Using this Book

I’ve shared the simple and powerful information presentedhere in various forms with hundreds of people over thepast years, usually as we’ve enjoyed an organic living

foods meal. Most people have been delighted by the rich,luxuriant tastes of raw dishes such as living lasagna, vegetabletempura or fudge glace. And almost all, even the mosttraditional, have nodded in approval upon hearing that themost supportive diet possible is one based on foods that areclosest to their natural state. Intuitively we all seem to sensethat simple, natural, living foods are more health promotingthan processed, genetically manipulated foods. Andexperientially most of us have learned that a fresh organicpeach tastes better than a canned one or that fresh pickedspinach is much more vibrant and juicy than frozen spinach.In that case, then how can we most effectively and powerfullyinclude these superior foods of our daily diets? I’ve writtenthis book to show you how.

Indeed, this book if for you. In reading it you are openingyourself to ideas and technologies that can deeply transformyour life. “Transforming your life” means experiencing higherlevels of energy, enjoying life more, being more present, havingmore fun, having more choices, experiencing more freedomand most importantly being at peace with yourself in anysituation. The two technologies I present here to bring aboutsuch a transformation are actually rather “low-tech” tools andeasily available to anyone. The first is the transformativepower of unconditional love and the second is thetransformative power of eating a diet based on simple, living,raw foods. My experience is that these technologies work witheach other, one leading to the other and each supporting theother to guide you to a much deeper experience of wellbeing.

In publishing this book, I am interested in sharing ideas,suggestions and recipes that will truly empower you to carefor yourself with the foods you eat.Real caring is beyond specific rules and strict diets. It is otherthan obsessively counting calories or worrying about eatingthe “right” thing. It is more than losing weight or joining thelatest fad diet. Real caring is a feeling. It is the feeling thatyou’re worth it, that you deserve the best in life and thatwellbeing and health are available for you no matter what youmight believe. Caring for yourself with what you eat is bornfrom the feeling of love and love is at the core of this book.I make no guarantee that you will experience all of the changeslisted above and still I am convinced that if you sincerelycommit to loving yourself as you are and caring for your bodyby feeding it foods that support its wellbeing, you willinevitably enjoy life more and most likely experience higherlevels of health than you’ve known.

The ideas and information in this book will work on the levelthat is exactly appropriate for you in this moment. To get themost out of the book, I recommend that you read it oncethrough and then go back to the chapters that seem mostimportant you. If you are drawn to work with the toolspresented in a particular chapter, it’s because there issomething there for you. Be patient. This book is designed toopen slowly like a flower. Avoid the mistake of thinking thatyou’ve heard it all before and know it all already. Stay openand take advantage of all the tools available here. Know that ifyou do, your relationship to food and, more importantly, toyourself will be transformed forever.

I’ve designed the book with three specific sets of tools:exercises, affirmations and recipes.They can be used in any order and independently of oneanother. All of them are supporting your maximum wellbeing.I suggest using the exercises to help you in dropping anyunsupportive foods from your diet, using the affirmations tofeel great about yourself and your potential, and using therecipes to eat, enjoy and have fun. Remember to give thanksfor it all.

Affirmations:You’ll also find affirmations at the end of each chapter in thefirst two parts of the book. Affirmations are positivestatements designed to get you feeling great about yourself.I’ve created them because of how quickly and powerfullythey work in transforming any limitations you mayexperience. They are available for you here as tools toreprogram any negative or limiting beliefs you have aboutyourself. In working with an affirmation you can repeat itmentally, write it down, say it out loud and/or sing it.Whatever you chose, it’s important to really notice how thewords of these affirmations make you FEEL. Slow down,give yourself some time and allow yourself to go into yourfeelings. Really get into it and feel! The power of feeling isthe energy that drives the motor of all transformation.Feeling good leads to feeling great and feeling great leads tofeeling even better.

Recipes:Finally, in part three of this book you’ll find over 40 tastyliving foods recipes that you can make and share with yourfriends and family. These recipes are supportive of yourabundant wellbeing. You need not worry that they containany toxic, devitalized or less than health promotingingredients or combinations. Be creative and enjoy!

Loving letting goCHAPTER ONE:

The most powerfuldiet in the world…

I s a diet from thinking negative thoughts about yourself,judging yourself, or getting down on yourself in anyway. When you criticize yourself with any thought or

belief such as:

I don’t like the way I look.I’m too fat.I’m too old to feel good.I’ll never lose weight.I’m not good enough.I don’t like myself when I eat _________

you make it unnecessarily difficult to transform yourself or yourlife. In fact you only attract more of the situations that createdthese thoughts and beliefs in the first place. It may soundsomething like this:

“I’m too fat anyway, so I’ll just have this extra bowl of ice creamor a second helping.” Then you put on weight and feel worseabout yourself and the cycle repeats. Or maybe you go on thetrendy new diet (even a Living Foods diet) with all the bestintentions and start out with energy and discipline, but negativethoughts start creeping in: “It’s too much work. I don’t reallycare about losing weight, or I’ll never get there …” and youdrop the whole project. Or perhaps you have been eating wellfor a while and then get upset when your relationship ends oryou lose your job or whatever. Then you watch as the oldthought patterns come back in “I knew it wouldn’t last,” “Itnever works out for me.” “It was too good to be true.”…Andsoon you’re right back into the old patterns of eating as well.

