choKo: Technically a type of gourd, Choko is high in Vitamin C and a fair source of fibre. Look for firm, smaller green chokos with no brown spotting or sprouting. Possessing a very mild flavour, chokos are highly versatile and can be cooked in many ways: poach with syrup in substitute for pears, stuff and bake, use as a base for chutneys, include in soups or lightly stir fry with your next Asian dish. TIP: Thickly peel and halve to remove the white central seed before cooking.

how’s thisDuring Queensland’s peak growing season (April to October), 70-80% of our

organic produce is sourced locally. This means that

often our fruit and veggies jump onto our shelves the

very same day they are picked! You can’t get much

fresher than that.

caULiFLoWer bechaMeL saUceWith this wonderful white vegie in peak season, cauliflowers can be far more exciting than a steamed side to your roast. Stock up on this seasonal vegie and use it to create cauliflower rice, cauliflower pizza crust or even this surprisingly rich and creamy béchamel sauce!

This will make approximately 1 litre:270g coconut milk270ml water325g chopped cauliflower1 teaspoon tapioca flour mixed with 4 teaspoons cold water2 tablespoons nutritional yeast2 teaspoons mild mustard1 tablespoon white miso¼ teaspoon freshly grated nutmeg¾ teaspoon sea salt1 teaspoon lemon juice

Place the coconut milk, water and cauliflower into a pot. Bring to the boil, reduce heat and cover with a lid. Cook gently for approximately 20 minutes or until tender.

Use a stick blender to puree until smooth. Return the pot to the heat and when simmering, thicken with the tapioca/water paste. Once thick and velvety, remove from the heat.

Add all the remaining ingredients. The sauce will still seem on the runny side but it needs to like this as it will thicken when you bake it further with your accompanying dish of choice.

When we first discovered Healthybake, this family company was literally a trailblazer in the Australian bread industry and an original manufacturer of spelt products. Today, we have regrettably observed Healthybake sales diminishing amongst an increasingly competitive bread market. In honour of their quality product and service in sourcing alternative grains for Australian consumers, we wanted to share the ‘knead’ to support this great company.

In 2000, two brothers, Andrew and Jon Moors, left the corporate world and decided to launch a small bakery in the Yarra Valley town of Lilydale. Their dream was to create healthy organic wheat alternative bread options for a burgeoning health food market. With the help of Andrew and Jon’s wives –Sue and Angela- Healthybake was soon up and baking!

Initially, Healthybake handcrafted many organic bread options using premium quality stoneground flour, olive oil and sea salt. However, Healthybake also pioneered the use of alternative wheat grains in Australia, offering spelt loaves as an option long before this unique grain was a known commodity!

Introducing ancient grains into the bread industry was quite a formidable task. As the internet was relatively new during Healthybake’s initial years, Sue meticulously researched all the ancient grains and discovered that they were not available in Australia. Therefore, Sue and her husband Andrew travelled to Canada to access these ingredients and learn how to grow them organically in Australia. Significant time was spent with farmers and millers to have grain grown and milled to Healthybake’s specifications. Today, Healthybake have contracts with farmers so that they can exclusively purchase Australian grown grain.

Over the years, consumers have become increasingly aware of the various ancient grains available on the Australian market. Today, the public is wise to the fantastic nutritional and digestive benefits that these grains can offer!

With the maturing of this originally niche market, numerous companies are manufacturing similar products. Despite high competition, Healthybake have resisted the temptation to compromise on the quality and nutritional benefits of their products by using inferior ingredients, mass production techniques or freezing of their product. Therefore, Healthybake continues to manufacture premium quality organic sourdough, wheat alternative and gluten free bread for the Australian marketplace. This takes place in their modern state of the art factory in the Yarra Valley of Victoria.

