There is no better place to explore the lovely Dart estuary than from Fingals Hotel.

Set in a secluded valley just back from Dittisham Creek it is an oasis in itself although guests rarelymiss the opportunity of venturing out onto the banks of the Dart. From Fingals guests enjoy agentle stroll into the beautiful, riverside village of Dittisham, originally a home to fishermen withtheir tiny, colourful cottages lining the Quay, this is still a thriving village with The Ferry Boat Inn andThe Anchor Stone Café overlooking the water and serving excellent local ales and food. Ringing abig brass bell at the end of the pontoon summons a ferry to take them over to Greenway andAgatha Christie’s summer home now owned by the NationalTrust and well worth a visit. From herethey can turn south and enjoy stunning vistas of the estuary opening up while walking down toKingswear – another beautiful National Trust property, Coleton Fishacre, built by the D’Oyly Cartefamily now beautifully restored and re-furnished is not far away. A short ferry ride to Dartmouthon the opposite bank presents a superb view of this historic town, and the hike back up the westernside past the magnificent Britania Royal Naval College completes a part of the beautiful DartValleyTrail. However, if energy levels are flagging the Dartmouth-Dittisham Ferry is a glorious alternativefor the final leg.

If ferry rides seem too tame there are sailing boats, dinghies, canoes, paddle boards or launches tohire. Sometimes guests can borrow the Fingals rowing boat or go in their launch (or even helppaddle a 12 seater canoe) in order to visit welcoming hostelries at Tuckenhay or Totnes (takingnote not to get caught on a mud bank on a falling tide!).Sharpham Vineyard and Café is another favourite as thisinvolves tasting wines and cheeses produced right hereon the luxuriant banks of the River Dart.

Fingals is surrounded by all this beauty and offers ahaven from the modern, chaotic world.

Ask the Chef

Name of Head Chef: Scott Paton

When did you decide to become a chef andwhere did you train?My first experience of cooking was when I was 5, we had aFrench breakfast day in school where we made baguettesand hot chocolate. I have always loved cooking and as a kid Ioften made my family smile with my “strange concoctions”.

I trained at The Jack in the Green, initially washing dishes.It was my first job in the industry and I soon got stuck in. Iworked with Mat Mason and Paul Parnell for 9 years, so theyhave obviously had a massive influence on my career.

I was initially inspired to be a Chef by the adrenaline of abusy service, by the creativity and the buzz. I guess that’s stillthe case today, but it’s the combination of creativity anddiscipline which drives me. That, and the fact that you’realways learning, you never stand still. The thing I like least ishaving a quiet restaurant. I hate being bored!

Have you won any awards?I’ve won some great accolades that I’m really proud of. In2008 I won ‘dessert of the year’ from the Association ofPastry Chefs, and in 2009 I won South West Chef of theYearin the young professional class.

What style of food can guest expect at TheHorn of Plenty?I wouldn’t say my food has a specific style, it’s not British, notFrench. My food is simply the food of Scott Paton at TheHorn of Plenty. My food and my menus have been designedaround the region, the location and the clientele.

Do you have a Signature Dish?I wouldn’t say I had a signature dish as such either. My foodis always changing and moving with the times. I don’t want tobe cooking the same things now as in 5 years time. Right nowsome of my favourite dishes include Roasted venison withchicory jam, and milk chocolate mousse with banana &passion fruit parfait.

Who has influenced or inspired you?There have been a couple of chefs who have really influencedme. Pierre Herme is a fabulous pastry chef who I wasfortunate enough to work with for a couple of days. He’sknown as the Picasso of Pastry, he’s the guy who broughtpastry bang up to date.

I’ve also been hugely impressed by Tom Kerridge at TheHand and Flowers in Marlow. For me, he’s re-written the finedining rule book. He’s just been awarded 2 Michelin stars, but

there’s no white linen in the restaurant, no smartly uniformedstaff, just quirkly little pub with wonky tables and a fantasticatmosphere, but he’s managed to capture the essence of hispub in his food.

I think creativity is hugely important, but I’m never creativewhen I’m busy. I find I have my best ideas when I’m relaxing,often when I’m asleep. I often dream about what food shouldlook like, then match flavours to suit.That’s kind of against therule – most Chefs start out with the flavours, then focus onmaking the dish look good. Having said that, here atThe Hornwe’re not about whacky food or clever food. We’re abouttaking the traditional and bringing it bang up to date with atouch of “wow”!

We hear you have your own kitchen garden,how is that going?We have big plans for our kitchen garden. We’ve seen ourfirst butternut squashes this year and we’re just starting toredevelop the garden more seriously. Next year, we’ll haveour own beetroot, carrots, courgettes, onions, Jerusalemartichokes, asparagus, peas, beans, salad leaves and berries.We’re not going to be self sufficient, but it’s the start of anexciting journey.

