One such concern is the potential for High Path Avian Influenza (HPAI). “For years we have conducted surveillance and have monitored the poultry flocks here in Louisiana in an attempt to detect HPAI. However, in recent months, we have increased that surveillance. We are also conducting outreach programs with backyard enthusiasts and poultry growers,” said Dr. Michael Barrington, director of the Poultry Diagnostic Laboratory. Several states including Iowa and Minnesota recently experienced outbreaks of avian influenza in their poultry flocks. In the past year, the outbreak killed 50 million birds. Experts call it one of the most severe outbreaks in the United States. Preparing for High Path Avian Influenza

In a small, non-descript building in Homer, Louisiana sits a laboratory that is instrumental in protecting the poultry industry in Louisiana. One such concern is the potential for High Path Avian Influenza (HPAI).

“For years we have conducted surveillance and have monitored

the poultry flocks here in Louisiana in an attempt to detect HPAI. However, in recent months, we have increased that surveillance. We are also conducting outreach programs with backyard enthusiasts and poultry growers,” said Dr. Michael Barrington, director of the Poultry Diagnostic Laboratory.

Several states including Iowa and Minnesota recently experienced outbreaks of avian influenza in their poultry flocks. In the past year, the outbreak killed 50 million birds. Experts call it one of the most severe outbreaks in the United States.

Barrington says the outbreaks all start out the same way. “Migratory birds, ducks and geese, are resistant to the virus and therefore seldom show any symptoms. They commingle in their northern breeding grounds sharing the viruses then fly south, landing on ponds, lakes and reservoirs where people, equipment and domestic fowl may be exposed to the virus. Each year begins with a new set of opportunities and challenges, but we always hope for good weather, healthy crops, and strong markets.

According to the 2015 Global Agricultural Productivity (GAP) report, the rate of per capita income is going to increase almost three times as fast in developing countries as in already developed countries (4.4 percent vs 1.7 percent).

With more disposable income, an increase in demand for meat, crops, fiber, energy and all types

of consumable products is certain to follow. Specifically, developing nations will need approximately 12 percent more dairy , 15 percent more cotton, 28 percent more coarse grains like corn, grain sorghum and soybeans, 24 percent more meat, 28 percent more poultry, and 32 percent more vegetable oils to meet their growing demands and populations.

Overall, by 2050, the global middle class is expected to double to 70 percent of the population. On top of that, the growing issue of climate change will be especially

challenging to the majority of agricultural production throughout the world. Today we utilize about 70 percent of all available fresh water. This will increase to more than 89 percent by 2050. At the same time, the urban population will rise to 2/3 of the world’s population with fewer people living and working in the rural areas.

With 95 percent of the world's consumers outside of the United States and the fact that more than 60 percent of the grains and a large portion of the proteins exported worldwide come from the United

States, we have an unprecedented opportunity ahead. Once oil prices and the value of the American dollar stabilize, the world economy will begin to recover and commodity prices will rise.

It is imperative now that we stay the course and become more efficient in production, transportation, processing and delivery of raw and value-added agricultural, forestry and aquaculture products. In doing so, we will be in the driver's seat and command a greater market share and profitability.

Preheat oven to 350 degrees. Spray a 13x9-inch metal baking pan withbaking spray. In a large bowl, whisk together flour, baking soda, ¾ tea-spoon salt, ginger, pumpkin pie spice, sugar, and ½ cup brown sugar. Ina medium bowl, whisk together eggs, oil, half-and-half, and rum extract;add to flour mixture, and stir until combined. Add sweet potato andpecans, and stir until combined. Spread into prepared pan. Bake until awooden pick inserted in the center comes out clean, about 25 minutes;transfer to a wire rack, and let stand until warm. In a small nonsticksaucepan over medium-high heat, add cream, butter, vanilla, lemon juice,a pinch of salt, and remaining ½ cup brown sugar; stir until sugar dis-solves. Bring to a boil over high heat; reduce heat, and continue stirringuntil smooth. Remove from heat. Pour glaze over cake, and garnish withtoffee and pecans. Let stand until glaze sets. Cut into squares.

Preheat oven to 400 degrees. In a large cast-iron skillet, heat oil overmedium heat. Add onion, and cook until caramelized. Add sausage,and cook until cooked through, about 5 minutes. Add roasted peppers,sweet potato fries, salt, and pepper, and cook for 1 minute. Removefrom heat. In a large bowl, whisk together eggs and half-and-half untilfrothy. Add cheese, cumin, and chili powder. Using a measuring cup,lightly press the chorizo mixture over the bottom of the pan. Pour inthe egg mixture. Bake until the center is firm to the touch, 15 to 20minutes. Remove pan from oven. Increase oven to broil. Sprinklequeso fresco evenly over the top, and broil until cheese is melted andgolden, about 2 minutes. Remove pan from oven, and let cool slight-ly. Sprinkle with cilantro. Slice into individual servings, and garnishwith salsa, sour cream, cilantro, and avocado, if desired.