With over 70 PERCENT of the Earth’s surface covered by water, our marine environment is an essential part of the globe to care for. Yet mankind continues to leave his footprint in the ocean too…

plasticThis marks an area of the Pacific Ocean that has been aptly dubbed ‘The Great Pacific Garbage Patch’. It was discovered in 1997 by Charles Moore, an oceanographer and racing boat captain who stumbled upon this manmade atrocity whilst sailing through one of the world’s most remote oceanic locations between Hawaii and the US. As the name suggests, the ‘Great Pacific Garbage Patch’ is an area of ocean around five times the size of the UK and up to 10 metres deep, which constitutes a gigantic floating corpus of human waste. This is the largest of five such ocean patches identified by researchers. These sludge patches are formed by strong air vortices and ocean currents which concentrate waste into one oceanic zone known as a ‘gyre’. Marine biologists contend that approximately 80% of the garbage within these gyres are derived from land sources, with over 70% of all marine garbage comprised of plastic.

BIODEGRADABLE POLYMERS – Plastic that degrades once it interacts with microorganisms in the soil or water.PHOTODEGRADABLE POLYMERS – A type of plastic that breaks down upon significant exposure to light. OXI-BIODEGRADABLE POLYMERS – A plastic that degrades via additives that speed up the breakdown process. Therefore, these bags break down quickly!

There are several types of plastic bags currently used around

the globe & here’s a snapshot of just a few.

During an auspicious sea voyage in 1992, an ill-fated shipping container deposited 28,000 rubber duckies into the ocean. However, this accidental business blunder actually catalysed the discovery of ground-breaking knowledge about our ocean currents.

In the two decades since their legendary exodus into the ocean, this shipment of rubber duckies has traversed the world. Their arrival has been documented in South America, Australia, Alaska, Scotland and Hawaii. A few less fortunate floaties have even become ensconced in Atlantic Ice!

Of pertinence to oceanographers, 2,000 of the floating ducks have been uncovered in the North Pacific Gyre. Whilst the Gyre certainly doesn’t require any additional waste into its existing catchment, this finding has enriched scientists’ understanding of ocean currents. More specifically, we now understand that it takes approximately three years to complete a full ocean circuit within the North Pacific Gyre.

Aside from illuminating ocean current phenomena, these plastic ducks exemplify the enduring nature of plastic pollution. Today, newly discovered duckies are still uncovered in good condition – a testament to the resilience of plastic in our natural environment.

Food laws - and food labelling - differ all around the World. Whilst companies can make all sorts of curative claims about their food overseas, that sort of thing doesn’t

really fly in Oz... At least, it’s very restricted and heavily regulated here!Unless you’re a food scientist, understanding nutrition labels can feel a bit like

decoding the Rosetta Stone. Despite appearances, we promise you don’t really need a Linguistics Degree to make sense of it all. This easy guide is designed for ultimate user-

friendliness and non-jargoness… You’ll be reading food labels like a pro in no time!

Firstly, by Australian law, all foods must display a nutrition panel, with a few exceptions:• Goods in very small packages (you didn’t really want to know the calories in that mini

chocolate bar anyway, did you?)• Produce (a nutrition label on a banana would look a little weird)• Fundraiser foods• Food & goods that are made and packaged at their Point of Sale (for example, a deli)• Water and Vinegar (for obvious reasons; the main one being that they don’t have energy, fat

or protein to declare)

Learn what each part means! A panel MUST display energy, protein, total fat, saturated fat, total carbohydrates, sugars and sodium. The rest is optional unless a specific claim is made. For example, if a food advertises ‘high in fibre’ then fibre must be listed also. We’ve included the recommended intake beside the titles of these ingredients too!

In Australia, we measure the energy we get from food in ‘kilojoules’ (abbreviated to kJ). Think of energy as a bit like the fuel that goes into your car – every car needs a certain amount of fuel to operate. Unlike machinery though, our ‘tank’ to store excess fuel is fat tissue. The average

adult needs roughly 8,700kJ per day but obviously many, many factors influence this! If you’re enjoying a special treat, Aussie guidelines suggest sticking to a serve that provides 600kJ, so this can help you to determine what your serve size should be – rather than what the food manufacturer has decided.

Food companies get to choose their own serve sizes (more on that later!) but food law stipulates that each package must declare ‘per 100g’ quantities. TIP: This standardised measure makes it easier to compare products and follow a few guidelines!

Generally, look for packaged foods that contain less than 10g per 100g of total fat. Remember, if a cracker has 10g of fat per 100g, this is telling you that it’s made of 10% fat.

Not compulsory to declare but useful when food labels do! More than 3g per serve is generally considered a good source of fibre. The current guidelines are to look

for packaged products with <15g per 100g of sugars. A kind word of advice though – products containing dried fruit may be high in natural sugars but unfortunately the nutrition panel doesn’t differentiate between this and added sugar. Simply check the Ingredients List to see if Sugar appears early in the list; this can help to determine where the sugar quantity is coming from.

“Sodium” is simply science speak for salt. Despite a lot of controversial research declaring otherwise, a healthy, moderately active body can regulate sodium levels extremely well. Sodium occurs in many foods and these natural amounts are more than enough for the average person’s requirements. However, it is added to virtually any food that comes in a package and is almost impossible to avoid, so there’s a few guidelines to suggest a sensible added amount. Products with less than 400mg sodium per 100g are considered good, although <120mg/100g is the ideal recommendation. You may be surprised how high many packaged goods are!

Although companies don’t have to specify the exact quantities of ingredients within their products (that would be giving the recipe away!), each ingredient must be listed in descending order of greatest to lowest weight used. Therefore, if sugar is high up on the Ingredients List, chances are that the overall product may contain a higher percentage of sugar. Also note; if a product advertises a key ingredient in the product name, it must state what percentage of that ingredient has been used. For example, an Ingredients List for Blueberry Yoghurt might read; milk, milk solids, blueberries (33%), honey.

There is a FREE app that Bupa have designed called ‘FoodSwitch’.Simply choose your preferred setting (you can even select gluten free) and scan a food product barcode. The app will return a ‘traffic light’ rating for each food label component. For example, Red for Fat would indicate that the product you’ve picked up is high in fat.The BEST bit though, is that this clever little app will then list similar products that have an even better rating. Pretty sweet, right?

If an ingredient constitutes less than 5% of the overall product, it doesn’t have to be declared on the Ingredients List. This does not apply to additives or allergens.

‘LIGHT’ or ‘LITE’ doesn’t always mean light in fat or energy. It could be ‘lite’ in colour or flavour!

‘REDUCED FAT’ and ‘REDUCED SALT’ simply means that it contains 25% less than the original product. It may still be quite high by health standards.

‘CHOLESTEROL FREE’ is a moot claim on many plant based products such as olive oil – all plant foods contain almost no cholesterol anyway.

‘BAKED NOT FRIED’ is not always healthier… Baked may have the same amount of fat, regardless of the cooking method. Use your new label reading skills to find out.

‘FRESH’ indicates that a food has not been frozen, canned, heated or chemically treated BUT it may have still spent weeks in refrigeration and transport.

Be mindful of clever word games… ‘93% fat free’ is actually the same as ‘7% fat’!

Ingredients lists are allowed to only include ‘composite’ products. For example, a cookie may list ‘chocolate’ rather than ‘cocoa, milk solids etc’ and a full breakdown of that ingredient.

What about The health star rating?The Health Star Rating (HSR) is a recent governmental initiative. It was implemented to help consumers make easier and better informed food purchasing decisions. The HSR is displayed as a star rating from 0.5 stars to 5 stars on the front of a food packet, in addition to energy and nutrition information. The more stars, the healthier the rating. Read your labels too though, of course!

POMEGRANATE – sub with goji berries soaked in a little water.

ALMOND BUTTER – use any nut butter or whole nuts blended to a paste.

QUINCE – sub with pear or apple.

