INGREDIENTS:

* 32 oz or 2 packages of frozen shredded coconut

* 1 can (12.8oz) of table cream* 1 can (14 oz) condensed milk

* 1 1/2 cups coconut gel (nata de coco)* 2 cans green gulaman jelly, sliced in cubes (I use ready made gulaman in a can which is way better) or

use 1 box green gulaman jelly* 1 tsp pandan essence

* 1/2 cup small sago (optional)

CATHEDRAL WINDOW RECIPE:

INGREDIENTS:

1 90 gram package strawberry gelatin

1 90 gram package green gelatin1 90 gram package orange gelatin

1 envelope ( 1 tablespoon) clear unflavored gelatin1 cup water, divided

2 tablespoon refined sugar1 small can (170 grams) all-purpose or thickened cream

3 tablespoons confectioners' sugar

PROCEDURE:

Prepare each gelatin per package directions, except for the clear gelatin. Pour each prepared gelatin into

a square or rectangular pan and allow to set until firm. Cut into 1/2- inch cubes. Set asideSoften clear unflavored gelatin in 1/4 cup of the water. Boil remaining 3/4 cup water with the 2

tablespoons sugar. Add the softened gelatin. Cool to warm temperature.Whip cream with the 3 tablespoons confectioners' sugar. Slowly blend in the warm clear gelatin.

Fold the cubed flavored/colored gelatin into the cream mixture.Pour into the desired mold and chill until set.

HOW TO PREPARE BUKO PANDAN SALAD:

* Cook small sago as instructed in the package. Set aside.

* Combine all ingredients in a bowl starting from shredded coconut (make sure to add the buko juice thatcomes in the package), gulaman, nata de coco, table cream, condensed milk & sago. Mix well.* Refrigerate. Serve cold & Enjoy!

* 1 lb uncooked elbow macaroniMeat Sauce:

* 3 tbsp butter

* 1/2 cup green bell pepper, diced* 1/2 cup tomato paste

* 1 tsp paprika* 1 piece beef cube

* 1 cup water* 1 tbsp sugar

* Salt and pepper to tasteMornay Sauce:

* 3 tbsp butter* 3 tbsp all-purpose flour

* 2 cups fresh milk* 1/4 tsp salt

* 1 ounce grated parmesan cheese* 2 ounces grated sharp cheddar cheese

* Prepare the elbow macaroni according to instructions in the package and intentionally cut the cooking

time so that the macaroni is not well done (the macaroni will be fully cooked once baked) then drain andset aside.

* Prepare the meat sauce by heating a cooking pot and melt-in the butter.* When the butter is hot enough, add the ground beef and cook for 5 minutes or until the color turns

medium brown.* Add the onion, green bell pepper, and diced tomatoes then stir and simmer for 3 minutes or until the

vegetables are soft.* Add the tomato paste and paprika then stir and cook for a minute

* Add the beef cube and water then stir until everything is well distributed. Simmer for 20 minutes.* Put-in the sugar, salt, and pepper then mix well. Turn of the heat and set aside.

* Prepare the Mornay sauce by melting the butter in a sauce pan over medium heat.* Add the flour stir constantly for about a minute (color must be yellowish and not brown).

* Slowly whisk in the milk and continue to whisk until the sauce thickens and comes to a boil.* Add salt and pepper then simmer for 2 to 3 minutes.

* Stir in the cheeses and whisk until melted. Set aside* Combine the cooked macaroni and meat sauce in a baking dish then toss until the meat sauce is well

distributed.* Arrange the macaroni and pour the Mornay sauce over it. (Spread the Mornay sauce over the macaroni

and meat sauce mixture ensuring that every space is covered)

* Pre-heat oven to 350 degrees Fahrenheit and bake for about 15 to 20 minutes.* Remove from the oven and allow to cool down a bit.

* Serve hot. Share and Enjoy!

Cooking Procedure

* Combine pork chops, soy sauce, oyster sauce and calamansi juice in a large bowl or container.

Marinade for at least 1 hour.* Heat a pan then pour-in cooking oil.

* Pan-fry the marinated pork chops in medium heat for 3 to 5 minutes per side.* Remove excess oil. Pour-in the remaining marinade and water and let boil. Simmer for 45 minutes or

until the pork is tender.Note: Add water as needed.

* Add-in salt, and pepper then stir.* Put-in the onions and cook for 3 minutes more.

* Turn-off heat and transfer to a serving plate.* Serve. Share and enjoy!