I remind you now that it’s no big deal if any of these sounds likeyou—everyone experiences these kinds of cycles. Relax, letyourself smile, and right now allow yourself to feel that there isa way to go beyond the thoughts that limit you and keep youstuck in unsupportive eating patterns.

As ironic as it may sound, the path beyond limiting thinkingpatterns is to love, appreciate and approve of yourself,especially when you believe you’re too fat, or not goodenough or too old to feel good or whatever negative storyyou have about you.

I’ll say it another way—the way to go beyond any limiting,negative thoughts and behaviors is to go straight into themwith the limitless power of love. Love yourself no matterwhat, stay open for new information and watch as your lifetransforms easily and effortlessly.

It’s so simple, and I can imagine the protests, “Loving myselffor being hard on me? Doesn’t sound like a lot of fun!” Or“there’s got to be more to it.” Or, “it couldn’t work with me.”And still, just for this moment slow down and allow yourselfto feel the possibility that there is a power within you that isbeyond your imagination. Feel that this power is always foryour life, for your expansion, for your awareness and foryour good, and that through this power, your life can betransformed in the absence of stress, effort and obsession.

Have a look at what you’re thinking right now. If it is in anyway negative about you, me, the world or anything else, takethis opportunity to tell yourself something like “I totallyapprove of myself,” “I love myself unconditionally,” or anything else that gets you into the feeling of loving you just asyou are right now. Allow yourself to slow down and reallyfeel what it’s like when you repeat to yourself “I totallyapprove of myself and love myself unconditionally.” Repeatit again, “I totally approve of myself and love myselfunconditionally,” and again and be aware of whatever youare feeling. Just be aware. Here and now.

So, here’s the potential of love. As you love, appreciate andapprove of yourself, just as you are in this moment, yourthoughts about yourself automatically lighten up. You aresofter and gentler with yourself and you open yourself tonew possibilities. When you are open, free and expanded,you feel great about yourself and it becomes increasinglyimpossible to mistreat yourself in any way; you cannot overeat, eat junk food, eat only to fill an emotional need or causeany harm to your body through what you put in it.

The key is to appreciate whatever you are experiencing inthis moment without trying to do anything to change it. Inpractical terms this means loving and appreciating andapproving of yourself even when you’re angry, when you feelugly, when you get upset at your kids or partner, when youmake the same “mistake” again, when you feel tired or “over

the hill,” when you can’t make a decision, when you feelstuck, when you feel sick, when you can’t stand to look in themirror, when you hate the way you look, when you feel fat,when you feel hopeless, when you want to give up and ingeneral when you just don’t like yourself very much. AND italso means loving yourself when you’re excited about a newjob, when you finish that project, when you receivecompliments just for being you, when you’re attracted to abeautiful person, when you feel sexy and turned on, whenyou feel at peace with life, when you feel like moving to anew country just for the experience of it, when you arefantasizing about an amazing future, and in general whenthings are going great for you.

I remember that when I was first exposed to the idea of thepower of unconditional love, I had the feeling that there wasreally something to it and I began to practice right away.Upon the advice of my teacher, I would repeat affirmationsby writing them or saying them out loud. At first progress

In this moment, where I am, I choosethe power of love. I fully open my heartto myself and I give myself the pricelessgift of loving every part of my being. Ichoose to love, appreciate and approve

of myself without conditions,restrictions or limitations. In making

this choice, I open my heart toexperience the happiness, the vitality

and the freedom that are alwaysavailable for me.

So, here’s thepotential oflove. As youlove, appreciateand approve ofyourself, just asyou are in thismoment, yourthoughts aboutyourselfautomaticallylighten up.

for me was rather slow. I would say something like “I totallyapprove of myself” and at the same time be thinkingunderneath “no, I don’t, “ or “this is crazy,” or “this makesno sense.” I couldn’t get beyond this until I discovered thepower of just watching how I felt when I repeated theaffirmation. So then I would say, “I totally approve ofmyself,” and notice how the words made me feel good aboutmyself. This is when the magic of transformation reallybegan happening quickly for me. And soon I was able to seehow much I really did love myself even in the lowest ofmoments.

CHAPTER TWO:

Watching What You Eat…

The following is a simple and highly effective exercisedesigned to support you in having an honest look atwhat you’re currently eating and how these foods are

making you feel. The first thing to understand about thisexercise is that it’s merely about watching yourself. It’snot about controlling or changing what you eat. Thesecond thing to understand is that although it may seemformal, this practice is quite powerful. The power ofwatching yourself is remarkable and can give you valuableinformation that is appropriate and necessary for you.Anything you do to raise your awareness of how yourbody reacts to the food you eat is a step into abundantwellbeing.

