Since it is exposed to a variety of biological stressors,the vegetal world has had to develop complex defensestrategies. This has resulted in the emergence ofmolecules with specific properties. For example, thecatechins contained in Tea are polyphenols in theflavonoid family and are known to be powerfulantioxidants.
Tea polyphenols
Tea contains more than 500 active compounds, including certainpolyphenols (a large group of antioxidants) among the polyphenols arecatechins, theaflavins and thearubigins. Catechins are the Tea flavonoidsthat have been the subject of many researches in scientific literature. Theyare also primarily responsible for the most valuable antioxidant propertiesin Tea, one catechin in particular: EGCG (epigallocatechin gallate).
