Summary:
With the current rendering system, once the carcass has been split into the various cuts, the latter are manually weighed using a scale (calibration) and a label is printed and applied to the cuts. Finally, each cut is put into a polyethylene bag which is vacuum sealed.

4. Project Outline:
With the current rendering system, once the carcass has been split into the various cuts, the latter are manually weighed using a scale (calibration) and a label is printed and applied to the cuts. Finally, each cut is put into a polyethylene bag which is vacuum sealed.
Our challenge is to set up an automated and continuous system that will require minimum operator intervention. We foresee the use of continuous weighing technologies, a bag making equipment that will make bags with the right size for each muscle, using a film, as well as vision and refraction systems to assess the size and color of each muscle´s surface.
Although there are similar solutions available in the market, they do apply to all products and do not encompass the whole process

Expected Outcome of Project
Sharp cost reductions both in terms of human resources and in raw materials usage as the packaging will be right-sized.
Health and hygiene-wise it would mean a huge improvement as excessive handling will be avoided, thus preventing cross contamination.
