minutes. Then add the crushed garlic, pine seeds, flaked chicken strips, salt, sumak, cumin and cinnamon. Stir in the pot for 3 minutes or until all ingredients are well combined.• Place the saj bread flat and add some of the chicken mixture evenly in the center of each piece of Saj. Fold the bread into neat parcels and place onto a baking tray. • Brush the top of each parcel with a little bit of olive oil and get ready to bake in your 180ºC preheated oven until the bread parcels start to become a beautiful golden brown color. (Approximately 10 minutes)• Remove from the oven and enjoy!**Remember to let them cool down for a few minutes as the filling will be piping hot!

He is the opposite of what you would expect of such a talented, ‘celebrity’ chef – there is not an ounce of ‘Diva’ to him, even though his magnificent achievements entitle him to it. As the huge cruise liner approached, the hitherto still waters of the Fjord started to swell in its wake and soon our kayak

was getting tossed around like a matchstick. It was a moment of pure terror that we would not like to relive when we were certain that the Naeroyfjord, one of the deepest fjords in Norway was going to swallow us up! However, we still had the presence of mind to remember our instructor, Harley’s advice – “whenever you encounter wakes, keep paddling with all your strength and never stop. The moment you stop, the kayak is certain to capsize into the fjord “. Using reserves of strength we never knew existed, we paddled frantically away from the wakes till the water became calmer. Easily the most hair-raising experience in our lives when the still waters of the fjord assumed another

menacing dimension. Still waters run deep – yes, almost a kilometer deep when you are talking about the Naeroyfjord, one of the deepest fjords in Norway. We had, in a moment of madness, signed up for a day long kayaking trip on the Naeroyfjord, without having stepped on a kayak in our lives! Welcome to Bergen, the second largest city in Norway and the “Gateway to the Magnificent Fjords” !! Ringed in by ice capped mountains, the Norwegian Sea and stunning scenery all around, it must surely rank as one of the most underrated tourist destinations in the world, judging by the small number of tourists who were to be seen throughout our four day stay. All the major Fjords of Norway are within an hour’s drive from Bergen and no visit to Scandinavia will be complete without a glimpse of these magnificent creations of nature.

Fish MarketThe first morning of our arrival in Bergen

was not very auspicious. True to its reputation of being one of the wettest places on earth, (it rains 300 days a year!), the weather was misty with driving rain reducing visibility to near zero. However, by noon, the rain had subsided but the weather still remained moody. We took this chance to explore “Downtown Bergen”. The heart of Bergen is the traditional Fish market, which has been the center of the Town’s life for centuries. Bergen has been a major fishing center and the Fish market, located right in the harbor is one of the major tourist attractions now. Unchanged for centuries, the market has numerous stalls where fisherman display their catch of the day and it is a very interesting experience to watch the locals haggle with the fishmongers, all in good spirit ! There are also

several seafood restaurants set along the harbor offering fabulous harbor views as well as live cooking. Altogether, a great atmosphere indeed, though a bit touristy !

Mount Floyen Though the rain had picked up by then, we

decided to see another of Bergen’s landmarks – Mount Floyen. Mount Floyen is over seven hundred meters high and located right in the heart of the city. There is a funicular railway, built over a century ago, which whisks you to the top in about ten minutes. In a foolhardy decision, we bought a one way ticket up to the top, with the intent to hike the four kilometers down. The Mount Floyen hike is recommended as a must do for the scenic beauty it offers,

albeit in better weather conditions. Though it was misty at the top, we spent a good hour enjoying the scenery – the gigantic cruise ships docked at Bergen harbor, the tiled medieval roofs of the town creating a red canopy, the tear drop shaped Lake Lille Lungegaardsvannet right in the heart of the city, and of course, the Bay of Bergen which lay further ahead. Since we did not have a return ticket in the funicular for the journey down, the only option was the 4 km hike. The rain had subsided by then and it was a most enjoyable walk downhill!! The narrow winding path criss crossed by mountain streams with a thick canopy of green and the pure Nordic air was a unique experience for us. However, after a couple of kilometers, we reached a cross road with two

paths leading in opposite directions and no sign post! Unfortunately, we took the wrong path and were beginning to get a bit worried that we were well and truly lost in the mountain, when a Norwegian gentleman who was in his car, stopped and guided us to the correct route, walking with us for more than a kilometer ! And we had thought Norwegians were cold and reserved. So much for stereotypes!

Bryggen The next morning, after a leisurely

breakfast, we set out for the Bryggen district – actually, it is barely a hundred meters across the water from the Fish Market. Bryggen is a remarkably well preserved set of buildings dating back to the Hanseatic area of the 1600’s

50 when Bergen was one of the major sea ports on the Hanseatic trade route. Though the whole area is a UNESCO World Heritage site now which prohibits any kind of construction or modification to the original structures, the march of commercialism was clearly visible here too. High end, impossibly expensive boutique shops now adorn the ground floors of these historic structures! The upper floors of these completely wooden structures, which date back over 600 years, house clinics, lawyer’s offices, and other community facilities! To me, it seemed slightly incongruous and diminished

the historic value of these structures.

