Spring Rolls

Ingredients:1smallcabbage(grated)3largecarrots(grated)1onion(chopped)1packetofspringrollskin1tbspsunfloweroilPeas

Seasoning:1tbspoflightsoyasauceDashofwhitepepper1tbspofchickenseasoningOiltofry

Method:Peelthespringrollskinandcoverwithdampcloth,soitdoesnotdryout.Put1tbspofoilinthewok.Whenhot, stir-fry the onions, cabbage and carrots. Put in the seasoning and fryuntilthevegetablesaresoft.Removefromheatandputintocolandertodrainouttheliquid.Meanwhile,wrapthespringroll.Usesomeplainflourandwatertomakeapastetosealthespringroll.Putoilinashallowpantoheatuptheoilforfrying.Whenoilishot,putthewrappedspringrollintooiltoshallowfryuntilbrown.

Vegetarian Fried Noodles

Ingredients:2packetofdriedeggnoodles1packetofstir-fryvegetablemix.2-3stalksofspringonionsjulienne.

Seasoning:1tbspofdarkSoyasauce1tspofgarlicgranules/easygarlic1tbspofSesameoilDashofwhitepepper

Method:Soaknoodlesinboilinghotwaterforabout5-7minutes.Stirtoloosenthenoodles.Whensoft,drainandleaveasideforlater.Whenthewokishot,addthegarlicandspringonion;stir-fryfor1minute,andaddthevegetables,thenfry.Addthenoodlesandtoss.Addtheseasoning.Tossforanother2-3minutesandservehot.

SweetandSourPork(2style)

Ingredients:2packetofporkloins2onions(diced)1redpepper(diced)1yellowpepper(diced)

Meatmarinade:3tbspofLightSoyasauceCornflour1tbspofsesameoil1tspofwhitepepper

Coatingforporkwithbatter:½cupofplainflour½cupcornflourorpotatostarch

Sauce:3tbsptomatosauce1tbspofvinegar(anytype)3tbspsugar2tbspwater

Forthesweetandsoursauce:Placeallthesauceingredientsinpotandmixwell.Heat1 tbsp of oil in a wok. When hot, add the onions and peppers. Fry for 2-3minutes.Pourthesaucemixinandcookfor1-2minutesuntilthesauceishot.Addsomecornflourmix(Cornflourandcoldwater),untilthesaucehasthickened.Porkwithbatter:Cut the pork into cubes for the frying batch.Marinadeinsoy,cornflour,sesameoilandpepperfor10minutes.Putthecoatingintoaplasticbagwiththeporkandmix it around until all the pork is coated. Put itthrough a sieve to remove excess flour. Fry theporkinbatchesuntilitisbrownedandcooked.MakethesweetandsoursaucethenpourthisPorkwithoutbatter:Cut the pork into strips for the healthy batch.Marinadeinsoy,cornfloursesameoilandpepperfor10minutes.Put 2 tbsp of oil in a wok and fry themarinatedpork strip until nearly browned. Add the onionsand peppers and stir-fry for 3 minutes. Add thesweetandsoursauceandfryforanotherminute.Servehot.

SausageandBeanCasserole

Ingredients:1packofgoodqualitysausages1largeonion1tinchoppedtomatoes1tinofmixedbeans1tbspofpaprika

2garliccloves2tbsppuree2bayleaves3sprigsoffreshthyme300ml/10flozvegetablestock

Method:Frythesausagesinalittleoilfor5-10minutes.Addtothepan:thechoppedonions,garlicandpaprika,andfrytogetherforafurther2-3minutes.Put a large saucepanoveramediumheat andput in the vegetable stock, tin tomatoes,mixedbeans, bay leaves, thymeand tomatopuree. Stir then add the sausages, choppedonionandgarlic.Boilorputintheovenongasmark4foraround20-30minutes.2typesofmashtotrywiththecasserole:

Peelandthenchopeachpotatointocubes.Addthemtoapre-boiledpanofwaterforabout20-30minutes,thenmashusingalittlebutterandmilk.

GarlicandCuminQuinoa

Ingredients:1cupofQuinoa2cupsofwater2tspofgarlicgranules2tspofgroundcumin1tbspspoonofoliveoilSaltandpeppertotaste

Method:Wash Quinoa thoroughly. Boil 2 cups of water and thenpourtheQuinoaintothewater.Bringtotheboilthenturndownheattolow.Addinallotheringredientsandstir.Addsalt and peppers to taste. Boil until all water has almostevaporated, then turn off the fire and cover to let thesteamcooktheQuinoa.

