Message from the General Manager

Over the next few months you may notice aflurry of building activity occurring on theupper levels of the Resort tower as we beginthe exciting transformation of the iconic andaward winning RPR’s Restaurant, thedevelopment of a new Executive MembersLounge and the addition of superb newaccommodation suites and rooms on Level 22.For our regular RPR’s diners, we haverelocated RPR’s to a more intimate area onLevel 2 in the Resort and we will continue todeliver the excellence in food and friendlyservice we have come to expect from RPR’s. Inthe next edition of Happenings, we will whetyour appetite by showcasing images of thesewonderful new developments.

On the subject of news and without braggingtoo much, I wish to mention that at the 2010Gold Coast Restaurant & Catering awards,Arakawa Japanese Restaurant was therecipient of two awards - winner for overall“Restaurant of the Year” and “Best AsianRestaurant” and furthermore, KalindaRestaurant was named “Best FamilyRestaurant”. The Royal Pines food andbeverage and kitchen teams were absolutelythrilled of the achievements and I would like tothank all of our guests for your fantasticsupport in making us number one.

We’re gearing up for an enjoyable season atthe Resort and present a jammed-packedevents and activities calendar for yourexcitement. Our inaugural outdoor liveconcert, John Farnham, is sparking a lot ofinterest with ticket sales and accommodationbookings proving very popular and we’rethrilled that an event of this calibre is takingplace here at the Resort.

Coinciding with the longer days and warmerweather, a plethora of indoor and outdooractivities await you. For starters, you cansaddle-up for glorious fashion, live paradesand fine food on Melbourne Cup Day in Amicior to help you stay in shape for the beach,come in and try one of the many healthy andtantalising new salads in Tees’.

In keeping with the Resort family feel, join meat our first Fishing @ Royal Pines event thatwill be held at one of our private Resort lakes.This is purely a ‘catch & release’ fun day sothat the kids can enjoy releasing their fish toswim for another day! ANZ RACV Ladies Masters 2011 Dates

The dates for the 2011 ANZ RACV LadiesMasters have now been released and thiswell known international event will take placefrom Thursday 10 February to Sunday 13February, 2011 at RACV Royal Pines Resort.

This event returns to the Resort for the 20thconsecutive year and will again attract topwomen golfers from across the world. Lastyear saw Aussie favourite Karrie Webb takehome the championship trophy for the 7thtime and the Resort looks forward towelcoming golf fans back to the 2011 event.

Auto Club Members – Who Qualifies?

Community One Fundraising

RACV Royal Pines Resort’s fundraisingcommittee, Community One, has been verybusy over the past months organising andsupporting Jeans for Genes Day and Daffodil Day.

Staff at the Resort joined in Jeans forGenes Day on Friday 6 August, 2010supporting the Children's Medical ResearchInstitute. Staff came to work dressed intheir very best denim and were required tomake a gold coin donation. Over $100 wasraised on the day for this great cause.

Also during August the Resort supportedthe Daffodil Day cause by sellingmerchandise throughout its Food &Beverage outlets.

Italian Cooking Classes

In light of the popular TV series Master Chef,Royal Pines Resort hosted Italian CookingClasses in August which sold out in recordtime. The Resort hosted over 20 guests whowere educated on the diverse range ofproducts, oils and wines used in Italiancooking.

The cooking classes were held in our newestrestaurant Trattoria Amici and guests joinedin the cooking process by making their ownpizzas as well as watching a detaileddemonstration on how to cook mouth-watering lamb shanks. Guests were alsoeducated on Italian wines and treated to tastings.

Everyone in attendance including our chefshad a great time. The Resort looks forward to hosting more cooking classes in the futureso stay tuned to upcoming editions of Resort Happenings and our website,www.racv.com.au/resorts

Penne con Pollo e Funghi selvatici con crema di Aglio– Chicken and wild mushrooms tossed in garlic cream sauce

Ian Havelberg, Trattoria Amici Pan Chef has a passion for Italian food. Indulge with one of Ian’s favourite recipes.

Ingredients:• 240gm Penne – cooked in salted water

with a bit of a bite remaining since it will be tossed and heated through again

• 40gm butter• 70gm chicken thigh strips, no fat, no skin,

season with salt and pepper• 20gm fine diced brown onion or brown

shallots (not spring onions)• 5gm garlic, crushed• 30gm wild mushrooms, shiitake, swiss

brown, enoki, or button mushrooms cut to preferred size (type of mushroom is optional)

• 30ml white wine• 2gm herbs (fresh thyme, parsley or oregano)• 120ml fresh cream • Grated parmesan • Shaved parmesan for garnish• Fresh basil leaves or sprig of fresh

thyme for garnish• Sea salt and freshly ground pepper to taste

Method:• Have pre cooked Pasta ready and drained.• Melt 20gms of butter in a pan on

medium heat; • Add the chicken strips and toss.

Remove from pan and place on a plate• Add remaining 20gms of butter, diced

onion and garlic and sauté for 1 minute.• Add the mushrooms and toss, season

and add the wine and herbs. Simmer until the wine has evaporated.

• Pour in the cream and simmer to reduce the cream until it starts to thicken.

• Add the chicken strips and Penne and toss to heat though

• Add the grated Parmesan, this will thicken the dish

• Arrange on a deep warm soup plate or pasta dish, sprinkle with shaved Parmesan and garnish to your liking