A walk around BergenA leisurely walk around Bergen, which

can be done in about an hour must count as one of the most enjoyable experiences you can ever have! Start at the town center which is dominated by the stunning vista of Lake Lille Lungegardsvannet. This being Norway, the water is crystal clear and pure and is drinkable! On one side is the beautiful Festplassen or Music Pavilion and the other three sides of the lake are surrounded by Bergen’s famous museums and

art galleries. The natural history museum and the Bergen Art Gallery are a must see and give a good insight into historic and contemporary Norwegian Art and culture. A leisurely walk from the lake is the beautiful campus of the University of Bergen, which left me wondering how the students here are able to focus on their studies in such a stunning natural setting.

In the evening, we set out for the Nordennes, the northern part of Bergen, which is famous for its old, wooden houses dating back almost 500 years. The cobbled streets of Nordennes district are very narrow and full of very

colorful, wooden houses with each one of them having the most exquisite gardens in front. A very welcome sight for jaded, long term Dubai residents used to living in glass and steel high rises! Slices of everyday life – families sitting out on their patio enjoying the sun, grannies leaning on white picket fences gossiping with their neighbors, kids playing Frisbee with snow clad mountains in the background. No wonder, Norway is one of the happiest countries in the world. While we stopped for directions at a crossroad, I remarked to a local “I’m sure you don’t know how lucky you are to live here!” and his answer as he burst out laughing - “yes, I very well know!!!” Well, that sums up Bergen and its residents for you!

VossVoss is quickly replacing Queenstown in

New Zealand as the adventure capital of the world. Barely an hour’s drive from Bergen and situated on the Nyrefjord, Voss is a picturesque Alpine Town which has become the epicenter of Adventure Tourism in Norway. Having never stepped on a kayak in our lives, we had booked a day trip on the Naeroyfjord, one of the deepest fjords in Norway. We set out for our adventure and took the Bergen to Voss train early morning at 8 AM. We reached Voss in an hour flat, our adrenaline level rising in anticipation of the adventure awaiting us. soon as we arrived, we and the other fellow adventurers, all from different parts of the world were taken for a quick briefing. It turned out that we were the only rank amateurs who had not seen a kayak before in their lives. All the others were experienced kayakers who quickly got down to business. Our instructor, Harley, who unsurprisingly was a Kiwi, put us through our paces with a quick briefing and a few words of encouragement and we were on our way. It is a thrilling feeling to be barely six inches from one of the deepest water bodies in the world. The Fjords of Norway are a natural wonder and were created during when the ice

age ended almost 40 million years ago and have now become Norway’s No. 1 tourist attraction. However, it is one thing to sit on the deck of a cruise ship and watch the scenery unfold sipping a Pina colada and a totally different, albeit, a bit terrifying for novices like us, to sit on a kayak barely six inches from the ice cold water !! However, after about half an hour of haphazard paddling, we finally got the hang of it. Kayaking is not about brute force, it is all about your body position and the angle at which the paddle strikes the water. If both these are not correct, you are bound to get tired quickly which is what happened to us. After an

hour, we were barely half way through when all our fellow kayakers had already reached the first base camp and were waiting for us. However, the up, close and personal view of the Fjords and the surrounding snowcapped peaks that our vantage position in the kayak afforded us outweighed any physical discomfort and pain. The sheer cliffs rising from the frigid waters, with small hamlets perched precariously on the edges (how on earth do people live there??), a lone shepherd grazing his flock of sheep while playing a melancholy tune on his bard (this has to be the best job in the world !), the deep, cold waters changing color by the minute

Oslo – Bergen train journeySadly, our four days in Bergen ended all

too quickly and we decided to take the famous Oslo – Bergen train, a journey which takes over seven hours and is ranked among the top 5 rail journeys in the world. The magnificent Norwegian nature in its full glory - from ice capped peaks to fast moving glaciers, wild horses galloping alongside the rapids, a lone

fisherman in his kayak in the middle of a deep fjord, small villages perched precariously along precipices, cute alpine towns such as Flam and Voss all make this a journey to remember. Norwegian trains are very comfortable with wrap around windows to enjoy the scenery. The most stunning scenery is that of the glaciers, rivers of snow and ice on either side. Strangely, some of the glaciers appeared to be black, explained probably by the large iron deposits in the soil. The Norwegian countryside is largely deserted and sheep outnumber humans by a large ratio. There was never a boring moment in our seven hour journey and when the first signs of urbanization appeared with Oslo drawing near, we were filled with a sense of regret. Such is the spell that Bergen and the magnificent Norwegian nature can cast on you!

Ramadan Night Market, Dubai’s largest night-souk held during the holy month is all set to mark its return this year with a fresh flavor and more unique and exciting activities.
