Mother'sHomemadeNoodlesIngredients:1cup,plus1roundedtablespoonflour2tablespoonsmilk1egg,plus1yoke1/2teaspoonsaltBrothfrom1chicken(orotherbird)Directions:
Onabreadboardorinalargebowl,makeamoundoftheflourwithahollowinthemiddle.Beatmilk,eggs,andsalttogetherwithafork.Placethemixtureinthehollowspot.Mixtogetherfromtheoutsideintowardthecenteruntilthedoughbecomesstiff.Letsetforabout5minutes,notlongerthan10minutes.Thenrolldoughoutintwobatches,asthinasyoucan.Keepaddingflourtothedoughasneededtokeepdoughfromstickingtorollingpin.Rollupverytightly.Slicetherolleddoughintothinstrips.Separateatonceandspreadoutonatable.Letdryforatleast2hours.Tenminutesbeforeserving,dropdoughintogentlyboilingbroth,stirringconstantlysothatthenoodlesdonotsticktogether.Noodleswillbereadytoservewhentheyarenolongerdoughy.Theclingingflouronthenoodleswillthickenthebroth.

Directions:Stirinenoughwatertomakeacreamybatterandpourtheentiremixtureintoagreasedskillet.Forbestresults,useacastironskillet.Fryuntilthedoughisbrownoneachside,likeabigpancake.
Tastesgreatwithhomemadebutterandjam.
OldTimeCornBreadIngredients:1cuphominy1tablespoonshortening,melted2eggs,beaten1cupmilk1/2cupcornmeal1/2teaspoonsalt1teaspoonbakingpowderDirections:Inalargebowl,combinethehominy,shortening,eggs,andmilk.Addthecornmeal,saltandbakingpowdertothebowlandmix.Letstandfor5minutes.Add1tablespoonmoreofmilk,ifdesired.Pourmixtureintoalarge,well-oiledpan.Bakeat425degreesfor35minutesoruntiladeepgoldenbrown.

QuickandEasyMuffinsIngredients:1/2cupsofflour21/2teaspoonsbakingpowder1/4teaspoonsalt2teaspoonssugar1egg1/2cupmilk1/4cupofbutterorbuttersubstituteDirections:Inalargebowl,mixtheflour,bakingpowder,salt,sugarandegg.Addmilk,pouringgraduallyintothebowlwithotheringredients.Beatwithaforkasthemilkisadded.Whenthemixtureissmooth,addbutterorameltedbuttersubstitute.Beatuntilthedoughissmoothandcreamy;thisshouldn’ttaketoolong.Greasemuffintinsandonlyfillthemhalfwaywithbatter.Placeinpreheatedovenat400degreesF.

QuickPotatoBiscuitsIngredients:1large-sizedpotato11/2cupsflour4teaspoonsbakingpowder1/2teaspoonssalt1/4cupshortening1eggabout1cupmilkDirections:
