Holy Snowballs Batman! It actually snowed in Temecula on December 30th. It hasn’t done that in 10 years. It was a real snowfall this time, almost 6 inches on the ground, and it didn’t melt immediately. Our families, and many long-term residents, way before our moving to this beautiful wine country,

haven’t seen that amount of snow accumulation ever. Our staff had snowball fights, our restaurant greeter was Frosty the Snowman that day (made by our winemaker with the help of staff members’ kids that have never made a snowman before, how cool) and the hills around Temecula Wine Country turned into make shift sledding and snowboard parks.

How ironic, exciting and amazing it was that the snow came on the last day of 2014! A very wise woman, most of you know her, Rosie, said it best, “What a good omen the snow seems to be for 2015; covering up all the dirt and frustrations of 2014.” I couldn’t have said it better myself! A blanket of white, to get us ready for the New Year, a fresh slate…similar to the new look of our line of Sparkling Wines. It’s the same bubbly you love, just with a new look for the New Year filled with possibilities and attainable dreams. As the Temecula Region awoke to the last day of 2014 most of us were pleasantly surprised to see anywhere from 1” – 8” of white stuff, later to be identified as snow, (Pronounced: snō, believed to be a linguistic derivation of “Snookooukookuoouku”, one of the 200 Eskimo terms for this stuff). Apparently this stuff is just water at a different temperature and is chemically the same as those things floating in your Gin and Tonic. When I arrived at the winery I was greeted by Chris Wilson who had spent the last two hours knocking snow from the landscaping hence, we had little damage to the grounds; picnickers and birds- we are in your debt Chris! But then the calls started. Guests pulled me aside, my phone buzzed with text messages all with the same end-of-the-world tone. “Are the grapes going to be OK? How many cases of wine should I stockpile? If we have to survive on Box Wine is the brain damage reversible with a Malbec?” So here it is; the official guide to snow in the vineyards: Vines love snow! Here is why: Snow accompanied by below freezing temperatures helps push the vines in to the winter dormancy period. Just like us, vines need sleep. Just like us a series of short catnaps is not sufficient. One of the major challenges of last year’s warm winter was that some of the vines did not go into a definite dormancy period leading to challenges in fruit set and frost damage resistance. Somewhat counter-intuitively, snow has a fair amount of latent heat, so although the air temperature was below freezing the snow protected the last remaining plant sap allowing it to safely go into the roots, and the upper portion of the vine dehydrated enough to protect it from freeze damage while keeping the cells alive. Snow is called the “Poor man’s fertilizer”. Nitrogen is a required nutrient. Considering about 80% of the air is nitrogen you may wonder why it is such an issue to get sufficient Nitrogen into the plant, but as in the case of coal and diamonds (both carbon) structure is everything. Nitrogen in the air is N2 which means one nitrogen attached to another nitrogen (N2 = N+N). N2 is an inert gas meaning that it is very happy by itself and will not react with anything else. This is why we use N2 in winemaking to protect wine from oxygen. However this is also of no use to the plant. Plants need it in another form one of them being Nitrate (N3). Easy enough you may think, just slap another N and good to go, but the energy required to do this is pressure hundreds of times that of the atmosphere and temperatures found on Venus (+700 deg. F) So how does nature do this in a snow storm? Like most of my tales the heroes of the story are microbes. These little critters can turn N2 into N3 at low temperatures and pressures, a trick that we cannot match in the lab. Because snow is frozen water it has a higher capacity to carry gasses so it adsorbs the newly formed N3 and slowly releases it into the soil as the snow melts where the plants sip it over the winter like we are sipping

our Late Harvest Chardonnay in front of the fire. We are continuing to innovate in the vineyard mostly to support the microbes that support the microbiota that supports the vines that support the fruit that supports the winemaker that supports that warm satisfied buzz you are experiencing as you enjoy that bottle of Late Harvest Chardonnay. The winemaker’s dinner is always a pleasurable event, and this one was no exception. The dinner was a success with a phenomenal menu created by Executive Chef, Steve and perfectly paired wines by Winemaker, Gus. The standout food and wine pairing of the night was the panko crusted American lamb chop lollipop with oregano pesto sauce, roasted sun chokes and tiny root vegetables. “So tender, so flavorful with the panko crust, it paired perfectly with the spicy, earthiness of Syrah,” says Gus. “The pairing of the food with the wines hit the nail right on the head.”

Linguine with Shrimp ScampiPairs with 2013 Roussanne

1 Tbls Kosher salt3/4 Lb linguine

3 Tbls unsalted butter2 1/2 Tbls good olive oil

1 1/2 Tbls minced garlic (4 cloves)1 Lb large shrimp (peeled and deveined)

1/4 tsp freshly ground black pepper1/2 lemon, zest grated

1/4 c freshly squeezed lemon juice1/4 lemon sliced into half-rounds

1/8 tsp hot red pepper flakes

Drizzle some oil in a large pot of boiling salted water, add 1 tablespoon of salt and the linguine, and cook for 7 to

10 minutes, or according to the directions on the package. Meanwhile, in another large (12-inch), heavy-bottomed pan, melt the butter and olive oil over medium-low heat. Add the garlic. Saute for 1 minute. Be careful, the garlic burns easily! Add the shrimp, 1 1/2 teaspoons of salt, and the pepper and

saute until the shrimp have just turned pink, about 5 minutes, stirring often. Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. Toss to combine. When the pasta is done, drain the cooked linguine and then put it back in the pot. Immediately add the shrimp

and sauce, toss well, and serve.Enjoy!