As you practice with this exercise, let go of any idea youhave that you are eating or doing something “wrong.”Avoid criticizing or judging yourself in any way andcommit to being real and honest with yourself. Trust thatyour body is an amazing instrument and that it gives youvaluable information about which foods are supportingyour wellbeing. You are likely to get some surprises here,so stay open.

• What did I eat?• What ingredients were in it?• Why did I eat it? (Was I hungry? Was I bored? Was it

out of habit? Was I upset?)• How did I feel afterwards?

Then, without limiting yourself in anyway, eat whateveryou feel like eating. As you do, take the time to answerthe questions shortly after eating. (Don’t wait until theend of the day). Give yourself space to answer freely,honestly and without criticizing or judging yourself inany way. Let go of any need to make any meaningwhatsoever out of the answers. The important thing isonly to watch yourself and answer the questionstruthfully. When you’ve done this for a few days youwill notice that the foods that make your body feelworse begin to drop from your diet—automatically andeffortlessly.

A f f i r m a t i o n s :

“I am now aware of what I eat.”

“ I now feel my body’s responseto food.”

“ I slow down and feel mybody.”

In this moment, where I am, I slowdown and feel my body. I am now

aware of what I eat and of how my bodyresponds to the foods that I feed it. Ilisten to the messages of my body,

trusting in its wisdom. As I do this, Inow make a step into the abundant

health that is always available for me.

If you’ve been eating a standard cooked food diet for yearsyou may find that you have difficulty to feel how yourbody reacts after eating. This is because you’ve learned toblock out the uncomfortable sensations that usually comeafter eating. Use the following affirmations to begin torenew your connection to your body. Feel your body andgive it all the attention that it deserves. Have patiencewith yourself in this process and remember that as a childyou were very aware of what you wanted to eat, howmuch of it you wanted and how it made you feel. Thisawareness is still available to you, no matter your age.

CHAPTER THREE:

Giraffe’s Milk

People often ask me why I don’t drink milk or eat anymilk-derived products. Most of the time I give a simpletwo-part answer. “First, I’m no longer a baby and

second, I’m definitely not a baby cow or goat.”

Your body has no more need of cow’s milk than it doesof giraffe’s milk or elephant’s milk or whale’s milk. perspective, it’s only natural that your adult body rejectsmilk. Milk is designed by nature for infants of thatspecies, cow’s milk for calves, sheep’s milk for lambs,horse’s milk for foals, and so on. It is nature’s way oftaking care of infants until they are old enough toprocess the nutrients from solid foods for themselves.After infancy, no mammal on earth other than humansdrinks milk and much less the milk of another species!So when you feed your body milk beyond infancy, it’sliterally a foreign substance for the body. The bodyreally doesn’t know how to fully process it and itprotects itself from a possible threat by trying to expel itas quickly as possible. All this takes vital energy fromthe body and leaves you with less to enjoy.

If you are still eating dairy, I encourage you to have areal look if it’s worth it for you. To find out for sure, Isuggest that you take a one-week fast from all dairyproducts and see how you feel. CHAPTER FOUR:

The most Hazardous drug in the planet is

refined SUGAR

There is no mystery to this. Putting processed sugar intoyour body is something like pouring sugar into the gastank of a million dollar racing car. Except of course that

your body is irreplaceable, worth infinitely more than amillion dollars. Refined sugar has zero nutritional valueand actually drains the body of vitamins and minerals inthe process of being metabolized. Refined sugarcompromises the body’s immune system and stresses thepancreas by forcing it to produce a rush of unnecessarydigestive enzymes. The body treats it as a toxin, which ithas to eliminate. If you eat sugar on a regular basis anddoubt it, try cutting all sugar out of your diet cold turkey.Many people who do this notice that they have intensewithdrawal like symptoms such as headaches, low energyand even nausea. This happens as the body eliminatesthe left over toxins from the sugar and begins to bringitself back into balance.

My personal experience is that it is impossible to bevibrantly healthy while eating any amount of refinedsugar. When I eat refined sugar I notice that my energylevels rollercoaster, that my muscles lose flexibility, that Ifeel mentally fuzzy, that I have less fun and that I’m moreirritable. Overall it feels like a cloud or a haze descendsaround me—like I’ve been drugged.

Fortunately for all of us with a sweet tooth, there aremany natural sweeteners that are actually supportive thebody. You’ll notice that in several of the recipes in thisbook I use Agave, which is a low glycemic sweetenermade from the Yucca plant. You may also enjoy usingdried fruits such as figs, apricots and raisins assweeteners. Or perhaps even raw maple syrup or rawhoney.

