Dear Camillus friends, We will be collecting the ZITI A LA BOLOGNESE casserole next Wednesday, 2/3/21. If you need tins and lids, you may get them at the Epiphany rectory or you can help yourself to the box on the bench by the door at 7610 SW 58 Ave. Please remember that each casserole must be frozen and covered. Also, please write the name of the casserole recipe and month and year of preparation (i.e. ZITI A LA BOLOGNESE 2/21) on the lid with a permanent marker before freezing. Wrap the casserole in plastic wrap all around to ease its transportation. Thank you for feeding the homeless in our community. Please feel free to share this information with anyone who may be interested in participating. We give 2 community service hours per casserole for any student making the casserole(s). ZITI A LA BOLOGNESE
3 ½ lbs. Ground chuck beef 1 large oniondiced small 2 26-oz. jars Publix or similar 4-cheese tomato sauce 2 Tbsp. dried parsley 1 lb. ziti macaroni Olive oil 4 cloves of garlic diced fine 2 tsp. salt (or to taste) 2 stalks celery diced small 2 tsp. ground black pepper 1 large carrot diced small 2 tsp. dried basil
Brown and crumble ground beef in a hot frying pan coated with olive oil until pinkness is gone. Drain on a paper towel. Set aside. In a large pot with ¼” of oil, sauté the onions, carrots, garlic and celery until golden; add cooked meat. Add the 6-cheese tomato sauce, dried parsley and dried basil. Bring to a boil and simmer for 30 min. stirring occasionally. Cook the ziti in a large pot of salted boiling water al dente (2 min. less than package instructions). Combine the ziti and Bolognese sauce after adding salt and pepper to taste. Transfer half of ziti and meat to the casserole pan. Stir until blended and gradually add the other half of ziti and meat until all blended. Leave ½ inch from the edge of the pan for expansion during freezing. For cooling: place the uncovered pan with hot contents into a larger pan or the kitchen sink filled with half ice, half cold water. As soon as the contents are no longer hot, cover the pan with the lid and seal all around. Label and date the lid. Wrap with plastic wrap in both directions to secure the lid. Place in the freezer.

Wednesday, February 3 is the Feast of St. Blaise
This coming Wednesday, on the Feast of Saint Blaise, we will have the traditional Blessing of Throats at the end of Mass. We will do a General Blessing first. Then we will do an individual Blessing for those who want to come forward as is done for Holy Communion.

WE ARE THE CHURCH Next Sunday is the Archbishop’s Charity Drive. Archbishop Thomas Wenski reminds us that . . . “We are the Church and together we can continue the works of Christ, no matter what challenges come our way.” There is an old story you may have heard, but it’s worth repeating . . . “After his death, a man asked the Lord, “May I see heaven and hell?”. “Come”, the Lord said, “I will show you hell.” They entered a very large room where a group of people sat around a huge pot of stew. The pot was a distance from them. Each of them had a long-handled spoon, but as they dipped their long spoon into the stew, they were unable to turn the long spoon around to feed themselves. The stew fell to the ground. These people were miserable, hungry and frustrated. “Come now, I will show you heaven.” They entered a similar, large room, identical to hell . . . with people sitting around a pot of stew and each one holding a one-handled spoon. But in this room, the people were so happy and nourished. The Lord said, “In this room, they have learned to feed each other using their long spoon.” We are the Church and feeding each other is the true message of the Archbishop’s Charity Drive. Your gift feeds the needy. Remember the gift you entrust to the Archbishop is used to support the works of mercy and assist in the formation of families and priests. It is also used to care for the sick, the elderly, the immigrant, the less fortunate and the spiritually poor. Please be as generous as you can so that the needy can be fed. We all realize we are going through a terrible period in our history, and all we can ask is that you do your best so the needy can be fed. We are the Church, and if we feed one another, we will always be able to dip the long spoon into the stew, because we have learned by feeding others . . . “God feeds us.” Remember, “We Are the Church”.
