Basic tomato and basil sauce for pasta

This is a really easy pasta sauce recipe - vary the flavour by adding different ingredients (see Top recipe tip below).

Ingredients

3 tbsp extra virgin olive oil

1 large onion, chopped

2 garlic cloves, crushed

3 x 400g cans of chopped tomatoes

¼ - ½ tsp dried chilli flakes

2 tsp balsamic vinegar

2 tsp sugar

1 large handful basil leaves, torn into small pieces

Salt and freshly ground black pepper

Grated parmesan cheese, to serve

Preparation method

1. Heat the oil in a saucepan and gently cook the onion and garlic until softened. Stir in the

tomatoes, chilli flakes, balsamic vinegar and sugar. Bring to a simmer and cook slowly for 45 minutes-1 hour. Stir in the basil and season with salt and pepper. This can be left chunky or blended in a food processor for a smooth sauce.

A note of admiration

Unless one is wealthy there is no use in being a charming fellow. Romance is the privilege of the rich, not the profession of the unemployed. The poor should be practical and prosaic. It is better to have a permanent income than to be fascinating. These are the great truths of modern life which Hughie Erskine never realised. Poor Hughie! Intellectually, we must admit, he was not of much importance. He never said a brilliant or even an ill-natured thing in his life. But then he was wonderfully good-looking, with his crisp brown hair, his clear-cut profile, and his grey eyes. He was as popular with men as he was with women, and he had every accomplishment except that of making money. His father had bequeathed him his cavalry sword, and a History of the Peninsular War in fifteen volumes. Hughie hung the first over his looking-glass, put the second on a shelf between Ruff's Guide and Bailey's Magazine, and lived on two hundred a year that an old aunt allowed him. He had tried everything. He had gone on the Stock Exchange for six months; but what was a butterfly to do among bulls and bears? He had been a tea-merchant for a little longer, but had soon tired of pekoe and souchong. Then he had tried selling dry sherry. That did not answer; the sherry was a little too dry. Ultimately he became nothing, a delightful, ineffectual young man with a perfect profile and no profession. To make matters worse, he was in love. The girl he loved was Laura Merton, the daughter of a retired Colonel who had lost his temper and his digestion in India, and had never found either of them again. Laura adored him, and he was ready to kiss her shoe-strings. They were the handsomest couple in London, and had not a penny-piece between them. The Colonel was very fond of Hughie, but would not hear of any engagement. 'Come to me, my boy, when you have got ten thousand pounds of your own, and we will see about it,' he used to say; and Hughie looked very glum on those days, and had to go to Laura for consolation.

This was a metaphor for Mao Zedong’s having been born there. At that time, thousands of visitors came, on the trains that ran from the capital of Hunan province, Changsha, several times an hour. They sang songs about Mao, and wore badges with his picture on them. It compared in size and emotion to the Muslims making the hajj to Mecca.

Twenty years later I arrived in Shaoshan in an empty train. The station was empty too, as was the village of Shaoshan itself. Mao’s house was at the far end of the village, in a grove of trees. It was cool in the summer heat, but had the musty smell of an old shrine. It had outlived its usefulness and looked slightly absurd. It reminded me of a temple of a sect of fanatics who had run off, tearing their clothes, and had never returned. A Western visitor in the early seventies wrote that Shaoshan ‚is visited by about three million pilgrims every year.‛ Today there were none.

There is a Mao Museum in the village as well. My impression is that it tries to show Mao as more than human. In its 18 rooms it presents him as a sort of Christ figure, preaching at a very early age about the revolution and winning recruits. His life is displayed in pictures and captions, and many everyday objects that he owned, like slippers and an ashtray, are also there. The period leading up to the revolutionary victory of 1949 is presented in much detail. But in the last room an odd thing happens – there are only a few details of his later years, when many thought he was senile and power-mad.

The museum was founded in 1967, during the height of the Cultural Revolution. Twenty years later, when Deng Xiaoping has focused on reform and economic development, it seems that the Chinese just want to forget the cult of Mao and his emphasis on world revolution. Shaoshan and its museum said everything about Mao, both his rise and fall, and his position today. The fervent youth of those days are now level-headed managers trying to revive the economy, which suffered during those years. Selection II (Items 5-8) Twilight of the Books In 1937, 29% of American adults told a pollster that they were reading a book at the time. In 1955, it was only 17%. Later polls changed the question, and so the numbers changed, too. In 1978, 55% of respondents had read a book in the previous six months. And in 2007, 73% of respondents said they had read a book of some kind, not excluding those read for work or school, in the past year. If you didn’t read the fine print, you might think that reading was on the rise.

You wouldn’t think so, however, if you consulted the Census Bureau and the National Endowment for the Arts. The latter group has, since 1982, asked thousands of Americans questions about reading, and their studies are detailed and consistent. For creative literature like novels or poetry, the percentage of Americans who had read a work in the last twelve months has fallen from 56.9% in 1982, to 54% in 1992 and just 45.7% in 2002. Less reading means that fewer people have the skills to read critically. In a recent report, the NEA chairman, Dana Gioia, wrote, ‚Poor reading skills correlate heavily with lack of employment, lower wages, and fewer opportunities for advancement.‛

Other data support this picture of a fall in reading. Newspaper and book publishers say consumption of their products has either declined steadily or stagnated. It’s true that some people have switched to the Internet to read the news, but the trend is still clear. Not only that, it’s alarming to anyone who believes that reading newspapers and literature is an essential part of being an informed citizen. The eclipse of reading, if the trend continues, can lead to a decline in our political discourse, as fewer and fewer people pay attention to current issues. Other likely effects are difficult to foresee, but they are mostly negative. Unfortunately, it’s equally unclear how the erosion of reading could be reversed. The problems cited actually result from the freedom that credit cards afford to a wide segment of the population. How can more freedom be a bad thing?

Credit cards have made money matters more convenient and more secure, and on balance they are good for the economy, because they encourage consumers to buy. With credit cards, people don’t have to worry about having enough cash in their purse or wallet – one piece of plastic replaces a bulky wad of bills. With the Internet, credit cards afford even greater convenience, since all you need to do is enter your payment details and the order goes through. And don’t worry about thieves – if your card is stolen, just call the company and have it deactivated. Stolen cash by contrast is gone forever. And online transactions with credit cards are secure and automatic, unlike mailing checks through the post or other old-fashioned, complicated ways of paying.

Opponents of credit cards often make a moral argument that it is virtuous to save money, and credit cards lead to rampant spending and inescapable debt. They seem to want to return to a previous era where people farmed the land, grew their own food, made their own clothes and only shopped for odds and ends that they couldn’t produce themselves. Such thinkers should wake up and realize that the modern economy is built on consumption of goods and services. Companies provide these goods and services, and when they sell more, they are able to employ more people, who can then afford to buy more, in a virtuous cycle of growth. Consumer credit acts to smooth this process of circulation, and as such it is a good thing.