Whatever the case, eliminating refined sugar from yourdiet is one of the kindest and most loving things youcould ever do for your body. CHAPTER FIVE:

Humanshave a Frugiverous

intestine

If you could take your intestine out of your body andmeasure it you would find that proportionally it’s aboutthree times longer than a tiger’s intestine. That’s because

the human intestine is frugiverous. It is ideally designed toprocess raw fruits, nuts and seeds. Your body is an expert atextracting the most nutrition possible from these foods. Atiger’s intestine, on the other hand, is carnivorous anddesigned specifically for processing meat. The shorterintestine of the tiger allows meat to pass through its bodyrelatively quickly. Meat stays in a tiger’s body for 12-18hours and is then eliminated. But, because of the length ofthe human intestine, it stays in your body for 48 hours orlonger. During this time the meat traveling down yourintestine begins to rot, creating an environment in yourintestine where bacteria and parasites flourish. Additionally,some of the meat gets stuck in the corners of the intestines orthe colon and contributes to diseases like cancer ordiverticulosis. It may be a bit gruesome, but if you’d like toget an idea of what it’s like inside your body when you eatmeat, leave a steak or a fish or a chicken breast out on thecounter during the middle of the summer for 48 hours andwatch what happens. Then, without making rules foryourself, ask yourself if you’re willing to continue to do thisto your body.

In the most basic and simple of terms, eating meatcompromises your body’s ability to maintain optimal health.Doctors know it, hospitals see it everyday, yogis and saintshave known it for thousands of years, and almost allchildren know it. Most importantly your own body knows it.As you become more aware of how foods affect your bodyand as you begin to nourish yourself with more lifeenhancing foods, meat automatically and effortlessly losesimportance. Know that it’s not necessary to become avegetarian or to forcefully eliminate meat from your diet. Awillingness to care for yourself as much as possible in eachmoment is enough. Just watch yourself, be aware of whatfoods are truly supporting your wellbeing now and bewilling to change as is appropriate.

transformation, I suggest the following: the next time youplan to eat some meat, smell it raw before you cook it.Really get your nose close to the meat and inhale deeply, asyou would if you were smelling a freshly cut rose, or afreshly picked orange. What does your body say? Doesyour body get excited? Does it feel ill? Does it feel hungry?Trust your body, it will give you all the information youneed. Use the affirmations below to cultivate this trust andto strengthen your commitment to treating your body in aloving and caring way.

Wild animals do not know degenerative diseaseresulting in a slow decline like many humans do.Instead they are vibrant, healthy and full of life until

the very end of their lives. They do not become inactive andoverweight. Instead they are living, playing, and eating at fullcapacity almost until their dying days. Interestingly, all wildanimals eat uncooked, fresh foods. More and more humans arechoosing to live like this. And you can too. You’ve alreadymade the first steps by choosing to love yourself withoutconditions or limitations and by becoming more aware of yourbody’s response to food.

Can you imagine that a wild animal ever gets down on itself formissing its prey or for getting lost, or for not drinking enough atthe last watering hole? Not a chance! Wild animals are justutterly present here and now, moving from the instincts deep intheir bellies. You are capable of moving from your instincts aswell. In terms of food, it means eating the foods that you arenaturally drawn to. When you are eating instinctively, you onlyeat when hungry, you never plan any meals, you eat whateversmells the best, you eat only enough until you are full, you don’tworry about tomorrow’s food, you don’t eat anything thatdoesn’t taste good and you eat all your food, fresh and raw.

The reality for most of us is that these instincts have beensocialized out of us. We’ve learned to eat according to the clockinstead of to our stomachs, to clean our plates even if we’re full,to plan menus, to stockpile foods and to eat things that don’ttaste good. And enough is enough! You can step out of anyunconscious eating habits that limit you and reconnect withyour instincts. Eating instinctually means eating only whatsmells good, only what tastes good, only as much as you want,and only until you’re full.

Give the following exercise a try: set out some of your favorite foodsand allow yourself to smell all of them. Really get into the smells andeat only when you find one that smells great to you—no compromise.Eat this food only and stop eating when the taste changes or whenyour stomach feels full—your body will tell you when it has hadenough. The main thing is just to allow your instincts guide you.Trust your innate wisdom; it never makes a mistake.

CHAPTER SIX:

Remember that developing your ability to choose foods on thebasis of smell may save you from getting sick. Your bodyknows what is fresh and healthy and it tells you through smellsand taste.

With rare exception for medicinal herbs, if it doesn’t smell good,don’t eat it. If it doesn’t taste good, spit it out.

The most supportive thing some of you can do foryour body now is to give it a break from eating anddigesting food.

Your body is an amazing creation. It is lovingly designed to be self-healing, self- balancing and self-regulating. Whenever it is injured, itheals itself. When you break an arm, it mends the bone, when you cutyourself, it grows new skin, when you strain a muscle, it sends relief.Your body is designed to feel great, to work as perfectly as possible andto enjoy high levels of functioning. And fasting and cleansing gives thebody a much needed rest so that it can devote all its energy tomaintaining and healing itself.

Remember this: when an animal in the wild is injured or sick, itimmediately stops eating in order to devote all its energy to healing.Consider that if you’ve been eating a standard diet for years you arealso sick, as your body contains unnecessary leftovers like parasites,tapeworms, undigested bits of food and chemical toxins.

