THE VALUES AND STORY OF EVOHÉ

CHOOSE LIFE, CHOOSE A FUTURE, CHOOSE EVOHE

Every project is born from an illusion of a desire to improve, become unique or collective. To put in writing our

project does not result as a simple task since our mind populates with sensations, anecdotes, emotions and feelings

tingling on the surface of my skin…. this always happens when I get nostalgic.

Evohé is born of a common illusion for the world of wine built on small pieces representing the way we see and feel

the surrounding world with its concerns and joy, but always trying to convey to those around us that it is possible to

develop a business that has soul like our shared world embraced by happiness and suffering.

To understand us you must understand our land: Aragón, hard in appearance

with its hostile aridness but soft as clay from which we built our grandparents

houses. We are committed to our surroundings, our environment, seeing as we

slowly wither by not knowing how to show the world what we are and why we

are.

From this arises Evohé with the variety that is none other than the Grenacha in

the Lower Aragon (Bajo Aragón). Making our wine: a wine that involves our

earth, which is desiccated, but for us symbolizing joy, desire to live happy with

what surrounds us and to be remembered in time.

This is how we are and so is Evohé. Other little brothers to the Garnacha have arrived from other areas of Aragon

also conveying those feelings of our land as Tempranillo in Ribera del Gallego-Cinco Villas: hospitable to the

traveler, filed with kindness in its heard. There will be more brothers with the personality of a land and its people

composed of small sets of tones that makes it´s beautiful as we feel the need to show the innumerable hues of the land

as diversity that is being forgotten.

This adventure was conceived in 2005 around three young enthusiasts:

Ricardo Mosteo, Henrik Heikel and Alfonso Mort.

The story of how the idea of Evohé first started around a table. The trio

together with the Great winemaker Joan Milà was brought for the first time

together.

“You have the same ideas. Why don´t you try to create something together?”

As we see him, the father (r.i.p. and for ever in our heart) of Evohé and whom

we have sworn to carry on his wisdom. This was the beginning of our history

together although we started our individual projects. We don´t know whom of

us was the first to come with the idea to make such wine as the Evohé. Nor do

we care.

Henrik, obsessed with his projects to find the authenticity of wines, Alfonso and Ricardo dreaming of doing a wine

with the most typical variety in our region of Aragon: Garnacha.

The intention is to share with the wider world the wisdom of generations of winemakers dedicated to the

development and elaboration of the variety Garnacha grown in Aragón since the 12th century. Garnacha comes from

Sardinia as a specimen of plant. The Island was at this time part of the kingdom of Aragón where it was brought to

these fields and trained. We see Aragon as the birthplace of this Grape due to that this took place in the 12-century. It

and later spread to the world starting with the neighboring country, France (Grenache). After looking in several areas,

we found what we sought for, Lécera in one of the most remote lands of

Aragon.

The project came to us and as anything in life it has brought us: joy, sadness,

lafture, illusion and much will to make Evohé an original, global and

International wine. A wine of such attributes as charming, elegant, powerful,

complex, aromatic, deep…. in short it turned into our child and perhaps

pamper it too much… But then again, it is our Dream becoming reality.

EVOHÉ GARNACHA VIÑAS VIEJAS - Vino de la tierra del Bajo Aragón

Evohé Garnacha Viñas Viejas, which sees no oak, is pure Garnacha

from start to finish. The color is a beautiful black cherry hue with a

magenta rim; the bouquet is bright, ripe and vivacious with notes of

blackberries, blueberries and black plums, lavender and licorice with

sleek slate-like minerals. In the mouth, much is the same, with these

luscious black and blue fruit flavors taking on wild touches of mulberry,

briers and violets, set into moderately dense and finely-milled tannins

allied to lively acidity. This is Garnacha at its best.

First the wine making: 2005 Varieties: Garnacha 100%

Alcohol: 13.68% Vol. Methanol: 189 mg/l

Ph: 3.5 Tartaric acidity: 5.5 gr. /l

Volatile acidity: 0.46 gr. Citric Acid: <0.10 g/l

Histamine: 3.7 mg/l Sulfur Dioxide: 82 mg/l

Dry Extract: 30 g/l Volumetric Density: 0.9919 g/cm3

Vinification:

The vintage takes place on the middle of September to the beginnings of

October. At the entrance to bodega, was made a light stripping and

squeezed to conserve the maximum matter of the grape. The

Fermentation took place at a medium temperature of 24 degrees Celsius,

macerated with the skins around 12 days with regular over pumping. It

has no oak treatment at all and is after fermentation kept in large

deposits of 40.000 liters to retain freshness and fruitiness. After its

malolactic fermentation it has been cold stabilized and clarified but

filtered quite gently and then was bottled.