What has been the highlight of your career sofar and what are the plans going forward?The highlight of my career so far has to be taking the reinshere at The Horn. Damien and Julie have presented me witha fantastic opportunity. I want The Horn to be back up therewith the big boys in the South West.The Horn has such a richfood history which goes back over 40 years.

Over the next 5 years, we want to see The Horn regainthe Michelin Star it deserves. We also want to become oneof the Top 100 Restaurants in the UK, with a reputation foreverything from canapés to mains to afternoon teas: we wantto get everything as close to perfection as we can.

The long term ambition is to achieve what Michael Caineshas done at Gidleigh – taken a superb reputation, and drivenit on to a whole new level. But we’ll do that in a way that’strue to The Horn: outstanding food served in a relaxed,informal environment, with a focus on warm, friendly,attentive service and wonderful views.

The South Hams of Devon has so much to offer : with Dartmoor to the North - very much in the pressrecently thanks to Steven Speilberg’s film War Horse, and with the beaches and pretty coastal towns ofSalcombe and Dartmouth to the South. The breadth of stunning scenery and amenities is endless.Whether you are looking for a seaside holiday with the children or a more adventurous activity holiday,Devon has it covered.

We are also lucky to have so many excellent restaurants and pubs serving very good. I would highlyrecommend The Millbrook Inn at South Pool.The food there is excellent and the bar well stocked withgood local beers and wines. Be aware though, that this pub is on the estuary and gets very busy at hightide it’s worth checking out the tide time tables!

Another good day trip out is to Beesands to the beautifully renovated Cricket Inn, good fish on the menuhere, in fact on a summers day you can eat out on the sea wall watching the small fishing boats bobbingon the water and the catch being hauled on to the beach. Since I moved to here 13 years ago Devonnow can boast so many really good food establishments.

There is some notable shopping to do in South Devon for those with taste and individuality.The townof Ashburton is a Mecca for foodies, and for lovers of antiques and vintage bric-a-brac.The fish deli is aprime example and let’s face it if you are in Devon you must try the local fish. If you are looking fortrendy clothing and art then head to Salcombe - Amelia’s Attic is a must.

There are many bonuses to this slower pace of life, in particular the warm welcome and generosity thatis shown to all who visit. However if you are shopping even in a local chain supermarket expect them tofinish a conversation before they serve you. Everyone knows everybody else and as a rule not only whatyou do but what you are going to do next. A TV celebrity and former pop star who stayed at GarfieldHouse in the summer loved the whole idea that even in a supermarket the assistant advised her that“Sparkling wine is much cheaper than Champagne and you can’t really taste the difference”. And thenpromptly ID’d her for, as she pointed out,“I don’t know you from Adam!” our celeb was thrilled - it washer 30th Birthday last year!

There are however more and more of us that have left London behind and thanks to the internet canlive in Devon and work. Come visit and enjoy I can assure you on the way home you will still becontemplating whether you could live and work in this beautiful piece of England.

In the early months the well known snow drop walk takes place, whichin turn becomes the bluebell walk as the seasons progress. The magnificent river Dart that glidesfrom Dartmoor through this delightful village provides home to some wonderful wildlife too.Otters can sometimes been seen basking in the sun down by the historic Staverton Bridge andearly in the evening as dusk draws in, at the right time of year the intriguing horseshoe bats canbeen seen following the line of the river back to their home situated along the bank near thebridge. Kingfishers are frequently sighted by those taking a quiet stroll along the river path whilstheading to the pub. Stunning scenery comprising of Staverton Church, charming staggeredcottage roofs with terracotta chimneys gently trickling smoke provides somewhat of an idealsetting for a peaceful and relaxing meal at the Sea Trout Inn.

The walk from the train station will take you all the way along the river, through a smallwoodland area and back up the road past Staverton church which leads to the Sea Trout Inn.The stretch of River that runs from Buckfast down through Staverton and to the Totnes Weirthat is maintained by the Dart Angling Association. You can spend your time fishing the Dartwhich plays host to many Salmon, Sea Trout & Brown Trout. Fly fishing tickets are available forsale from the Sea Trout Inn and are required in order to fish. The Sea Trout Inn are proudsupporters of the Dart Angling Association and offer accommodation & fishing packages. Theoffers vary throughout the year but consist of accommodation and daily/weekly tickets for use ona beautiful stretch of the River Dart.

You can get back on the train and head on to Buckfastleigh which has the Butterfly farm and theOtter Sanctuary situated a short walk from the station. All in all it makes a great day out.