SUGAR - coconut sugar, rapadura sugar and brown granulated sugar can all be used interchangeably. Rice malt syrup, honey, maple syrup, coconut palm syrup and agave achieve a different result to granulated sugar but can be used instead of each other.

TANGELO – sub with orange or mandarin.

(Greece) Chicken broth with orzo or rice, lemon and egg.

(Vietnam) Pronounced ‘fur’. A delicious broth served with rice noodles, fresh herbs and slivered beef. Often eaten for breakfast on the streets of Saigon!

(Ukraine) A concoction of cabbage, beetroot and meat that can be eaten hot or cold.

(Phillipines) A group of chunky soups based on coconut milk.

(Hungary) A rustic concoction with tomato, capsicum, onion, beef and potato.

(Thailand) A spicy soup typified by galangal, kaffir, chilli and coriander.

(Japan) A soup based on fermented miso paste, tofu and seaweed.

(Korea) A chunky slow cooked stew based on beef and ox parts.

(Mexico) A substantial stew based on meat broth, onion, chillies and coriander.

TO Make:Place a pot of water on to boil. Add the mustard greens, kale, spinach and broccoli. Cover with a lid, bring back to the boil, then remove the lid. Cook on medium heat for 3 minutes. Puree the vegetables with 1/2 cup of cooking water and return to the pot.Mix the besan flour with the extra water and add to the greens. Stir over medium heat until the mixture thickens. Add salt.

In another pan, heat the ghee and fry the garlic, ginger, shallots and chilli. Sweat for three minutes. Add to the saag mixture and stir to combine.

Serve with a spoon of ghee on top, with the side of your choice!

Having trouble getting your Greens in this Winter? Our

recent cold snap doesn’t exactly inspire cold green juices.... This velvety, subtly aromatic dish

was created by surinda from our kitchen dream team and is the perfect way to warm up whilst

getting your Green Hit.

This is a traditional Punjabi dish and almost always enjoyed with

Maki Roti, which is flat bread made from ground corn flour. Literally translated, Saag means ‘pureed greens’ and can vary between

traditional households. However, Sarson Ka Saag is made using

mustard greens and spinach. You can substitute kale for mustard

greens but do not use baby spinach as it is far too delicate in flavour for

this dish.

With Winter well and truly upon this part of the southern Hemisphere, soups are a nourishing way to warm up. Whilst

aussie families would typically enjoy a classic pumpkin soup or chicken noodle brew during the cold season, we thought we’d

check out what else is served up around the world! YOu’ll Need:3 tablespoons ghee2 bunches (600g) mustard greens1 bunch (500g) spinach1 bunch (250g) kale1 cup (150g) broccoli1 cup shallots, sliced2 cloves garlic, grated3 tablespoons grated ginger1/2 teaspoon chilli flakes3 tablespoons besan flour3 tablespoons water, extra2 teaspoons saltextra ghee to serve (optional)

1 tsp cloves1 tsp cardamom

1 tsp peppercorns1 cinnamon stick

A couple of ginger slices

2 x black teabags1 pinch chilli powder

(optional)

to make your mixture go further, steep for longer and add two cups

of water to the recipe!

Put all ingredients (aside fom teabags) into a pot & bring to a boil. Add teabags and reduce to simmer for 15 minutes. Add your choice of milk and sweetener. Strain then serve!

TO Make:1. Slice the vanilla bean to reveal the seeds

and add vanilla seeds, milk, sweetener and all remaining ingredients into a saucepan.

2. Bring the mixture to a simmer, then add tea.

3. Boil mixture for 5 minutes.4. Remove mixture from stove and allow to

steep for half an hour.5. Strain all solids away from the liquid – this

liquid becomes your chai concentrate!6. Add fresh milk (and additional sweetener

if you wish) to create a chai latte to your preference.

LaZY chaiWinter is synonymous with warm drinks, spices and something sweet. In homage of this edition’s glOBAl theme, what better way to combine all these elements than with an India-inspired Chai tea recipe? After experimenting with a few recipes, we settled on this delicious concoction by Sara Malllicoat from ‘Cayenne Room’ – with a few Kunara modifications!