For consumed at: 16 to 18 ºC.

EVOHÉ TEMPRANILLO VIÑAS VIEJAS - Vino de la Tierra de Ribiera del Gallego – Cinco Villas

Our Evohé Old Vine Tempranillo has a retro twist expressing the pure ripe fruit of the vines which have been grown in this region

for centuries. Instead of the traditional heavily-oaked and long aged wines, we have chosen to produce this Tempranillo in the style

of our Evohé Old Vine Garnacha. Thus we have a youthful wine with no oak aging which shows the natural flavors of the

Tempranillo grape. Our motto is “Sustainable Agriculture with minimal intervention in the production of Wines”. We believe

purity is found in simplicity. Our wine techniques include open-vat fermentation using the wild yeasts naturally present on the

grapes. These methods honor the wisdom of the generations of Spanish wine-makers who inspired us with their passion.

Evohé Old Vine Tempranillo has a dark, ruby-red, cherry color, with

violet tones that denote its youth and potential. On the nose, it is a

delicate, with marked aromas of red fruits and raspberry. The pallet

exhibits a full and fruity wine which expresses the noble Tempranillo

grape in a fresh style. Black Currant, Plums, and Ripe Cherries are

present and even hints of Chocolate can be found together with balanced,

ripe tannins.

Evohé Tempranillo Viñas Viejas, which sees no oak, is pure Tempranillo

from start to finish. The color is a beautiful black cherry hue with a

Serving suggestions are: grilled meats, vegetables and mushrooms,

sausages, cooked fish, rice dishes, foie gras, cured hams and other

delicious dishes you might indulge yourself with. Evohé Wines go

perfectly with the tapas concept of talking, drinking and eating. The

diversity of the ingredients runs parallel to the ever changing topics of

conversation, with the wine serving as an undercurrent that brings

everything together.

Tartaric acidity: 6.5 gr. /l (2010)

Volatile acidity: 0.65 gr. (2010)

EVOHÉ MAZUELA VIÑAS VIEJAS - Vino de Mesa – Grapes from VT Valdejalon

Mazuela, also known as Mazuelo and Cariñena (Carignan in French) is one of the classic grape varietals of Aragon, today respected

to be the most produced in the world. The grape is possibly more known by the name of Cariñena or Carignan in French. Mazuela

has suffered from a bit of an image problem. Hailing from the town of Cariñena, near Zaragoza in Aragon, northeastern Spain, it

reached France by the twelfth century where it spread across the Midi to become the dominant grape. Despite the intrinsic merits of

this grape, greedy and careless producers commonly over cropped it, producing high yields of rather diluted wines. But when grown

in the right places as its home lands as for our Evohé Viñas Viejas (Old Vine) Mazuela in Valdejalon - Aragon with restricted

yields, Mazuela can excel, producing structured wines with savory, mineral flavors that faithfully reflect their terroirs.

We have simply expanded the range and our Philosophy in Sustainable Agriculture with minimal intervention in the production of

Wines as done with the Garnacha and Tempranillo to the varietal Mazuela. Mazuela is an astonishing grape. The high PH level

found in this grape is the Back Bone acidity to many top wines. As mentioned, in harsh growing conditions and low outtake the

results are amazing. Spain’s most respected region where Mazuela is found is Priorat. In many ways it’s similar to the areas around

Valdejalon where the grape originally comes from. No wonder the results have been so favorable. So from the 2011 vintage we have

taken on the mission. We are taking Mazuela out to the world!

EVOHÉ GARNACHA BLANCA CON BATONAGE – Vino de la Tierra del Bajo Aragón

Garnacha Blanca (White Grenache) is simply the white mutation of the

Garancha Tinta (Black Grenache). A grape that has its origin in the Aragón

region and from here has spread to the rest of the world. Garnacha Blanca, just

as its big Brother Garnacha Tinta is dependent on very harsh weather

conditions to provide a good concentration making the Bajo Aragon an ideal

area for cultivation of this grape. Dry and hot summers are feed with strong

cooling winds essential for the slow and harmonious maturation of the grapes.

The Spectrum of Aromas for this varietal is Floral, Citrus and Herbs. A profile

that maridates very well with light fish dishes, but also vegetarian foods,

though not to discard, an excellent aperitif wine.