1/2 c. plain flour1/4 c. corn flour

1 tsp. salt3/4 c. ice cold water

Method:

Make two slits on the inner curve of the prawns to prevent it from curling too much when frying. Seasonwith light soy sauce and sesame oil and leave for 15 minutes. Pat dry and coat lightly with 1/4 c. of corn

flour.

Prepare the batter. Beat the egg in a mixing bowl. Add the ice cold water, then the flour and the rest of

the corn flour, baking powder, baking soda, salt and 2 tbsps. of cooking oil. Mix just until blended.

Heat up enough oil to deep fry the prawns. When hot, dip each prawn briefly in batter and fry a few at atime. Fry on medium heat for 2-3 minutes until light brown. Transfer on kitchen paper lined trays and

leave to cool. When cooled, re-heat the cooking oil and re-fry the prawns for 1 minute or until crispy andgolden brown. Serve immediately with sweet and sour dipping sauce.

Ginataang Monggo Recipe

Ingredients:1 ½ cups sweet rice (malagkit)

1 cup monggo beans (mung beans)1 ½ cups coconut milk1 cup sugar

evaporated milk

How to cook:1. Toast monggo beans (mung beans) untilgolden brown. Remove from fire. On a flat surface crush the

toasted monggo beans with arolling pin. Discard the loose skin from the crushed seeds.

2. Boil the sweet rice with water.

3. Add the coconut milk and sugar.

4. Mix the toasted monggo beans into the sweet rice. Continue cooking until the monggo beans are

cooked thoroughly.

5. Serve with evaporated milk on top.

Pork Adobo Recipe

Ingredients

 

2 lbs pork belly  2 tbsp garlic, minced or crushed

  5 pieces dried bay leaves

  4 tbsp vinegar

  1 cup soy sauce

  1 tbsp whole pepper corn

  1 cup water

  salt to taste

1. 

Combine the pork belly, soy sauce, and garlic then marinade for at least 1 hour

Heat the pot and put-in the marinated pork belly then cook for a few minutes

3.  Add water, whole pepper corn, and dried bay leaves then bring to a boil. Simmer for 40 minutes

to 1 hour

4.  Put-in the vinegar and simmer for 12 to 15 minutes

Add salt to taste

Siopao Asado Recipe

Siopao Asado or Hot Buns is a type of dumpling with sweet pork filling. Often referred to as Steamed

Dumplings, this tasty bun is so popular that it needs no introduction of any sort.This reminds me of

Chowking or better yet Ma Mon Luk (the original in the Philippines).Whenever I dine-in these joints, I

order siopao along with beef mami or maki. I don’t know if the combination sounds appealing but it

really works for me. How about you? Do you have some food in mind that goes well when eaten with

siopao?

This Siopao recipe is not complicated at all. Just be sure to have the ingredients on hand and follow all

the steps. It won’t be long before you enjoy your own home made siopao asado.

You can enjoy this delicious Siopao Asado anytime of the day. It can be eaten for breakfast, lunch,

snack, and even dinner. I know that its cumbersome to prepare siopao manually. Kneading takes-up

time and energy. You can always knead the dough using a heavy duty stand mixer to avoid exerting

too much effort. The effect will pretty much be the same.

Siopao Recipe

Ingredients

 Dough:

  2 cups warm water

  2 ½ tbsp sugar (added to yeast mixture)

  ½ cup sugar (added to the flour mixture)

  1 pouch dry yeast

  5 cups all purpose flour

  1 ¼ tbsp baking powder

  6 tbsp shortening

 Asado Filling:

  2 lbs pork, chopped into small pieces

  3 tbsp lard or shortening

  2 tbsp garlic, minced

  1 large onion, minced

  2 tbsp cornstarch, diluted in 1/4 cup water

  4 tbsp soy sauce

  4 tbsp sugar

 

3 tbsp oyster sauce

  1 tbsp hoisin sauce

Cooking Procedure

1. 

Cook the Asado filling by heating the shortening in a pan

Knead the dough again then cut into individual slices (this will be the dough per

15. individual siopao).

16. 

Flatten the dough until a round shape is formed using a rolling pin.

17. Put the asado filling on the middle of the flattened dough and wrap. (refer to the video for the

technique if interested)

18. 

Place the siopao in a steamer and steam for 15 minutes.

19. Serve hot. Share and enjoy!

This won’t be complete without our Panlasang Pinoy Special Siopao Sauce. Try it!