RoastedVegetables

Ingredients:1largeredonion(cutintochunks)3peppers:red,orangeandyellow(cutintochunks)2Courgettes(chunkyslices)1packofcherrytomatoes1smallbutternutsquash(deseededandcutintosmallchunks)2sprigofrosemary2tablespoonofoliveoilMethod:Put all the cut vegetables into a baking tray and pour olive oil over the vegetables. Stirgentlytomixtheoilintothevegetables.Putintherosemaryandplaceinovenon180°Cfor25-35minutes.Takeoutvegetableswhentheyaretenderandcooked.

Ingredients:1largebutternutsquash(peeledandcubed)4carrots(sliced)1largepotato(cubed)1vegetablestockcube1largeonion(chopped)1tbspoliveoil1sprigofrosemary(optional:boilfor10minutestogivesoupmoreflavour)Method:Fry the onions in olive oil until soft, using a largestockpot.Addallthechoppedvegetablesandstock.Boiluntilallvegetablesaresoft.Useahand-heldblendertoblitztogetathicksoupconsistency.

FruitandPeanutButterSmoothie

Ingredients:1½banana1largehandfuloffrozenmixedberries1tbspsunflowerseeds1tbsppumpkinseeds1tbspflakedalmonds1largeheaptbspofpeanutbutter1½cupsofmilk(todesiredconsistency)Method:Putall ingredients inasmoothie-makerandblend. AppleandAlmondCrumbleIngredients:5-6apples(any)-oranyfruitcanbeused25glightbrownsugar1tspgroundcinnamon¼teaspoongroundclovesForcrumble:110gwholealmonds(skinson)75gchilledbutter(cutintosmalldice)175gself-raisingflour(sifted)2tspgroundcinnamon110gDemerarasugarMethod:Peelandcutapplesintoquarters,thenslicethem.Mixsugar,cinnamonandgroundclovetogetherwiththeslicedapple.Pourthismixintothebottomofabakingdish.Putaside.Put butter, sifted flour, cinnamon and sugar into a food processor and blitz until itresemblesacrumble.Addwholealmondstothemixandblitzslowlyandnottoomuch.Youwantsomechunkynuts.Nowpourthemixtureontopofthefruitmix.Spreadthecrumbleuptotheedgeandpressdownfirmly.Bakeat200°Cinovenfor35-40minutesoruntilgoldenbrown.Servehotwithfreshcustard.

ChilliPotatoes:Ingredients:4bakingpotatoes(sliced)1tspsalt1tspcuminseeds1tspcrushedchilli1tbspsunfloweroil

Method:Puttheoil,cuminseed,salt,andcrushedchilli intoapantofry.Whentheseedsstarttopoporwhenhot,addthepotatoes.Makesuretheyarecoatedwellwiththeoil.

Cookonmediumheatfor10minutesandturntheheatdown.

Cookuntilthepotatoesaresoft.

ChickenCurrywithPotatoesFeeds8-10

Ingredients:3bigonions(finelydiced)2tbspofsunfloweroil1tinofchoppedtomatoes(400g)2cinnamonsticks2bayleaf1tspgroundturmeric1tspcrushedchilli

1½tspsalt1tspeasyginger1tspeasygarlic¾tbspgarammasala1cupwater9chickenbreastfillets(diced)1kgbagofCharlottepotatoes(diced)

Method:Putthechoppedonionsandoilinapan.Frytheonionsuntilbrown.(about5-10minutes).Addthecanofchoppedtomatoes,cinnamonsticks,bayleaf,turmeric,crushedchilli,salt,ginger,garlicandGaramMasala,withthecupofwater,intothepan.Turntheheattomediumandcover.Stiroccasionally.Whentheonionshavesoftenedandbecomemashed,addthechickenandpotatoes.Makesuretheyarecoatedwellwiththesauce.Coverandstiroccasionallyuntilthechickenandpotatoesaresoftandwellcooked.

Jamaican-BrownPorkStew

Ingredients:1lime8porksteaks2cubesofMaggistockseasoning2inchesofginger(grated)1bulbofgarlic(finelychopped)1largeonionsliced3tbspporkseasoningandblackpepper1cupofwaterMethod:Inabowl,squeezelimeonpork,mixthrough,thenrinseoffwithwater.AddporkseasoningandsprinkleMaggistockseasoning,gratedgingerandgarlic.Thenaddonionsandmixedandleavetomarinatefor30minutes.Pan-fryallthemeattobrownandcaramelized,thenputalltheporksteaksintoapotandaddwater;thenletitstewfor20minutes.Addseasoningtotaste.

