Welcome sunshine! What a great time of year it is when we all can enjoy the outdoors so much. Summer is in full swing and the increased daylight always leads to increased activity here at Pilgrims. Sometimes I feel like I am burning

the candle at both ends with all this extra daylight but I just can’t stop! Neither can our team here at Pilgrims thankfully. Please check out some of our exciting updates below.

GARDEN: Our Market Garden is off to a roaring start. Tomatoes, peppers and cucumbers are reaching for the ceiling and our plots in the open air are producing abundantly. See Sydney’s article on the next page for more updates on the garden.

REGISTER LINES: Check-out lines are soon to be improved! We are installing new check out counters and will be adding a fourth register to speed things up. Thank you for your patience.

PARKING: You longtime customers remember how horrible our front parking lot used to be. Well, our back lot for staff has been just as bad for many years but we are finally getting that replaced too. Let’s hope this leads to even more smiles from team members!

DELI: Our deli has increased the variety of grab-n-go items significantly which has included the addition of my personal favorite – Angel Eggs! Always keep an eye out for changing grill and juice specials.

BIG REMODEL: Store remodel plans are in full swing. Within a year expect to see massive improvements in the deli and meat departments and great relocations for beer and wine, bakery and health and beauty.

RECEIPT PAPER: For a few months now our receipt paper has been phenol free! (No BPA or BPS) “See ya later chemicals!” says our cashier team.

KETO-FRIENDLY FOODS! Our bakery team has been working on some new keto-friendly items including delicious ice creams! Keep an eye out for the Keto-Friendly shelf talker icon displayed in the “We’re listening” section in the column to the right of this article.

FERMENTED FOODS: Cultured Mama has a new cookbook coming out so be on the look out for that. Uses for the Cultured Mama items are only limited by your imagination, so we prepared a few creative ways to use the products to get your culinary creative juices a-flowin!

FULL SHELVES: We will be switching distributors for many of our popular items. There will be some transition pains that may include increased out of stocks for a short time. Thank you for your patience in advance and please know that we believe that it will help bring you a wider variety of awesome organic products in the long term.

PLASTIC BAGS: Seeing a plastic bag fly across the freeway on my way to work this morning I finally made the decision to remove plastic bags from our store. Some of you will be disappointed but there is a real movement across the country away from plastic bags and the thought of a world without bags flying around our beautiful natural landscape is really appealing. When our current bag inventory runs out we will selling paper and re-usable bags only. Paper bags will be 10 cents and re-usable bags will be 50 cents. Our current price for re-usable bags is $1.50 so that represents a dramatic reduction in price. Anytime you bring in your own re-usable bag you will receive 10 cents to go towards a charity of your choice as always OR you can apply the 10 cents towards your purchase so it will only take 5 trips to pay off the cost of the bag.

Supporting local is a core part of who we are here at Pilgrim’s Market. We pride ourselves on carrying the mom & pop goods most other stores wouldn’t take a chance on. Grand-mothers in the community bringing us their knitted items, high school students provide us with eggs, foragers bring us mushrooms and vegan innovators supply us with raw-veg-an-organic chocolate. The number of local items we carry indicates how important it us to us in supporting our community. The enthusiasm we have for carrying local

products is mirrored with our passion to be a local supplier of fresh, wholesome local goods. We’ve been cooking, baking, and fermenting our own products for years, as most of you know, and recently began growing our own food; some-thing we couldn’t be more excited about.Like many great things, our Market Garden started out as a dream and over time has flourished into something only our wildest dreams could’ve imagined. When we started the garden, we imagined growing a small variety of organic produce to use here in our deli, hoping if we harvested enough, we’d have a little extra to sell in the produce department. We gained momentum and community support rapidly and had a fruitful first year of harvest last year, providing cucumbers, tomatoes, basil, arugula, spinach, salad mix, kale, radish-es, beets, carrots and peppers to the community. You ready for this? All that organic produce just mentioned... we’re doubling this year. You heard us. DOUBLING. “How?”, you’re asking. Over the winter, we designed a layout that allows us to utilize more of our land, taking us from three (3) 50 foot garden beds to twenty (20) 50 foot beds and twelve (12) 35 foot beds. Not only has the space expanded, but our crops have diversified. This year we’re on track for growing and harvesting four varieties of tomatoes, 10 different peppers, four kinds of cucumbers, ginger, zucchini, patty pan squash, radishes, arugula, spinach, lettuce, melons, stinging nettle, edible flowers, tons of culinary herbs, as well as getting a start on our blackberries, raspberries, strawberries, and goji berries. Jeremiah, our garden manager, cares for and protects our garden in the most natural way. Turns out, making your own fertilizer with aerated compost tea made from worm castings is basically a fancy multi vitamin for your crops. He also uses a flame-weeder to control the weeds over herbicides. In other words, he lights those weeds on fire. He releases beneficial insects to control the bad bugs instead of using pesticides. Genius! We will be applying for our Certified Organic Farm status next year.