2 (14.1-oz.) pkgs. refrigerated piecrusts, thawed12 frozen yam patties, thawed2 tbsps. butterscotch morsels 12 tsps. dark brown sugar

6 tsps. ground cinnamon1 cup pecan pieces1 large egg2 tsps. whole milk6 tsps. granulated sugar

Preheat oven to 350 degrees. Line a rimmed baking sheet with parch-ment paper. On a well-floured surface, unfold piecrusts, and cut into 24rounds with a 4 1/2-inch metal cutter. Re-roll excess, if necessary.Arrange 12 piecrust circles on baking sheet with space in-between. Placea sweet potato patty in the middle of each. Divide butterscotch morsels,brown sugar, cinnamon, and pecan pieces evenly among pies. Cover pieswith remaining piecrusts. Crimp edges together tightly with fork or fin-gers. Make sure all edges are well sealed. In a small bowl, whisk togetheregg and milk. Brush piecrusts with egg wash, and top with sugar. Cut 3small holes in top of each pie with a small sharp knife. Bake pies untilbrowned, 25 to 30 minutes. Transfer pies to cooling rack, let cool.

2 cups whole milk2 cups shredded sharp cheddarcheese, divided2 fresh sweet potatoes, peeled andsliced 1/8-inch thick2 cups panko bread crumbsPaprika to taste

Preheat oven 375 degrees. In a large skillet, add sausage and cook overmedium heat until beginning to brown. Add onion, and cook, stirringconstantly, until onion is tender. Drain on paper towels. In a 2-quartsaucepan, melt butter over medium heat. Add flour, salt, and pepper, andcook, stirring constantly, until bubbly; remove from heat. Add milk, andstir until incorporated. Bring to a boil over high heat, and stir 1 minute.Remove from heat and stir in 1 1/2 cups cheese until melted. Spreadpotato in a 2-quart baking dish, pour cheese sauce over potatoes. Bakeuncovered for 45 minutes. In a small bowl, combine bread crumbs andremaining 1/2 cup cheese; sprinkle bread crumb mixture over potatoes,and top with paprika. Bake until brown and bubbly, about 10 minutes.

Sweet Potato Bundt Cake with Marmalade 1 (8 oz) pkg. cream cheese, softened1/4 cup sugar3/4 cup orange marmalade, divided3 large eggs, divided1 (16 oz) can candied yams, drained,syrup reserved1/4 cup vegetable oil

1 (15.25-oz.) box yellow cake mix1 tsp. ground cinnamon1/8 tsp. ground cloves1/8 tsp. ground nutmeg2 tbsps. unsalted butter1 tsp. vanilla extract1 1/2 cups confectioners’ sugar

Preheat oven to 350 degrees. Spray a 12-cup Bundt pan with bakingspray. In a medium bowl, beat cream cheese and sugar with a mixer atmedium speed until fluffy, 3 to 4 minutes. Add ½ cup marmalade and 1egg, and beat until combined. Set aside. In a large bowl, mash yams untilsmooth. Add oil, cake mix, cinnamon, cloves, nutmeg, ½ cup reservedsyrup, and remaining 2 eggs; beat with a mixer at medium speed for 2minutes. Place half of the cake batter in prepared pan, spreading it even-ly. Spoon marmalade filling on top, staying away from the edges of pan.Spoon remaining cake batter over marmalade. Bake until a wooden pickinserted near center comes out clean, 45 to 50 minutes. Let cake cool inpan for 30 minutes before inverting onto a cake plate. Let cool complete-ly. In a small bowl, microwave butter until melted. Stir in vanilla,remaining ¼ cup marmalade, and confectioners’ sugar. Stir in 3 tea-spoons of reserved syrup. Spread glaze over cake.

Ag Expo 2016 set for Jan. in West Monroe

A Lafourche Parish man was arrested and charged with one count of theft of livestock for allegedly stealing two horses. The owner of the horses, Brian Charles, called the Louisiana Department of Agriculture and Forestry Livestock Brand Commission to report the horses were stolen.

In a joint investigation with the Lafourche Parish Sheriff’s Office, it was determined that Timmy Hebert, who boarded the horses at 2914 Hwy. 182 in Raceland, La. sold the two horses to

registered livestock dealer Anton Wald in Kentwood for $500. Hebert allegedly told Wald he owned the horses because the original owner did not paid his boarding fee.

The owner of the horses, Charles, advised investigators there was no written agreement in place for the duration of boarding and no record of payment kept by Hebert.

Charles paid Wald $500 to retrieve his horses. The value of the horses is estimated at $10,000.

Lafourche Parish man arrested for livestock theft

BATON ROUGE, La. – Winter isn’t the time for gardeners to stop considering pollinators when they work in their gardens.