PeasandRice

Ingredients:1cankidneybeans,includingliquid1cancoconutmilkWater(approx.1-2/3cups)2clovesofgarlic(chopped)1smallonion(chopped)1tspdriedthyme1½to2tspsalt,totaste1tspblackpepper2cupslong-grainrice(rinsedanddrained)Method:Drain the liquid fromthecanofbeans intoameasuringcupandadd thecanof coconutmilkwithenoughwatertomakefourcupsofliquid.Add liquid, beans, garlic, chopped onion and thyme to the large pot.Add salt and black pepper. Bring to a boil. Add rice and boil on high temperature for 2minutes.Turnheattolowtemperatureandcookcovereduntilallwaterisabsorbed(about15to20minutes).Fluffwithforkbeforeserving.

Method:Mixlimejuice,honey,oilandblackpeppertogether;thenpouroverthegratedcarrotsthenmix.

RoastedMixedTurmericVegetables

Ingredients:1redpepper(cutintochucks)1redonion(chunks)½cauliflower(cutintoflorets)

Method:Put all the cut vegetables into a large bowl. In a separate small bowl,mix the turmeric,cumin,peppersandgarlic.Thenmixinwiththecutvegetablesinthelargebowl.Placeallthevegetablewithseasoningmixintoabakingtrayanddrizzlewith3tbspofoliveoiloverthevegetables.Bakeinovenat180°Cfor25minutesoruntiltenderandbrown.

Combineallthemarinadewiththeslicedchickenbreastandleavefor30minutes.Inapan,frytheonionsinoiluntilalittlesoft,thenaddthemarinatedchicken.Whenthechickeniscooked,addtheslicedbellpeppers.Cookforanother12minutes.Servewithwarmtortillawraps.

Guacamole

Ingredients:1largeripetomato3avocados(veryripebutnotbruised)Juiceof1largelimeHandfulofcoriander(leavesandstalkschopped)1smallredonion(finelychopped)Method:Usea largeknife topulverise the tomato toapulponaboard, then tip intoabowl.Halveandstonetheavocados(savingastone)anduseaspoontoscoopoutthefleshintothebowlwiththetomato.Tipalltheotheringredientsintothebowl,thenseasonwithsaltandpepper.Useawhiskto roughlymash everything together. If not serving straight away, sit a stone in the guacamole(thishelpstostopitgoingbrown!),coverwithclingfilmandchilluntilyouarereadytoserve.

Method:Pre-heatovento160°C.Inabowl:Put theoats,pumpkinandsunflower seed,almondnuts,andcoconut.Thenmixandputaside.Youcouldalsoaddinchoppedpecannutsandchoppedwholealmondnuts.Inapan:Putinthepeanutbutter,oil,maplesyrup,honeyandvanillaextract.Heatupuntilalldissolvedintoliquidandjuststarttobubble.Takeitofftheheat.Pourthewetmixintotheoatmixturebowlandmixthoroughly.Pourthewholemixtureintoabakingtrayandplaceintheovenfor20minutes.Stirhalfwaythrough,thenkeepacloseeyeonitandbakeuntilgoldenbrown.Letitfullycoolbeforestoringitinanairtightcontainer.

Ingredients:150gsoftenedbutter100gsoftbrownsugar225gporridgeoats2tbsphoney½cupofsunflowerseeds½cupofpumpkinseeds½cupofflakedalmondsMethod:Creamthebutterandsugartogetherinalargebowl.Addtheoatsandpourinthehoney;thenuseaforktomixwell.Addthenutsandseeds.Mixthoroughly.Useacirclebiscuitcutterandputalargeteaspoonofoatmixtureintothecircleandpressdowntousethebiscuit-cutterasamouldforcookieshape.Bakeinpreheatedovenfor10-12minutesat180°C.

BananaLoafCake

Ingredients:5tbspbutter(softenedatroomtemperature)1½cupofself-raisingflour2eggs¼tspofsalt¾cupofsugar2mediumoverripebananas(coarselymashed)1tspbakingsoda½tspvanillaextractMethod:Preheatovento370f/180°C.Creambutterandsugaruntillightandfluffy,addtheeggsandcreamagain.Addsalt,bakingsodaandvanilla,andmixwell.Foldinthemashedbananas.Gentlyfoldintheflourandmixwell-avoidover-mixing.Put themixture into a greased loaf tin andbake in preheatedoven for 30-35minutes oruntil insertedtoothpickcomesoutclean.Allowtocooldownfor5minutes, thenremovefromthetinandallowtocoolcompletely.Servewithicecreamorcustard(orbothlikewedid!).

