Our features editor and myself were invited by Wet 'n' Wild to explore their park and see the newly opened Junior Park. Our fearless writer Emma even braved the Tornado to give you guys a real review of the best rides.

DeliciousTURKEY BURGERS

Swap your holiday roast for this tasty turkey burger, perfect for a summer backyard BBQ with family & friends.

SERVES: APPROX. 12 BURGERSPREPARATION: 15 minutes COOKING TIME: 15 minutes

Directions:1. In a large bowl, combine the minced turkey, seasoned bread crumbs, onion, egg whites, parsley, garlic, salt and pepper. Form into 12 equal sized patties.

2. Cook the patties in a medium skillet or BBQ over medium heat,

turning once or twice until cooked.

Your choice of salad eg. spanish onion, tomato, sliced chilli, lettuce, parsley, cucumber, cheese etc.

Ingredients:

1.4 kg turkey mince

1/4 cup bread crumbs

1/4 cup finely diced onion

2 egg whites, lightly beaten

1/4 cup chopped fresh parsley

1 clove garlic, peeled and minced

Sensational Side Dishes

Ingredients:

• 4 pieces of fresh Sweet Corn

• 2 tbsp plain Greek Yogurt

• 2 tbsp sour cream

• 3/4 cup parmesan cheese

• 1 tsp chilli powder

• Dash of salt and pepper

• 1/4 cup fresh parsley, chopped

• 1 lime, cut into wedges

• Olive Oil or Olive Oil Spray

Directions:In a small bowl, mix together Greek yogurt and sour cream. Set aside.

In another small bowl, mix together chilli powder, salt and pepper. Set aside. Spray or brush each piece of corn lightly with olive oil.

Grill for approximately 10 minutes, turning often to avoid burning. The corn should brown in places and be cooked through.

Take corn off of grill and brush with Greek yogurt mixture. Sprinkle with spice mixture, cheese, and parsley.Squeeze lime wedges over each piece of corn. Enjoy!

WatermelonFeta & mint salad

Ingredients:

• 7 cups of cubed watermelon, cubed, chilled and well drained

• Juice of 1 lime

• 1/3 cup fresh mint, chopped

• 3/4 cup feta, cubed

• Freshly ground black pepper

• Pinch of salt

Directions: In a large bowl, combine watermelon and lime juice.

Gently fold in the feta, sprinkle with mint and season to taste with freshly ground black pepper & salt.

Mexican grilled corn

Ingredients:

• Fresh pineapple - half

• 1/4 cup onion finely chopped

• 1/4 cup coriander leaves finely chopped

• 1 Jalapeño chilli, finely chopped

• 1 tbsp lime juice

• Pinch of salt

• 1/4 tsp olive oil

Directions: Cut the pineapple into 1/4 inch thick slices. Heat a grill or pan and drizzle with olive oil.

Grill the pineapple slices on each side on medium-high heat for 3 to 4 minutes or until tender with light char-grilled marks.

Allow the slices to cool. Cut them into medium cubes.

In a bowl, add grilled pineapple cubes, onion, coriander leaves, red chilli and combine. Add lime juice and salt. Toss well.

Serve immediately or cover and chill until ready to serve.

4 tablespoons lime juice

300 ml thickened cream

1 large mango

14 butternut snap cookies, broken (2/3 of a 250g pkt)

1/2 pineapple

2 passionfruit pulp, reserved

Ingredients for cookies 1/3 cup butter, softened

1/2 cup packed brown sugar

1 egg

1/3 cup molasses

2 cups all-purpose flour

1 tsp ground ginger

3/4 tsp baking soda

3/4 tsp ground cinnamon

1/2 tsp ground cloves

1/4 tsp salt

Gingerbread Ice Cream Sandwiches

Directions1. In a blender, combine ice cream and cinnamon. Transfer to a freezer container; freeze for at least 2 hours.

2. Meanwhile, in a large bowl, cream butter and brown sugar until light and fluffy. Add egg, then molasses.

3. Combine flour, ginger, baking soda, cinnamon, cloves and salt; gradually add to creamed mixture and mix well. Cover and refrigerate 2 hours or until easy to handle.

4. Preheat oven to 350 c. On a lightly floured surface, roll dough to 1/8 inch thickness. Cut with a floured gingerbread-shaped cookie cutter. Place 1 inch apart on ungreased baking sheets. Bake 8-10 minutes or until edges are firm. Remove to wire racks to cool.

5. To make ice cream sandwiches, spread 1/4 cup softened ice cream over the bottom of half of the cookies; top with remaining cookies. Wrap each in plastic wrap; freeze on a baking sheet at least 1 hour.

Ingredients for ice-cream3 cups vanilla ice cream

3/4 tsp ground cinnamon

TROPICAL ‘NO BAKE’ CHEESECAKE 1. Lightly grease a 22cm round tin and line base with non-stick baking paper.

2. Place biscuits into a food processor and process until finely chopped. Add butter and process until combined. Use back of a spoon to press the biscuit mixture over the base of the prepared tin. Refrigerate the base while you make the filling.

