He brought about a revolution in the Bengali education system and refined the way Bengali language was written and taught. The title 'Vidyasagar' (ocean of knowledge) was given to him due to his vast knowledge in several subjects. He learned basics of Sanskrit at the village pathshaala after which he set out for Calcutta with his father in 1826. • Food is digested inside a tube called alimentary canal or gut. It is over 7 meter long and is coiled

inside our abdominal cavity.

• How food moves along the alimentary canal

Our gullet and the rest of our alimentary canal has circular muscles in its walls.

These muscles contract behind a bolus and relax in front of it. So the bolus gets pushed along.

This contraction and relaxation of circular muscles is called peristalsis. It takes place all the

way along our alimentary canal and keeps food moving.

• Digestion in the mouth:

Digestion starts in the mouth. There are 3 pairs of salivary glands in the checks and under the

tongue.When we chew food, it is mixed with saliva from salivary glands.

Function of salivary glands:

It wets food, so slips easily down our throat.

It contains a carbohydrase enzyme which starts to digest the starch in our food into sugar.

Before we swallow food, our tongue shapes it into a round lump called a bolus and squeezes

it to the back of our mouth.

The bolus pushes the soft palate upwards. This stops food getting into the space behind our

nose.

A flap of skin called the epiglottis drops over the top of the windpipe. This stops food getting

into our lungs.

The bolus is squeezed past the epiglottis into our gullet or oesophagus.

• Digestion in the stomach and intestine

From the gullet food passes to the stomach. Stomach muscles squeezed and relax mixing the

food with gastric juice and acid made in the stomach wall. Gastric juice contains protease

enzymes to digest protein. The acid kills germs in food and helps the enzyme work.

From the stomach, the food passes a little at a time into the small intestine.

In the small intestine 3 liquids are mixed with the food.

1. Pancreatic juice from the pancreas contains protease to continue protein digestion,

amylase to digest starch and lipase to digest fat and oil.

2. Bile from the liver breaks up oil droplets into an emulsion to make them easier to digest.

It also neutralizes stomach acid to get food ready for pancreatic and intestinal enzymes.

3. Intestinal juice from the lining of the intestine contains more protease, amylase and lipase

which complete digestion. These turn protein into amino acids, carbohydrates into

glucose and fat and oil into fatty acids and glycerol.

Digested food is absorbed into the blood through the wall of the small intestine.

Undigested food passes into the colon where water is absorbed from it. It becomes a nearly solid

waste called faeces.

Faeces are stored in the rectum.

Definition: The process by which large food molecules are broken down into soluble and diffusible

molecules that can be absorbed into the body cells.

Digestion comprises the following:

a) Ingestion: The intake of food into the body.

b) Digestion: The process by which large food molecules are broken down into small molecules by the

digestive enzymes produced by the wall of the gut. There are two types of digestion:

i) Physical digestion: The teeth are breaking down the food into small pieces.

ii) Chemical digestion: It refers to the breakdown of food in the mouth, stomach and intestines

through the use of acids and enzymes.

c) Absorption: Liquid food passes through the gut wall into the bloodstream. This is called absorption.

Blood carries the food to all parts of the body.

d) Assimilation: Food is taken in by cells and used for energy, growth and repair. This is called

assimilation.

e) Defecation: Dietary fiber and other things in food which cannot be digested pass out through the

anus. This is called defecation.

Substances which cannot be digested are called feces.

Digestive enzymes: The gut walls produce chemicals called digestive enzymes. They change the food

molecules that we eat by breaking down the food molecules into smaller ones which can be absorbed

into the blood.

The breaking down of carbohydrate:

1. Starch in rice, bread and potatoes are made up of many glucose molecules joined together.

2. Carbohydrase enzymes break down the starch by cutting it up into separate glucose

molecules.

3. Glucose molecules are so small that they can pass through the cells which form the gut wall

and then through the blood vessel walls into the bloodstream.

4. Blood carries the glucose to the cell of the body for assimilation.