ChickenandChorizoPaella

1redpepper1tbsptomatopuree1cubechickenstock300gpaellarice100gfrozenpeas200gfrozenpeeledcookedprawns(optional)

MethodPeel and finely slice the garlic; then peel and roughly chop the onion, and carrot. Finelychop theparsley stalks, then roughly chop the chorizoand chicken thighs.Pour someoilintoalargeliddedshallowcasseroleorpaellapanonamediumheat,addthegarlic,onion,carrot,parsley stalks, chorizo, chickenandpaprika,and fry foraround5minutes, stirringregularly.Deseedandchopthepepper,thenaddtothepanforafurther5minutes.Stirthroughthetomatopuréeandcrumbleinthestockcube,thenaddthericeandstirforacoupleofminutes,soitstartstosuckupallthatlovelyflavour.Pourin750mlofboilingwaterandaddapinchofsaltandpepper.Popthelidonandbringtotheboil,thenreducethe heat and simmer for 15minutes, stirring regularly from the outside in and from theinsideout,andaddingasplashofwaterifneeded.Stirinthepeasandprawns,replacethelid,andcookforafurther5minutes,oruntilhotthrough.Seasontoperfection,thenchoptheparsleyleaves,scatterthemoverthepaella,andservewithlemonwedgesonthesideforsqueezingover.

Ingredients:1½tspcuminseeds2or3wholepeppercorns16freshcurryleaves(ifdried,use48leaves)2cinnamonsticks3wholecloves4cardamompods(slightlybruised)1mediumonion(finelychopped)2inches/5cmfreshginger(grated)1largecloveofgarlic(sliced)2cups(packed)offreshcorianderleaves1tbspofchoppedfreshmint9chickenbreast(cutintochunks)

4clovesgarlic,choppedJuiceof1lime1tbspsugar2to6greenchillies(halvedandseedsremoved)1½tspsalt1-2tbspwater1tbspgroundcashewnuts1-1¼tspturmeric2plumtomatoes(chopped)2tbspoliveoil1tinofcoconutmilk(400ml)

Method:Heat the oil in a saucepan. Add cumin seeds, black peppercorns, curry leaves, cinnamonsticks,clovesandcardamompodsandcookforabout2minutesovermediumheatuntiltheseedsbegintopop.Stirinonionandcookforabout10minutesuntilgoldenandsoft.Addgingerandgarlic,andcookforabout2minutes.Optionally,stiringroundcashewnuts,chillies, and coriander mixture and cook for 2 minutes. Add turmeric and choppedtomatoes. Bring to a boil (theremay not bemuch liquid, so add somewater or broth ifnecessary)andsimmerfor10minutes,oruntilthetomatoesaresoft.Remove and discard the cinnamon sticks and transfer to a food processor. Process untilsmooth.Returntothepanandaddthecoconutmilk.Simmerfor10minutes.Add the chicken and cook until chicken has fully cooked. Then servewith turmeric rice,saladandNaanbreadwithmangochutney.

FatlessSpongeCakeIngredients:41/2ozofself-raisingflour41/2ozofsugar3largeeggsMethod:Sift the flour twice in a bowl. In a separate bowl, beat each egg for approximately 4minutes,addingthemasyougo.Thenaddthesugarandwhiskagainforapproximately5minutes."Fold"inthe flour gently one spoon at a time. Keep folding the mixture until all the flour is absorbed,puttingasmuchairintothemixture.Greasetwobakingtins;thendustwithflour.Placeinapre-heatedovenat180/190°Candbakeforapproximately8minutes.Checkwithasharpknifethatthemiddleiscookedbyinsertingtheknifeintothecake-itisbakediftheknifecomesoutclean.

Method:Preheattheovento180°C/Gas4.Linealargeloaftinwithaliner.Alternativelyyoucangreasewithunsaltedbutterandlinewithbakingpaper,howeveralinerwillproducefarbetterresults.Sifttheflour,bakingpowder,sugarandcornflour intoa largemixingbowlandbeatwithanelectrichandwhiskuntilevenlymixed.Addthebutter,eggs,lemonzestandthe31/2tablespoonslemonjuice.Whiskuntilfullycombinedandsmooth.Pourthemixtureintothepre-linedloaftinandlevelthetopwithaspatulaorthebackofaspoon.Baketheloafinthecentreoftheovenuntilgoldenbrownandaskewerinsertedintothecentreoftheloafwillcomeoutcleanwhencooked,around35minutes.Removefromtheovenandallowtheloaftocoolinitstin.Makethedrizzlebystirringthecastersugarandthe5tablespoonslemonjuicetogetherinajug.Prickthesurfaceofthecooledloafalloverwithafork.Pourthedrizzleovertheloafandallowforittoset(onceset,thedrizzlewillbehard)beforeremovingtheloaffromthetinandserving.