3. Pour cold water into a small bowl. Sprinkle the gelatine over. When gelatine has softened, stand the bowl in a pan of hot water and whisk with a fork until dissolved. Cool.

4. Using electric beaters, beat the cream cheese, sugar, lime juice and rind until smooth. Add cream and the gelatine mixture and beat briefly to combine. Pour over the biscuit base. Cover and refrigerate for about 4 hrs until firm.

5. Remove cheesecake from round pan and place on serving platter. Arrange fruit on top, drizzle with passionfruit pulp.

First off, the area should be completely void of grass, flowers, bushes, roots, or trees. Build your garden bed upside down and on a flat, hard surface.

1. Set a piece of 120cm pine on its thin edge on the ground. Place a square 31cm tall post at one end. Secure square post with 2 x screws. Repeat at other end of wood. Repeat with second 120cm piece of wood.

2. Join your other two 120cm pieces of wood to these and secure with 2 x screws. Now you have a box.

3. Add another layer of 120cm pieces of wood and use 2 x screws to secure them to the square posts already attached to the bottom square.

OPTIONAL: You can line the bottom of the box with black plastic or leave it. If you choose to line your box use a heavy duty staple gun or nails to secure it.

4. Fill your garden bed with a combination of garden soil, compost and fertiliser. Plant your seeds or plants and you are finished.

Our first stop once inside the park was to check out the new Junior Zone! It looked like so much fun! There were heaps of families around enjoying the watery fun, with plenty to keep all those little adventurers busy!

The next ride we were keen to go on was Calypso Bay - this was fantastic! I couldn’t think of a better way to spend your time....relaxing while winding your way down the tranquil course!

Happy Birthday Wet’n’Wild! The water park celebrates its 30th year and marks the occasion by opening the new Wet ‘n’ Wild Junior park. A kid-friendly zone that will keep the little ones entertained for hours! Perfect for the younger adventure seekers with scaled down versions of some of the most popular larger rides throughout the park. Miniature versions include rides older thrill seekers may recognise like the Tornado and the Aqua Racers.

A major draw-card that was very popular on our visit was the multilevel interactive play structure. With lots to do that will keep your kids entertained plus the peace of mind knowing that lifeguards patrol the area. With slides, water fountains and a giant tipping bucket as well as the ever popular wading pool, this area is equipped with everything that the kids could ever dream of in a water park. Parents and grandparents can even join in the fun on selected rides if given permission by their children.

Now this is what I call a thrill ride! Highly recommended for those who are seeking an adrenaline rush! For those who are a little less adventurous, why not go and watch your friends and family’s faces as they hurtle out of the tunnel.......priceless!

This would have to be one of the most popular attractions here at the park, who wouldn’t want to experience all the fun of the beach including the waves! Great fun for the whole family!

Summer safety tips

Not all pets love water, but it's worth a try to see if yours does! Kid pools are cheap and can be filled and kept in the shade. No place for a pool? Throw down a wet towel in the shade so your pet can rest on to cool off.

Even though you might not feel like it, your dog still needs exercise in the heat of the summer. Try to walk or run your pooch in the early morning or late afternoon when it's cooled down a bit and overheating is less of a threat. Swimming is a great form of exercise for dogs. If you can get to a dog friendly beach or pool it will not only tire them out but keep you both cool.

FROZEN FRU IT CUBES

These are super fast and simple treats your pets are sure to enjoy. Use ice-cube trays for small dogs & cats. For the larger dogs who require a bit more of a challenge try ice-cream containers.

YOU CAN ADD• blueberries• strawberries• watermelon• carrot pieces• banana slices• peanut butter• cooked chicken piecesFill trays with water, chicken stock mixture or plain yoghurt. Place in freezer until frozen solid.

INGREDIENTS:- 1-2 tbsp of sugar syrup - Handful of mint leaves + extra to garnish- 30ml white rum- 1 tsp of lime juice- Sparkling or soda water- Ice cubes

WATERMELON MOJITO

EMMA’S TOP TIPS: You can use any type of fruit you like! Why not try preparing your drink in a blender or mixer? This will crush the ice making your drink a deliciously cool summer treat!

METHOD:Mix together the rum and pomegranate juice in a glass.

Then add lime juice, the pomegranate seeds, lime wedges (optional) and mint leaves.

Top with ginger ale and a few ice cubes and you are ready to go!

METHOD:Place the strawberries, apple and sugar in a glass. Let sit a few minutes for the sugar to absorb some of the fruit juices.

Add the basil to taste and equal parts of Chardonnay and sparkling water or soda water along with some ice cubes.

Stir through and enjoy this refreshing drink!

KIWI-FRUIT MOJITOSTRAWBERRY MOJITO

EMMA’S TOP TIPS: Fancy these cocktails but not the alcohol? Simply take out the white rum or Chardonnay in these cocktails to make some yummy MOCKTAILS!

METHOD:Place your choice of fruit in a glass and add mint to taste. Add lime juice. Using the back of a spoon, gently mash ingredients together. Add 1-2 tablespoons of sugar syrup and the white rum. Add the ice cubes and fill the glass with the sparkling water or soda water. Garnish with more mint leaves and a slice of lime. Enjoy!
