should fill and overflow the mold Layover this an oiled paper A butteredone will do or three thicknesses ofparaffin paper Put the cover overthis allowing the paper to come downplacetthencover and the pan to prevent all pos ¬IngPack In salt and ice for three or fourhours When ready to servo removethe coverings wipe the outside of themold with a hot cloth and Invert themold on to n cold dish when thecream loaf will slip out
An extra addition can be served inthe whipped cream sauce tinted withyellow or pink using egg yolk for thefirst and n bit of boiled beet juIce Inthe latter Instance this being placedIn the cream before whipping
