The variety Pinot is one of the most planted grape in the whole of Europe.

The first importation of Pinot in Italy is attributed to General EMILIO di SAMBUY (1800-1872). He imported Pinot in his landes in Piemonte

After, in the following decades Pinot varieties was planted in many other regions of Italy:• Lombardia• Veneto• Emilia Romagna• Umbria • Toscana

An old book dated 1903 about vines foreigners declared that…

“The introduction of Pinot in some Italian regions, undoubtedly, has generated an advantage. The Pinot proved very interesting in the higher regions where normally other grapes do not reach maturity. Even in regions where the early budding proved resistant to late frosts.

On the other side, it was noted, that the grapes are very compact and rot easily, especially in wet years. There is not much time from maturity to harvest grapes otherwise they rot. Fermentations that are not very regular and rather difficult. And also that the wines from some calcareous soils are obtained very bitter...

For these reasons and many more, we strongly advise against planting grapes Pinot!” (1903)

Crushing the grapes with the stems

Pressing the whole grapes in the case of Pinot grigio affected by Botritys

Skin contact?? Maybe yes maybe no…

It’s good if I do aging with these wines The health of grapes is very important.

Page 27: Presentazione standard di PowerPoint - bcwgc.org · Source: I Vitigni da vino coltivati in Italia. S. Mondini Firenze, 1903. An old book dated 1903 about vines foreigners declared

Vinification: oxidation or reduction?

Wines more stable but weaker bouquet Loss of the primary aromas Probable formation of norisoprenoids (increase of hydrocarbure -romas) Easier clarification and stabilization of anthocyanins Hyperoxygenation: fruity wines, clean, very drinkable, but with a shorter

shelf life

OXIDATION

REDUCTION

Richer and more complex More sensitive to oxidation and maintenance of some anthocyans PINKING Richer bouquet

Bigger structure of the wine Increased protection against oxidation (good for wood aging)

COLLIO:

Hilly area in the province of Gorizia characterized by "Ponca", the dialect that defines this ground consists of clay alternated with sandy layers. It is a land rich in limestone, potassium and phosphorus and low in organic matter. Here wines are well-structured, with high alcohol, aromatic complexity and longevity

Page 30: Presentazione standard di PowerPoint - bcwgc.org · Source: I Vitigni da vino coltivati in Italia. S. Mondini Firenze, 1903. An old book dated 1903 about vines foreigners declared

Page 31: Presentazione standard di PowerPoint - bcwgc.org · Source: I Vitigni da vino coltivati in Italia. S. Mondini Firenze, 1903. An old book dated 1903 about vines foreigners declared

GRAVE DEL FRIULI:

large area with alluvial soils rich in skeleton has several microclimates, inthe north affected by the foothills, all the way to the sea. Here the PinotGrigio is particularly rich in potassium and refrigeration is needed, not onlyto obtain tartaric stability but to have the necessary mineral balance. Thehigh rainfall in the area and the location close to the mountains makes theclimate particularly fresh and you have a high temperature changesbetween day and night. The wines have a good minerality and excellentaroma.
