In the beginning, you’d never have guessed that Harry Waugh would become one of this cen- tury’s most important people in the world of wine. Born the third son of a widow in 1904, he was forced to leave school at the early age of 16 due to lack of money. After working odd jobs during the twenties and early thirties, Harry Waugh became a sales clerk for the prestigious London wine merchant, Block Grey and Block, in 1934. “You can taste, and you can smell,” the chairman told him; then he put Waugh in charge of the cigar line. After serving in the Welsh Guards for six years in World War II, Waugh went to work for Harvey’s of Bristol. Within a short time he was buying all the Bordeaux and Burgundy for the firm, and in 1960, he became Export Director. When he retired from Harvey’s in 1968, he collected his experiences into a book, Bacchus on the Wing, which proved so successful it was followed by others that soon became classics in the wine-trade: The Changing Face of Wine (1968), Pick of the Bunch (1970), Winetaster’s Choice (1973), as well as ten volumes of Wine Diaries (1972-1987). He was a wine buyer for perhaps the most fa-mous club in the world, the St. James club of London, as well as the QE II, Jackson’s of Piccadilly, etc. Waugh was also a consultant to the Queen, Christie’s, and many fine restau-rants and hotels. He was also a Director for the famed Chateau Latour and recognizing the potential of California wines, he was also presi-dent of the Zinfandel Club of London.

Harry Waugh lived in London with his wife Prue and twins Jamie and Harriet for many years. He traveled the world, writing and lec-turing about his favorite subject and winning countless awards until he died at age 97. Both his children continue in the business; Harriet writes about wine for Decanter Magazine and son Jamie works for United Distilleries & Vint-ners, a leading distributor of wines, whiskies and white spirits in Great Britain.

In 1977, Bern Laxer had the great fortune to be invited by Harry Waugh and his wife to their home in London for dinner.

Harry’s wife, Prue, prepared a most delicious appetizer, and then followed this with a splendid main course. Both were accompanied by fine wines including a superb 1964 Chateau Latour (Harry was a

director of Chateau Latour).

Then, surprisingly, instead of remaining in the dining room to complete their dinner, Bern was invited to their “drawing room.”

There, they savored a superb “sweet”…fine old Vintage Port…Stilton cheese…old bonded vintage Cognac…coffee…cigars…and the

warmest, most relaxed conversation possible.

Bern loved the idea of the new atmosphere for after-dinner refreshment and the chance for quieter conversation.

“Why not,” he asked himself, “create a subdued environmentupstairs for our diners in Tampa?” He felt he could offer a more

relaxed atmosphere not only for coffee, but for desserts, fresh fruit, great cheeses, aged Cognacs, Armagnacs, liqueurs, sipping whiskies,

and dessert wines from around the world.

Years of thought later – in the fall of 1985 – he began.

The capability of offering a large selection of Champagnes and still dessert wines by the glass was Bern’s insistence .

they are most often enjoyed by-the-glass as 3 oz. pours. However, our dessert wines are offered in 1.5 or 2 oz.

‘sampling pours’ so that, if desired, you may enjoy your own private wine tasting or perhaps try a rare

port or Madeira. Of course, if you would like a 3 oz.pour of any wine, simply tell your server.

The green coffee beans that we roast daily are among the finest in the world. They are carefully inspected,

almost bean by bean, to remove any imperfect beans. ‘Each bean’ is then roasted separately, seven nights a week at opening time, for maximum coffee freshness, and brewed as needed with a minimum of water for

maximum flavor and body.If you use cream, heavy whipping cream is served.

Scion Tawny PortMade from grapes that were harvested in 1855, pre-phylloxera, Taylor-Fladgate’s Scion was aged in wood for over 150 years.

Unlike most tawny’s, which are a blend of different vintages, this one is from a single vintage. Scion Taylor-Fladgate has a nutty, toffee like

sweetness and a bright acidity reminiscent of an older Madeira with an array of spices and floral notes.

Auslese(OUSE-lay-zeh) comes from selected picked grapes that are allowed to stay on the vine longer to obtain more sugar. The

resulting wine is a little sweet to the taste.

Eiswein(Ice-wine) The grapes again are left to shrivel on the

vines. They must reach the same level of sugar concentration as Beerenauslese. They cannot be picked

until after the temperature reaches 20 degrees. The grapes are pressed while frozen, resulting in a very sweet wine as most of the liquid is discarded as ice.

When our Declaration of Independence was signed in 1776 the document was toasted not with Bordeaux or

Burgundy, but with Madeira.

Madeira was the beverage of choice of many of the world’s connoisseurs during the 18th and 19th

centuries but diseases and pests devastated the island in the late 19th century almost ending the production

of fine Madeira. If you wanted to taste the best 150- or 200-year-old table wine (perhaps an 1832 Lafite

Rothschild, for example), you would pay from $5,000 to $40,000 for the bottle and once you opened the bottle, you would have to drink it quickly before it

faded away.

On the other hand, you can enjoy a sip from a bottle of fine after-dinner Madeira a day for a year and the

wine will be just as tasty the last sip as the first — and you would probably find more flavor in the Madeira.Unlike table wines, the older ‘sipping wines’ like Ma-

deiras get, the richer they become.

MuscatAmong the least known dessert wines of the world are the Muscatel de Setubals (pronounced se TOO bal) of Portugal. Grown and made in sandy soils fit almost only forcactus, these wines improve with age for a

hundred years and more, becoming dark red, mellow, and elegant. They seem to lead dual lives. When young, they have strong acidity and medium fruit, and make

nice table wines. But because they are high in alcohol, they take a long time to age, and become

sweeter, fruitier, and fuller as they get older. The best (and oldest) are indeed very good.

has already been opened and had time to breath (softened, matured, smoothed out). If you purchase a bottle of Vintage Port, the younger vintages need time to breath. Either pour a larger quantity in each glass

and swirl the glass between sips, or have us decant the bottle first, and then pour and swirl. The older vintage

ports will probably be ready to enjoy. Late Bottled Vintage (LBV), Tawny, or Reserve need not be aired — they are ready to enjoy when opened. They are dryer, or less sweet and have a light Cognac character from their longer aging in wood. The best (and oldest) are remarkable experiences — they can be magnificent!

White PortWhite Ports are made from white grapes only. Can

either be dry or slightly sweet.