Note: I used a multi-cooker in steaming the Siopao. The good thing about multi cooker is its

flexibility; you may steam on it or use it as a pasta cooker – I even cook soups and stew on it.

Max’s Style Fried Chicken 

Ingredients

  1 whole spring chicken (cornish game hen)

  6 pieces dried bay leaves

  1/4 cup chopped cilantro or parsley

  4 cups water

  3 cups cooking oil

  2 tsp salt

  1 tsp ground black pepper

Cooking Procedure

1.  In a steamer, pour the water and bring to a boil.

2. 

Add the dried bay leaves and chopped cilantro in the boiling water

3. 

Steam the chicken for 45 minutes

4.  Remove the chicken from the steamer and allow the excess liquid to drip. Let the chicken cool

down.

5.  Rub salt and pepper all over the chicken.

6. 

In a deep-fryer or tall pot, pour the cooking oil and apply heat.

7.  When the cooking oil is hot enough, deep-fry the chicken for about 12 minutes. (If the chicken is

not entirely immersed in oil, flip the chicken to fry the other side for another 12 minutes or until

color turns golden brown)

Remove the chicken from the fryer and allow oil to drip.

9.  Serve hot with fried kamote (fried sweet potato). Share and Enjoy!

Maja Blanca Recipe

Ingredients

  4 cups coconut milk

  3/4 cup cornstarch

  14 ounces condensed milk

  3/4 cup fresh milk

  3/4 cup granulated sugar

  15 ounces whole sweet kernel corn

  5 tbsp toasted grated coconut

Cooking Procedure

1.  Pour the coconut milk in a cooking pot and bring to a boil.

2. 

Add the sugar, condensed milk, and whole sweet kernel corn then stir until all the ingredients

are evenly distributed.

3.  Simmer for 8 minutes

4. 

Combine the fresh milk and cornstarch then whisk until the cornstarch is diluted

5.  Pour the fresh milk and cornstarch mixture in the cooking pot and stir thoroughly.

Allow to cook while stirring until the mixture reaches your desired thickness

7.  Pour the mixture in a serving tray then arrange and flatten the top using a flat tool such as a

wooden spatula

Ingredients

  1 1/2 lb boneless chicken breast, cut into cubes

  1 piece medium-sized onion, minced

  1 tbsp garlic, minced

  1 cup potato, diced

  1 cup carrot, diced

  1 cup green peas

  1/4 cup raisins

  1/2 tsp salt

  1/2 tsp ground black pepper

 

1 tsp sugar

  1/2 piece chicken cube

  2 tbsp cooking oil

 Dough

  3 cups flour

  4 tbsp sugar

  6 tbsp water, cold

Embutido Recipe

Ingredients

  2 lbs ground pork

 

12 pcs vienna sausage or 6 pcs hotdogs, cut in half lengthwise

  3 pcs hard boiled eggs, sliced

  1/2 cup sweet pickle relish

  1/2 cup tomato sauce

  2 pcs raw eggs

  2 cups cheddar cheese, grated

  1 cup red bell pepper, minced

  1 cup green bell pepper, minced

  1 1/2 cup raisins

  1 cup carrots, minced

 

1 cup onion, minced

  salt and pepper

  2 cups bread crumbs (made by placing 4 slices of tasty bread in a food processor. If not using

any food processor, just tear the bread.)

Cooking Procedure

1. 

Place the ground pork in a large container

2.  Add the bread crumbs then break the raw eggs and add it in. Mix well

3.  Put-in the carrots, bell pepper (red and green), onion, pickle relish, and cheddar cheese. Mix

thouroughly

4.  Add the raisins, tomato sauce, salt, and pepper then mix well.

5. 

Place the meat mixture in an aluminum foil and flatten it. (see video for guidance)

6.  Put in the sliced vienna sausage and sliced boiled eggs alternately on the middle of the flat meat

mixture.

7.  Roll the foil to form a cylinderlocking the sausage and egg in the middle if the meat mixture.

Once done, lock the edges of the foil.

8. 

Place in a steamer and let cook for 1 hour.

9.  Place inside the refrigerator until temperature turns cold

10. 

Slice and serve. Share and Enjoy!

Grilled Brined Pork Chop Recipe

Ingredients

  3 lbs. pork chops

  3/4 cup table salt

  1/2 cup granulated white sugar

  1 gallon ice cold water

 

2 teaspoons garlic powder

  1/2 teaspoon ground black pepper

  3 tablespoons extra virgin olive oil

Cooking Procedure

1. 

