This year is going by at a rapid rate. Sure as I type this
we do still have 3 months to go, but I am certain they
will fly by.
As we move through Spring and head towards
Summer we enter a time of the year full of celebration
and fun. We have Halloween at the end of October,
and Christmas in December, and of course with the
weather in Australia being so great, there will be
Barbecues a plenty.With all of this in mind, this newsletter brings a

• 2kg turkey breast• ½ cup sage leaves, minced• 1 stick butter• 4 teaspoons salt• 1 teaspoon pepper• 1 medium onion• 6 cloves garlic• 2 cups spiced apple cider• 1 tablespoon honey
GRAVY• 2 tablespoons flour• 1 tablespoon apple cider vinegar• 2 tablespoons milk
• ¼ cup spiced apple cider or chicken stock
Method 1. Preheat the oven to 165°C. Place the turkey breast, breast side up, on a rack in
a roasting pan.
2. In a food processor, combine the butter, sage, salt, pepper, onion, and garlic. Process to make a paste. Gently loosen the skin from the meat with your fingers and smear half of the paste directly on the meat. Spread the remaining paste evenly on the skin. Cover and let sit overnight to marinade.
3. In a sauce pan combine 1½ cups spiced apple cider with honey. Bring to a boil and let reduce to ½ cup. When it cools it will become a syrup.
4. Pour ½ cup spiced apple cider into the bottom of the roasting pan. Brush the turkey breast with spiced apple cider glaze. Roast the turkey for 1.5 to 2 hours, turning half-way and basting again with glaze, until the skin is golden brown and an instant-read thermometer registers 74°C when inserted into the thickest and meatiest areas of the breast. If the skin is over-browning, tent with aluminum foil. When the turkey is done, transfer to a platter and cover with foil and allow it to rest at room temperature for 15 - 20 minutes.
4. While the turkey is resting strain the drippings into a sauce pan over medium heat. Add flour and whisk together. It will come together like a blob and the excess grease with remain separate. Carefully pour out the excess grease. Return to the burner and whisk in vinegar and milk, add apple cider or chicken stock until you reach desired consistency.
5. Slice turkey breast and serve with gravy.

SAUSAGE MAKINGWHAT IS A SAUSAGE MEAL? A sausage meal is a dry premix containing flavours and binders that when added to chilled water forms a slurry ready to be added to your minced meat creating your sausage filling. They are also referred to as Sausage Premixes and Seasonings and instructions on usage, method, ingredients and allergens are found on the packaging.
IF I HAVE A SAUSAGE MEAL WHAT OTHER INGREDIENTS DO I NEED TO MAKE SAUSAGES? Once you have your meal essentially all you need is water and meat with a 15 - 20% fat ratio to make skinless sausages or patties. In order to make them into links you will need sausage casings as well.
DO YOU HAVE TO USE WATER WITH THE SAUSAGE MEAL, OR CAN YOU USE OTHER LIQUIDS?Water is the most commonly used liquid for creating the slurry for your sausages, however some recipes will call for wine, and we have also had customers replace the water with tomato paste to great effect.
IF A SAUSAGE MEAL SAYS IT IS IDEAL FOR PORK, WILL IT ALSO WORK WITH OTHER MEATS?The recommendation of the meat to use for each sausage meal is a guide only. Personally we have used Gourmet Sausage Meals suited to pork for making beef sausages and they were great.
CAN THE SAUSAGE MEALS BE USED FOR ANYTHING BESIDES SAUSAGES?Certainly. We quite often use the Gourmet Sausage Meals as a flavour base to our hamburger patties and meat balls.
ARE HOME MADE SAUSAGES REALLY BETTER THAN WHAT YOU BUY IN STORE?This all comes down to personal opinion. We enjoy making our own sausages and love the flavour we get. We can also change the amount of flavour we add to our sausages, which can give more flavour when compared to standard store bought sausages. However having said that there are a lot of Butchers out there using the same meals we sell, and putting a lot of pride in the sausages they make.
ROTISSERIE EYE OF ROUND ROAST, BALTIMORE PIT BEEF STYLERecipe by Dad Cooks Dinner. www.dadcooksdinner.com
Ingredients • 3kg eye of round roast• 1 tablespoon fine sea salt• 2 teaspoons fresh ground black
pepper• 2 cups smoking wood chips (gas
grill) or 2 fist-sized chunks wood (charcoal) - I used a mix of oak and hickory chips
Method1. The night before cooking, season
the roast with the salt and pepper. Put the roast in a baking dish, using the bones as a rack to lift it off the bottom of the dish, and refrigerate overnight. One hour before cooking, remove the roast from the refrigerator.
2. Set the grill or spit roaster up for rotisserie cooking at medium-low heat (150°C).
3. While the grill is preheating, truss and spit the roast. Tie a truss around the roast every two inches, pulling it into into a tight cylinder. Run the spit through the center of the roast, and secure the roast to the spit with the spit forks.
4. If you don’t have a smoker box, on your grill, wrap the wood chips in an envelope of aluminum foil and poke a few holes in it for the smoke to escape. Put the wood chips in the smoker box (or put the foil envelope under the grill grate, directly on the burner cover over a lit burner.)
5. Put the spit on the rotisserie and start it spinning. We’re cooking the roast until it reaches an internal temperature of 70°C for medium. (Cook to 60°C for rare, 65°C for medium-rare) This will take about 1 hour, but the time will vary - go by temperature, not by time. Check the temperature of the roast after 45 minutes of cooking. At that point, start checking every five to ten minutes - you want to get as close to 65°C as you can without going over (It does not hurt to quit a few degrees early as the temp may continue to rise during resting). As soon as the roast reaches 70°C, turn the grill to indirect high heat. Sear the roast on high heat until it is well browned on the outside, 10 to 15 minutes.
6. Remove the spit. Be careful - the spit is rocket hot. Immediately remove the roast from the spit, transfer to a platter, and remove the twine. Cover the roast with foil and rest the roast for 15 minutes, then slice the roast as paper-thin as possible and serve.