Below are suggestions for fasting and cleansing. Take your time andmake plans to fast and cleanse in a way that is gentle to yourself. Youmay want to go on a retreat dedicated to health through cleansing(Resources). Whatever the case, be patient and don’t try to undo yearsof unconscious eating in a few weeks or months. Trust that all is givento you in the perfect timing.

If you do decide to follow any of the following suggestions, make surethat you have more than enough support from friends and family. Youmay like to invite some of your friends and family to do it with you, soyou can all enjoy the benefits together. And, by all means, take care ofyourself by checking in with a competent physician before starting.

For those of you new to cleansing be prepared for symptoms such asheadaches, low energy, strong emotions and muscle pain. These aresigns that your body is getting rid of the toxins from poor qualityfoods. It won’t last and you’ll make it through it if you choose to.You might consider that a few days of discomfort now is preferable toyears of discomfort caused by continually neglecting or mistreatingyour body.

The following are options for healing through fasting and cleansing.I’ve divided them into beginning and intermediate levels. Use themwisely and with care.

CHAPTER NINE:

The first thing to understand about

living foods…....is that you already intuitively understand them.

Living food is any food we eat which still contains the lifeforce, or the potential to create new life. Whatever weeat that can still grow, or reproduce itself is alive. And

whatever we eat that has lost the potential to grow orreproduce is either dead or dying.

You can test this easily for yourself every time you eatsomething. The next time you eat something, slow down andreally imagine that instead of eating this food, you plant it inthe earth. If it is capable of sprouting and producing a newlife, it’s living and if not it’s devitalized. Imagine what wouldhappen for example if you planted a potato chip in the earth.How about one of those sprouting potatoes in yourrefrigerator? Or what would happen if you planted ahamburger or a tofu burger? And what about planting anapple or a peach?

In more specific terms living foods are:

1. All fresh fruits that contain seeds (if they don’t containseeds, they have been genetically modified and are unableto reproduce on their own).

2. All UNROASTED nuts and seeds since they can be soaked,sprouted and planted.

3. All raw leafy green vegetables, which grow by sproutingroots in water.

4. And some root vegetables such as onions and potatoes thatcan be sprouted and planted.

In making the distinction between living and devitalizedfoods, it is important to recognize the effect cooking has onfood. Cooking dehydrates the cells and dries up the inherentlife force of all plants, fruits, seeds and nuts. It destroys theenzymes latent in all seeds and plants and thereby, their abilityto reproduce themselves. Any food that has been heated to atemperature greater than about 43 degrees C (110 F) has lostthe majority of its life force, most of its natural nutritionalvalue, and most of its taste. For this reason, cooked food iseffectively dead.

Living food isany food we eatwhich stillcontains the lifeforce, or thepotential tocreate new life.Whatever weeat that can stillgrow, orreproduce itselfis alive. Andwhatever weeat that has lostthe potential togrow orreproduce iseither dead ordying.

It’s easy to experience this yourself. First, imagine what youwould look and feel like after coming out of a 200 degree ovenafter an hour or off of sizzling grill after 20 minutes. Second,and much easier, make yourself a glass of fresh squeezedapple juice or orange juice. And then pour yourself a glass ofpasteurized apple or orange juice from the store. Thepasteurized juice has basically been boiled for several minutes.Notice the differences in color, appearance, smell and above alltaste. Then ask yourself what you’d rather drink. If freshtastes better, that’s your body telling you something like “Yes,that’s it, that’s what I want.”

In this moment where I am, I becomeaware of the nature of the food I eat. I

am now aware if the food I eat is fresh,juicy and alive. I am aware if this food

still contains its life force. And withoutexpectations or judgments of any kind, I

open myself to feel the difference thatnourishing myself with living foods makes

in my health and wellbeing.

CHAPTER TEN:

Living Foods are themost loving foods…

for your body. Simply put, they digest quickly and easily.They contain the highest percentage of digestive enzymes,the most minerals, the highest percentage of vitamins, and

the most nutrients of any foods on the planet. They are fresh,juicy, taste great and are filling and satisfying. Perhaps that’swhy God offered living foods for the first humans:

“And God said, ‘Behold, I have given you every plant yieldingseed which is upon the face of all the earth, and every tree withseed in its fruit; you shall have them for food.’” Genesis 1:29

The basic thing to understand is that when you eat somethingalive, you become more alive yourself. The plant or nut orseed shares with you its life force and makes you stronger,brighter and healthier. Your body digests it easily and canmore fully access the nutrients within it. On the other hand,when you eat something cooked and devitalized, you becomea bit slower, a bit weaker and your body responds to the foodas something to “deal with” rather than something to

celebrate. It’s so simple and natural and it doesn’t requireyears of study, work or effort. In fact all it requires is awillingness to be aware of your body and make the choice totreat it with all the love it deserves.