Gardeners start worrying about bees and other pollinators in the spring, when cucumbers, watermelon, cantaloupes and other cucurbit crops are planted, but they seldom look for pollinators this time of year, said LSU AgCenter fruit and vegetable specialist Kiki Fontenot.

The neglect occurs primarily because most fall vegetable crops are leafy greens that do not require a pollinator for production, she said. “Even though the fall garden doesn’t require pollinators, it doesn’t mean pollinators don’t need us.”

Residential and commercial developments are springing up in new locations across the state, and native prairies and forests are cleared for various purposes. The loss of habitat equates to the loss of blooming plants that feed pollinators.

“As generous as nature is to us, let’s consider giving back to nature this holiday season,” Fontenot said. Gardeners can do this by allowing a few of their broccoli plants go to seed.

“Not only will you have gorgeous yellow flowers that brighten the gloomy fall landscape, you’ll also feed the bees,” she said. “Bees flock to broccoli flowers in the wintertime, and it’s very pleasant to visit the garden and work to the tune of their hum.”

Consider this the gift that keeps on giving. “You’re feeding the bees now, and chances are they’ll return to the garden this spring when you need them to help produce the next crop,” Fontenot said.

If gardeners allow broccoli plants to go to flower, they should avoid using pesticides in the garden, she said. “If you absolutely need to use pesticides, apply them at dusk when most bees are returning to the hive.”

LAKE CHARLES, La. – With crawfish season starting, experts with the LSU AgCenter and Louisiana Sea Grant offered advice Tuesday (Dec. 15) for producers to improve their harvests.

Two dozen producers attended the event at the Calcasieu Parish AgCenter extension office.

Kevin Savoie, AgCenter and Sea Grant agent in Cameron Parish, said recent warm weather has been good for the start of crawfish season.

“Things really look good right now,” he said.Greg Lutz, an aquaculture specialist with the LSU AgCenter

and Louisiana Sea Grant, said checking the oxygen level in pond water is essential for creating an environment for a good crop. He asked for a show of hands of those who monitor the amount of oxygen in their crawfish ponds, but no one responded.

“I’m just going to say this: You can’t control something you don’t measure,” he said. “That’s probably the single thing you can do to make money.”

Lutz compared failing to monitor and maintain oxygen levels to not fertilizing a rice field. “If you’re not managing your oxygen, you might as well go on vacation,” he said.

Adding oxygenated water to a pond with good oxygen levels is a waste of money, he said, and failing to pump oxygenated water into a pond with low oxygen will result in fewer crawfish.

An inexpensive testing kit can be used every two to three

days in the fall, he said.Planting vegetation for crawfish too early in June results in

depleted oxygen early in the crawfish season as the vegetation will already be mature by early autumn, Lutz said.

Warmer water holds less oxygen. For example, Lutz said, water that is 80 degrees loses oxygen twice as fast as 70-degree water.

A mechanical aerator such as those used in catfish ponds probably isn’t worth the expense, he said. The simpler, cheaper method of adding oxygen is pumping water over a simple tower structure to break the water flow into droplets, with the potential to add 3-3.5 parts per million of oxygen.

Stocking should be done with females that have advanced eggs. The size of stocker crawfish does not matter, he said, because environment, not genetics, determines size.

Flooding too early also will result in rapid breakdown of vegetation, much of which won’t last into the late season, he said.

AgCenter crawfish researcher Ray McClain said harvesting is the most costly operating expense of a crawfish operation.

A study at the LSU AgCenter H. Rouse Caffey Rice Research Station in Crowley showed that only half of the crawfish released for further growth after being caught were ever captured again.

He said it’s best to remove crawfish that are captured, regardless of size.

Low crawfish populations need fewer traps, he said,

probably 10-14 per acre, while high crawfish populations can justify 16-20 traps an acre.

Traps can be run every 48 hours in cool weather, but that can be increased to every 24 hours in warm weather when the catch is good. In exceptionally warm weather with a high catch rate, traps can be checked every 12 hours but only for a few days, McClain said.

McClain also advised against throwing bait that’s several days old into the pond because the food could attract crawfish away from traps.

He said deep water isn’t needed for crawfish, but water levels should be deep enough to discourage wading birds from feeding on crawfish. High water will lead to earlier vegetation loss, he said, but some depth is needed to act as a buffer from cold temperatures.

More producers who also grow rice are switching to push boats because they don’t rut the fields like hydraulic boats, but the non-mechanized push boats are still used by farmers who have the equipment to refurbish the pond bottom.

Persistent low oxygen early in the season could result in death of young crawfish, McClain said. “If you lose that early recruitment class, you’re not going to catch many early in the season, and you may not catch much until March or April.”

Lutz urged producers to call AgCenter agents for help if crawfish start dying. “If you see crawfish dying, get on the phone and get some help,” he said. “You’ve got nothing to lose and everything to gain.”
