Like any new cooking device, wash your CanCooker with soap and water before using.

1. Prepare for Use

You’ll find CanCooker recipes at cancooker.com. CanCooker will cook just about anything but it’s great for cooking Midwest, New England and Cajun style foods. Invent your own recipe, just be sure to add a sufficient amount of liquid to allow for steam.

2. Choose a Recipe

Follow instructions in the recipe, but generally place the vegetables on the bottom and the meat on top. Then add seasoning and liquid. Spray interior with non-stick spray for easier clean-up. For your liquid you can use 12 oz of any liquid-water, beer, juice, soda, wine, marinades, etc.

3. Load the CanCooker

Affix the CanCooker lid, secure the latches and you are ready to cook! If lid doesn’t quite fit - soak the gasket in warm water. Use vegetable oil or cooking spray to lube gasket and seal.

4. Attach CanCooker Lid

Any heat source will work, including a campfire, propane stove, charcoal or stove top. Temperature is important. Use low to medium heat to prevent liquid boiling off to quickly. Coat the outside bottom with a bar soap to make removal of soot much easier.

5. Fire Up Your Heat Source

You can expect to see a gentle steam coming from the vent in approximately 15 minutes. If you don’t, slowly increase the heat. If your steam begins much earlier, reduce the heat.

6. Look for Steam

Each recipe will give a time from the point you first see steam. Generally meals will be done 25-35 minutes after you see steam. Cooking times may vary with heat source, altitude and environment.

7. Time the Cooking

When your meal is done cooking, carefully remove the CanCooker from the heat source. CanCooker and handles will be extremely hot.

8. Remove with Oven Mitts

Place CanCooker in a safe place and let it sit before opening the lid. CanCooker is hot, set only on a safe surface.

9. Let sit for 5-10 minutes

10. Open Lid Carefully

Unlatch the CanCooker lid and remove. Be careful, the steam escaping may be very HOT!

You’ll find it’s easier to serve your meal if you first empty it into an insulated container such as a cooler. This will also help keep the food hot.

Once empty and cool, your CanCooker will be easy to clean with soap and water. If food does stick to the bottom use a mild steel wool.

Fish BoilIngredients 10 new potatoes, medium washed and cut in half5 med onions, peeled3 lbs. shrimp, peeled and de-veined2 lbs. Salmon or any fish you like, washed and cut in 2 inch lengths6 ears corn, cleaned cut in small pieces2 lbs lean sausage, cut in 2 inch lengths1 Old Bay Crab boil pack1 Can of Beer1 stick butterOld Bay seasoning

Step 1 Place 4 Qts. of water and a can of beer in your CanCooker with 2 Tbsp. sea salt and the Old Bay Crab Boil pack.Step 2 Add potatoes, onions, corn and sausage and lock lid down. Cook for 20 minutes.Step 3 Remove lid SLOWLY with hot mitts, add shrimp and fish. Cook for another 10 minutes.Step 4 Remove lid SLOWLY with hot mitts and drain off any liquid remaining.Step 5 Pour melted butter over all food items and sprinkle with Old Bay seasoning.

Sonja’s Shrimp & Sausage SupperIngredients 2 pounds new potatoes, quartered1-2 onions, quartered12 half ears of corn, placed on end2 lemons cut in half1-2 pounds of large, fresh un-pealed shrimp1 package of kielbasa sausage, whole4-3 oz. packages of shrimp or crab seasoningCanCooker All Purpose Seasoning1-stick of butter1 or 2 12 oz. liquid (water or beer)

First, place in the CanCooker ears of corn standing on end. Add potatoes, onions and lemons. Place kielbasa on top of vegetables. Add shrimp or crab boil seasoning, All Purpose Seasoning, butter and liquid. Latch the lid and place on heat source. Once the cooker begins to vent steam, keep on heat source for additional 25-30 minutes (approx). CAREFULLY open lid and add shrimp. COOKER AND CONTENTS WILL BE HOT. USE OVEN MITTS. Re-latch lid and cook for an additional 5- 10 minutes. Remove from heat source and let stand for a minimum of 5 to 10-minutes. Place food into large serving tray and enjoy.

*Always spray the inside of the CanCooker with Non-stick cooking spray before you add contents.

Tropical ChickenIngredients 4 boneless, skinless chicken breasts1-2 ham steaks8 new red potatoes quartered1 green bell pepper cut into chunks 1 or 2 onions quartered1 can pineapple chunks, not drained2 Tbsp soy sauceCanCooker Original Seasoned SaltCanCooker Butter Garlic Salt 1 stick of butter (optional)1 12 oz. liquid (bottled water or beer)

First place potatoes, pepper and onion in the CanCooker. On top of vegetables, place chicken and ham. Add pineapple chunks and juice, soy, seasonings and butter. Lastly add your liquid. Latch the lid and place on heat source. Once steam begins to vent, keep on heat source for 40-minutes (approx.). Remove from heat using oven mitts and let cool for a minimum of 5-minutes. Pour out contents into a large serving tray and enjoy.