As you consider this information, have a look at whatpercentage of your current diet is currently composed of livingfood. In my experience a diet of 100% living foods is the bestfor experiencing maximum levels of awareness and health.But any decision you make to nourish yourself with livingfoods is a decision for you and your wellbeing and a step inthe direction of abundant life. Whatever is appropriate foryou now is perfect. You decide in each moment.

As you eat more and more living foods, remember that you arein a transformative process and be gentle with yourself.When you come up against a limiting belief, negative thoughtor old pattern, allow yourself to see it, disconnect from it andmove on into the health and abundance that are alwaysavailable for you.

CHAPTER ELEVEN:

Raising yournutritional standards

You may already have noticed that the food available nowin most stores tastes different and looks different than itdid when you were younger. That’s because at least

70% of the fruit and vegetables available today didn’t evenexist 30 years ago. If you’re not old enough to notice thedifference, ask your parents or grandparents to share theirexperience with you.

In the conventional supermarket of today mostly what isavailable are fruits and vegetables that have beenhybridized, genetically modified, treated with preservativesand grown with pesticides in de-mineralized soil. Haveyou experienced peaches that never get ripe and barely eventaste like peaches? Or avocados that are watery andflavorless? Or maybe you’ve noticed a burning in yourthroat after you eat a banana? Or perhaps you have seenapples the size of grapefruits, grapefruits the size ofcantaloupes or cantaloupes the size of small watermelons?These unfriendly “foods” compromise your ability to createoptimal health and wellbeing, and in some cases they areactually toxic to the body. They are mass-produced andprofit driven.

Ask yourself now if you really want to support theproduction of this low quality food, much less feed yourselfwith it.

Fortunately, there is an alternative. People all over thisplanet are committed to growing fruits and vegetablesorganically and in harmony with the earth. With theexception of wild foods, organically grown fruits, nuts andvegetables are the most life enhancing foods on the planet.They are designed by nature to support your optimalwellbeing, they make you feel more alive and they just tastebetter. If you like, experiment with this yourself bycomparing the crisp taste of a freshly picked organic appleto the flat one of a conventionally grown apple.

Choosing to nourish yourself with organic fruits, may meanthat you drive further to the store, that you invest moremoney than normal, or that you wait for some produce untilit’s in season. And no matter what you may think, you areabsolutely 100% worth it. Saying yes to organically grown

If you notice any resistance in raising your standards inregard to the quality of the food you eat, it may come from abelief in you that you don’t deserve the best. As you move towards eating a simple living foods diet,you might be wondering, after all, what there is to eat?Especially if you’re coming from a traditional standard

diet, it can look like there are limited options. But in reality theearth is outrageously abundant in the variety and amount offresh living foods it provides for us. There are millions ofdifferent kinds of edible fruits and plants, many of which weare yet to discover. It would be a lifetime’s work just to tasteeven 1/2 of these fruits and plants.

To get an idea of what living foods are commonly available,consider the following lists. Have a look at them and see howmany you have tried. Take them to the market with you andtry something new. So,expand your horizons and be willing to experiment with newflavors and experiences. Remember that if it’s fresh, live andorganic, it’s only going to bring you more life and vitality.

CHAPTER THIRTEEN:

Do cows get enough protein?

I remember that many years ago when meat dropped frommy diet, I began to wonder how I was going to get enoughprotein. My immediate solution was to eat a lot of beans,

but soon I found that I didn’t like beans all that much. So,on the recommendation of a friend, I moved to eating moretofu but soon found that my body didn’t seem to digest tofuvery well. Then I read somewhere that spinach and otherleafy green vegetables have more than enough protein for ahealthy body. Specifically, 1 and 1/2 cups of fresh spinachfor example has 2 grams of protein, or half therecommended daily allowance. Something in that ideareally got to me. After all, I thought, “Do cows or horses orzebras or llamas get enough protein?” “Of course, and allthey are eating is grass.” Since then, I stopped worryingabout protein and have just made sure to enjoy eating lots ofgreens and on occasion even some protein rich Superfoodslike bee pollen and spirulina.

I include this story now because, at any point as youtransition to eating more simple living foods, you mighthave similar questions about whether you are gettingenough of this nutrient or that mineral, or that vitamin. I

In this moment where I am, I releasemyself form any rules and restrictionsabout what I “should” eat. I welcome

and embrace change in my diet. If I findmy body out of balance I choose to

explore alternatives and find somethingthat truly works for me.

encourage you to get these questions answered. Perhapsyour body is telling you something or asking you forsomething. There are all sorts of amazing herbs, plants andsupplements to try. There are specialists trained innaturopathy and living foods nutrition.

The important thing is to honor your questions and takecare of getting them answered. Be sure to let go of negativethinking like “I can’t do it,” “I’ll never make it,” “I don’twant to be healthy,” “I don’t care” etc. Keep loving andapproving of yourself no matter what. And keep allowingyour diet to change as the needs of your body change andyour awareness levels change.

Your decision to care for yourself with fresh organic livingfoods is one of the most life enhancing choices youcould ever make. In moving to a diet composed of

living foods you literally revitalize your body. Prepareyourself for feeling more energy, sleeping less, losingany unnecessary weight, healing any imbalances inyour system, having more fun, being more focused andfeeling lighter. It is going to happen as you transitionto caring for yourself with living foods.

