WHAT ARE THEY?

•Water insoluble compunds usually composed of an

alcohol and one or more carboxylic acid molecules.

•They include: Animal fats, vegetable oils and waxes.

Fats and oils are esters of glycerol, an alcohol that

contains 3 (OH) Groups.

Each molecule of a fat or an oil contain three ester groups resulting

from the 3 carboxylic acid molecules joined to one glycerol

molecule.

FUNCTIONS OF LIPIDS!

•They have two major biochemycal roles in the

body:

•Store excess energy when an organism

porcesses more food than it needs.

•Form membranes surronding cells and

components

Clasification of lipids

• Lipids are divided in two groups:

Simple lipids Complex lipids

Phospholipids Vegetable oils

Glucolipids Waxes

Esteroids Fats

Cromolipids

PHOSPHOLIPIDS

• Glyceride found in living cells and cell membranes. They have two fatty acids esterified to glycerol. has an ionic “head” soluble in water, and a “tail” that is insoluble.

GLUCOLIPIDS

• Components formed by a carbohydrate that can be glucose or galactose, and a fatty acid and an alcohol. Other words lipids that contain D-glucose.

STEROIDS

• A lipid with a four-ring structure. Include cholesterol, sex hormones, vitamine D and bile salts.

OILS AND FATS

• Contain fatty acids, fats have small percentage of unsaturated fatty acids, oils contain few saturated fatty acids.

• A liquid lipid obtained from a plant source its called an oil.

• A semisolid lipid obtained from an animal source is called a fat.

• The distinction of a fat and an oil is based on the saturation of the fatty acids.

WAXES

•Obtained from heavy crude oil. Its a mixture of a long chain alkanes. A lipid wax is a mixture of naturally ocurring esters of fatty acids and long chains alcohols.