Make the brine by combing ice cold water, sugar, and salt in a large container. Mix well.

2.  Soak the pork chops in the brine mixture for 14 hours.

3. 

Combine olive oil, garlic powder, and ground black pepper. Mix well.

4.  Coat the pork chops with the olive oil mixture and then marinate for an hour.

Grill each side of the pork chops for about 7 minutes or until he color turns brown. Do this while

basting using the excess olive oil mixture.

Pico de Gallo Recipe

Ingredients

  4 medium tomatoes, diced

  1/2 cup cilantro, chopped

  1 medium onion (white or red), diced

 

Juice of 1/2 lemon

  1/2 cup cilantro, chopped

  1 teaspoon minced garlic

  1 jalapeno pepper, chopped finely

  1 teaspoon salt

Cooking Procedure

1.  In a large bowl, combine tomatoes and onion. Gently toss to mix.

2. 

Add the chopped cilantro, garlic, and jalapeno.

3.  Squeeze-in the lime juice and sprinkle the salt. Mix well.

Carne Asada Fried Rice Recipe

Ingredients

  1/2 lb. grilled Carne Asada, chopped

  6 cups leftover white rice

  1 teaspoon ground cumin

  2 1/2 teaspoons salt

  1 tablespoon dried parsley

  3 tablespoons cooking oil

Cooking Procedure

1. 

Combine salt and leftover rice. Gently mix until fully incorporated.

2.  Heat the oil in a wide pan.

3.  When the oil is hot, put-in the carne asada. Cook for 20 seconds (so that the oil can absorb the

flavor).

4.  Add the rice and then stir while frying. Cook for 5 to 7 minutes.

Put-in the ground cumin and dried parsley. Cook while stirring for 8 to 10 minutes.

6.  Transfer to a serving plate. Serve with your main dish.

 Arugula Salad with Chopped Walnuts Recipe

Ingredients  4 cups fresh arugula

  12 pieces cherry tomatoes

  1/2 cup walnuts, chopped

  2 tablespoons white wine vinegar

Cooking Procedure

1.  Combine salt and olive oil. Mix well and then set aside.

In a large salad bowl, combine arugula, cherry tomato, and walnuts. Gently toss the ingredients.

3.  Add the olive oil mixture and white wine vinegar. Toss once more to incorporate all the

ingredients.

Puto Recipe

Ingredients

  4 cups flour, sifted

  2 cups sugar, sifted

  2 1/2 tbsp baking powder

  1 cup evaporated milk

  2 1/2 cups water

  1/2 cup butter, melted

  1 piece egg, raw

  small slices of cheese

  4 cups water (for steaming)

Cooking Procedure1.  In a mixing bowl, combine the dry ingredients starting from the flour, sugar,and baking powder

then mix well.

2.  Add the butter, evaporated milk, egg, water and pandan essence (dissolve the pandan essence

in water) then mix all the ingredients thoroughly.

3.  Pour the mixture in individual molds

4.  If you are using non – quick melt Filipino brand cheese, You may put the cheese on top of the

mixture otherwise put the cheese on top after steaming (step 6)

5.  Pour the water in the steamer.

6. 

Arrange the molds in the steamer then steam for about 20 minutes

7.  If you are using quick melt cheese,remove the cover of the steamer and top each puto with

quick melt cheese then continue steaming (with the cover on) for 2 to 5 minutes

8.  Remove from the mold and arrange in a serving plate

9.  Serve either hot or cold. This goes well with dinuguan Share and Enjoy!

Siomai Recipe

Ingredients

  2 1/2 lbs ground pork

  1 cup shrimp, minced

  2 cups water chestnuts, minced

  5 tbsp sesame oil

  1 tbsp ground black pepper

 

1 cup onion, minced  1 cup carrots, minced

  1 1/2 cups white mushroom, minced

  1 pack won ton wrapper

  1/4 cup scallions, minced

  2 tsp salt

  1 piece raw egg

  Water for steaming

Cooking Procedure

1.  Combine all the ingredients except for the water and wanton wrapper and mix thoroughly.

2. 

Wrap the mixed ingredients using the won ton wrapper. (watch the video for easy procedure)

3.  Using a steamer, steam the wrapped siomai (shaomai) for 15 to 25 minutes. The time depends

on the size of each individual piece (larger size means more time steaming).

4.  Serve hot with kikkoman soy sauce and calamansi or lemon dip. Share and enjoy!