What inspired you to change your lifestyle?A: I was going through a really stressful time in my life and my health was suffering. Despite having gone gluten free for many years, everything in my body felt like it was on fire, mentally I was not coping and I felt tired 24/7. I was also felt bloated and carrying around a bit too much weight for my size. Krystle originally came along for support but soon discovered the benefits for herself too.

Which changes have you made?A: I try to eat as much local organic/spray free produce as possible! My non-negotiable foods I avoid are gluten, cow’s milk, red meat and processed sugar as for me personally they cause so much inflammation in my body and make me feel like I cannot cope. These items in particular have a huge impact on my mental health. My vegetable intake has gone from a few over steamed carrots with dinner to nearly every time I eat. I also love lots of fresh cold pressed green juice.K: There are so many changes and I'm not going to lie... Not all of them have come easily! My diet now consists of mostly organic fruits and vegetables, green juice, white meats and superfoods. I tend to steer clear of wheat, gluten, red meat and dairy as my body has trouble processing these kinds of foods. So basically my rule is to stick to whole foods or foods with minimal processing. One of the last things I changed was the use of chemicals in my home and on my body. I'm glad I did as it has lead us to the beautiful CÎME skincare products.

What were some of the difficulties you encountered?A: I really struggled for the first 3 or so months. As my body was detoxing from all the “food like” products I had been putting in it for years I experienced extreme hunger, lethargy, skin problems, hormone problems, extreme highs and lows in my mood, headaches and I got the worst flu I have ever had that lasted about 2 months.K: I have a 10 year old daughter and I really needed to research how to make healthy food tasty so she did not feel like she was missing out. This can be challenging sometimes as I make all our foods from scratch. It is very time consuming but I wouldn’t have it any other way now that I see the benefits that my whole family get from this way of living.

Many people want to make their diet healthy but how do you do that? Where do you need to start?A: Look at it from a self-love perspective. If you are sick of feeling tired, unwell and emotional, then love yourself enough to start putting good food into your body. So many people get stuck in the prison of outward appearance as a motivator to “diet” or exercise and many will find that after a few weeks they just go back to their previous routine.K: My advice is to start small, like cutting out one bad food that you know isn't good for you personally and work your way through it from there.

Where do YoU KnoW cÎMe FroM?a: We were having trouble finding toxic free skincare that actually did what it said it was going to. The condition of your garden soil can make or break the productivity of the garden. Yet, what most people see when they look at their soil is a lot of dirt. It’s the stuff that comes into the house on our clothes, shoes, fingernails, and dogs. However, soil is much more than that.

What gardener doesn’t dream about having perfect soil--crumbly, well-aerated, sweet-smelling, stuff that would grow 10-foot-high corn, elephant-size watermelons, and even lip-smacking tomatoes? Most garden soils are far from perfect, yet many gardeners plant without making any improvements and then wonder why their vegetables are far from ideal. Most backyard soils are going to need a little help. If you look in your own garden, you’re likely to find clay, sand, and silt.

clay soil is composed of fine, flat, wafer-like particles that fit together tightly and take in water slowly. Chemically, clay is chiefly silicon and aluminium, with small amounts of sodium, magnesium, iron, calcium, and potassium. When you sprinkle a clay bed, the water runs off instead of sinking in. If the clay particles do absorb moisture, they hold it too tightly for the plants to use much of it. When it’s rubbed between the fingers, wet clay soil feels smooth, soft, and slippery. Plants grown in untreated clay soil are often stunted and have pale green or yellow leaves.

sandy soil is at the opposite end of the scale. It is lighter than clay but has particles 25 times larger. While sand is easy to dig in, it has almost no capacity to store water, which moves freely through the soil and quickly leaches out the nutrients. Sandy soils warm up faster than clay soils and reflect a considerable amount of heat. Most sandy soils, however, contain enough clay and silt to retain a small amount of water and nutrients.