You may not yet be aware of it, and in caring foryourself with fresh organic living foods you are alsogiving a gift to the earth. In coming to a simple dietbased on the fruits of the earth you contribute to thebeauty of this planet. Because of your decision, lessplastic, less metal, less cardboard and less glass needbe created for the packaging of processed food and lesswaste ends up in landfills. Because of your decision,more wild and untouched land is kept open and freeinstead of being used for the raising of animals forfood. Because of your decision, less water iscontaminated by factory animal farming. Because ofyour decision, less pesticides and chemical fertilizersmake it into our groundwater. Because of yourdecision, more fruit trees are planted and cultivatedand there is more oxygen in the atmosphere. Becauseof your decision, the air is just a little cleaner thanyesterday. Because of your decision more people havefood to eat today than yesterday.

Your individual contribution may not seem so great andfar-reaching, and yet it is important beyond measure.Any step toward restoring balance within yourself is astep toward restoring balance on this planet. And whenmany of us step in the same direction, deep andfundamental transformation happens.

This is the simple beauty of choosing to care for yourself with living foods: you are contributing to a morepeaceful, more loving and more joyful world foreveryone. And you are doing it while simply enjoyingyour life and having fun eating foods that truly nourishyour body.

This part of the book offers you a great start on learninghow to prepare fresh living foods dishes. In it youwill find general helpful tips for preparing living

foods, specific information about enhancing your foods withessential oils and over 40 recipes that I have developed alongthe way. This information is designed to spark your owncreativity and explorations. Add to the recipes, changethem, expand them and invent with them, as you like. I’dlove to hear about your discoveries.

Some helpful tips when preparing living foods:

1. Soak all dried fruit, seeds and nuts in fresh pure wateras indicated in the recipes. Soaking dried fruit re-hydrates it and makes it much easier to digest (likefresh fruit) and soaking nuts and seeds activates theliving enzymes that can turn them into trees andplants.

2. Use only filtered or spring water for all recipes. Yourbody and your taste buds will thank you.

3. As you work with these recipes and create your own,balance these 5 elements: SWEET, SALTY, SOUR, SPICYAND FATTY. If something you are creating tastes lessthan great, ask yourself if one of these elements ismissing and add accordingly. When these elements arebalanced, culinary magic happens.

4. Use your own cooking experience to create newrecipes. If there is a recipe you have always enjoyedmaking, see how you could make it with living foodsinstead. Duplicate the spicing, cut out the things thataren’t living and add others that are. Be creative andhave fun!

Living foods andessential oils..

In terms of your overall physical health and wellbeing thismay be the most important chapter in this book. If you arecommitted to experiencing the highest levels of physical

health possible I suggest that you add pure therapeutic gradeessential oils to your recipes. In experimenting with essentialoils in my recipes, I’ve found that the oils greatly enhance theflavor of my dishes. Secondly, I’ve noticed that using essentialoils magnifies the healing properties of the dishes. Combiningthem with living foods is a powerful alchemy that can result inincreased physical health and mental clarity. Below is a list ofthe general properties of Essential Oils as well as a list ofspecific oils that can be used in food preparation. Whenworking with Essential Oils:1. Use ONLY a pure, therapeutic grade of oil. Pure,

therapeutic oils are the only ones that are safe to takeinternally. The best I’ve found are from Young Living Oils—see Resources.

2. Essential oils are strong and can easily dominate a dish.Start with a very small amount (less than a drop) whenadding oil to food. You can do this by using a toothpick toextract the oil from the jar.

3. Use extra care and significantly less quantities when usingessential oils with children under 6 years old.

4. Avoid heating essential oils as heat destroys most of theirproperties.

Drink a meal..

Drinking a meal instead of eating it is one of thehealthiest things you can do for your body. Bydrinking your meal you are giving the body a head

start on digestion and supporting it to assimilate the nutrientsin the food quicker and more efficiently. Make a juice orsmoothie and enjoy it as your first meal of the day!

WATER:

Water is nature’s solvent. It has a powerful cleansing effect onthe body and is essential to all major electrical functions of thebody.

For maximum health, drink only pure filtered water or springwater.

I find it helpful to drink about 8 ounces of water before eachmeal. When I do, I notice that I’m less hungry and much moreaware of how much food is appropriate for my body.

Another thing I enjoy is to add one or two drops of lemonessential oil to all my drinking water. Lemon oil is a greatboost; it stimulates brain activity, increases circulation andenhances physical energy.

The most nutritionally superior milk on the planet is madefrom soaked nuts or seeds. Nut milks only take a couple ofminutes to make. Here are several suggestions. You can useany type of nut or seed. The process of making the milk is thesame. The only difference is the soaking time required.

ALMOND MILK

Soak 1 cup of almonds for about six hours.Discard soak water—this is important as almond skinswhen soaked release a bitter liquid that is slightly toxic.