BreadPudding

Ingredients:500gwhiteorwholemealbread500gmixeddriedfruit85gmixedpeel1½tbspmixedspice600mlmilk

2largeeggs(beaten)140glightmuscovadosugarZestof1lemon(optional)100gbutter(melted)2tbspDemerarasugar

MethodTearthebreadintoalargemixingbowlandaddthefruit,thenpeelandaddspices.Pour in the milk, then stir or scrunch through your fingers to mix everything well andcompletely break up the bread. Add eggs,muscovado and lemon zest if using. Stir well,thensetasidefor15minutestosoak.Heatovento180°C/160°C/fan/gas4.Butterandlinethebaseofa20cmnon-sticksquarecake-tin(notonewithaloosebase).Stirthemeltedbutterintothepuddingmixture;tipintothetin,thenscatter with Demerara sugar. Bake for 1½ hrs until firm andgolden,coveringwithfoilifitstartstobrowntoomuch.Takeoutof the tin and strip off the paper. Cut into squares and servewarm.

MakingthePastry:Ingredients:450g1lbstrongwhiteflourLargepinchsalt(optional)100g4ozmargarine110g4ozlard175ml1/3ptwater

Method:Puttheflourandsalt (ifused) intoabowl.Cut off a quarter of the lard and rub intoflour.Grateorslicetherestofthegatsintothemixtureandstirwithaknife.Pourallofthewater inandstiruntilabsorbed.Kneadalittleandleaveat least30minutesinthefridgebeforeusing.

PastyfillingIngredients:2onions(somepeoplepreferleek)1turnip(swede)500gbeefmince8potatoes(peeledandcutintosmallcubes)3carrots(peeledandchoppedsmall)Blackpepperandsalt

Method:Cooktheonionsuntilsoft,thenaddthebeefmince.Cookfor15minutes,thenaddturnipandcarrots.Cookfor10minutes,thenaddpotatoes.Cookuntilthepotatoesarestartingtogetsoft.Seasonwithsaltandpepper

Generouslyflourtheboardortheareayouareusing.Thisallowsthepastrytorelaxasyouroll, especially if you flip the pastry up from the surface every now and then. Cut off aquarterof thepreparedpastry.Roll itout,keepingtheshape, intoacircle21-23cm(8-9inch)across.Thepastryshouldnowbetherightthickness.Placeanupturnedplateoverthepastryandtrimroundtogetagoodshape.

Addinagoodamountofmeatfillinginsideonepastry.Dampenonesideofthepastrywithalittlewater.

Foldthedampsideofthepastrytotheotherandpressfirmly,butgentlytogether,sothatyouhaveaseamdownacrossthepastry,orbytheside.

Brush thepastieswithmilkoreggwhiteoreven justwater andplace themonbutteredpaperoragreasedandflouredtray,leaving5cm(2in)betweenthem.

Bake inahotovenat220°C(425F,gas7) for20-30minutes.Checkthepasties. Ifbrown,turnthemdownto160°C(325F,gas3).Bakeforanother20minutes.Turnofftheovenandleavethemintheovenforanother15minuteswiththedoorshut.

Method:Melt the butter in a saucepan. Stir in theflour and cook for 1-2 minutes. Take thepan off the heat and gradually stir in themilk to get a smooth sauce. Return to theheat and, stirringall the time,bring to theboil. Simmer gently for 8-10 minutes andseason with salt and white pepper. Stir incheeseandallowtomelt.

Marinaderubforchickenandpotatoes:4tbspofmixtureA*1tbspofsmokedpaprika1tbspofspiceforpasta(Marwo)2tbspofchickenseasoning2tbspofgoldensyruporhoney1tbspofwaterMethod:Putthechickenandatbspofchickenseasoninginapot.Coverthechickenwithwaterandbring it toboil. When thechicken is cooked,keep4cupsof thestockaside for the rice.Draintherestandletitcool.In a separate pot, boil the potatoes and carrots with a pinch of chicken seasoning.Whencooked,drainandsetaside.Using amixing bowl,mix themarinade rub together to form a paste.
