Get Started

Rice / Carbohydrate source

Water

Container

Mesh / Cloth

Milk

Molasses / Raw sugar

You'll need :-

Rice Wash

Wash / Cook the rice

Collect the water

Cover neck with mesh / cloth

Leave in the open 3-5 days
(Should smell pleasantly sour)

Rice Wash / Milk

Drain the middle layer of therice wash with a siphon

Add milk at 10:1
(10L milk : 1L drained liquid)

Use loose fitting lid -
Keeps anaerobic & avoids bursting

Prep your LAB

Strain LAB whey (liquid) from curds (solids)

Should smell pleasantly sour
- Discard if foul....

Compost curds

Store your LAB

Mix your LAB whey with your sugar source 1:1

Bottle up your finished LAB
- Release pressure regularly
- Or use an airlock

Once naturalised it can
be left alone
