Ingredients: 1 x 230g packet corn chips 1 x 400g can diced Italian tomatoes, drained 1 x 300g can red kidney beans, rinsed, drained 2 tablespoons coarsely chopped fresh coriander Salt & freshly ground black pepper 1 small ripe avocado, halved, stone removed, peeled, sliced 120g (1 cup) 50 per cent reduced-fat grated cheese (Bega So Light brand) 1 x 100g pkt baby leaves salad mix Method: Step 1
Preheat oven to 220°C. Kids' task: Divide the corn chips among four square 500ml (2-cup) ca-pacity ovenproof dishes. Combine the tomato, beans and coriander in a medium bowl. Season with salt and pepper. Spoon tomato mixture evenly over the corn chips. Top with the avocado and sprinkle evenly with cheese.
Step 2 Bake in preheated oven for 10 minutes or until cheese melts and the tomato mixture is hot. Re-move from oven. Serve immediately with salad leaves.
Ingredients: Vegetable oil spray 6 x 60g Mars bars 600ml thickened cream 3 eggs, separated 50g dark chocolate, melted, to drizzle Method: Step 1
Spray a 1-litre terrine mold with oil. Line with plastic wrap, leaving long sides overhanging. Roughly chop 4 bars and place in a heatproof bowl with 300ml cream over a pan of simmering water (don't let bowl touch water) until melted, then stir to com-bine. Cool slightly, then whisk in remaining cream and egg yolks.
Step 2 In a separate bowl, beat egg whites with electric beaters until stiff peaks form. Fold into chocolate mixture. Pour into terrine, folding in wrap. Freeze overnight until firm. To serve, dip mold briefly in warm water, then invert onto a platter. Chop re-maining bars, scatter over terrine and drizzle with melted chocolate.

It’s nearly half way through the year. Where has that time gone? I can’t believe it. It’s so nice
that the weather has cooled down now. I think that everyone was well and truly sick of the
temperatures being over 40 degrees.
The CRC has a new employee. Sheree Quigley joined our team and is working in the
Nullagine Public Library. The hours are still the same. 10:00 am—3:00 pm Monday to Friday.
Drop in and say hello to Sheree. Sharon is still the main Centrelink contact. The hours for
Centrelink business are from 8:00—11:00 am Monday to Friday.
ANZAC Day was celebrated in Nullagine and Marble Bar and the photos and stories are in this
issue for both towns.
Welcome to Mitchell Drage who has moved back to Nullagine, in a new position with
Ashburton Aboriginal Corporation.
Also welcome to Greg Yeo. He is the new Principal at the Nullagine Remote Community
School.
