WELCOME TO DISTILLER’S ROW, where Portland’s new breed of pioneering distillers hope to once again put the city in the national spotlight, just as Oregon winemakers defined the Willamette Valley as a world-class wine region in the late 1970’s, and the small breweries of the 80’s made Portland capital of the craft brewing movement. No longer must liquor lovers turn to the handful of multi-national giants that dominate the industry for premium spirits. Now, there are truly local, handcrafted, small-batch alternatives.
The heart of this movement lies in an inconspicuous neighborhood of small warehouses and light industrial buildings in Southeast Portland, known as the Lower East-side Industrial District, between 7th and 11th Avenues. The area, where independent distilleries have begun producing over twenty unique liquors has been rechristened “Distller’s Row”. Here, they make everything from vodkas and gins, rums and whiskeys, to more specialized spirits such as absinthe, aquavit, and f lavored liqueurs.

DISTILLATION REVOLUTIONA
To produce yerba mate, or Ilex paraguariensis, seeds are planted in germination boxes after the mature yerba mate
berries are soaked in water for several hours and the pulp is
removed from the seed. After 70-120 days, the seeds
will germinate.
The leaf can be harvested after three
or four years, reaching full maturity after five years.
Yerba mate trees can live for several decades, but will experience declining yields
after five or six years
After approximately a year, the seedlings will reach 25 to 30 cm (8-12 in) and will be transplanted into the field at a spacing of about ten to 15 feet, depending on the land and the farmer’s preferences.
According to SeaRates.com,
it takes a freight container of yerba mate 20 days by ship from Buenos Aires, Argentina to Houston, TX.
Depending on the field, the worker can harvest about four tons of yerba mate per 60-hour week. With pay at about 10 pesos a ton, the average monthly wage is 200 pesos ($47 USD). Under Guayaki’s rate, workers would make almost triple.

The Atlantic Forest, in the northwest corner of Argentina, is where most of the yerba mate reforestation is occurring. As of 2008, the rainforest was down to 8% of its original size.
The leaves undergo a second 14-16 hour session of drying over indirect flame, in a process called secado.
In the last process before shipping, the leaves fill up 200-lb. bags for estacionamiento, or stationary aging, that lasts six to 24 months.

By 2020, Guayaki wants to maintain 200,000 acres of rainforest yerba mate farms. To reach its goal, Guayaki must double the number of American mate drinkers (starting at one) every five months over the previous month for 7.5 years, with each person consuming two bottles of the beverage per day.

Gestalt psycholoGy was founded in 1910
by three German psychologists, Max Wertheim-
er, Kury Koffka and Wolfgang Kohler. Years prior
to this, Wertheimer had studied in Prague with
an Austrian philosopher named Christian von
Ehrenfels, who had published a paper in 1890
entitled “On Gestalt Qualities.” In this paper he
acknowledged that a melody is still recognizable
when played in different keys, even though none
of the notes are the same. He declared that if
a melody and the notes that comprise it are so
independent, then a whole is not simply the sum
of its parts, but a synergistic “whole effect,” or
gestalt. Although the individual elements may
contain some meaning, the coherent whole will
have a greater meaning than the sum of the
parts. The effect of apparent movement is gener-
ated not so much by its individual elements as by
their dynamic interrelation. (Behrens 1998, 299)
This satisfies the brain’s need to find, or impose,
meaning to situations.
With this revelation, came the ideas that formed
Gestalt psychology. Gestalt psychology proposed
that the brain is holistic with self-organizing ten-
dencies. Due to these supposed innate abilities,
the brain is capable of organizing and structur-
ing individual elements, shapes or forms into a
coherent, organized whole. (JADE 27.1, 63) In
Wertheimer’s paper called “Theory of Form,”
published in 1923, he expressed that our brain
has an innate tendency to constellate, or to see
as ‘belonging together’ elements that look alike
(called ‘similarity grouping’), are lose together
(“proximity grouping”) or that have structural
economy (“good continuation”). Since judg-
ments about similarity or proximity in compo-
sitions of paintings, posters or page layouts are
comparative, different parts may be purposely
made to connect by one grouping tendency
(similarity of color, for example) but to discon-
nect by others (distance, for example, or differ-
ences of shape, size or direction). Likewise edges
that align to each other in space create a connec-
tion and therefore appear to belong together.
