  • Local Super Saladwith Acai Berry Vinaigrette

    Executive Chef Patrick Benzin Sysco Eastern Maryland

  • Ingredients0ne 100 gr. pouch or 3.25 oz. Aai berry (Sambazon pouch)2 oz White wine vinegar4 oz Extra virgin olive oil1 Tbsp Agave nectar Lime Juice or to taste1 tsp Prepared mustard2 Tbsp Local Baywater Greens baby basil, chopped Salt and pepper

    Local Baby Basil & Acai Vinaigrette

    ProcedureCombine all ingredients.

    Whip until smooth.

    IngredientsOne each - Head Baywater Greens Bibb Lettuce

    1 oz Baywater Greens microgreens2 oz Fresh local blueberries12 oz Shredded carrot1 oz - Fresh cucumber chopped1 oz Queso fresco or feta cheese, crumbled

    CroutonsSalt and pepper to taste

    Super Salad

    ProcedureRemove the inner part of the bibb; plate the remaining leaves.

    In a bowl, combine the chopped inner leaves and the micro greens.Toss with one Tbsp of dressing. Plate on top of the leaves, then garnish the top of the salad with the rest of the ingredients.