Evohé wines goes perfectly with the tapas concept of talking, drinking

and eating. The diversity of the ingredients runs parallel to the ever changing

topics of conversations, with the wine serving as an undercurrent that brings

everything together. Recommended serving temperature is around 10-12ºC

(50-55ºF).

History of CAVA in Spain:

Cava is the name of a type of Spanish white or rose sparkling wine produced mainly in the Penedès

40 km to the south west of Barcelona. The method for elaboration is the same as in Champane,

refered to as the “méthode champenoise” but grape varieties different. Cava is a Greek term that was

used to refer to a “high end” table wine or wine cellar, and comes from the Latin word “cava” which

means cave in English. Caves were used in the early days of Cava production for the preservation or

aging of wine. Today Cavas have become integrated with Catalan and also Spanish family traditions

and is often consumed at any kind of celebrations.

Spanish sparkling wine was first made as early as 1851, although the roots of the cava industry can

be traced back to Josep Raventós’s travels through Europe in the 1860s, where he was promoting the

still wines of the Codorníu Winery. His visits to the Champagne region sparked an interest in the

potential of a Spanish wine made using the same traditional method. He created his first sparkler in

1872, after the vineyards of Penedès were devastated by the phylloxera plague, and the

predominantly red vines were being replaced by large numbers of vines producing white grapes.

The sparkling wine of Cava was created in 1872 by Josep Raventós. The vineyards of Penedès were devastated by the phylloxera

success of the Champagne region, Raventós decided to create the dry sparkling wine that has become the reason for the region’s

continued success. In the past the wine was referred to as Spanish Champagne (no longer permitted under EU law), or colloquially

as champaña in Spanish or Xampany in Catalan. Cava is produced in varying levels of dryness of the wine which are (in Catalan):

brut nature (dry), sec (hint of recidual sugar), semisec (medium dry) and dolc (sweet).

Under Spanish Denominación de Origen laws, Cava can be produced in

six wine regions and must be made according to the Traditional Method

with second fermentation in the bottle and uses a selection of the grapes

Macabeu, Parellada, Xarel·lo, Chardonnay, Pinot noir, Trepat and

Subirat. Despite being a traditional Champagne grape, Chardonnay was

not used in the production of Cava until the 1980s.

EVOHÉ TEMPRANILLO VIÑAS VIEJAS - Vino de la Tierra de Ribiera del Gallego – Cinco Villas – Media

MEDIA - EVOHÉ TEMPRANILLO VIÑAS VIEJAS

Our Tempranillo was born with the 2010 vintage and

launched in the spring of 2011. Its first year has been

magnificent with stunning comments motivating us to

continue the method of making wines as we stated out with

the Garnacha. Who could not better define our wine as seen

from the media then Mr Jose Peñin himself (Founder/Owner

of the Guia Peñin).

“I like wines from the less known and hidden areas. In

Spain we can assume that not everything good is labeled

with DO. We talking about a wine from the VT Ribera del

Gallego, a Tempranillo that differentiates from the more “Atlantic” DO´s Ribera del Duero and Rioja Alta. This Aragonese

counterpart has in common the minerality of the old vines but with a earthy touch and greater aridity of the area without over

maturation. By color it could be confused or identified with Grenacha due to the joined complexity shown in pallet. Well, all this is

found in this Old Vine EVOHÉ Tempranillo (2010). A wine that could only be conceived by a few enthusiasts with certain

intellectual charge and clear view for the biodiversity: Ricardo Mosteo, Henrik Heikel and Alfonso Mort. Following in the footsteps

of the master who conceived the idea, Joan Mila, who passed away two years ago. This project initially began with the Grenacha,

this time applied to the Tempranillo, a challenge when this early maturing varietal is grown in a hostile scenario with high daytime

temperatures in an area as the Ribera del Gallego. A territory that rises between Huesca and Zaragoza.

Notes: A nice lively burgundy red color, very tasty, fresh fruit that contrasts with the high alcohol content that´s barely perceived.

Evohé has only been around since 2005.. and 2005 as a vintage was a pilot

wine whom we have improved very much with the years. We simply want to

give you the best wine we could possibly make.

With this, media has been very kind to us and placed us a a winery who

produces great valued wines from the Classic Grapes of Spain. We started out

with our Old Vine Garnacha. The wine that will always be seen as our “First

born Baby” and most loved wine. Tempranillo came second and oh my… what

a wonderful wine it is…. and many more are in the Process of making. I hope

you all have a chance to try them.