Blend almonds with about 1 1/2 quarts pure water on highfor a couple of minutes.Strain mixture through a fine mesh bag—left over, you’llhave dry almond pulp.

Stir the milk before enjoying. Sweeten with agave syrup ifdesired.

Leafy greens

Eating fresh leafy greens stimulates the digestive system,helps cleanse the intestines and oxygenates the blood.Fresh leafy greens are also a superior form of protein

and contain high concentrations of vitamins and minerals. Ilike to incorporate as many different greens in my diet aspossible, from traditional favorites such as spinach to moreobscure greens such as dandelion or kale. I notice that eachtype of green has specific information to share with my bodyand nourishes it in a unique way. I enjoy eating a leafy greensalad as my main meal on most days.

Use these recipes as guides; substitute as you like and enjoycreating your own combinations and dressings.

Cabbage contains iron, calcium, and potassium andis high in vitamins C, B1, B2 and B3. It has been

appreciated for thousands of years because of itsmedicinal properties. Cabbage juice is a well-

stomach and colon cancers.

Your stomach is approximately the size of your closedfist. And that’s how much food it is designed to digest atany one time. When you eat more than the size of your

fist, you are giving extra work to your stomach and openingthe door for difficulties such as heartburn, indigestion, upsetstomach and slow metabolism.

I remind you of this here because the dishes in this sectiontaste so good that it’s easy to overeat them. Keep in mind thatmost of them taste even better after a few hours in therefrigerator when the flavors have mixed. You can alwaysreturn to them.

My suggestion is to eat these dishes accompanied with a greensalad. Salad stimulates digestion.

Cilantro has long been used for it’s antibacterial properties.Recently it has even been shown to kill Salmonella bacteria

and eliminate other food borne illnesses.

Dill is a natural preservative, thus its presence in pickles. Itis also a digestive aid and can help settle the stomach. Theword Dill comes from the Old Norse word “dilla” which

means to lull or soothe.

Seaweeds like Nori have high mineral content. This isbecause much of the earth’s minerals have been washed to

the body.

One of my favorite discoveries with living foods is that Ican eat a delicious, sweet apple pie whenever I wantAND feel great about it. That’s because eating sweet

living treats never causes indigestion or bloating, never makesme feel nervous or wired, and never drains my energy.

When making living foods desserts, be creative. The basicthing is to start with the freshest most amazing fruit you canfind and add other ingredients as desired. Enjoyexperimenting and combining!

Remove mixture from food processor and roll into balls inthe palms of your hands. Coat the balls with hemp seedsor grated coconut.

Peppermint essential oil stimulates the breath, clears thesinuses and soothes digestion. It also works well as an

insect repellent and as a muscle relaxant.

Hemp seeds and hemp oil contain Essential Fatty AcidsOmega 3 and Omega 6, which stimulate the immune

system and clear the arteries. Hulled hemp seeds are easyto digest and are a complete protein.

Durian is a large green thorny fruit from Southeast Asiawhere it is known as the“King of Fruit.” It has a creamypudding like consistency and has a unique flavor. It’s highin sulfur and beta-carotene. Frozen durian is available inmost large cities and can be found in Asian supermarkets.

Commercially grown bananas are the most hybridized of allcommon fruits. When possible eat the smaller varieties of

bananas which are closer to wild bananas.

Brazil nuts are harvested almost exclusively from wildwildwildwildwildtrees during the 5-6 month Amazonian rainy season. Theyare high in selenium, which has been linked to preventing

depression and prostate cancer.

Mangoes originated in India where they are still commonlyused as an offering to the Divine. Some traditions also saythat the Buddha became enlightened while sitting under a

mango tree.

Most cashews, even the ones called “raw” in the stores, havebeen heated to around 90 degrees C (200 F) in order to remove

their shells. Truly raw cashews are available from Nature’s FirstLaw (Resources). Try them and notice the difference.

Kiwis contain a protein-splitting enzyme. Other fruits thatcontain the same enzyme are fresh papaya, pineapple and babaco.This enzyme improves digestion and assimilation of nutrients.

potassium than bananas. Second only to citrus in Calcium.More iron than any other common fruit. High in

Living Love…If I eat the most amazing foods on the planet, and fail to

feel love for myself, I am as a chewing mouth or a churning

stomach. And if I have awareness of everything I put in my

body, and enjoy abundant wellbeing and if I have

enormous strength and courage, and still fail to love myself

as I am, I am as an incomplete painting. If I give away

everything I have, even to the point of giving my own life,

and do this without love, it has no significance. Love

means that I am patient and kind with myself, even when I

feel jealous or boastful. Love means that I am

understanding and compassionate with myself even when I

insist on my own way and even when I feel irritated or

resentful. Love means that I allow all things to be as they

are and all experiences to have their place within me. Love

always guides me in the appropriate way, even when it

means letting go of “knowing” where my life is heading

and what is going to happen. Through love I become

aware of myself and am able to see myself more clearly
