Apricot Brandy (Black) Blueberry Pleasure (Rooibos) Coconut Quench (Green) Raspberry Fields (Herbal) Culinary Corner Cultural Connections Grace’s Story Meet Grace, a widowed Ugandan mother and victim of property grabbing. This crime involves taking an orphan or widow’s home, forcing them out by ruining their crops, burning their home, and even beating them. Local officials would do nothing to help Grace. When International Justice Mission (IJM) took on her case, she was without her livelihood, her home, security, or hope. Property grabbing is commonplace in Uganda. Every year IJM helps hundreds of orphans and widows just like Grace fight to take back what is rightfully theirs. International Justice Mission’s vision is to “rescue thousands, protect millions and prove that justice for the poor is possible.” They are present not only in Uganda but also in Cambodia, the Philippines, Thailand, India, Kenya, Rwanda, Zambia, Bolivia, Guatemala, Ecuador and Peru, bringing rescue to victims of slavery, sexual exploitation and other forms of violent oppression. IJM lawyers, investigators and aftercare professionals work with local officials to secure immediate victim rescue, to prosecute perpetrators and to ensure that public justice systems effectively protect the poor. After a three year battle with the help of IJM, Grace has rebuilt her house on her own land, and is able to provide for her children once again. In keeping with K’Tizo’s desire to help people discover ‘new creations,’ we proudly support the efforts of IJM. For more information about IJM and to watch Grace’s story, visit www.ijm.org Helpful Hints Preventing Iced Tea from Clouding Tea clouding is not an uncommon problem and the solution is simple! Most likely your iced tea is clouding because you are improperly cooling it, which makes the tannin settle out. We recommend two different ways of cooling your tea. The first is to make your tea as usual and let it cool to room temperature before you put it in the refrigerator. But here at K’Tizo, our favorite way to make iced tea is to double the concentration and pour over ice, giving you a fresh, delicious iced beverage to enjoy immediately! Awakenings August 2012 Green Tea-Lemon Basil Dressing From Cynthia Gold’s book Culinary Tea Makes 2 ½ cups 1 cup steaming water (about 175 degrees F) 1 tablespoon loose-leaf green tea leaves 1 tablespoon grated lemon zest 2 tablespoons fresh lemon juice ¼ cup olive oil 1 tablespoon Asian chili sauce, such as Sriracha 1 cup chopped fresh basil 4 garlic cloves, chopped ¼ teaspoon fine sea salt, or more to taste ¼ teaspoon freshly ground black pepper, or more to taste ½ teaspoon honey, or more to taste Pour steaming water over the tea leaves in a small bowl. Steep, covered, for 2 minutes, then strain, discarding the leaves. Let cool to room temperature, about 15 to 20 minutes. In a blender or food processor, combine the tea with the remaining ingredients; puree until smooth. Store in an airtight container, refrigerated, for up to 1 week. If dressing separates, whisk or blend again briefly.