SPIRALIZED BUTTERNUT chicken

Pilgrim’s Market Kraut-Slaw

Easy Avocado/Guacamole Toast

· 1/4 cup Goji berries· 1 cup hot water· 1 pound mixed greens· 1/4 pound of sunflower sprouts or any variety of sprouts· 6 mild radishes· a few pinches of fresh garden herbs (thyme, tarragon or basil)· Cultured Mama Probiotic Ginger Dressing (to taste)· Edible flowers (Violets, calendula, dandelion)

· 2 pieces of Pilgrim's Whole Wheat Toaster Loaf· Pilgrim's Guacamole· 1 poached or fried organic egg· Sea salt· Pepper· Frontier Co-op Chipotle Smoked Red Jalapenos spice (optional for a little HOT-sold at Pilgrim's)

· 2 jars Cultured Mama sauerkraut, rinsed and drained· 2 cups chopped organic celery· 1 cup chopped organic onion · 2 ounces diced pimientos, drained· 1 medium green pepper, chopped· 1/2 cup julienned organic carrot

-Place Goji berries in a small glass bowl and pour boiling water over them. Steep for 30 min-utes or until berries are plump. Strain berries for salad and reserve soaked water for a lovely cup of iced tea.-Chop sprouts, radishes and garden herbs and mix together with the salad greens and edible flowers.-add Ginger dressing to taste.

Toast 2 pieces of bread. Spread each with a thick layer of guacamole. Add a fried or poached egg. Sprinkle with salt & pepper. Add Chipotle to taste.

1. Preheat oven to 375. Prepare Pilgrims chicken in foiled baking dish. Drizzle a little olive oil over the tops of the chicken and season with salt, pepper, and red pepper flakes. Bake for 20-25 minutes (plus/minus depending on size of chicken breasts) until tender and juicy. Dice into roughly 1 in cubes and set aside.

In a bowl, combine the sauerkraut, celery, onion, pimientos, green pepper and carrot. In another bowl, combine the sugar and vinegar until sugar is dissolved. Pour over vegetable mixture. Cover and refrigerate for 8 hours or overnight.

· 3–4 Pilgrims boneless,skinless chicken breasts, baked and cubed· 1 container spiralized butternut squash· 4 Tbsp Extra Virgin Olive Oil· 1/2 Tbsp butter· 1 yellow onion, sliced (from root to stem)· 2 cups sliced white mushrooms· 2 cloves garlic, minced· a few dashes of salt· 3–4 basil leaves, roughly chopped· Peppery Cream Sauce:· 1/3 c Pilgrims Cultured Momma fermented cashew cream cheese· 1/2 c milk· 2 tsp parmesan + a little extra for topping· 1 heaping tsp pepper

· 1-1/2 cups sugar (may be substituted with Pilgrim’s Market Erythritol)· 1/3 cup Apple cider vinegar

2. Heat up 2 Tbsp olive oil in saute pan. As soon as oil becomes hot, add in sliced onion and reduce heat to medium-low. Stir occasionally (about every 6-8 minutes) until onions have caramelized. This can take about 40-45 minutes.Check on your onions, and give them a little stir to make sure they are evenly caramelizing.3. In a separate small sauce pan over low-medium heat, add Pilgrims fermented cashew cream cheese, milk, pepper, and Parmesan. Stir occasionaly, and turn heat down once it has become a thicker consis-tency. You may need to add a little milk if it becomes too thick.4. Heat up another 2 Tbsp Olive oil in large saute pan and reduce heat to medium-low. Add in sliced mushrooms, and saute for about 4 minutes. Toss in minced garlic and sauté for 45 seconds. Mmmm.. smells delicious!5. Now add Pilgrims spiralized butternut squash into pan with mushrooms. Stir to combine and saute over medium heat for about 9-10 minutes, until squash has softened.6. Add the diced chicken, caramelized onions, and cream sauce to saute pan with squash. Toss mixture together well and remove from heat.7. Top with fresh basil & Parmesan and serve

Where were you born and raised?Born in Illinois but moved when I was three to California, then to Massachu-setts , then to Maryland, then Florida, then back to Illinois , then Rhode Island for school and finally here after school . Soooo short answer I didn’t really grow up in just one place.

What drew you to working at Pilgrim’s Market?I wanted to come to Pilgrims because I could learn here. I loved the energy of the store and it allowed me to use my Associates in Culinary Arts and Bache-lors in Food Service Management.

What do you do for fun outside of work?In recent years I have filled my summers with Ironman 70.3s and Kayaking and in the winter I spend my days off in the mountains on my snowboard.

What is your position here at Pilgrims?I do all the administrative work for the bakery and deli, and some for the Cultured Mama department. I order everything the bakery and deli needs and track the spending labor planning and scheduling. Every so often I get to be hands on and you can find me baking or making things in the deli.

Any fun facts about yourself?I love to knit!