Sandy soil rubbed between the fingers feels grainy and gritty; gravelly soils are self-evident. Plants grown in sandy or gravelly soils frequently have yellow or pale green leaves.

silt falls somewhere between clay and sand. It consists of medium-size gritty particles that pack down hard almost like clay and is seldom very fertile. If a silt topsoil covers a layer of heavy clay, the plants may be stunted because the clay layer traps and holds water. Silty soil rubbed between the fingers feels slippery but has a grainy texture. Plants grown in silty soils often have pale green or yellow leaves.

Loam is the kind of soil every gardener want, and although it isn’t the theoretical ideal described earlier, it’s close enough to grow great vegetables. Loam is crumbly granular soil that has close to even quantities of different-size particles and a good supply of humus (decomposed organic material). A combination of root growth, worms, and bacteria gives this soil’s grains a good structure, enabling both adequate retention of water and proper drainage. Similarly, air moves freely through this soil, so roots can find their proper depth. Plants grown in loam are usually vigorous, healthy, and green.

Good soil structure is achieved when a number of elements are bought into balance. Garden Mate; a product introduced by Earthlife Soil Balance and manufactured in Toowoomba, provides most of the required elements for this to be accomplished.

Using Garden Mate at the beginning of any planting when doing garden preparation will enable your own soil to produce high quality nutritious plants. Garden Mate is a 100% natural garden soil and plant conditioner containing available silica, minerals, trace elements and garden friendly microbes. Soil texture affects how well nutrients and water are retained in the soil. “Conditioning” your soil with Garden Mate prior to planting will allow the PH adjustment very similar to applying lime. Garden Mate reduces the need

for gypsum or dolomite and has extra benefit of adding important minerals and trace elements.

However, there are a number of other advantages such as increased earthworm and microbe activity. In clay soils, increased water penetration and better drainage will occur. In sandy soils, the leaching of moisture and nutrients will be reduced, so they are more available to your plants. Plants’ root systems will be more robust which allows the plant to search a wider area of soil for nutrients and moisture, resulting in a much healthier, nutritious, stronger plant.

Fairhill Gold is a bushy shrub with bronze new growth which bears masses of yellow flowers.

It is highly bird attracting. Grows up to 4m in height and flowers spring to summer. Makes

a great small specimen tree (when lower branches are trimmed), wind break or border

Knockout is a small tough Grevillea with an amazing display of orange and yellow flowers.

It grows to 1m tall by 1m wide. This plant flowers during spring and summer. It is drought tolerant once established and frost hardy. Knockout will grow in a range of soil types and also makes a

beautiful pot specimen. Best planted in full sun. $11.95 each – 140mm pot

Dense ornamental shrub 1.5m x 1.5m with narrow green leaves and profuse red spider

flowers appearing most of the year. It prefers well-drained light or heavy soils in full sun or partial shade position. Tolerant of heavy frost and extended dry periods once established.

Prune for compact growth, good low hedge or screen. Birds are attracted to the nectar and

the prickly foliage makes a useful bird refuge.$11.95 – 140mm pot

A compact small shrub that has aromatic curry-scented leaves and clusters of white flowers all year round that are pink in bud. Trim back

after each flower flush to trigger a new burst of blooms. Great feature or pot plant that is also a great cut flower. Likes a sunny spot. Feed with a good native plant food in the warmer months.

“I’m pleased to attach my bakes adapting from recipes in the 2015 calendar as well as the latest cookbook. In addition, I’ve attached 2 of our latest family photos as well. I was overjoyed to try on the cauliflower pizza crust from the new cookbook tonight & it turned out perfectly! I’ve topped it with the pesto sauce (for the sauce, I’ve replaced the nuts to pine nuts and cashew nuts as it is hard to get certain ingredients in Singapore). The overall taste was heavenly! The cookbook gave me lots of confidence in trying more recipes. Of course, I can’t wait for the upcoming cookbooks from Kunara!”
